Scientific study of a raw food material & their
behavior during formulation, processing, packaging,
storage & evaluation as consumer food products.

The egg white has formed an opaque gel due to


a change in the albumen proteins that denatured
and coagulate
The toasted bread contains flour component that
undergo the browning reaction when heated.
Orange juice is a processed fruit beverage that
provides a certain sweetness due to the ratio of
naturally present sugar and acids in the orange.
Milk is a process beverage also; homogenized,
pasteurized, and process to contain a specific
level of fat; slightly sweet due to lactose sugar.
