Make Sure Your Travel Insurance Actually Insures Your Trip

If you've got so much as a missed flight connection, it won't take much to put your eagerlyanticipated vacation in jeopardy. Weather delays, terrorism scares and general overcrowding in the skies have led to plenty of frightening and frustrating travel news. If you've ever been stuck on the airport tarmac for hours or had a flight cancelled on the way to a brief but desperately needed vacation, you've probably faced the irritating possibility of losing hundreds or thousands of dollars of your hard-earned vacation savings. So you'll just click on the travel insurance button next to your online flight reservation and you'll be fine, right? In the majority of cases, you'd be wrong. Most people perceive that the purchase of travel insurance will protect everything from lost luggage to unforeseen medical bills - that's rarely true anymore. So when shopping for travel insurance it's time to start understanding what you're really buying: Start at least a month in advance: Most people make major trip reservations fairly far in advance to get the best fares, and you need to do the same for travel insurance. Book early and you'll get the best coverage and rates. Also, make sure you're not having any major medical or dental procedures before you go insurers are picky about preexisting health conditions, so read the fine print. There's no such thing as full coverage - unless you're willing to pay for it: What's full coverage? That's a good question, and it sometimes depends on dozens of factors unique to your trip. Your carrier might not offer protection on your chosen airline or cruise line. You'll find that terrorism insurance is rare and complicated. And you have to examine medical insurance options closely to understand exactly what is covered. The rare soup-to-nuts coverage - covering trip cancellations, missed connections, lost luggage, flight accident, emergency medical and medical evacuation coverage - is typically priced in the hundreds of dollars and may only cover only up to 75 percent of the total cost of your trip. But in a pinch, it may be worth it. Start online: If you really want an eye-opening experience in buying travel coverage, go to some of the leading Web sites that deal in single or multiple-insurer offerings. InsureMyTrip. com is a market leader and a good first stop in analyzing coverage - you start by punching in the necessary information on your trip (dates, age of travelers, medical coverage needed, etc.) and it spits back more than a dozen possibilities at all price levels. Clicking on any of the choices will give you a detailed view of what those policies will and won't cover. Check with your credit card company: It's time your credit card company earned its money. Call customer service and find out what kind of travel protection they offer automatically or by fee and grill them on the coverage. Call your HR department or health insurer: Your health benefits may not cross state or country lines. Before you take any trip, check to see if your employer's or your own personal health coverage will be effective there. An emergency room visit can cost at least several hundred dollars and a short hospital stay can cost thousands more, particularly in another country. You might be interested in travel health insurance if you find your own domestic insurer won't pay claims in certain parts of the country where you're going. Ask about hurricane coverage: Even if you don't live in a hurricane area, severe hurricanes can disrupt flights all across the nation, which may lead to a delay of your trip here or abroad. Ask whether your travel insurance has hurricane coverage and what it entails. If you're stuck, never be afraid to ask for a break: If you're sidetracked for reasons beyond your control, (weatherrelated or otherwise), always ask if your airline, hotel or other components of your vacation might be willing to give you a credit or discount on your bill. It's rare, but some destinations might see it as a chance to build goodwill. Always ask nicely don't ask as if they owe you, because they don't.

Combine first seven ingredients in a large bowl. Chop scallions, shallot and red bell pepper. Saut for two minutes and add to bowl. Gently fold in crab. Form patties, and fry in butter over medium heat until golden brown. Serve with lemon wedges.

Red Raspberry Cream Puffs


Serves 10 Puff Mixture: 1/2 cup (1 stick) Unsalted Butter, cut into half-inch pieces 1 tsp Sugar 1/2 tsp Salt 1 cup All-purpose Flour 4 Large Eggs Cream Puff Filling: 2 cups Heavy Cream 4 tbsp Granulated Sugar 1/4 cup Amaretto Liqueur (or 1 tsp almond extract) Raspberry Filling: 2 pkgs Frozen Red Raspberries, (20 oz) thawed 1 tsp Corn Starch 3 tsps Granulated Sugar

Preheat oven to 400 degrees. Bring butter, sugar, salt and 1 cup of water to a boil in a saucepan. Stir in flour, and cook over medium-high heat, stirring constantly for three minutes. Cool for 10 minutes. Add eggs one at a time to the butter mixture, beating after each egg until smooth. Drop dough into 10 mounds, three inches apart on baking sheet, or spoon dough into a pastry bag fitted with a large star tip and pipe into rosettes on the baking sheet lined with wax paper. Whip cream and sugar until stiff peaks form, and fold in liqueur. Arrange one bag of red raspberries in a single layer on paper towels to defrost. In a saucepan, heat one package of red raspberries and sugar until sugar is dissolved and berries are soft. Place cornstarch in a small bowl. Remove a few spoonfuls of raspberry mixture, and add to cornstarch and mix together until smooth. Add cornstarch mix back into saucepan, cook and stir on medium-low heat until thickened. Once cool, stir in reserved red raspberries. Spoon in 3-4 tablespoons of red raspberries on cream puff shell. Pipe whipped cream filling on top of raspberries using pastry bag. Top with remaining portion of cream puff shell, and sprinkle with powdered sugar.

Grilled Ratatouille Soup


Serves 6 3 tbsp 1 each 1/2 lb 1 2 cloves 2 tbsp 1/2 tsp 1 can (48 oz.) 1/2 cup 2 tbsp 1 1/2 tsp Olive Oil Red and Green Pepper, quartered each Eggplant and Zucchini, sliced into 1-inch thick rounds Small Onion, chopped Garlic, minced Fresh Oregano, chopped Pepper Tomato Juice Small Uncooked Whole Wheat Pasta Fresh Basil, chopped Balsamic Vinegar Shredded Parmesan cheese (if using)

Heat a grill to medium heat. Toss 2 tbsp of the olive oil with the red and green pepper, eggplant and zucchini. Grill, turning as needed for 10 to 15 minutes, or until well marked and tender. Cool, peel skin off peppers and chop all vegetables coarsely. Heat the remaining oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes. Stir in the garlic, oregano and pepper. Cook for 2 minutes. Add the tomato juice and bring to a boil. Add the pasta and chopped vegetables. Simmer for 20 minutes, stirring often or until pasta is tender. Stir in basil and balsamic vinegar. Garnish with Parmesan cheese (if using).

(NUI) - Between soccer practice, piano lessons and homework, more and more parents are discovering that it can be hard to balance a healthy life with a busy one. Health care professionals, however, are discovering that nutrition- and activity-based habits, when developed early, can make a positive long-term impact. Eileen Berry, a Florida mother and self-taught nutritionist, has taken this to heart. "Healthy foods are available and, as parents, we need to make this happen for our kids," she said. "We don't have the luxury of 'shouldas', 'wouldas' and 'couldas,' especially when our children are involved. CHRONIC DISEASE COSTING AMERICANS $1.3 TRILLION YEARLY


(NUI) - As chronic diseases such as hypertension, heart disease and stroke continue to plague the health of Americans everywhere, the resulting health costs are impacting the economy in a big way to the tune of more than $1 trillion each year. A recent study, released by independent economic group The Milken Institute, stated that the most common chronic medical conditions are responsible for costing the American economy $1.3 trillion annually. The study goes on to say that if costs continue to increase as expected, the economic impact may reach as high as $6 trillion per year by the middle of the century. While these numbers are staggeringly negative, there is good news: some of these costs may, in fact, be avoidable. "Chronic diseases, especially heart failure, will affect an increasing number of Americans in the foreseeable future," said John Russell, vice president and general manager of patient management at Boston Scientific's Cardiac Rhythm Management Group. "But heart failure, in particular, can often be successfully managed." Nearly 22 million people worldwide, including approximately 5.5 million Americans, currently suffer from heart failure, and heart disease is the leading cause of hospitalization for those aged 65 or older. Emergency room fees and other critical hospital costs accrued as a result of heart failure hospitalization are two of the major reasons for increasing economic concerns. Luckily, an increasing number of heart failure patients are receiving an implanted defibrillator device to help treat their problem. For these patients, symptoms can be tracked daily via wireless technology. Boston Scientific's LATITUDE Patient Management system, for example, was the first product approved by the Food and Drug Administration for such wireless home monitoring of medical devices. The LATITUDE system can detect clinical events between scheduled follow-up visits and then send the clinical event data directly to physicians. This enables physicians to intervene earlier in a patient's care, which can help to lower overall economic costs by preventing potential emergency hospitalization. "Catching rapidly deteriorating health symptoms in chronic disease before it becomes an emergency situation can not only help save lives, but also health care dollars," Russell said. 1. Don't lie down after eating. When you lie down, it's easier for stomach acid to back up into the esophagus, particularly when you go to bed with a full stomach. Make sure to wait at least three to four hours after eating before going to bed, and try raising the head of your bed. 2. Cut out problem foods. Chocolate, peppermint, tomato sauce and fatty and spicy foods have all been proven to exacerbate the symptoms of heartburn. Making a point to eat smaller meals will also help curb potential heartburn problems. 3. Avoid smoking and excessive amounts of alcohol. Using tobacco and ingesting alcohol reduce the pressure on the muscle between the esophagus and the stomach, permitting acid reflux to occur. GERD has a physical cause and may not be improved by lifestyle factors alone. If you are using over-the-counter medications two or more times a week or are still having symptoms on prescription or other medicines, you need to see your doctor. Seasoned Crusted Salmon Rub

Salmon portions or 1 Whole Fish Dried Rosemary, minced Dehydrated Roasted Garlic, minced Coarse Ground Black Pepper Coarse Sea Salt Freeze-dried or Dehydrated Minced Green Onion or Chives

Mix seasoning ingredients together and store in an airtight container until you're ready to use. To prepare, generously top salmon with the seasoning mixture then bake in a 350F oven for 610 minutes per inch of thickness.

Tomato Moroccan Stew


Serves: 6 2 tbsp 1 lb 1 tbsp 1 small 1 2 cloves 2 tsp 2 tsp 2 tsp Olive Oil Extra-lean Stewing Beef All-purpose Flour Onion, chopped Carrot, peeled and chopped Garlic, minced Ground Cinnamon Coriander Cumin 1/2 tsp 2 cups 1/2 cup 1/2 cup 2 cups 1 can 1 tsp Pepper Tomato Juice Orange Juice Beef Broth Butternut Squash Chickpeas, drained and rinsed Orange Peel, finely grated (optional) Whole-wheat couscous (optional)

Heat half of the oil in a Dutch oven over medium-high heat. Toss the beef cubes with the flour and cook, in batches and turning as necessary until browned all over. Reserve. Add the remaining oil to the pan and reduce the heat to medium. Add the onion and carrots; cook until softened, about 5 to 7 minutes. Stir in the garlic, cinnamon, coriander, cumin and pepper, cook until fragrant, about 30 seconds. Stir in the tomato juice, orange juice and beef broth; scrape up any cooked bits and bring to a boil. Stir in the reserved beef and reduce the heat to medium low. Simmer covered for 30 minutes. Stir in the squash and chickpeas and simmer uncovered, stirring occasionally for 15 to 20 minutes or until meat and squash are tender and sauce is thickened. Stir in orange peel (if using) and serve with whole-wheat couscous.

36 servings 1 1/2 cup 1 envelope 1/2 cup 1/2 cup 8 oz. 1 1/3 cup 1/4 cup 1 2/3 cup 1 box Grapefruit, sectioned Water Unflavored Gelatin Sugar Brown Sugar Cream Cheese, whipped Sour Cream Grapefruit Juice, reserved from sectioning Heavy Cream, whipped Vanilla Wafers Mini muffin baking cups and a baking tin Mint

In a small saucepan, pour in water and gelatin, let stand for one minute, then cook 3 minutes over low heat. Set aside to cool for about 1 minute. In a large bowl, mix sugar, brown sugar, cream cheese, cooled gelatin, grapefruit juice and sour cream. Gently fold in whipped cream until thick and creamy. Place one wafer in each baking cup and put in baking tin. Pour mixture into prepared tin, and chill until firm for about 4 hours. Garnish with grapefruit section and mint.
