PREFACE

All over the world the demand for managerial personal and admini
strative personal has increase due to very rapid industrialization. The perfect
study of management and practical. To survive in this highly competitive market
practical knowledge is as important as theoretical. As the student of B.B.A. we
are suppose to have practical knowledge of management. For this purpose we got t
he chance to visit Amul Dairy and got the opportunity to interact with people wh
o work in that unit and the knowledge about the working condition etc. Besides v
isit, it also gives us a chance to get along with others the group.

INTRODUCTION TO DAIRY INDUSTRY

Industrial sector has played a critical rule in development of Indian ec


onomy. Industrialization and industrial sector holds the improvement of employme
nt and fuller utilization of resources.
India is an agricultural country. India have large portion and many of Indian po
pulation is vegetarian therefore Milk and Milk product assume significance as th
e only source of the animal fat in their diet important source of protein. 70% p
opulation of India stay in rural place and pets animal. A dairy industry is plac
e for handing milk product.
Before 60 70 year ago India has become a long way and journey towards th
e gaols of industrialization and has become sufficient in respect of the consume
r goods. Dairy technology has been defined as the branch of milk and manufacturi
ng of the milk products for industry would be established in India.

INTRODUCTION TO AMUL DAIRY


In Gujarat most of people base on agriculture and pets an animal
for milk. Kaira is famous for milk production. The income that farmers in Kaira
district got from milk was not sufficient as the milk trader s potions limited ex
ploited them. This was privately owned company enjoyed the monopoly for supply o
f milk from Kaira to the Government Bombay milk scheme.
As this problems, the farmers appeared to Sardar Vallabhai Patel
who advised them to market the milk through a co operative of their own and hol
ding a meeting at Samarkha village on January 4, 1996. In this meeting decided t
hat milk Co operative society would be organized in each village of Kaira distri
ct to collect milk from producers and federated into a district union.
In this way, the Kaira district co operative milk producers unio
n limited Anand was established reduction of milk product Amul industry is a sta
te level apex body of milk co-operative in Gujarat which aims to provide remuner
ative return to Farmers and also serve the interest of consumers by providing fo
r quality product which are good value for money. Many branches of Amul establis
h different place like Mother dairy.

PRODUCTION PROCESS

Explosion of the production technology and changes is technical

ives stand to study and favour the come baking subject i.e. production and opera
tion management.
Amul Dairy is a large scale unit. So it use mostly automatic mac
hinery in the production process some production process are divided between dif
ferent types of machines.
Out of the total quantity of milk produced 60 % is used for milk
powder 10 % is sent for local distribution and 10 % for milk product and remain
ing 10 % outside of the state. In this dairy unit many types of items milk are p
roduced some items and their production process.

Reception of Milk:
For production process company must have raw material. The milk
that comes in the plant is brought from the village co operatives with the means
of tankers which bring are and 15,000 20,000 liters of the milk at a time. The
milk that comes in tankers goes to the reception where a sample of milk is taken
to test the temperature, FAT, SNF and Physical Values and also to see the milk
has not turned source and milk is found to be unfit for the production then it s
ent to back IF the milk passes the required norms, then it is pumped out from th
e tankers with help of pipes and transported to the chilling and transported to
the chilling and storage silo.
Storage of Milk :
The milk is taken out of the tankers and brought by pipes which
cool the milk to prevent it from getting sour, as milk is a perishable item; it
has to be taken special case. After the milk is cooled it is stored in huge tank
s from these the milk is brought to be processed as the requirement arises. The
raw milk at the storage of milk is brought into the house connected with the pum
p is sent to the milk processing plant.

Pasteurization
Amul Dairy uses Luipaesar method in milk pasteurization. Pasteur
ization means heating the milk to high temperature and then chilling it. In past
eurization the milk is heated 72. c to 76. c for 15 seconds by passing the milk
through the pasteurization machines with the help of pipes and there it is cool
ed to 4.c immediately By the heating and chilling removes harmful micro organism
s present in the milk and also increase the life of the milk.
Refrigeration plant to cool the milk it manage by computerise. T
his plant capacity to make snow is 1500 Tones. This plant is biggest in India Da
iry Industry.
Packing Process:
After this the milk is sent for packing to the milk packing stat
ion in the dairy plant. In the milk packing station there are huge pipelines and
behind each of them there ispolyfill Machine from which the materials to pack m
ilk come out. There are such ispolyfill Machines in packing station from with th
e Materials to pack milk come out. The materials which is used for packing is ca
lled till from slip and it is manufactured by a firm called.

Production of milk Product:


When there is excess supply of milk convert the into milk produc
t like milk powder, ghee, cheese etc. In production process the milk and milk po
wer the milk and milk product made by machines and help of workers. The differen
t product make in different unit. All unit have own factor for production In pro
duction of milk product. All process manage by computer. Many of machinery and t
echnology imported at out of country in Amul Dairy.
MARKETING
Amul Products have been use in millions of homes since 1964. Amul produc
t has made Amul a leading food brand in India. Today Amul is a symbol of many th
ing and high quality products sold at reasonable price
In Amul 6 lacks farmers joined into Amul dairy at 1953. Now days they are 13
lacks today. There are average 64 lacks liters of milk to take at daily month t
o Amul Dairy the highest milk collection is 11,24,000 liters in Amul at 17th Feb
ruary.
Amul yatra programme is conducted to bring channel partners to Amul so that they
get an exposure to co operative institutions and also come to know about achiev
ements this year emphasis was upon top retails from across the country. This yea
r Amul major instinctive is to further in rear distributor network in smaller to
wn.

Exports:
Amul have performed creditably during the year. Amul have become
the first Indian dairy products exporter to achieve a mark of Rs. 100 crore in
revenues. The year ended an export turnover of Rs.115 crore ( 1.15 billion) more
than trebling export turnover as compared to the previous year.

Amul Dairy Distributed Amul Products by many distribution channels. Amul


dairy is made products available to parts in India. Amul has recently entered i
nto direct retailing through Amul utterly Delicious Parlours created in Major cit
ies Ahmedabad Baroda, Delhi, Mumbai, Hyderabad and Surat etc. Amul has plans to
create a large chain to such outlets to be Managed by franchises through the cou
ntry.
Amul utterly Delicious parlour is an excellent business opportun
ity for investors, shopkeeper and organization. In order to come close to the cu
stomer, Amul has decided to create a modal for entailer outlets which would be k

ployers out of them 35 workers are female and other are men. There are 6 Journal
Officers, 47 Sales officers, 350 whole sellers and 5,00,000 outlets, There are
500 dealership.
Today as we move on to 21st century we stand to face with the mo
st vibrant and dynamic business sceneries that human civilization has been since
the industrial revolution. The changes provide both opportunities and challenge
s for the modern management. Today human factors plays crucial role in the busin
ess process along with other factors. It is this reason that gives HRD a pre emi
nent role in any business organization.
HRD encompasses enormous task of building an organisation of wid
e spectrum of people and eater to their varied requirement as well. Thus HRD inc
ludes a wide range of activities like induction training, performance and apprai
sal besides formulation of policy of the company.

During the period is a negotiation with union promotion was given automatically
to a person who had completed Six years and second promotion is given after 7 y
ear.
Transfer is the pre Relative right of the management transfer is done if it is n
ecessary for the organisation Transfer is affected to build up a work team to ac
hievement some aims.

ence and it provides guide lines me to do work in actual situation.
