Recipe 1: Cheesy Egg Cup Scramble

How do you like your eggs? We like them simple, stress-free and topped with
gooey melted cheese.

Total Cooking Time: 3 mins
List of Ingredients:
Non-stick cooking spray
2 medium eggs
2 tablespoons whole milk
Salt and pepper (to taste)
3 tablespoons cheddar cheese (grated)

Instructions:
1. Coat a mug with non-stick spray.
2. Add the eggs, milk, salt, and pepper to the mug and beat with a fork until well
combined.
3. Put in the microwave and cook on high for 40-45 seconds. Remove and stir
before returning to the microwave for another 40-45 seconds.
4. Sprinkle with grated cheddar and serve!

Recipe 2: Spiced-Apple Cup Oats

Four ingredients are all you’ll need to make this hearty breakfast that will keep
you full until lunch.

cinnamon roll craving, simply whip up this 2-minute cinnamon mug roll.

2 tablespoons coconut flour
1 teaspoon ground cinnamon
¼ teaspoons sea salt
¼ teaspoons ground nutmeg
1 medium egg

1½ tablespoons pure maple syrup
1 tablespoon salted butter (melted)
½ teaspoons vanilla extract
½ teaspoons baking powder

Icing:
1 tablespoon butter
1 tablespoon almond milk
1 teaspoon white sugar

Recipe 4: Berry Breakfast Mug Bake

Soft, juicy strawberries with a buckwheat crunch; the perfect breakfast when you
want something warm, but don’t have time to cook.

¼ cup oat bran
2 tablespoons oat flour

1. Spray a mug with the non-stick spray.
2. Add the flour, white sugar, brown sugar, salt, baking powder, and baking soda
into the mug. Stir well to combine. Crack in the egg and whisk together using a
fork. Add the vanilla, vegetable oil, whole milk, and banana and stir again before
putting it in the microwave for approximately 3 minutes.
3. Allow to cool for a few minutes before digging in.
Recipe 6: Huevos Rancheros

Start your day off with a kick! Use mild or hot salsa depending on how spicy
you like your eggs.

Instructions:
1. Add the oil, scallions, chopped tomato, and cumin into a mug. Stir to combine
and cook in the microwave for 60 seconds.
2. Add the chopped avocado, salsa, chopped cilantro, hot sauce, shredded
cheese, egg, and season with salt and pepper.
3. Push the tortilla chips down into the mixture and cook for another 2 minutes
(until the egg sets).
4. Top with a generous dollop of sour cream and serve.
Recipe 7: Berry Apricot Pancake in a Mug

A sweet and fruity way to kick off your morning.

top and return to the microwave for another minute.
4. Drizzle with maple syrup and enjoy!
Recipe 8: Herby Cheddar Cheese Biscuit

Buttery, soft and packed with flavor; you’d never guess it was thrown together in
a mug.

½ teaspoons baking powder

A muffin in a mug = a muggin. Very scientific.

Not only is this omelet quick and simple, but it’s also super versatile. Swap
bacon and cheese for the toppings of your choice.

Recipe 12: Spinach and Ricotta Lasagne

Just because you cook it in a mug doesn’t mean it can’t be fancy. Mild ricotta
cheese and fresh spinach make a perfect, light lasagne.

List of Ingredients:
2 lasagna pasta sheets (broken into smaller pieces)
¾ cup water
1 teaspoon olive oil
3 tablespoons pizza sauce
4 tablespoons ricotta cheese
3 tablespoons fresh spinach
1 tablespoon cheddar cheese (grated)

Instructions:
1. Add the pasta pieces, water, and oil to the bottom of a large mug.
2. Cook in the microwave for approximately 4 minutes, stirring halfway through.
3. Drain the water away and set the pasta aside.
4. Add a layer of pizza sauce to the now empty mug, followed by a layer of
pasta, some spinach, and then ricotta. Repeat these layers until the ingredients
are used up and the mug is full.
5. Sprinkle the cheddar on top and cook in the microwave for approximately 3
minutes.
6. Allow to cool a little before eating.

Recipe 13: Baked Potato Cup o’ Soup

This thick and comforting soup is a perfect winter warmer.

¾ cup water
3 tablespoons potato (cubed)
1 tablespoon onion (finely chopped)
2 tablespoons cheddar cheese (grated)
1 tablespoon cooked bacon
2 teaspoons cornstarch
½ cup chicken broth
¼ cup whole milk
Salt and black pepper (to taste)
Sour cream (for topping)

Instructions:
1. Add the potatoes and water to a large mug. Cook in a microwave for 4
minutes, until the potato cubes are tender.
2. Drain the excess water and add the onion, cheese, and bacon. Sprinkle in the
cornstarch and use a fork to mix all the ingredients, coating them in the
cornstarch.
3. Add the stock, milk, salt, and pepper.
4. Return to the microwave for another 3 minutes until thick and hot.
5. Stir once more, top with sour cream, and enjoy.
Recipe 14: Sausage Spaghetti Mug Bake

Totally indulgent, super cheesy, sausage spaghetti can be yours in 10 minutes.

List of Ingredients:
2 oz. Italian, sweet sausage meat
½ garlic clove (minced)
1 sprig thyme
½ teaspoons butter
¾ cup spaghetti (broken into shorter pieces)
¾ cup water
¼ teaspoons salt
½ cup half-and-half
⅛ teaspoons ground nutmeg
¾ cup grated parmesan and cheddar cheese (plus extra for topping)
Salt and pepper (to taste)

Instructions:
1. Add the sausage, garlic, thyme, and butter to a mug. Use a fork to combine
and microwave for 1 minute. Use a fork to break up the sausage and cook for
another 90 seconds. Set aside.
2. Add the broken spaghetti, water, and salt to another, large mug. Stir, cover,
and cook in the microwave for 4 minutes. Remove, stir, and return for another 4
minutes.
3. Add the half-and-half, nutmeg, cheeses, salt, and pepper. Transfer the pasta
mixture to the first mug. Top with more cheese and return to the microwave for a
final 3½ minutes (the cheese should be bubbling).
4. Allow to cool a little before eating.
Recipe 15: Bean Burrito

You can customize this bean burrito with any cooked leftovers you have lying
around.

fork, taking care not to rip the tortilla.

3. Cook in the microwave for 80-90 seconds.
4. Allow to cool for a few minutes before topping with sour cream and salsa. Dig
in!

Recipe 16: Pizza Pie

Yes, really! Pizza in a cup: stringy mozzarella cheese and spicy pepperoni. It
doesn’t get better than this.

4 tablespoons all-purpose flour
⅛ teaspoons baking powder
⅛ teaspoons baking soda
⅛ teaspoons salt
3 tablespoons whole milk
1 tablespoon olive oil
1 tablespoon marinara sauce
1½ tablespoons mozzarella cheese (shredded)
6 mini slices of pepperoni
½ teaspoons dried basil and oregano

Instructions:
1. Combine the flour, baking powder, baking soda, and salt in a mug.
2. Add the milk and olive oil and use a fork to whisk together.

4. Cook in the microwave for 70-80 seconds (the cheese should be bubbling).
5. Allow to cool a little before enjoying.

Recipe 17: Chilaquiles

This Mexican mug snack is the perfect go-to comfort food.

Non-stick cooking spray
Handful of salted tortilla chips (crushed)
2 medium eggs
3 tablespoons mild salsa
4 tablespoons queso (shredded)

4. Cook in the microwave for approximately 3 minutes.

Recipe 18: Mug Mac ‘n’ Cheese

Say goodbye to the packet mix. This mac ‘n’ cheese is just as quick to make but
uses fresh, real ingredients.

This dish is healthier than take-out and it’s ready before the delivery man even

2 tablespoons frozen peas

another 90 seconds.
3. Use a fork to mix all ingredients together. Leave to stand for a minute before

Recipe 20: Meaty Mug Loaf

The next time you have a craving for meatloaf but don’t want to search for all
the different ingredients or wash hundreds of dishes; give this a whirl.

A yummy lunch that is cheap, quick, and easy to make? No, it’s not too good to
be true.

1 medium egg
1½ tablespoons whole milk
¼ teaspoons salt

¼ plain bagel (torn into small pieces)

About the Author
Molly Mills always knew she wanted to feed people delicious food for a living.
Being the oldest child with three younger brothers, Molly learned to prepare
meals at an early age to help out her busy parents. She just seemed to know what
spice went with which meat and how to make sauces that would dress up the
blandest of pastas. Her creativity in the kitchen was a blessing to a family where
money was tight and making new meals every day was a challenge.
Molly was also a gifted athlete as well as chef and secured a Lacrosse
scholarship to Syracuse University. This was a blessing to her family as she was
the first to go to college and at little cost to her parents. She took full advantage
of her college education and earned a business degree. When she graduated, she
joined her culinary skills and business acumen into a successful catering
business. She wrote her first e-book after a customer asked if she could pay for
several of her recipes. This sparked the entrepreneurial spirit in Mills and she
thought if one person wanted them, then why not share the recipes with the
world!
Molly lives near her family’s home with her husband and three children and still
cooks for her family every chance she gets. She plays Lacrosse with a local team
made up of her old teammates from college and there are always some tasty
nibbles on the ready after each game.
