Twenty years ago, Don and Linda Eckles were living in California when
they stumbled upon a man building a drive-thru coffee hut. It was the late
90s, and specialty coffee was a hot commodity. Coffeehouses were
popping up everywhere, but they were places to sit and sip, not somewhere
you’d stop if you were in a hurry. They asked themselves, “What if you
combined coffeehouse quality with drive-thru convenience?” And just like
that, a dream was born.
They moved back to Bellevue, Nebraska and opened the very first
Scooter’s Coffee in 1998. From the beginning, they had a simple formula:
find a great location and serve quality drinks quickly, with friendly service,
in a nice clean store. People loved it. Soon, they were opening locations all
around the Omaha area. They stuck to their core business principles every
time they opened a new location, and their drive-thru coffeehouses thrived.
