Cucumber Mignonette

8 cucumbers, skin-on, large dice


1 red onion, large dice
1 cup packed cilantro
1 cup packed mint leaves
1 tsp microplaned ginger
Zest of 2 limes
2 Thai chiles
2 cups rice vinegar
⅔ cup palm sugar syrup
3 Tbsp soy sauce
2 Tbsp lemon juice
Juice of 2 limes

1. In Robot Coupe, process all solid ingredients.


2. Using cheesecloth, squeeze out excess moisture.
3. Combine with remaining liquid ingredients.
