Walnut Pie Filling

walnuts toasted with butter and a small amount of salt, sugar,


black pepper and cinnamon

3 cups light brown sugar


1⅓ cups agave nectar
½ cup maple syrup
8 eggs
2 cups melted butter
2 Tbsp spiced rum
2 Tbsp cider vinegar
4 tsp vanilla extract
1 tsp Maldon salt
zest of 2 oranges
1 cup chopped 68% chocolate

1. Whisk together all ingredients except walnuts.


2. Fill tart shell with walnuts and add custard to cover. Bake until
done.

Note: This recipe will make more than 1 tart.
