INDIAN INSTITUTE OF TECHNOLOGY, KHARAGPUR Date: 26.04.2017 (AN) Time: 3 hours Full Marks 50 No. of students: 50 Spring Semester 2017 Deptt. AGFE Subject No: AG31008 3 year B.Tech/DD. Subject: Post Harvest Engineering Answer FIVE questions. Question No. 1 is compulsory, QI :a) Define adiabatic saturation temperature and wet bulb temperature of air. Discuss their characteristics, (2) ») Derive the relation between relative humidity and percent humidity. A mixture of air and water vapor is heated in a confined place. What changes would you expect in its absolute humidity and relative humidity? Also discuss the changes of the same properties if the mixture is cooled instead of heating. Draw a psychrometrie chart and justify your answer on that drawn diagram. [4] ©) Schematically show and discuss water activity, different reaction rates and microbial growth. 2) 4) A storage bin holds 2000 kg of wet food grain containing 500 kg of water. This grain is to be dried to a final moisture content of 14% wet basis. Calculate the amount of water removed during drying. Q) Q2 :a) Discuss the importance of mathematical modelling of the drying process. i] ) Describe the mechanical expelling and solvent extraction methods used for producing ‘groundnut oil, (242) ©) Ina thin layer drying experiment. following observations were made: Drying time (minutes) |] 15 [30 | 43] 60 ] 75] 90 | M.C. (% d.b.) 755.0 | 328.5 | 139.2] 42.4|15.7|7.8| 7.8 | EMC was 70% of the final moisture content attained during the drying tial. Evaluate the coefficients of a suitable mathematical model based on this experiment. Determine the correlation coefficient for this model. 8) 3 +) Discuss the wet milling process of pigeon pea. Compare it with éry milling? (5) ) Wheat at 11.7% moisture content is smeared with 120 kg of water for conditioning, Assume that all the water is absorbed by grains, The conditioned grains are ground in 2 closed mill without loss of moisture. 25 gram of a subsample from the resultant flour was kept in oven at 120 °C for 2 hours and dry matter of the sample was determined as 20.7 g. Calculate the mass the wheat flour received after grinding, [5] Q4 + a) Enumerating the constituent parts of a corn grain discuss the tempering-degerming process of corn milling. 6) b) A rice mill having a capacity of 3 tonnes of paddy/hour works round the clocl Paddy, being milled, contains 4.6% impurities and 22.4% husk. The brown tice is Polished to a degree of 7.2% and resultant milled rice contains 12.3% broken rice. Calculate the daily production of all the milling products and byproducts. Also calculate total yield and head yield assuming there were no losses. 5] Q5 : a) Explaining the working principle of a centrifugal sheller derive an expression for determining the centrifugal force generated by an impeller. (5] b) Derive an expression relating vertical and lateral grain pressure in a grain bin. [5] Q6 : Explaining the statement, indicate whether it is True or False: [x10] a) Plenum chamber is provided in a dryer to facilitate air turbulence in the drying chamber. b) The two rolls of a rubber roll sheller rotate in anticlockwise direction. ©) Cashewnut is shelled in a centrifugal sheller due to shearing action. 4) LSU dryer with a paddy holding capacity of 16000 kg is a thin layer dryer. ¢) Pressure exerted by the grains in a grain bin is directly proportional to the height of the grain filled. £) Wet bulb depression is very low in desert areas, g) Entoleter is an impacting device used in oilseed milling. h) In grain drying, the falling rate of drying must be compensated by raising the drying air temperature, i) In the parboiling process, starch gets transformed from amorphous to crystalline form. J) Hydroclone is a cyclone occurring in high rainfall areas.
