STEPS TO CERTIFICATION

STEP 1: REGISTER WITH CCFCC


• Choose which branch of the Culinary Federation you wish to join
• You can find out about the Culinary federation and its branches at
https://www.culinaryfederation.ca/
• Complete and submit the CCC Application Form, together with all requested documentation
• detailed resume with work experience and positions dating back a minimum of 8 years
• scanned copy of a certificate of qualification (see Course prerequisites)
• scanned copy of a current Food Handlers Certificate
• scanned copy of an employer's letter confirming your employment positions for the past 5
years
• The application is available at the CCFCC website http://ccicc.ca/ccccmc-application-form/
• Once approved pay the registration fee at the same website
• DO NOT SUBMIT ANY REGISTRAITON FEES UNTIL YOU ARE INSTRUCTED TO DO SO FROM THE
NATIONAL ADMINISTRATOR

STEP 2: CLASSES AT HUMBER COLLEGE


• Once you are approved by CCFCC, proceed to enroll into the CCC classes at Humber College
• All classes must be completed prior to examinations

STEP 3: EXAMS
• Exam 1 (theory): no fee
• Exam 2 (theory, computerized test): $275.00 (Condition: successful completion of exam 1)
• Exam 3 (practical: $600.00 (Condition: successful completion of exam 2)

STEP 4: CERTIFICATION
• Upon successful completion of the Practical 3 Exam

Thank you for your interest in the CCC programs

Program Overview

The classes for the CCC program run from January till the end of April. Each of the 4 classes (Cost
Controls, Human Resources, Menu Writing and Nutrition) runs for 15 weeks, hybrid format (in class and
online). Generally the classes are on Monday but that may change based on the availability of
instructors. The costs for these classes are $425.00 per class. These classes are not mandatory, but
recommended, as they teach the student the language of the exams and increase the success rate
significantly.

The exams are held in April and May. The exam is a 3-step exam requiring the candidate to pass each of
the three sections with a grade of 70% or more on each exam.

• Exam #1: general knowledge exam based on Cost Controls, Human Resources, Menu Writing
and Nutrition. This exam is a three hour written exam.
• Successful completion of Exam #1 is required to proceed to the 2nd exam.
• Exam #2: office day exam, where the candidate will write a six-course menu, write the recipes,
cost the recipes and requisition the foods required for the menu. This exam is computerized
using MS Excel and Word and lasts a maximum of eight hours.
• Successful completion of Exam #2 is required to proceed to the final (3rd) exam.
• Exam #3: practical exam where the candidate will prepare a six-course menu as written the
week before. The candidate must provide their own apprentice for the exam, and adhere to the
timelines indicated on the CCI website.

Application Fee: become a member of the CCFCC $110.00
local branch, i.e., Toronto, Muskoka. It is not
mandatory to become a member, however there
will be added costs
Registration Fee: once approved each candidate $750.00 members
will pay a registration fee to CCFCC $1500.00 non-members
Costs of classes $1700.00
Menu writing exam $275.00
Practical Exam $600.00
TOTAL $3375.00 members
$4200.00 non members

Plus additional costs of books, practice foods, etc.
