Comments Observed inhouse prepared garlic sauce, rice pudding, and other potentially hazardous foods at 51F
under the fruits (stored on top of a rack covered in foil) in the sliding door cooler. Food stored above
the fruits were maintaining 41F. Keep these potentially hazardous foods cold below 41F. Pay attention
to how air flow is maintained in the cooler by taking internal temperatures of the foods stored in the
top and bottom of the cooler periodically. RISK CONTROL PLAN provided.,
