Comments Observed hand washing sinks in the women's room providing water of a maximum
temperature of 52 F. Observed hand washing sinks in men's room were providing water
at 100 F. Men's room hand washing sinks are corrected. Hand washing sinks must be
able to provide hot water of 100 F. Person in charge stated plumber was out and fixed
the hand washing sinks in the men's room but that a new instant hot water heater had to
be ordered for hand washing sinks in the women's room. Correct by repair/adjusting
hand washing sinks so that they provided hot water of 100 F. A follow up will occur in
about 10 days.

recommended concentration of 50­100 ppm. Corrected.

Observed in wait station cooler cole slaw holding at 49 F, house made salsa at 49 F,
sour cream at 50 F, whipped butter 47 F. All potentially hazardous cold food must be
held at 41 F or below. Food had been in cooler for 3 hours and was moved to walk in
cooler. Discard any potentially hazardous cold food that may have been out of
temperature for 4 hours. Correct by repair/replacing cooler so that it holds all potentially
hazardous cold food at 41 F or below. A follow up will occur in about 10 days. This is a
repeat violation fill out provided risk control plan. If this violation reoccurs at the next
inspection further enforcment action may occur.

Observed pizza slicers with build up of old food particles. Can opener must be cleaned
in between uses. In use pizza slicers must be cleaned every 4 hours of continuous use.
Corrected at time of inspection can opener and pizza slicers were sent back to dish
washer for cleaning. Train all employees to clean can opener in between uses. Train
staff to clean pizza slicers every 4 hours and at the end of the night. Corrected.

within 5 days. If this violation re occurs at the next inspection further enforcement action

moved to bottom of prep cooler away from fish in the other prep cooler corrected.

Observed shelves in the walk in cooler have a build up of old food particles and is
growing mold in some places. Non food contact surfaces must be cleaned at a
frequency able to prevent the build up of old food particles and the growth of mold.

routine inspection.
