Vegetarian Sweet & Sour Sauce

Ingredients for Sauce:

● Pineapple Juice…………………………………………………………………… (1 Cup from Can or Bottle)


(Freshly squeezed pineapple juice contains enzymes that will break down the cornstarch and prevent the sauce from remaining thick.)
● Rice Vinegar………………………………………………………………… …… (1/3 Cup)
● Ketchup……………………………………………………………………………… (3 Tablespoons)
● Light Soy Sauce……………………………………………………………… … (1 Tablespoon)
● Dark Soy Sauce………………………………………………………………… (1 Tablespoon)
● Light Brown Sugar………………………………………………………… …… (3/4 Cup Packed)
● Garlic ………………………………………………………………… …………….. (1 Tablespoon Minced Optional)
● Ginger……………………………………………………………………………….. (1 Tablespoon Minced Optional)
● Sesame Oil………………………………………………………………………… (1 Drop Optional)
(Recommend touching the ends of clean wooden chopsticks inside the bottle then use same for stirring in one drop to the mixture.)
Ingredients for Cornstarch Slurry:

● Cornstarch………………………………………………………………… ………. (1-1/2 Tablespoons)


● Water………………………………………………………………… …………….. (1 Tablespoon)
(Dissolve cornstarch in water.)

Directions:
1st Evolution:
Mix cornstarch and water together in a small bowl. Set aside.

2nd Evolution:
Mix pineapple juice, vinegar, ketchup, light soy sauce, dark soy sauce, light brown sugar,
garlic, and ginger in a sauce pan. Bring to a light boil. Stir-fry vegetables with a little
cooking, minced ginger, minced garlic, and a few diced green onion pieces. When
vegetables are half cooked add the sauce in its thin form. When you have cooked the
vegetables to your liking add the cornstarch and water mixture to thicken the sauce and
coat the ingredients. *Thicken this sauce in advance if you are making a dipping or
additional sauce for a finished dish.

3rd Evolution:
When making thickened sauce for future uses allow the mixture to cool completely in an
airtight container and store for 2-3 weeks in the refrigerator.
