The Mediterranean Association of Agrifood, AMIAA, faithful to its main mission, continues to offer
opportunities for meetings of researchers in Agrifood, Tunisian and Mediterranean. On the occasion of these
scientific days JSAA-2018, we wish you all, welcome to the wonderful city of Sousse and excellent scientific
days that meet your expectations. The AMIAA team is open to all your recommendations and suggestions

Dr Imen FENDRI est lauréate de la Faculté des Sciences de Sfax tout au long de son
cursus universitaire. Elle a remporté le Prix du Président de la République en Biologie en 2005.
Elle a obtenu son mastère de recherche et sa thèse en Microbiologie Moléculaire et
Biotechnologie de l’Université Aix-Marseille. Elle a obtenu l’Habilitation à Diriger des
Recherches de l’Université de Rennes 1 (France).

LES MICROORGANISMES DANS LES IAA : CAUSES/EFFETS ET METHODES DE
DIAGNOSTIC

Résumé : Tous les moyens utilisés par n’importe quelle industrie agroalimentaire pour
transformer la matière première issue d'animaux (vaches, poules, etc.) et de végétaux (céréales,
légumes, etc.) en aliment consommé sont toujours face à de sérieux problèmes de
contamination microbienne dès la matière première, tout au long de la chaine de production et
jusqu’au produit fini. La croissance microbienne entraîne soit la conservation des aliments soit
la détérioration selon les microorganismes impliqués et les conditions de conservation.
Dans ce contexte, le développement de méthodes innovantes dédiées au diagnostic
microbiologique et leur application dans les domaines de l'environnement, de l'agroalimentaire
ou de l'industrie biopharmaceutique permettent d'approcher l'étude de la microflore d'un
système complexe. Sans remplacer les méthodes classiques de la microbiologie, les techniques
moléculaires leur sont complémentaires et s'intègrent parfaitement aux outils d'investigation
des microbiologistes.

After his PhD in 2010, Dr. Khélifi received a postdoctoral research grant from the
German Science Foundation (DFG) to start his self-designed research projects at the GEOMAR
Ocean Research Centre in Kiel, Germany on reconstructing past changes in oceanography and
climate in the North Atlantic and the Mediterranean Sea using marine sediment samples
retrieved by the International Ocean Drilling Program (IODP) and applying foraminiferal and
geochemical proxy methods. He presented his research findings at many international
conferences and published in highly ranked scientific journals. Dr. Khélifi also received funding
from the European Science Foundation (ESF) and some European universities to co-organize
two workshops on Pliocene climate in Bordeaux, France (2009) and Bristol, UK (2013). He
also received the Swiss Government Excellence Scholarship (SGES) to continue with his
research projects at ETH Zurich, Switzerland in early 2014.
Although his interest in scientific research remains strong, Dr. Khélifi decided in March
2014 to pursue his career as a Publishing Editor with Springer, a part of Springer Nature, in
Heidelberg, Germany. He is mainly responsible for developing the Springer’s publishing
program in the Middle East & North Africa (MENA). The program currently consists of
developing 15 peer reviewed journals and publishing about 40 scientific books per year. In
January 2017, he got promoted to Senior Publishing Editor with Springer.
Dr. Khélifi also helps researchers in MENA countries publish their work by delivering
educational seminars for authors, reviewers, and journal editors to help improve publication
output and quality. Dr. Khélifi is also a Visiting Lecturer at the University of Carthage, Tunisia
and King Saud University, KSA giving MSc and PhD courses in geo-communication/-
presentations and techniques of paper publishing, as well as career development training and
professional development/soft skills workshops.
Most recently, Dr. Khélifi has been awarded with the 2016 Africa Green Future
Leadership Award.

HOW TO PREPARE A SUCCESSFUL SCIENTIFIC PAPER

Abstract : Publication must be seen as an important, if not the most important, part of the
research process. However, writing research papers for academic journals is not easy and is
also very competitive. After producing data and generating ideas from your research, how do
you write a clear and concise paper that attracts the attention of journal editors? How should
you prepare a cover letter? How should you respond to reviewer reports? A Senior Publishing
Editor from Springer Nature in Heidelberg, Germany shares his advice during two hours on
how to effectively write and structure your paper, prepare a cover page and respond to
reviewers’ comments.

LIPIDES, TECHNOLOGIE ET SANTE DES CONSOMMATEURS

Résumé : Il existe actuellement une tendance générale sur le marché alimentaire qui consiste à
privilégier des produits perçus comme plus naturels ou, en d’autres termes, moins transformés,
moins artificiels. Dans ce contexte, au cours de cet exposé, le point sera fait sur les récents
développements technologiques en matières de lipides en relation avec la santé humaine. Ainsi,
la problématique des acides gras trans et des huiles partiellement hydrogénées sera notamment
abordée. Trouver une alternative qui convienne pour remplacer une huile partiellement
hydrogénée dans un aliment donné est une tâche difficile car elle implique des changements
importants dans les méthodes de fabrication et demande une reformulation majeure du produit.

Prof. Mohamed BOUAZIZ was awarded PhD in Analytical chemistry and Bioactive
compounds from natural substances from Sfax University, Tunisia and Kew Gardens, London
UK. He has extended his valuable service for many years and has been a recipient of many
award and grants. Currently, he is working as a Professor at Higher Institute of Biotechnology
of Sfax University- Tunisia. His research activities cover several issues, namely food
authentication and adulteration, food safety as well as the development of a new generation of
selective, liquid phase extraction applications based on molecular imprinting technology. His
international experience includes various programs, contributions and participation in different
countries for diverse fields of study. His research interests reflect in his wide range of
publications in various national and international journals.

TUNISIAN OLIVE OIL, SO TASTY, SO HEALTHY

Abstract: Different monovarietal extra virgin olive oils cultivars in Tunisia such as Chemlali,
Chetoui, Oueslati, Neb Jmal, Toffehi, Fakharri, Gemri, Zalmati, Gemri-Dhokkar, Chemchali
and Dhokkar having different chemical composition , were investigated in terms of their quality
indices, sterol content, phenolic composition, volatiles composition, oxidative stability and
sensory profiles to show the classification of different olive oil cultivars in Tunisia. The
identification of phenolic compounds was based on separation by high performance liquid
chromatography (HPLC) equipped with Diode Array Detector (DAD) followed by
chromatography-mass spectrometry analysis (LC-MS/MS). However, the qualitative and
quantitative differences in phenolic composition were observed amongcultivars, thus
identifying twenty phenolic compounds belonging to different phenolic types. Indeed, the
sensory evaluation remains the gold standard for assessing aroma. Olive oils are the only foods
where sensory evaluation is a legal requirement. Oil samples are scored and classified according
to three positive attributes: Fruity, Bitter and Pungent. The antioxidant activity of olive oil
extracts was evaluated by DPPH. Olive oil is rich in antioxidants (like vitamin E and poly
phenols). Moreover, it is rich in mono unsaturated fatty acids which, unlike saturated fatty acids.
The results indicate that the cultivar influence the quali -quantitative production of volatiles and
consequently the final aroma of the oil.
