Rsum :
La plupart des bactries ont la capacit de produire des biofilms. Ils sont
la cause de nombreux problmes de nos jours: dans le domaine mdical,
responsables de maladies nosocomiales, ils colonisent les implants tels que les
articulations artificielles ou cathters. En milieu marin, la formation de biofilms sur
les substrats immergs, conduit de graves problmes conomiques et les
bactries pathognes dorigine alimentaire et animale sont la cause de graves
problmes de sant publique dans le secteur de lagroalimentaire qui ont men
l'utilisation de biocides et/ou antibiotiques toxiques pour liminer ces communauts.
Bien que l'radication des communauts de bactries planctoniques ait t
largement contrle, il a t estim que les bactries dans un biofilm peuvent
afficher une rsistance accrue jusqu'1000 fois un traitement antibiotique ou
biocide. Dans ce contexte, la conception de composs originaux qui peuvent limiter
la formation de biofilms bactriens est d'une grande ncessit en vue de l'utilisation
rationnelle des antibiotiques (et / ou biocides).
La connaissance des biofilms tant rcente, il est rare de trouver dans les
pharmacopes traditionnelles des recommandations relatives aux biofilms. Ceci a
conduit diffrentes quipes lancer des campagnes de criblages de plantes
mdicinales de diffrentes origines avec quelques succs permettant ainsi aux
chimistes de mener bien des tudes de relations structure-activit par
hmisynthse ou synthse totale.
Paralllement, le monde marin, dans lequel la comptition entre espces
est importante,est devenu une cible de choix pour la recherche de nouvelles
molcules anti-biofilm. Dans ce domaine, notre groupe a purifi une srie de
produits naturels marins possdant des activits antibiofilm et a lanc un
programme visant tablir des relations structure-activit. A cet effet, des
mthodologies de "click chemistry" ont t retenues pour permettre des criblages
haut-dbit. Les rsultats mettent en vidence que certains composs prsentent une
activit anti-biofilm spcifique.

L'organisation des filires de productions agricoles rpond un objectif
de recherche de valeur ajoute tout au long de la chane de production, de
l'agriculteur au consommateur. Pour accrotre cette valeur, les acteurs de la filire
peuvent agir diffrents niveaux, du choix de la culture l'utilisation finale, en
passant par les tapes de transformation du produit.
Dans le cas de la filire cralire, les innovations permettant
l'optimisation de la valorisation se retrouvent notamment au niveau :
- du choix de l'espce (bl, orge, mas, ) et de la varit cultive (ex.
varit de bl pour biscuit), de l'itinraire agronomique (fertilisation, date et
densit de semis, association culturale, ) et des caractristiques pdoclimatiques
apportant une composition quantitative et qualitative particulire,
- de la premire transformation physique (meunerie, debraning,
micronisation, ) consistant en un fractionnement permettant la production de
nouvelles fractions de compositions (technologique, nutritionnelle) et de formes
physiques particulires, utilisables dans des applications originales,
- des procds modifiant les proprits technofonctionnelles des
composants comme les procds hydrothermiques (ex. schage, extrusion),
- d'oprations de fractionnement et de modifications chimiques et
biologiques (ex. hydrolyses et synthses enzymatiques) en milieu liquide
permettant de sparer les diffrents composants selon leurs proprits
technofonctionnelles et d'optimiser celles-ci en fonction de l'application vise.
Ces dernires annes, certaines voies de valorisation des productions
cralires n'tant pas en relation avec un caractre technologique ou nutritionnel
ont galement connu une forte progression, comme la culture biologique, durable
ou locale. Le caractre naturel des produits est aussi trs souvent valoris.
Globalement, les oprations envisages doivent veiller la valorisation
complte de la matire premire et la qualit sanitaire des diffrents produits doit
toujours tre garantie.

Abstract :
Restructuring technology makes possible to produce value-added
meat products from low quality cuts. Restructured products are commonly
manufactured by using lower quality cuts and meat trimmings reduced in
size by comminution (flaking, chunking, grinding, chopping or slicing).
Technology can improve product characteristics such as texture, fat content,
bind strength, and shape, meanwhile, it can also satisfy the increasing
demand for convenience. Restructured meat products are referred to
variously as restructured, reformed, flaked and formed, chopped
and formed according to the degree of comminution process. The
restructuring process enables producing various types of products such as
steaks, chops or nuggets at any shape and size. The advantages of
restructured meat products are portion control, lower cooking losses,
uniform color, improved texture, and homogenous fat distribution. From the
consumer side, consumers can buy meat products which closely resemble
high-value products, but at a much lower price.
The original process involved separating muscles to remove
connective tissue and visible fat, muscle pieces are than subjected to
protein extraction with salt and phosphates. Mechanical actions such as
tumbling and massaging are extremely important in protein extraction and
homogenous distribution of salt and phosphate. Extracted myofibrillar
proteins are critical to bind muscle pieces together. Appropriate binding
of meat pieces and high water retention are the most important factors in
quality of restructured meat products. These muscle pieces may then be
reformed to produce a shaped product. Restructured meat products can
be bound together through the formation of gels that are thermally-set
(hot-set) or chemically-set (cold-set). Hot - set binding requires heat to bind
the meat pieces, which produces a cooked product, while no heat is
required in a cold set system, various binding ingredients are approved to
produce cold set products. Inadequate binding, oxidation and color
defects are the main quality problems of restructured meat products.

Rsum
Authentifier un produit consiste rechercher sa conformit par rapport
une rfrence tablie par un cahier des charges, une composition, une origine, une
appellationCest un problme dactualit pour de nombreux produits
agroalimentaires : vins, fromages, miels, huiles dolive. Les huiles dolive vierges
(HOV) en raison de leur prix lev, notamment si elles sont valorises par un signe
de qualit (AOC, AOP, IGP), font partie des produits susceptibles dtre falsifis
ou adultrs. Afin de les protger de ces pratiques et doffrir aux consommateurs
le maximum de garantie, elles sont encadres par des normes et rglements
(Conseil Olicole International, Union Europenne, Codex Alimentarius)
rgulirement actualiss. Le Rglement Europen (CE) n2568/91 [1] fixe des
indices de qualit chimique et organoleptique afin de classer les huiles dolive en
diverses catgories. Il dtermine des indices de puret bass sur lanalyse
molculaire des diffrents composs prsents dans les huiles dolive en prcisant
des seuils quantitatifs. Mais lensemble des normes et rglements ne rpondent que
partiellement la question sur lauthentification des origines varitales et
gographiques des huiles dolive ainsi que lappartenance une huile dolive
labellise.
Depuis de nombreuses annes, nous avons dvelopp des mthodologies
pour authentifier les huiles dolive vierges partir soit des fruits soit des huiles
dolive. Ainsi, ltude des caractristiques des noyaux dolive par vision artificielle
et chimiomtrie permet de reconnaitre les principales varits dolive franaises
[2].
La spectroscopie vibrationnelle (moyen et proche infrarouge ou Raman)
associe des mthodes prdictives de chimiomtrie (SIMCA, PLS et PLS-DA) a t
applique avec succs des huiles dolive vierges franaises labellises (AOP)
ainsi qu des huiles tunisiennes pour dterminer leur authenticit [3, 4].

Rsum:Actuellement pour le bl tendre et ses produits drivs, la notion de qualit
nest plus apprcie uniquement par des proprits organoleptiques et des aptitudes
technologiques Ainsi, certains critres de la qualit sont lis la composition chimique
ou molculaire de divers constituants du bl. Dans ce travail, des varits de bl
tendre ont t caractrises sur le plan molculaire en utilisant des amorces
microsatellites (SSR). ainsi, 13 varits reprsentatives des groupes ou des sous
groupes ont t slectionnes et ont fait lobjet dune analyse technologique et
molculaire en utilisant 4 amorces spcifiques amplifiant des QTL associs la qualit
nutritionnelle et technologique (gwm 5, gwm 68, gwm 369 et cfd 079). Les profils
obtenus montrent que la majorit des varits testes possde des QTL de teneur en
protines du grain, des QTL de force de pte, des QTL de volume de pain, des QTL
de note de pain, des QTL de note totale et sont donc de bonne qualit technologique
et nutritionnelle. Par contre les varits V3 (Tahent), V7 (Ariana) et V22 (Gadess) sont
plutt des varits qui ressemblent au bl dur puisquelles ont montr des QTL de
duret et sont plutt de bonne qualit semoulire. Cest ce qui a t confirm par
lanalyse physico-chimique. La bonne qualit technologique sest traduite galement
par une richesse en amidon et des teneurs en protines leves mais aussi des teneurs
en gluten satisfaisant se traduisant, au niveau de la pte, par un quilibre entre
llasticit et lextensibilit. Nanmoins, nous avons not que pour les varits: V7
(Ariana), V9 (Inia) et V14 (Utique), la teneur gluten est insuffisante pour avoir une
bonne panification. Pour ces varits, la pte se caractrise par un excs
dextensibilit qui pnalise la tnacit et se traduit par plusieurs dfauts rhologiques
au sein de la pte.

Rsum : Lobjectif est dvaluer les effets du numro de lactation (4me ou
6me) et de la saison sur la composition chimique au cours de la lactation de
125 vaches Holsteins de la wilaya dEl-Tarf, au Nord- Est algrien. Un suivi
dlevage dtaillant les modes de conduite des vaches a t adopt. Les taux
butyreux (TB) et protiques (TP) de prlvements mensuels de lait de mlange
ont t analyss.
Nos rsultats montrent que le numro de lactation agit sur les paramtres ( TB
et TP). Le lait le plus riche est obtenu en 4 me lactation (TP= 32,77,9 et
TB=33,2 0,8). les taux butyreux et protiques taient minimaux en hiver. Un
temps daccs important au pturage est accompagn par une amlioration
des taux protiques (+1,25 g/l en moyenne en 4 me lactation et +1,35
g/l en moyenne en 6me lactation). De mme, les taux butyreux ont augment
(+0,15 g/l en 4 me lactation et +0,65 g/l en 6me lactation). Les taux
butyreux observs sont faibles par apport aux normes europennes (40,7
g/l). Cette tude a permis en vidence leffet favorable du facteur
alimentation ; cependant il est vraisemblable quelle nest pas bien matrise
comme le montre la diminution des taux protiques et butyreux en hiver.
Dans ces conditions pratiques d'levage, la vache Holstein a produit un lait
31,37 1,93 de TB et 32,26,1 de TP.

Rsum : Le lait est un lment nutritif complet, compos de glucides, de lipides, de
protines, de minraux et de vitamines. Malgr les richesses et les bonnes proprits
fonctionnelles des laits dautres ruminants, le lait de vache reste le lait le plus utilis
pour la production industrielle des produits laitiers allgs type mousses. En effet, les
proprits glifiantes et moussantes du lait de vache ont t extensivement tudies
comparativement aux autres types de laits. Peu de donnes sont en revanche ce jour
disponible sur la capacit moussante et la stabilit moussante des laits de dromadaire,
de chvre et de brebis. Notre tude a principalement port sur une caractrisation
physicochimique des quatre types de lait et sur la dtermination de limpact de
diffrentes conditions opratoires (concentration en sel, pH, temprature et
concentration en gommes) sur la capacit moussante et la stabilit moussante du lait
bovin, camelin, caprin et ovin. La caractrisation physicochimique des diffrents types
de lait a montr une richesse en matire grasse, en protines et en minraux
(notamment le calcium, le sodium et le potassium) et a dmontr que leur valeur nutritive
nest pas ngligeable et peut constituer un solide appoint notre alimentation
quotidienne. Lvolution de la capacit moussante en fonction du pH et de la
concentration en chlorure de sodium montre que le lait de dromadaire prsente une
capacit moussante beaucoup plus leve que celle des autres types de lait. Toutefois,
la mousse produite par le lait de vache perd sa stabilit ds quon augmente la
concentration en sel. En fonction de la temprature, lvolution de la capacit
moussante et de la stabilit moussante est semblable celle pour le lait de vache.
Cependant, le lait camelin est dpourvu de la -lactoglobuline. Quant aux gommes, la
prsence de la gomme de xanthan permet daugmenter la capacit et la stabilit de
la mousse plus que la prsence de la gomme de guar pour tous les laits lexception
du lait de chvre dont la prsence de la guar augmente significativement sa capacit
de produire la mousse. Bien entendu, ce travail peut tre consolid, tant sur le plan
scientifique que technologique, par une tude encore mieux dtaille sur les protines
et par des essais de formulation et de production de produits allgs lchelle
industrielle.

Rsum : Faba bean powder was used for its capability and efficiency to
improve bacterial survival and growth during yogurt storage. Microbial
analyses, pH and total titratable acidity (TTA) were measured in yogurt
samples, containing starter cultures with or without probiotic bacteria,
(Lactobacillus acidophilus and Bifidobacterium animalis Bb12) supplemented
with whole ground faba bean during 28 days in cold storage at 4 C. Faba
bean flour supplementation (4%) enhance and maintained overall microbial
counts (starter cultures and probiotics) over a 28-day storage period,
increased titratable acidity linearly from day 1 to 14,and reduced pH during
this period. Bacterial count was strongly and positively correlated with lactic
acid content and inversely associated with pH. Faba bean contributed to the
additive effect on viable cell counts and pH of the probiotic co-culture (L.
acidophilus and B. animalis). Hierarchical cluster analysis based on the
microbiological, titratable acidity and pH data differentiated yogurt
corresponding to the presence or absence of faba bean supplementation.
Faba bean flour maintains probiotic stability and extend shelf life of yogurt.

Abstract: The effects of addition of oregano (0.25% v/v) and thyme (0.25%
v/v) essential oils (EOs) on microbiological, biochemical and sensory
characteristics of a Tunisian dry fermented poultry meat sausage were
investigated. The antimicrobial activity of oregano and thyme EOs improved
the hygienic quality of dry fermented sausages by reducing the
Enterobacteriaceae counts, total coliforms counts and S. aureus counts. In fact,
their numbers are significantly lower in sausages added with oregano and
thyme essential oils than those measured on control samples. Proteolysis was
not significantly (p > 0.05) affected by the addition of EOs during ripening
of sausages. In fact, the most abundant free amino acids detected in the final
product were arginine, glycine, threonine, alanine, tyrosine, aspartic acid,
glutamic acid and lysine. Regarding lipolysis and lipid oxidation it can be
deduced that the addition of oregano and thyme EOs decreased significantly
the TBA values during the last two weeks of ripening, but lipolysis was not
significantly affected. Moreover, the acid present in greater percentage was
the oleic acid followed by palmitic acid, linoleic acid and stearic acid. Results
concerning the instrumental texture showed that no significant differences were
observed between control sausages and sausages added with oregano and
thyme EOs; however, hardness and elasticity were affected by time
ripening.Finally, the addition of EOs did not significantly affect the sensory
properties of sausages

Rsum : One of the most important aspects in the development of healthier
meat products concerns reformulation processes based on the replacement of
animal fat with another fat replacers whose characteristics are more in line
with health recommendations. Special interest should attach to the
development strategies to elaborate these replacers, which do not imply loss
of quality in the new meat derivative. In this connection, the aim of this work
was to examine the suitability of emulsion gels prepared with olive oil, chia
(flour) and gelling agents (transglutaminase, alginate or gelatin) for use as
pork backfat replacers in reduced-fat frankfurter formulation. Nutritional
advantages, texture and microbiological populations of frankfurters were
determined. Also the effect of chilled storage was evaluated. Frankfurters with
emulsion gels showed significant improvements in fat content [lower saturated
fatty acid (SFA), higher mono- and poly-unsaturated fatty acid (MUFA and
PUFA) contents]. Textural behaviour of samples was significantly affected by
the presence of emulsion gels and storage. Frankfurters contained lower levels
of microorganisms than reduced-fat control during the storage. A significant
formulation-dependent difference in the Total Viable Count (TVC) and Lactic
Acid Bacteria (LAB) was also observed. Results showed that the replacement
of animal fat by chia emulsion gels opens up new possibilities for incorporation
of nutritional and healthy components in frequently consumed meat products
such as frankfurters

Rsum: In an attempt to determine the influence of age and maturity index on olive
oil quality and quantity, this research work is undertaken to evaluate the effect of olive
tree age and harvesting date on the pomological parameters of olive fruit and the
analytical analysis of Oueslati olive oil, such as ripening index, quality indices, oil
content, fatty acid composition and oxidative stability were analyzed. Principal
component analysis (PCA) was applied to the data of the pomological parameters and
to the analytical analysis to explore their capacity for the differentiation of the quality
of oil according to the tree age and the harvesting period of the Oueslati olives.
Common plots have shown that different olive oils are clustered in different tree
age/harvest period groups and each group could be clearly distinguished.

Rsum: L'hygine des aliments est un enjeu qui intresse non seulement
laviculteur et l'leveur de bovins mais aussi le consommateur qui cherche
perptuellement tre protg au maximum contre dventuelles Toxi-Infections
Alimentaires. De nouvelles mthodes de typage molculaire de haute rsolution
ont t appliques pour la caractrisation de souches bactriennes pathognes.
Ces mthodes de typage bactrien permettent de caractriser, d'un point de vue
phnotypique ou gnotypique, une souche bactrienne et de la diffrencier d'une
autre souche appartenant la mme espce. Cette tude a vis le typage
molculaire de Salmonella, des Chlamydiales, de, Brucella, Listeria, Coxiella,
Campylobacter etc. Les bactries appartenant au genre Salmonella et
Campylobacter sont souvent associes des Toxi-Infections Alimentaires.
Moyennant la PCR en temps rel, ERIC-PCR et l'lectrophorse en champ puls,
nous avons pu dtecter et typer plusieurs bactries pathognes provenant de
plusieurs matrices alimentaires. Dans cette tude, nous avons pu dtecter pour la
premire fois en Afrique Waddlia chondrophila en tant qu'agent d'avortement
des bovins. De mme, une deuxime PCR en temps rel a t mise au point dans
le but de la dtection des Salmonelles provenant de diffrentes denres
alimentaires. Diffrentes souches de Salmonella appartenant diffrents
srotypes ont fait l'objet d'un typage molculaire par le biais de l'lectrophorse
en champ puls (ECP) et de l'ERIC-PCR. A l'aide de l'ECP et/ou de l'ERIC-PCR, une
grande varit de profils a t observe entre les diffrents srotypes et mme
au sein d'un seul srotype. Cette diversit s'est aussi rvle particulirement
importante lorsque les souches de Salmonelles sont issues d'origines alimentaires
varies et mme au sein de la mme origine d'chantillonnage. Les mmes souches
de Salmonella ont aussi fait l'objet d'un typage molculaire par PCR en temps
rel. 6 gnes associs la virulence ont t utiliss afin d'analyser leur distribution
chez les souches de Salmonella isoles et d'tudier la diversit gnotypique de la
virulence des Salmonelles. Il est noter que les gnomes complets de plusieurs
agents infectieux sont dsormais disponibles. Lanalyse de ces gnomes devrait
donc permettre daboutir une meilleure comprhension des mcanismes de
rsistance et de virulence des microorganismes et par consquent la mise en
uvre de rponses adaptes pour la matrise de la chane alimentaire.

Abstract: Gamma irradiation is one of the most popular ray treatment in food
industry. It's used to control the proliferation of microorganisms in a wide
variety of products. However, Little is known about its effect on gene
expression in bacteria.
In this study we mainly focus on Listeria monocytogenes virulence after gamma
irradiation treatment. The expression levels of three virulence genes (hlyA, fri
and prfA) were studied after low -doses (0.5KGy and 0.7KGy) by using real
time PCR technique (qRT-PCR).
The results have shown that the low doses gamma irradiation were able to
induce pathogenic genes expression. We have also found that the prfA
expression was very sensible to gamma rays and its induction was strongly
related to other pathogenic genes expression.
This investigation open prospects for further studies to explain the regulatory
mechanisms of the adaptive response in Listeria monocytogenes which is
exposed to irradiation-stress.

DOES ORGANIC FARMING IMPROVE FRUIT QUALITY OF

Rsum : Experimental assay was conducted in Chott Meriem (tunisian central east
region) to monitor differences in tomato (Lycopersicon esculentum Mill.) fruits from
organic and conventional farming. Several fruit traits were investigated, i.e.
morphological fruit quality (average fruit length, width, diameter and weight),
nutritional value (fruit acidity, lycopene, -carotene, anthocyan and phenolic
contents) as well as technological features (brix, dry matter and firmness) were
analyzed for both organic and conventional fruits. Tomato fruits were harvested
at three dates during growing period. Recorded data were analyzed according
to a general linear model (GLM) where growing system and harvest date are
considered as factors and recorded data as parameters. GLM analysis showed
significant effect of farming system on brix, pH, acidity, dry matter, lycopene
content and fruit firmness. Whereas, harvest date had significant effect only on
fruit dry matter, flavonoid content and fresh fruit weight. Besides, GLM analysis
gave evidence on interaction occurrence between farming system and harvest
date with significant effect on dry matter, fresh weight, length, width and diameter
of tomato fruit. Thus, farming system effect was further investigated for each
harvest date. At 1st harvest date, significantly higher brix, acidity, fruit weight,
fruit length but lower firmness of organic tomatoes were recorded. Furthermore,
significantly higher acidity and lycopene content but lower firmness were observed
at second harvest time. Finally, significantly higher brix, acidity and dry matter
but lower pH and fruit diameter were found at third harvest date. Significant
effect of farming system was shown to be dependent on time factor. A few
parameters, i.e. fruit brix, acidity and firmness, seem to behave similarly along
the whole production period. Since the sugars (brix) and acidity are the main
parameters affecting fruit taste, organic tomato fruits with higher brix and higher
acidity would explain consumer preference for organically produced fruit.
Nevertheless, lower organic tomato firmness may be considered as a
disadvantage for commercial issue. Further research will be carried out in order
to confirm current results and better investigate organoleptic traits of organic
tomato fruits.

Rsum : Le miel est dfini comme la substance naturelle sucre, produite par
les abeilles mellifiques partir du nectar, des fleurs ou des scrtions
provenant de parties vivantes de plantes ou dexcrtions dinsectes butineurs.
Le but de cette tude est de caractriser quelques chantillons du miel collect
du Nord-Est de l'Algrie. Par consquent, vingt chantillons artisanaux de miel
(13 polyfloraux et 7 monofloraux) ont t analyss et ensuite caractriss sur
la base de leurs paramtres physico-chimiques (humidit, le pH, l'acidit libre,
la conductivit lectrique, la teneur en cendre et la teneur en sucre : fructose,
glucose, saccharose, maltose et le turanose). Les rsultats ont montr que ces
rgions sont caractrises par une faible humidit. Une analyse statistique a
t effectue afin d'identifier les paramtres les plus significatifs et les
mthodes danalyses statistiques multivaries ont t utilises telles que
l'analyse en composantes principales (ACP) et la classification hirarchique
pour classer les trois types de miels. L'APC a indiqu que la variance cumule
tait de 81,74% avec les quatre premires variables PC. Par consquent,
l'utilisation des mthodes statistiques multivaries sur les paramtres physico-
chimiques et les principaux lments peut tre un outil utile pour caractriser
les diffrents types de miels.

Rsum : Two local varieties of apricot were involved in this work: Oud
Hmida and Oud Aouicha, both originating from the region of Testour
(North-west of Tunisia). Morphological parameters (fruit size, weight, length,
thickness and flesh weight), nutritional parameters (acidity, total sugars,
vitamin C, lycopene, -carotene, phenolic and anthocyan contents) as well as
technological features (maturity index, firmness, brix, juice and dry matter
contents) were analyzed for both organic and conventional fruits in 2014. For
all morphological parameters, statistical analyses showed significantly higher
values with conventional apricot fruits for both varieties. Whereas organic
farming system significantly improves total soluble solids as well as total
sugars content for both apricot varieties. On the other hand, total flavonoid
level of organic fruits was significantly higher (p<0.01) in Oud Hmida
apricot variety only. Even though no significant differences were observed in
all other parameters, results showed higher levels of polyphenols and -
carotene contents in Oud Hmida organic fruits. Hence, organic farming
seems to improve nutritional value of Oud Hmida fruits.
Further work will be carried out aiming to better investigate quality
differences, as well as chemical residues contents, in organic and conventional
apricots.

Rsum: The essential oil composition of Thymus vulgaris L. and Rosmarinus
officinalis L. endemic to France were determined by GC and GC-MS. Oils
were assessed for their antioxidant and antimicrobial activity. 31 and 37
different compounds were identified representing 99.64% and 99.38% of
the thyme and rosemary oils respectively, where oxygenated monoterpenes
constituted the main chemical class. Thymol (41.33%) and 1.8-cineole
(24.10%) were identified as the main constituents of T. vulgaris L. and R.
officinalis L., respectively. Antioxidant activity was determined using a
quantitative DPPH (1,1-diphenyl- 2-picryl hydrazyl) assay. Thymus and
rosemary EOs exhibited effective radical scavenging capacity with 50%
inhibitory concentration (IC50) of 437 5.46 g/mL and 189 2.38 g/mL
respectively and therefore acts as a natural antioxidant agent. The
antimicrobial activity of these species has also been studied against several
foodborne pathogens and food isolated Salmonella spp. including S.
enteritidis of significant importance. According to the results, T. vulgaris L.
showed higher bactericidal effect than those from R. officinalis L. These results
suggest that the essential oil from T. vulgaris L. and R. officinalis L. have
potential to be used as a natural cytotoxic, antioxidant and antimicrobial
agent in food processing.

Rsum: Ammonium sulfate fractionation is carried out for the first time on oil
mill waste water (OMWW) to recover the protein fraction. The main purpose
was to isolate a new biopolymer using new fractionation technique. A dark
and complex polymer composed mainly of proteins, polyphenols and
carbohydrates was obtained. In this study, calibrated weight gel filtration
chromatography was carried out to determine the distribution of protein-
polyphenol complexes relative molecular size which was roughly between 670
KDa and 1 KDa. SDS page show the presence of a well separate protein
bond of 21.3 KDa. DLS measurements show the presence of small (37.3 nm)
and large aggregates (371.4nm). OMWW protein-polyphenol polymers
contain stable radicals detected by electron paramagnetic resonance (EPR)
spectroscopy. In addition, our sample shows to have strong absorption in the
UV/VIS range (from 280 to 600 nm). These results suggest that our polymers
behave like melanin or humic acids in solution. The investigation of radical
scavenging activity toward the stable 4-hydroxy-Tempol using EPR
spectroscopy show that OMWW protein-polyphenol complexes has a strong
scavenging activity (65.46 1.20%) at a defined protein concentration.

Rsum: Loliculture tunisienne joue un rle trs important aussi bien dans la vie
sociale quconomique du pays. En effet, lhuile dolive se situe au premier rang des
produits agroalimentaires exports (plus de 40% des exportations agricoles). La
varit Chemleli est la varit la plus cultive en Tunisie, elle prsente prs de 60%
effectif total des oliviers. Sur la cte, elle fait lobjet annuellement de traitements
phytosanitaires contre la mouche de lolive Bactrocerae Oleae . Dans un objectif
damlioration des ressources phytogntiques de lOliver, une tude a t effectu
lInstitut de lOlivier vise lamlioration des caractristiques des huiles issues dhybrides
de la varit Chemleli. Cette tude consiste dterminer limpact des attaques de la
mouche de lolive sur les hybrides retenus Hybride 1: Chemleli Coratina; hybride 2:
Coratina Chemleli et hybride 3: Chemleli Lucques et sur les caractristiques
physicochimiques et sensorielles des huiles qui en sont issues. Dans ce cadre, on a rcolt
des olives saines et infests de 3 dhybrides issus de diffrents croisements : pour
prparer une huile diffrents degrs dinfestation par la mouche de lolive 0% ; 5%
; 8 % ; 10% ; 12% et 100%. Ltude des caractristiques physicochimiques est base
sur 7 principaux paramtres qui sont lacidit libre ; lindice de peroxyde ; lextinction
spcifique ; la teneur en chlorophylles ; la teneur en Carotnodes ; les polyphnols et
les tocophrols suivie dune tude sensorielle afin de dterminer la qualit
organoleptique dhuile. Les rsultats ont montr des dgts importants de ce flau
Bactrocera oleae sur la production au point de vue qualit et quantit par la
diminution de ses substances phnoliques et laugmentation de l'acidit jusqu 1.8%
pour lhybride 3, il apparait que lindice de peroxyde K232 augmente dune faon
significative 100% dinfestation avec 14 mqO2/Kg chez lhybride 1,15
mqO2/Kg chez lhybride 2 et 17 mq O2/Kg chez lhybride 3. Lhybride 1 est le
plus rsistant lattaque de la mouche de lolive. Lhuile dolive issue des fruits avec
de hauts niveaux dinfestation est dclasse et parfois hors normes vierge extra On
dduit daprs notre enqute que lanalyse sensorielle est le paramtre liminatoire
de la classification de lhuile dolive. En prenant lexemple dune huile renfermant une
faible acidit mais elle est dclasse car le panel teste lignorer Le seuil de nuisibilit
est de 8% et non pas 10%

Rsum : The main purpose of this investigation is to valorize grape
seed, flour (GSF) and fiber-rich powder (FRP), as substitution of wheat
flour. This study was conducted in two distinct parts. In the first part we
compared the effects of (GSF) and (FRP), additions at the levels
ranging from 0 to 6% (to 10% for the dough analyses) on the
rheological behavior of the dough, and the qualities of cakes. The
rheological properties of dough were not significantly altered by the
additions. Cakes added with FRP have shown a higher crumb hardness
compared to samples added with GSF at same rates. Cake samples
added with 6% GSF presented the highest L* index (44.33) and were
well appreciated by the panelist.
In the second part, we studied the effect of wheat flour substitution with
GSF at rate ranging from 0 to 6%, on cookies qualities and microbial
stability of the product during storage. The addition of GSF reduced
the expansion of the dough and yielded to cookies with a dense
structure, low specific volume and low hydratation level. The
dimensional characteristics of cookies with different rates of GSF
incorporation are equal. It can be concluded that the incorporation of
GSF has not induced a drastic changes in the structure of cookies.
Regarding, the microbial stability of cookies studied at different
temperatures (4C, 25C, and 30C), no correlation between the germ
content and the rate of GSF incorporation was found, the only obvious
finding is the absence of germs in samples containing 6 % of GSF at
the different tested temperatures.

Rsum : La tendance alimentaire puise de plus en plus dans les protines
dorigine vgtale et ceci grce un faible cot de revient, un caractre
sain, une abondance relative et des proprits fonctionnelles fortement
recherches dans de nombreuses industries alimentaires.
Le cumin noir (Nigella sativa), constitue une source de protines vgtales,
prsentant un intrt nutritionnel, industriel et pharmaceutique. La fraction
lipidique des graines de nigelle a t tudie. Cependant, la fraction
protique galement prdominante au niveau des graines de nigelle reste
jusqu nos jours non tudie.
Pour ce faire, la composition physico-chimique des graines de cumin noir a t
tudie et les fractions protiques de cumin noir dorigines tunisienne et turque
ont t extraites. De plus, les proprits techno-fonctionnelles de la fraction
tunisienne ont t caractrises en vue dune valorisation alimentaire des
protines extraites.
Ltude compositionnelle a rvl les pourcentages suivants de la varit
tunisienne et turque respectivement : protines 22,3%, 21,6% ; lipides 29,1%,
39,3% ; cendres 5,1%, 6,3% ; carbohydrates 43,4%, 32,5%. Lextraction du
cumin noir dorigine tunisienne et turque a donn un contenu protique
considrable suprieur 50%, nanmoins cette extraction pourrait tre
optimise avec la mthodologie des plans dexpriences. Suite lextraction
acide-base, des proprits techno-fonctionnelles intressantes des protines
de cumin noir ont t mises en vidence. En effet, une solubilit de 100% de
lextrait protique de Nigella sativa pH=10 et une prcipitation au pH
isolectrique (pH 4,5) ont t remarques. Une bonne rtention de la flaveur
au cours des procds de transformations alimentaires amliorant ainsi
lapptence grce une capacit de rtention de huile CRH gale 659
g/100g (extrait lyophilis), un pouvoir de rtention deau gale 89,33
g/100g (extrait lyophilis) et une capacit moussante CM gale 33,33%
avec une stabilit moussante importante 94,73% aprs une heure ont t
constats.

Rsum : Plants belonging Dacryodes and Irvingia genus have great
economic importance in Central and West Africa. Irvingia gabonensis (IG)
produces a seed rich in fats, traditionally used as a soup thickener. Fruit of
Dacryodes edulis (DS) contains a pulp how are also rich in fat. Its seed
constitute a big waste problem in towns and village remains not exploitable
by local people however that may be valued as a resource for various
components. Some study shows that this seed contented a proportion of oils
that would be an alternative in the substitution of diesel relevant to their
physicochemical properties. Despite the potential of two different oils, theirs
scientific data still lack. In this work, thermo-physical behaviour of those two
oils is compared in the aim to improving knowledge about properties of those
oils that will promote their valorisation in industry scale. The result of this
investigation showed that IGO have a highest proportion of oil content with
72.38% compared to DSO (14.64%). IGO is rich in myristic (49.8%) and
lauric fatty acid (37%) but DSO sample was found to possess a higher
proportion of linoleic acid (35.13%), palmitic (32.67%), oleic (17.70%) but
lower proportion of stearic (9.97%). SFC of IGO was the highest at all
temperatures. IGO is solid at room temperature with a complete melting at
40C but DSO is liquid at room temperature. The polymorphism profile of
IGO and DSO shows the form stable during heating and a transition to
liquid state without passage at form.

Rsum : Actually, essential oils and their components are gaining increasing interest
in food industries as natural antioxidants because of their relatively safe status and
their wide acceptance by the consumers. On the other hand, their use to prevent the
proliferation of pathogen microbial species in food preservation is less damaging to
the human health regarding their limited toxicity and side effects. Therefore,
investigations regarding essential oils for the discovery of bioactive compounds with
antioxidant and antimicrobial properties from plant origin which can provide an
alternative to the employ of synthetic chemicals in food industry are experiencing a
renewed interest. Tunisia, located in the Mediterranean basin area has a breeding
ground for the development of a large number of industrial crop species. This study is
the first to investigate and characterize the chemical composition, antioxidant and
antimicrobial activities of Mentha rotundifolia L. essential oils in Tunisia based in two
provenances. Our findings show that essential oils from Beja locality were most complex
and present 45 compounds representing 96.83% of the total oil composition. The major
components of the studied oils in this site are -Caryophyllene (26.67%), Germacrene
D (12.31%) and Carveol (7.38%). Concerning Bizerte site, 40 components representing
95.81% of the total oil were identified. Bizerte essential oils are dominated by
Pulegone (32.09%), Piperitenone oxide (17.28%) and 5-Acetyl Thiazole (11.26%).
Considerable levels of antioxidant activities of the investigated essential oils were
highlighted with a variation according to the studied site. The revealed antioxidant
activities may be attributed to the concentrations of major components and the
presence of some phenolic compounds like Diosphenol and 2-Allyl-4-methylphenol.
Furthermore, the investigated oils showed important antimicrobial activities against all
tested microorganisms. The highest antimicrobial activities were observed against
Gram+ bacteria followed by Gram- ones then fungal species. Those results valorize
Tunisian germplasm of Mentha rotundifolia L. which can be a good candidate for
further investigations and promise M. rotundifolia essential oils as a reservoir of
antioxidant and antimicrobial agents which can be useful in food industry.

EVALUATION IN VIVO DE LACTIVITE ANTIDIABETIQUE
DUNE ESPECE LOCALE DAIL ALLIUM SATIVUM

Rsum : ,Le diabte constitue sans aucun doute lune des maladies
prpondrantes de ce dbut du XXIme sicle. Il touche une partie
active de la population et engendre de multiples problmes mdicaux,
conomiques et sociaux. Le traitement de cette maladie constitue une
des plus grandes proccupations scientifiques travers le monde.
Actuellement, la recherche des nouvelles substances partir des
plantes attire tous les flashes et constitue une tape substantielle dans
le dveloppement des nouveaux mdicaments. L'objectif de cette
tude est la recherche de l'effet antidiabtique d'une espce locale
d'Allium sativum chez le rat mle Wistar adulte en valuant le gain du
poids corporel, la glycmie, la teneur hpatique en glutathion ainsi que
l'tude histologique du pancras endocrine.
Il s'agit d'une tude exprimentale mene au laboratoire sur 28 rats
rpartis en quatre lots de sept rats chacun dont 3 lots sont rendus
diabtiques par l'injection intrapritonale de 150 mg/kg d'alloxane.
L'extrait d'ail est administr chaque jour par voie orale deux
concentrations 250 mg et 500 mg/kg du poids corporel. Des rats
recevant de l'eau distille sont utiliss comme tmoins et diabtiques
non traits. Aprs trois semaines de traitement, les rats sont sacrifis et
les diffrents paramtres sont dtermins.
Par ailleurs, le traitement des rats diabtiques par l'extrait d'ail a
montr un effet anti-hyperglycmiant et anti-oxydant dose-dpendant
et une activit cytoprotectrice vis--vis le pancras en prservant la
capacit de la scrtion d'insuline.

Rsum : Tomato is one of the most widely consumed vegetables. It is an excellent
source of many nutrients and secondary metabolites such as mineral matter,
vitamine C and E, carotne, lycopene, flavonods, and phenolics. Also, tomato
seeds are rich in lipid. The oil contains more than 84% unsaturated fatty acids,
such as oleic acid and linolenic acid and has a higher antioxidant activity.Drying
is the most common form of tomato preservation and extends the food self-life,
but it affects the chemical, physical and organoleptic properties of dried tomatoes.
However, Lactic Acid Bacteria (LAB) have a long tradition as food-grade bacteria
that play major roles in the biopreservation of fermented foods. Furthermore,
conservation with oil to preserve vegetables is common domestically and
commercially. The aim of this work is to compare the efficacy of the application
of LAB and 0.8% (w/w) of tomato seeds oil, in physicochemical characteristics,
bioactive compounds, antioxidant capacity and microbiological quality of air
dried tomatoes. Results showed that the application of Lactobacillus plantarum
and tomato seeds oil before drying favors the increases of the bioactive
compounds such as total phenolics, total flavonoids, carotenoids and lycopene.
These increases are accompanied with a better antioxidant activity both for
tomatoes fermented with LAB and the other treated with oil. The measurement of
antioxidant activity, established by DPPH assay showed that the highest activity
was observed in samples treated with LAB (CE50=0.120.03 mg/ml) than the
sample treated with oil (CE50=1.580.1 mg/ml). This enhancement may be due
to the antioxidant activity of L. plantarum and to its capacity to convert phenolic
compounds, forming volatile phenols that participate positively in the increase of
antioxidant activity. Moreover, fermentation and oil addition reduced the
development of total mesophilic aerobic bacteria, total coliforms and yeasts and
moisture than the control fruits. We can note a decrease on 42% and 39.6%
respectively of total coliforms, and 13.7% and 16.8 of yeasts and moisture than
the control fruits. The enrichment of dried tomatoes with LAB and tomato seeds oil
might be an alternative approach to elaborate new functional foods.

Rsum : L'aliment reprsente la principale composante de la production animale. Il
intervient par sa composition et sa valeur nutritive. Actuellement, l'alimentation des
animaux est devenue une technique matrisable. Dans ce cadre, quatre formules pour
alimentation pour volailles ont t prpares base des dchets des restaurants
collectifs et de deux matires vgtales MV1 et MV2.
Afin d'valuer l'efficacit des diffrentes formules prpares, une tude zootechnique
a t entreprise. Pour ceci, deux formules prpares ont t destines lalimentation
des poulets de chair, et deux autres formules ont t testes sur des poules pondeuses.
Les volailles ont t mises sous contrle journalier. En effet, lindice de consommation
de la ration donne, lvolution du poids, la frquence de ponte et la frquence de
mortalit ont t suivis. La qualit des ufs pondus a t contrle en valuant le
pouvoir moussant, le pouvoir mulsifiant, la teneur en carotnodes et la couleur. Aprs
7 jours du rgime alimentaire, les matires fcales des volailles ont t collectes pour
tester la digestibilit azote. Un prlvement du sang a t effectu aprs 10 jours
pour valuer l'effet de l'alimentation sur diffrents paramtres: glucose, cholestrol,
triglycrides, protines brute, ure, cratinine, phosphore, calcium. A la fin de la
priode dessai, les poulets de chair ont t gorgs. Une valuation de la matire
grasse de la chair des diffrentes volailles a t faite.
Les rsultats obtenus ont montr que les poulets recevant les formules 1 et 2 ont mieux
valoris l'aliment par rapport aux poulets de la formule de rfrence. L'volution du
poids durant 15 jours tait remarquable, les volailles ayant consomm la formule 2
prsentent une supriorit pondrale. Concernant les ufs, nous avons remarqu que
les ufs issus des volailles alimentes par lAtrium bas sur MV1 sont plus riches en
carotnodes. Cela s'explique par la richesse de MV1 en carotnodes alors que la
formule de rfrence a permis d'avoir une teinte jaune meilleure. La capacit
moussante se maintient stable durant la priode d'essai et la capacit mulsifiante des
ufs dont la pondeuse a t nourrie par la formule 2 base de MV2 tait la meilleure.
Les analyses de sang ont montr que le taux de triglycrides et de cratinine chez les
pondeuses ayant reu les formules 1et 2 tait trs faible et pas de diffrence pour la
teneur en protines totales, phosphore et calcium.

Rsum : Algerian flora is particularly rich, including its species diversity and
the presence of very important endemic species. The genus Helichrysum the
Greek helios (sun) and chrysos (gold), belongs to the Asteraceae family,
Inuleae tribe and sub-tribe Gnaphaliinae. It comprising about 500-600
species spread throughout the world. In Algeria, the genus includes three
species.
Species of the genus Helichrysum (Astraces) are usually aromatic perennial
herbs, distributed throughout the Mediterranean basin. The species of
Helichrysum have been used to treat wounds, topical infections and
respiratory. The chromosome number most often in Helichrysum is 2n = 28,
mainly in the Mediterranean, Macaronesian and Asian species, but in some
African species as well. Some cases of 2n = 14 for African species and 2n =
56 for the eastern Mediterranean and Asian species are also known.
The present study evaluates the chemical composition and chromosome number
of Helichrysum italicum . from eastern Algeria. The air dried materials were
subjected to hydro-distillation for 3h using a Clevenger type apparatus. The
chemical analysis of the essential oil by GC/MS, has allowed identifying 80
compounds corresponding to 97.5 % of the total oil. The major compounds of
the oil of helichrysum stoechas are -pinene ,Sabinene,Terpinne-4-ol ,Methyl
n nonyl ketone,Bta Caryophyllne. The karyological study of helichrysum
stoechas has allowed us to identify a karyotype with 2n= 28 chromosomes
reported for the first time in Algeria.

Rsum : African wild mango (Irvingia gabonensis) is now recognized
for its numerous food and medicinal uses. This plant produces seeds rich
in fat, which is traditionally used as a soup thickener. In the present
study, the proximate composition of seeds from Irvingia gabonensis is
reported. The oil from the seeds was then solvent extracted; its fatty
acid (FA) and triacylglycerol (TG) profiles were determined. Besides
this chemical characterization, the melting and crystallization behaviour
of the extracted fat was studied by pNMR, DSC and X-ray diffraction.
The result of this investigation showed that the seeds from Irvingia
gabonensis (IG) represent an important source of lipids (69-75%), rich
in myristic (49.8%) and lauric acid (37%). This fat can be classified
among "lauric fats". IG oil presents a good oxidative stability due to
its low content in unsaturated fatty acid. The melting profiles of IG oil
indicates that a high amount of fat remains solid at temperatures up to
30C; the complete melting was detected at around 40C. The most
stable polymorph of this fat is the 1-form.
