Our Christmas Wine Festival

This year all proceeds for the Christmas festival will be donated to
two charities, Jack and Jill Foundation. In addition, the proceeds
for our Cork Wine Festival will be donated to the Irish Guide Dogs
for the Blind.

The Jack & Jill Foundation provides nursing

care and support for children with severe
neurological development issues, as well as
offering some respite to the parents and
families. This could be through home visits
from nurses, with practical tips on how to
access the services a child will need.
Listening to what parents want for their child
and making representations on their behalf.
Bereavement support and an online forum
for parents. Lobbying the Government and
the HSE. Jack & Jill also provides direct
funding to families, enabling them to buy
home respite care to give them a break. The
Foundation cannot cure the children. But it
can help to alleviate some of the difficulties
that exist.

Irish Guide Dogs is Irelands national charity

dedicated to helping people who are vision
impaired and families of children with autism to
achieve improved mobility and independence.

CHILE

T
here are two key geographical features that define the wines of Chile
- the Andes mountain range, the longest continental mountain range
in the world, and the Pacific Ocean, the largest and deepest Ocean
in the world. These features influence soil, temperature, altitude, wind, mist
and rainfall thus ensuring that Chile
is extremely multifaceted in terms of
which grapes can grow successfully.

Because of this terroir diversity,

there are well defined wine growing
regions within the country that excel
in growing specific grapes. Chile

GERMANY

U
nquestionably Germany is one of the most underappreciated wine
producing countries in the world. The home to the noble Riesling grape,
it also successfully grows high quality Pinot Noir and other interesting
varieties such as the red grape Dornfelder and the white grape Scheurebe.

Some vineyard sites are so densely

planted or located in such precarious
locations, that gentle hand harvesting
of the grapes into small traditional
baskets is the only option for the
growers. The benefit of this is that the
grapes arrive at the winery in near
perfect condition ready for long cool
fermentations which concentrate
flavours and aromas.

German wines are one of the best

kept secrets in the wine trade. Dont PFALZ
be misled by the fluted bottle shape,
the whites wines range from crisp
bone dry styles to unctuous and rich,
the reds are elegant, well balanced
and pure. German wines age well and
so are perfect for tucking away for a
few years.

URUGUAY

D ating back to 1870, the wine industry in Uruguay was started in the main
by Basque and Italian immigrants. In terms of grape varieties Uruguay
has carved a name for itself making high quality red wines from the Tannat
grape. Tannat comes from the word tannins, which can be found on the
skins stems and seeds of the grape. Tannat is the most tannic red wine
grape in the world, tannin
can be detected by the
drying effect in the mouth
when tasting a tannic wine,
all red wines need tannin
to age and develop.Three
quarters of the year is
sunny in Uruguay which
ensures that the tannins
in Uruguayan Tannat are
ripe. Modern wine making
techniques that focus on
varietal fruit quality and
typicity plus judicious
use of oak ensure that
good estates are making CANELONES
wines which are juicy and
concentrated with good
structure and complexity.
