Applause : Applause Variety that is characterized especially by the intense red color of its
tomatoes, which are of medium size and mild flavor.

Lycopene : Lycopene is a chemical responsible for providing the red color of fruits and vegetables.
It is soluble in fats and belongs to the family of carotenoids like -carotene, substances that the
human body does not synthesize, but some vegetables and microorganisms.

Folic acid : Folic acid, also known as vitamin B9, is a water-soluble vitamin in the vitamin B complex
necessary for protein formation

Homocysteine : Homocysteine (HC) is an important sulfur amino acid in the transfer of methyl
groups in cell metabolism, which has been considered an influential factor in the development of

Pasteurization : A process which refers to a food, generally liquid, at a temperature of about 80


degrees for a short period of time after cooling, in order to destroy the microorganisms without
altering the composition and qualities of the liquid.

Carotenoids : are organic pigments from the group of isoprenoids that are found naturally in
plants and other photosynthetic organisms such as algae, some kinds of fungi and bacteria

The meta-analysis : is a set of statistical tools, used to synthesize data from a collection of studies.
The meta-analysis is started by compiling estimates of a certain effect of each study

hypertension : Excessively high blood pressure on the artery wall. "High blood pressure can lead to
strokes and cerebral hemorrhages"

PH: is a measure of acidity or alkalinity of a solution. The pH indicates the concentration of


hydrogen [H] + ions present in certain solutions.

Antioxidant: An antioxidant is a molecule capable of retarding or preventing the oxidation of


other molecules. Oxidation is a chemical reaction of electron transfer from a substance to an
oxidizing agent.

Pharmacophore : a set of structural features in a molecule that is recognized at a receptor site and
is responsible for the biological activity of that molecule

heat treatment : It is known as heat treatment to the set of heating and cooling operations, under
controlled conditions of temperature, dwell time, speed, pressure, of metals or solid state alloys
