BUY One of Australias greatest gifts to the world would have to be our unique style of Muscats and Tokays.
Muscat is made from Muscat Blanc Petits Grains or Red or Brown Muscat as it is more commonly
known. Typical flavour profiles for Muscat include raisins, candied oranges, fruitcake, toffee, dates and

Tokay is made from Muscadelle grapes and due to new international labelling laws is starting to be
VARIETIES
called Topaque. Like Muscat, it expresses similar lusciousness with a little more caramel, toffee and
nuttiness. Tokay usually finishes a little drier than Muscat.

The method for making both is essentially the same. The winemaker does not harvest his grapes until
very late in the season when the grapes have shrivelled and start to look like raisins on the vine. These
shrivelled grapes are then picked and crushed to extract the syrupy liquid for fermentation. To stop
fermentation, grape spirit is added to the liquid and it is then stored in old oak barrels for ageing.

During the ageing process, about five per cent of the liquid is lost to evaporation each year; this is
known as the angels share and ensures the concentration of this rich liquid further. The next step is the
blending process whereby the winemaker draws the liquid from many barrels, sometimes as little as
three per cent per barrel to give him the desired wine.

The result is a fortified wine which is rich, luscious and sweet. Both Tokay and Muscat work wonderfully

CHILLI LIME KING PRAWNS & CHIPOTLE MAYONNAISE

This mouth-watering recipe shows us why juicy, plump Aussie prawns Method

1. For the mayonnaise, place the yolk, lime juice, vinegar and a good
