Sales
Dos de los ingredientes ms comunes en el encurtido y marinados son la sal y el fosfato. Junto
con el hecho de que la sal se disuelve fcilmente en el agua, sta se incluye en la formulacin de
carne de pollo para: 1) aumentar el sabor del producto; 2) incrementar la retencin de humedad;
3) actuar como sinrgico con el sodio tripolifosfato (STPP) para extraer las protenas solubles en
sal; 4) inhibir el crecimiento de Clostridium botulinum a travs de su sinergia con el nitrito de sodio
(curado); 5) en alta concentracin, la sal aplicada en la superficie deshidrata la carne y sirve como
conservador. Una vez que la sal se disuelve en el agua, puede disiparse en Na+ y Cl- lo cual
incrementa la fuerza inica del msculo. Como el agua tiene carga, y la carne est
mayoritariamente cargada negativamente a pH6, a ms iones negativos de Cl-, ms agua puede
ligarse al producto crnico. El contenido de sal en un producto crnico no est regulado y es auto
limitante porque la alta concentracin afectar negativamente la palatabilidad del producto.
Tpicamente, los productos y carne de pollo encurtidos finalizados contendrn aproximadamente
2% de sal en promedio. El nivel de sal puede variar de 1.5 a 3%, depende del producto.
Debido a las restricciones en la dieta respecto al consumo de sal, los ingredientes como el cloruro
de potasio (0.75% en una combinacin 60:40% NaCl/KCl), los fosfatos y otros compuestos de alta
fuerza inica pueden ayudar a incrementa la capacidad de retencin de agua (CRA) y mantener
bajos niveles de sal. Aunque el KCl no se usa fcilmente en productos de procesamiento ulterior
porque puede ocasionar prdida del sabor en el producto.
Adems del nivel de inclusin, la pureza de la sal tambin es importante. La sal de mar y sal
impura contienen metales y minerales que pueden interferir con el sistema de encurtido y reducir
la efectividad de otros ingredientes como los fosfatos.
Fosfatos
Los fosfatos mejoran la CRA y trabajan en sinergia con la sal. Cuando se usan los fosfatos para
incrementar la CRA de la carne, el Departamento de Agricultura de los Estados Unidos (USDA)
requiere que su concentracin no sea mayor al 0.5% del peso del producto terminado debido al
desarrollo de sabor jabonoso y mala textura. Aunque hay muchos fosfatos para escoger, el STPP
es el ms utilizado en soluciones de encurtido porque es fcil de usar y barato, representa
aproximadamente el 80% de los fosfatos usados en productos crnicos de procesamiento ulterior.
El fosfato ms funcional es el pirofosfato; sin embargo, el ndice de solubilidad es bajo. Por eso
el STPP se usa comnmente y se emplean licuados de fosfatos para optimizar la solubilidad y
funcionalidad. Cuando se agrega el STPP al agua se hidroliza y forma el difosfato funcional. Los
pirofosfatos son una forma ms soluble de difosfatos y por la tanto ms fciles de usar.
Actualmente, los licuados se vuelven ms populares basados en su solubilidad y funcionalidad en
una amplia variedad de formulaciones de productos crnicos. El hexametofosfato de sodio
(SHMP) es una forma soluble en agua del fosfato de sodio que tambin se conoce como la sal de
Graham. Sin embargo, la solubilidad del SHMP no es tan buena como la de otros tripolifosfatos y
tiene que licuarse con otros para obtener mejor solubilidad. Las propiedades deseables de los
licuados incluyen el pH alcalino apropiado, buena solubilidad, capacidad de hidrolizarse para
formar difosfato, compatibilidad con el calcio, la habilidad para solubilizar las protenas
miofibrilares, y la capacidad para exponer los sitos de unin con carga para incrementar la CRA.
Muchos fosfatos no son fcilmente solubles en la mayora de las soluciones de encurtido saladas;
por lo tanto, se disuelven en agua a temperatura ambiente antes de la adicin de la sal y se enfran
antes de usarlos. Algunos licuados de fosfato nuevos en el mercado tienen mayor solubilidad
independientemente de la adicin de sal. Algunos de los licuados de fosfatos comerciales nuevos
no necesitan ponerse en solucin antes de la sal debido a las modificaciones que los hacen ms
solubles. La adicin excesiva de fosfato puede ocasionar sabor jabonoso, textura chiclosa, y color
plido. Adems, los fosfatos se pueden precipitar y formar un residuo blanco en la superficie de

Marinados cidos
Los marinados cidos se vuelven ms populares como ingredientes antimicrobianos;
particularmente por su capacidad para reducir Listeria monocytogenes en productos crnicos listos
para comer. Los marinados tpicos usados por sus propiedades antimicrobianas incluyen el lactato
de sodio; lactato de potasio; citrato de sodio; lactato de sodio combinado con diacetato de sodio;
y combinaciones de lactato de sodio con lactato y diacetato de potasio. El nivel de lactato de
sodio regulado por los EUA es 2.9% de lactato de sodio puro o 4.8% cuando se usa solucin de
lactato 60% en productos avcolas cocidos. Cuando se usa lactato de sodio, la concentracin de
sal debe reducirse porque el lactato de sodio incrementa el sabor salado. De acuerdo con las
regulaciones de los EUA, el acetato y diacetato de sodio estn aprobados como compuestos
saborizantes en un nivel mximo de 0.25% del peso de la formulacin. En general, se piensa que
el lactato y diacetato de sodio inhiben el crecimiento bacteriano al extender la fase de adaptacin.
Aunque los marinados cidos pueden actuar como antimicrobianos, tambin impactan
negativamente la calidad y funcionalidad de la carne.
Ingredientes adicionales
Carragenos
Los carragenos o carragenanos son polisacridos solubles que sirven como agentes que espesan
y gelifican para controlar la humedad y textura, y para estabilizar alimentos. Hay tres tipos de
carragenos que difieren en la variacin estructural de las molculas de galactosa (azcar): kappa,
iota y lambda. Debido a las diferencias en la estructura, tambin tienen diferentes propiedades
funcionales en los productos crnicos. Especficamente, el kappa e iota forman geles
termoestables; mientras que el lambda no forma gel pero agrega viscosidad a los productos como
agente espesante. La habilidad del carrageno kappa para formar gel en productos crnicos ha
demostrado varias ventajas al incrementar el rendimiento, consistencia, mejora el corte, mejor
capacidad para extenderse, cohesin, y menor desmoronamiento, contenido de grasa y prdidas
al rebanar. Aunque el carrageno kappa forma geles termoestables, no posee buenas propiedades
de congelacin descongelacin. En contraste, el carrageno iota forma geles elsticos y
proporciona estabilidad congelado/descongelado para aplicaciones de crnicos donde es
probable el congelamiento descongelamiento repetido (Huffman, et al., 1991). Como los
carragenos tienen diferentes propiedades, frecuentemente se usan licuados de las diferentes
formas para obtener las propiedades funcionales deseadas. Aunque los licuados y carragenos
individuales tienen diferentes propiedades, generalmente se usan en rangos de 0.5 1.5% en
aplicaciones de carne, y en jamones crudos el nivel mximo es 1.5%.
Almidones
En la carne, los almidones mejoran la textura y jugosidad debido a las propiedades del almidn
para ligar agua. Especficamente, los grnulos de almidn crecen o se hidratan en presencia de

products increases. Marinades can be incorporated into meat by tumbling, blending, and
injection. Each method has its advantages and disadvantages. Combining the proper method
with the proper ingredients can lead to an increase yield and improved quality for consumers.
(1) enhance product flavor; (2) increase moisture retention; (3) act as a synergist with STP to extract
salt soluble proteins; (4) inhibit the outgrowth of Clostridium botulinum via salts synergistic role
with sodium nitrite (cure); (5) at high concentrations, salt applied to the surface of meat
dehydrates the meat and serves as a preservative. Salt, once dissolved in water, can dissipate into
Na+ and Cl- which increase the opnic strength of the muscle. Since water is charged, and meat
is mostly negatively charged at pH 6, the more negative ions from the Cl-, the more water can
bind to the meat product. Salt content of meat product is not a regulated ingredient and is self
limiting because high concentrations will negatively affect the palatability of the product.
Typically, finished brined-poultry meats and products will contain approximately 2% salt on
average. Depending on the products, salt levels can range from 1.5% up to 3%.
Because of dietary restrictions on salt intake, ingredients such as potassium chloride (0.75% in a
60:40% NaCl/KCl combination), phosphates and other high ionic strength compounds can help
increase WHC while maintaining low levels of salt. Although, KCl is not readily used in further
processed products because it can lead to off-flavors in the product.
In addition to salt levels, purity of salt is also important. Sea salts and impure salts contain metals
and minerals that can interfere with the brine system and decrease the effectiveness of other
ingredients such as phosphates.
Phosphates
Phosphates improve water holding capacity and work synergistically with salt. When phosphates
are used for increasing water holding properties of meat, USDA requires that phosphate
concentrations are no higher than 0.5 % of the finished product weight due to development of
soapy flavors and poor texture. Although there are many phosphates to choose from, STPP
remains the most commonly utilized in brine solutions because it is easy to use and inexpensive.
STPP accounts for approximately 80% of the phosphates used in further processed meat products.
The most functional phosphate is pyrophosphate; however, the solubility index is low. For this
reason longer chain, STPP is commonly used and blends of phosphates are used to optimize
solubility and functionality. When added to water, STPP is hydrolyzed forming the functional
diphosphate. Pyrophosphates are a more soluble form of diphosphates and are therefore easier
to use. Today, blends are becoming more popular based on their solubility and functionality in a
variety of meat product formulations. Sodium hexametaphosphate (SHMP) is a water soluble
form of sodium phosphate which is also known as Graham's Salt. However, the solubility of
hexametaphosphate is not as good as other tripolyphosphates so the phosphate can be blended
with others giving better solubility properties. Desirable properties for blends include proper
alkaline pH, good solubility, ability to hydrolyze to form diphosphate, calcium compatibility, the
ability to solubilize myofribrillar proteins, and the ability to expose charged binding sites to
increase WHC.
Many phosphates are not easily soluble in most salt brine solutions; therefore, phosphates are
typically dissolved in room temperature water prior to adding salt and then chilled before use.
Some new blends of phosphates on the market have increased solubility regardless of the addition
of salt. Some of the new commercial blends of phosphates do not need to be put into solution
before salt because of modifications that make them more soluble. Excess phosphate addition
can cause soapy flavors, rubbery texture, and poor color. Furthermore, phosphates can
precipitate forming a white residue on meat surfaces that is due to inorganic monophosphate.
Acid marinades
Acid marinades are becoming more popular as antimicrobial ingredients; particularly, for their
ability to reduce Listeria monocytogenes in ready-to-eat meat products. Typical marinades
utilized for their antimicrobial properties include sodium lactate; potassium lactate; sodium citrate;
sodium lactate combined with sodium diacetate; and combinations of sodium lactate with
potassium lactate and diacetate. Sodium lactate levels regulated by the US are 2.9% pure sodium
lactate or 4.8% when using a 60% lactate solution in cook poultry products. When formulating
with sodium lactate, salt concentration would likely need to be reduced as the sodium lactate
enhances the salty flavor. According to US regulations, sodium acetate and diacetate are
approved as flavoring compounds at a maximum level of 0.25% of the formulation weight. In
general, sodium lactate and diacetate are thought to inhibit bacterial growth by extending the
bacterial lag phase. While acid marinades may act as antimicrobials, they also impact negatively
meat quality and functionality.
Additional Ingredients
Carrageenans
Carrageenans are water soluble polysaccharides that serve as thickening and gelling agents to
control moisture, texture and to stabilize foods. There are three types of carrageenans that differ
based on their structural variation of the galactose (sugar) molecules. These include kappa, iota
and lambda carrageenans. Due to their differences in structure they also possess different
functional properties in meat products. Specifically, kappa and iota carrageenan forms gels that
are thermostable; whereas lamba does not form a gel but does add viscosity to products as a
thickening agent. The ability of kappa carrageenan to form a gel in meat products has been
proven to give a range of advantages by increasing yield, consistency, sliceability, spreadability,
cohesiveness and decreasing purge, fat content and slicing loss. Although kappa carrageenan
forms thermostable stable gels, it does not possess good freeze thaw properties. In contrast, the
iota carrageenan forms elastic gels and provides freeze/thaw stability for meat applications where
repeated thawing and freezing is likely (Huffman, et al., 1991). Because different carrageenans
have different properties, blends of the different forms are often used to achieve the desired
functional properties. Although blends and individual carrageenans will have different properties,
they are typically used a levels ranging from 0.5-1.5% in meat application, and in cured hams the
level is maximum of 1.5%.
Starches
In meats, starches improve texture and juiciness due to the water binding properties of starch.
Specifically, the starch granules swell or hydrate in the presence of heat and water. The extent of
swelling, gelatinization temperature, and the properties of the solution are critically important for
food applications.
Starches are available as native, modified, and pregelatinized. Modified corn starch is most the
most widely used starch in meat processing. Starches can be modified in several ways to give
the desired functional properties such as toughening the starch and increasing its resistance to
heat and acids.While modified starches are used throughout the poultry industry, they are used
often in the production of turkey deli loaves for their ability to bind and retain water and to
improve texture.
In summary, the valued-added and further processed poultry markets will continue to grow as
consumers demand for convenient meal choices that require little preparation time will remain a
predominant trend in food selection and purchases.
