Cherries Jubilee

In all things we should at least attempt to recognize the human being in all people! We are infinite
spiritual beings inhabiting a finite human host where the greatest tragedy in life is not death; it is what
we let die inside ourselves while still alive! Captain your own destiny and eat life before life eats you!
Ingredients:
1 Pound pitted fresh ripe sweet Bing cherries.
1/2 Cup Sugar
1 Lemon (peel two wide strips as zest and juice half the lemon).
1/3 Cup Golden Rum (use good quality products so the end result doesnt suffer).

Directions:
The last time multiplying this recipe produced 10 lbs of cherries jubilee (nearly five quart
Mason jars), it became more practical to add the cherries after the nearly five cups of sugar
had time to dissolve into three cups of rum and lemon mixture. Note that if you make a larger
quantity the alcohol cooks off without a need to flamb the rum. Also you will find that a nice
quantity of sauce was leftover after loading the storage jars. Save that liquid and use it in
cocktails, in combination with refreshing beverages, for thickening as a pancake syrup or to
advance a baking recipe with products from Bobs Red Mill.
In skillet or wok combine 1/2 cup sugar, 2 peeled strips of lemon zest and the juice of 1/2 a
lemon. Stir until sugar has dissolved and the mixture is bubbling. Add 1 pound of washed and
pitted cherries then cover and cook until the mixture lightly boils for maybe ten minutes.
Uncover and cook lightly boiling mixture until cherries are reduced and get juicy.
Note at this point the traditional recipe for cherries jubilee would have you to carefully add
1/3 cup rum; ignite and let it burn until the flame dies out. However in my experience the end
result all tastes the same.
In advance of preparing the cherries jubilee recipe, scoop frozen vanilla ice cream into bowls
and pre-freeze for about four hours so the bowls will help prevent rapid melting. Ladle the hot
cherries jubilee and the juices over prepared bowls of ice cream scoops. Serve immediately.
Note that I have also served cherries jubilee when cold over ice cream, various slices of cakes
or cheesecake and cream cheese pancakes.
To flamb the rum keep a lid nearby to extinguish the flames if need be.
