Ricotta Cheeecake Pie

TOTAL TIM: 5 hour

Thi i a lighter alternative to traditional cheeecake. The flak crut and the addition of ricotta help lighten the affair,
making it the perfect finih for earl ummer dinner. While thi pie would e great with an fruit topping, I recommend
trawerrie and rhuar, made with frozen or freh trawerrie and freh rhuar.
Note: For et reult, ue a good qualit ricotta. Check the ingredient lit. It hould contain nothing ut milk or whe,
alt, and either vinegar or a tarter. Avoid rand with gum or thickener. We recommend Calaro rand.

INGRDINTS
One half recipe a Pie Dough, haped and chilled in a pie plate
13 ounce whole milk ricotta (room temperature, ee note aove)
6 ounce cream cheee (room temperature)
1 egg (room temperature)
1 egg olk (room temperature)
4 ounce granulated ugar
1 talepoon potato or corn tarch
1 talepoon vanilla
Pinch of alt
1 talepoon zet from 1 lemon
Strawerr and rhuar compote:
8 ounce freh rhuar, cut into 1/2 inch piece
8 ounce frozen trawerrie, thawed
Approximatel 3 ounce ugar (adjut to tate)

DIRCTIONS

1. Adjut oven rack to lower middle poition and preheat oven to 425F. When oven i read, line

chilled pie hell with foil or parchment paper and fill with weight (I reue dried ean for thi), and
ake on the lowet rack of the oven for 15 minute. Remove weight and liner, turn pie, and ake
until the ottom crut jut egin to get color on the top (ou'll e aking it more later), aout 5
minute more. Remove pie hell from oven and allow to cool completel.

Drain exce liquid from ricotta gentl queezing the whe from the cheee through douled
cheeecloth. Dicard the liquid and place the ricotta in the owl of a tand mixer with the cream
cheee. Mix with the paddle attachment on medium peed until the mixture i completel
comined and lightl fluff, aout one minute. Add the egg and olk and mix on low peed until
completel incorporated. In a mall owl, whik together the ugar and tarch, then add to the
mixing owl and mix on low peed until the are completel incorporated. Continue mixing on low
and add the alt, vanilla, and zet. Pour the cheeecake mixture into the cooled pie crut.
3. Adjut oven rack to lower middle poition and preheat oven to 325F. Place the pie in the center of

the rack and ake until the ide are jut et, the filling i lightl puffed, and the center jiggle
lightl, aout 30 minute. e ure to turn the pie halfwa through aking. Allow the pie to cool on
the counter for 30 minute, then pre platic wrap directl on top of the filling and chill for at
leat one hour. Slice to erve, or tore in the fridge for up to 2 da.
4. For the Compote: Comine the rhuar and trawerrie in a medium ized aucepan et over

low heat, tirring occaionall. After aout 5 minute, the fruit will egin to often and let out
liquid. Stir in the ugar a little at a time un1til deired weetne i reached. Remove from heat
and chill to cool completel. Once cool, ue a a pie topping if deired. Leftover are great on toat
or tirred into ogurt.
