Green Smoothie
Preparation: 5 minutes|Processing: 35-45 seconds|Servings: 875 ml (3 cups)

99 g (3.5 oz.) green grapes


1 slice of fresh pineapple
including core (130 g / 4.6 oz.)
1 apple (143 g / 5 oz.),
seeded and quartered

1 slice of lime, unpeeled


(16 g / 0.6 oz.)
61 g (2.1 oz.) raw spinach
and/or curly kale
250 ml (1 cup) ice cubes

1 banana, peeled
1 slice of fresh ginger root,
unpeeled (4 g / 0.1 oz.)

1.

Place all the ingredients into the Vitamix container in the order listed
and secure the lid.

2.

Select Variable 1.

3.

Turn on the machine and slowly increase the speed to Variable 10,
then to High.

4.

Blend for 35 to 45 seconds, using the tamper to press the ingredients


into the blades until the desired consistency is reached.

1 espresso or a sprinkling
(3 g / 0.01 oz.) of instant coffee
4 caramel digestives
1 Tablespoon of caramel syrup

Place all the ingredients into the Vitamix container in the order listed
and secure the lid.

2.

Select Variable 1.

3.

Turn on the machine and slowly increase the speed to Variable 10,
then to High.

4.

Blend for 5 minutes or until heavy steam escapes from the vented lid.

5.

Turn on the machine and slowly increase the speed to Variable 10,

Blend for 30 seconds.

Frozen Cocktail
Preparation: 1-5 minutes | Processing: 5-10 seconds | Servings: 250 ml (2 cups)

290 g (2 cups) ice cubes


250 ml (1 cup) gin, tequila,
vodka, whiskey, rum or for a
mocktail version, fruit juice

1.

Place the ice cubes in the Vitamix container.

2.

Cover the ice with one of the liquids or a combination of the liquids and
secure the lid.

3.

Select Variable 1.

4.

Turn on the machine and slowly increase the speed to Variable 6 and blend
for 10 seconds (if a slushy consistency is desired) or increase the speed to
Variable 10 and blend for 5 to 10 seconds if a frozen and frothy consistency
is desired.

5.

Serve immediately.

Peanut Butter
Preparation: 1 minute | Processing: 1-2 minutes | Servings: 310 ml (1 cups)

293 g (2 cups / 10.3 oz.) peanuts

1.

Place the ingredients into the Vitamix container and secure the lid.

2.

Select Variable 1.

3.

Turn on the machine and slowly increase the speed to Variable 10,
then to High, using the tamper to press the ingredients into the blades.

4.

In 1 minute, you will hear a chugging sound. Once the butter begins to
flow freely through the blades, the sound of the motor will change tone.
Stop the machine.

Quick Tip
Try experimenting with combinations of your favourite nut varieties,
like peanuts and cashews, to create a signature spread. Add dried
fruits and seeds or sweeteners like honey, maple syrup, cocoa or
cinnamon for even more variety.

500 ml (2 cups) water

clove of garlic

1 carrot (91 g / 3.2 oz.)

1 piece (11 g / 0.4 oz.) of fresh


ginger root, unpeeled

1 slice (80 g / 2.8 oz.) of cabbage


1 slice (4 g / 0.1 oz.) of chili
1 stick (86 g / 3.1 oz.) of celery
77 g (2.7 oz.) cashew nuts
1 slice (20 g / 0.7 oz.) of
bell pepper

6 g (0.2 oz.) fresh coriander

1 piece (60 g / 2.1 oz.) of courgette

5 g (0.2 oz.) honey

1 spring onion, halved


(9 g / 0.4 oz.)

1 vegetable stock cube

1 slice (25 g / 0.9 oz.) of


lemon, unpeeled

Place all the ingredients into the Vitamix container in the order listed
and secure the lid.

2.

Select Variable 1.

3.

Turn on the machine and slowly increase the speed to Variable 10,
then to High.

4.

Blend for 5 minutes or until heavy steam escapes from the vented lid.
Serve immediately.

Smoked Mackerel Pt

2 smoked mackerel fillets,


skinless, halved, 100 g each

dash of freshly ground

Select Variable 1.

3.

Turn on the machine and slowly increase speed to Variable 6.

4.

Blend for 35 to 40 seconds, using the tamper to press the ingredients into
the blades until the desired consistency is reached.

200 g (7.1 oz.) Cheddar cheese
dash of Worcestershire sauce

Blend for 4 minutes or until heavy steam escapes from the vented lid.

Quick Tip
Pour Hot Cheese Sauce over steamed cauliflower or macaroni pasta
and bake topped with bread crumbs. Its also perfect as a side sauce
for grilled fish.

Strawberry Ice Cream


Preparation: 5 minutes | Processing: 35-50 seconds | Servings: 1.0 L (4 cups)

150 ml ( cup) single or


double cream

Optional:

banana, peeled

1 slice (78 g / 2.8 oz.) of


raw white cabbage

84 g ( cup) sweetener
(honey, agave or sugar)

carrot (43 g / 1.5 oz.)

2.1 oz. (59 g) of courgette

476 g (3 cups) frozen


strawberries

1.

Place all the ingredients into the Vitamix container in the order listed
and secure the lid.

2.

Select Variable 1.

3.

Turn on the machine and slowly increase the speed to Variable 10,
then to High, using the tamper to press the ingredients into the blades.

4.

In 35 to 50 seconds, the sound of the motor will change and four


mounds should form.

5.

Stop the machine. Do not over-mix or melting will occur. Serve immediately.

Select Variable 1.

3.

Turn on the machine and slowly increase the speed to Variable 10,
then to High.

4.

Blend for 15 to 20 seconds. The sound of the motor will change tone as
the mousse is set.
