HestonsInSearchofPerfectionHamburgerperfectcheeseslicerecipeisntquitesodominant,butitscertainly
moreattentiongrabbingthanitoughttobe.Agoodcheesesliceshouldbeasmoothandcreamyaffairthat
complimentsandmingleswiththeotherflavoursandtextures.Thisstandsoutfartoomuch.
TheotherflavoursandtexturesallrepresentHestonBlumenthalspersonalpreferenceincheeseburgerrecipes,

scoff,butFrenchsAmericanmustardisasublimeandwonderfulthingtoo.(Wedofinditstrangethatspecific
brandsarentmandated,givenhowbroadlytheirparticularflavourscanvary).
Ourothercriticismwouldbethatthequantitiesinthisrecipearewayoff.Therecipeinthebookclaimstoserve
eight.Wehalvedthedoughingredientstomakefourbuns(andservethreeverygreedypeople).
