The 36 recipes featured use vodka, tequila, rum, gin,


whisky, bourbon, liqueurs or aperitifs, and cater to
all tastes and skill sets, from beginner (Kir Royal and
Aperol Spritz) to more experienced (egg-white-froth
Whisky Sour and eight-ingredient Singapore Sling).
Why not give some of them a go? The best-kept secret
about cocktails is that many of them while looking
impressive are not all that difficult to make. Start by
perfecting a cocktail with only a couple of ingredients
and get friendly with a cocktail shaker.
Two other advantages of making your own cocktails,
of course, are value and variety. A 700ml bottle
of spirits contains 22 x 30ml shots. Most cocktails
use about two shots, so you can create around
11 cocktails with just one bottle!

off like wine, so you have more time and event

Take a quick cocktail tour through time.

1500S

In the 1800's, folks


making a fortune
on the goldfields
were splurging on
Champagne, Scotch
whisky and the
Sherry Cobbler.

1800s

The first cocktail-in-the-rough


comes from the high seas during
the 1500's.

During Australias 1860's Gold


Rush, folks making a fortune on
the goldfields are splurging on
Champagne, Scotch whisky and
cocktails like the Sherry Cobbler,
an American invention of sherry,
ice, sugar and fruit.

Navy boys stationed in India are


mixing their rum with citrus,
sugar, tea, tropical fruit and
spices, creating the first punch.
Returning home, they bring
punch to taverns of England
and America, where it becomes
the drink of choice for wealthy
merchants of the colonial era.
This is the first instance of
the art of the bartender, as each
gentleman creates his own
punch with fancy tools and
exotic ingredients.

Theyre also importing ice in huge


blocks all the way from Canada.
Back in America, vermouth is
introduced via huge waves of
European immigration, giving rise
to vermouth-driven variations
of the Old Fashioned, like the
Manhattan and the Martini.

As the Industrial Revolution


takes hold, however, average
folk dont have time or money
for fancy punches and need a
cheap, quick, single-serve option.
Enter the sour, a combination of
spirit, sugar and citrus used with
anything from brandy to gin, and
modified with liqueurs to create
a whole new world of flavour.

In 1920, just when American


cocktail culture is booming,
Prohibition kicks in.

Cocktail hour pre-dinner


drinks socialising becomes
a massive trend, triggering
consumer demand for cocktailspecific clothes and glassware.

In the 1970's, old


recipes are forgotten,
and drinks dominated
by artificial flavours and
bright colours are all that remain
of 500 years of cocktail history.

Many unemployed bartenders


leave America to work in Europe
and discover drinks using local
spirits like the Negroni (made
with Campari) and the Sidecar
(made with cognac or brandy and
orange liqueur and said to have
been invented at Harrys New
York Bar in Paris).
Americans are also holidaying in
Mexico and Cuba as a result of
Prohibition and returning home
with a taste for Margaritas and
Daiquiris making them in frosty
versions after Prohibitions end in
1933 following mass production
of the refrigerator and blender.
Also post-Prohibition, Hollywood
restaurateur Don The
Beachcomber is popularising
the Mai Tai and Zombie, using
Caribbean rum and serving
the cocktails in ceramic mugs
decorated with Polynesian
images. Mai Tais are featured
in the 1961 film, Blue Hawaii,
starring Elvis Presley.

Along with Martinis


(popularised by James Bond
and Rat Pack actors such as
Humphrey Bogart, Frank
Sinatra and Sammy Davis
Junior), people are sipping
Manhattans, Old Fashioneds,
Gimlets, Sidecars, Tom
Collinss and Mint Juleps.

But in the mid-1980's, visionary


bartenders in London and
New York revive the lost art of
the cocktail.
Over the next three decades, the
craft cocktail movement gains
traction as bartenders worldwide
relearn old recipes and use better
quality ingredients.
Today, quality cocktails are once
again an important part of global
drinks culture.

Use nice glasses

A drink well-presented
is a drink half drunk.

Shake it like
you mean it

Shake hard and fast for


nicely-chilled, fluffy and
properly-diluted cocktails.

Have plenty
of ice on hand

Its one of the most important


ingredients in any cocktail. When
using a cocktail shaker, always
add the ice last to prevent the
drink from melting too quickly.
If you dont have a blender, make
crushed ice by wrapping ice
cubes in a tea towel and hitting
them with a rolling pin until the
ice breaks up. Store extra ice in
zip-lock bags in the freezer so you
dont run out.

Taste everything

The only way to improve


your palate and make sure your
cocktails are balanced is to have
a tiny sip of every one (or batch)
you make. You may need to tweak
it, just as you would a food dish
before serving.

Bitters are like seasoning for a


cocktail a few dashes add a subtle
kick, elevating even something simple
like a Champagne cocktail.

Dress it up

Garnish with fruit, spices


and herbs for aroma and visual
wow factor. Think cucumber,
pineapple, star anise, cinnamon
sticks, flamed orange peel,
lavendar, lemongrass, rosemary,
thyme, vanilla bean or even
flowers such as roses, orchids or
orange blossom. Another good tip
is to use young leaves of mint and
other herbs, not the older ones.

Stock up on bitters

Bitters are like seasoning


for a cocktail... a few dashes
add a subtle kick, elevating
even something simple like a
Champagne cocktail (pour a
splash of bitters over a sugar cube
and top with sparkling wine).
Versatile bitters to invest in are
Angostura (invented in Venezuala
in the 1820's as a seasickness
remedy, it has a clove-like taste)
and Peychauds (created in 1838
by a New Orleans apothecary
owner, its milder and sweeter
than Angostura with a slight anise
profile that works beautifully in
a Sazerac). Orange bitters are also
worth having in your bar
cabinet to add dimension to
anything from a whisky
cocktail to a Margarita to a
rum-based Daiquiri.

nitrogen in a siphon are also
topping cocktails, naturally
flavoured with green apple, pink
grapefruit and Campari, orange
bitters, salted lime or mint.

This involves adding a liquid fat made from
flavoured nuts, butter or even bacon to a spirit,
chilling it and then skimming off the solidified fat
so the spirit retains the fats flavor (without most
of the fats kilojoules). In some bar circles, fat
washing of nuts, in particular pistachio, cocoa,
sesame, coconut, almond, macadamia is giving
a subtle lift to cocktails.

A big trend in the last
couple of years is using
fresh pressed apple juice as
a basic mixer. Its got
a natural acidity that makes
cocktails more balanced
than mixers such as cola
or lemonade. Bars are
also increasingly using
fresh-pressed fruit and
vegetable juices, such as
pomegranate, blood orange,
fennel, carrot or ginger to
give a kick to simple drinks.
Also, chargrilling fruits to
intensify flavours is
on the up (pineapple for
pina coladas, lime for
tequila-based drinks).

The world has gone nuts for quality
whisky in the past couple of years,
and Australia is no exception.
Expect more whisky cocktails at

Iced tea cocktails including Earl Grey with gin,
smoky Lapsang Souchong with bourbon, Rooibos
with peach juice, mint and vodka, ginger-lemon green
tea with ginger and cognac, hibiscus tea with whisky,
honey and pink grapefruit juice was a trend that
began about five years ago and is still being seen. Bars
across the globe are serving icy cocktails in fine china
teapots a thoroughly modern take on afternoon tea.
Similar to bitters, tea adds palate-weight to
a cocktail and reigns in
the sweetness.

playing with things like

Bars got a little serious for
a couple of years, but
thankfully
theyve realised
that a lot of people
actually DO love frothy, creamy creations
like Pina Coladas. For another delicious
frothy cocktail, add a small scoop of your
favourite fruit gelato (berry, passionfruit
or lemon all work particularly well) to
a chilled, stemmed glass and top with
sparkling wine or Champagne. (If you have
a sweet palate, try an icy prosecco on the
sweet side for this recipe.) Sip it or eat it
with a teaspoon.

bitter is better
Not everyone has a sweet tooth, so
bartenders are incorporating more bitter
elements like Italian amaros (such as
Campari, Aperol, Averna, Cynar and
Ramazzotti) into cocktails. A micro-dash
of flavoured bitters like strawberry and
rhubarb, grapefruit, lavender, sour cherry,
coffee and pecan or peach and basil are
also adding depth to cocktails. Think
of bitters as a warm, spicy and tangy
seasoning... they can transform a regular
drink into a cocktail with a bit of mystery!
Even a shake or two of Angostura Bitters
added to a gin and tonic will give a faint
herbal tang and a subtle pink hue to your
glass. And because bitters have a spice
element, they kickstart the appetite and
make the perfect pre-meal tipple.

You may think of a cocktail bartender as some kind
of creative genius, whipping up delicious drinks
with the ease of a magician all while holding a

But most good cocktails are actually quite easy
to make, and you can create countless original
versions in your kitchen by following the formula
on the right.
