T'S NOT SURPRISING the Scots place such standards on how modern Seotch is made — they have quite a reputation to uphold. The drink’s origins lie back in the fourth or fifth century, when Christian monks introduced dis ion to the Scoitish isles. Originally, the practice was used for making perfume and wine, but was adapted for grain and paving the way for the rly on, these spirits were used for medicinal purposes (some even claimed to eure smallpox!) and given the Caelie term uisce breatha (or ‘water of life’). Scottish whisky production slowly grew through the centuries, until it was harshly taxed in 1644. Not surprisingly, the feisty Scots didn’t take well to this. ESTLED IN THE Speyside region, the Glen Moray distillery is built on land that the locals once called Gallow’s Hill. As the morbid name suggests, prisoners used to be executed on the grounds (don't worry, the last recorded instance of it happening was in the 17th century). But that’s not the only dark secret that the Glen Moray distillery holds: the building originally functioned as a brewery for almost 100 years, under the name Robert Thome & Sons. They finally got with the program in 1897, converting the buildings into a distillery. While that 120-odd year heritage doesn't make Glen Moray as old as some other distilleries in Scotland, i's still a stickler for doing things the traditional way, with flavours that are classic Speyside. This means floral whiskies that, while lightly spiced, still maintain a smooth sweetness. Classic. LENDS ARE TYPICALLY made by taking a selection of single malt whiskies — this number can range from two to around 50 — and combining them with grain whisky. Some substitute grain whisky with neutral spirits, a high-in-alechol but low-in-flavour grain-based spirit that’s much cheaper to produce, and a few also add caramel, for that extra kick of flavour. ‘The idea for blending started in the 19th contury, when Scottish distilleries were looking at a way to make more whisky, Canes Bailie Nicol Farvi Bailie Nicol Jarvie Seoteh is a wonderful value-formaney blend sourced from Speyside, Highland and Islay. It all begins in Islay’s swamps, bogs and = wetlands. That’s where you'll find peat, a type of partially decayed vegetation that helps give Islay whiskies their distinct taste.
