KATA PENGANTAR
Warta IHP adalah majalah ilmiah Balai Besar Industri Agro (BBIA), Badan Penelitian dan
Pengembangan Industri (BPPI), Kementerian Perindustrian, yang diterbitkan dua kali dalam
setahun.
Warta IHP mempublikasikan hasil penelitian dan ulasan/ review dibidang industri agro (sains dan
teknologi pangan, teknologi industri pertanian, kemurgi dan minyak asiri, rekayasa peralatan,
mikrobiologi pangan, energi terbarukan, analisis kimia, dan teknik pangan (food engineering)).
Dalam penerbitan Warta IHP Volume 32 No. 1 Juli 2015 ini menyajikan 5 (lima) karya tulis ilmiah
yang merupakan hasil litbang, yaitu: (1) Pendugaan Umur Simpan Beras Cerdas Berbasis Mocaf,

LEMBAR ABSTRAK
Beras cerdas merupakan beras tiruan yang dibuat dari bahan-bahan non beras dan non terigu dengan
menggunakan ekstruder ulir ganda. Bahan baku beras cerdas meliputi Mocaf, tepung jagung, susu skim, air,
alginat, STPP, dan minyak sawit. Penelitian ini bertujuan untuk menentukan umur simpan beras cerdas
menggunakan metode ASLT melalui pendekatan Arrhenius. Penentuan umur simpan beras cerdas
dilakukan dalam dua tahap. Tahap pertama adalah uji organoleptik dengan menggunakan sampel yang
disimpan pada suhu 30 C, 40 C, 50 C dan 60 C untuk menentukan batas akhir penyimpanan berdasarkan
parameter aroma dari penilaian panelis. Tahap kedua adalah penentuan umur simpan dengan metode
Arrhenius berdasarkan perubahan kualitas produk selama penyimpanan. Lebih dari 50% panelis
menyatakan beras cerdas beraroma tengik berakhir pada minggu ke-4 suhu 60C. Reaksi yang sesuai
dengan parameter nilai peroksida dan asam lemak bebas adalah reaksi orde nol. Nilai energi aktivasi terkecil
digunakan untuk penentuan umur simpan produk yaitu nilai peroksida dengan regresi linier y = -713,25x +
8,167. Umur simpan beras cerdas adalah 3,40 minggu pada suhu 30 C.

Andaliman (Zanthoxylum acanthopodium) merupakan tanaman rempah khas Sumatera Utara yang banyak
digunakan sebagai bumbu masak karena memiliki citarasa yang khas. Selain itu andaliman memiliki
beberapa manfaat antara lain sebagai antimikroba, antioksidan dan sebagai immunomodulator. Studi
mengenai pengaruh proses ekstraksi terhadap komponen flavor andaliman telah dilakukan, namun belum

Dalam permintaan produk pangan untuk kesehatan dan keamanan pangan global sekarang ini, konsumen
menghendaki dan sedang mencari produk pangan tanpa atau paling sedikit terkena kontaminasi produk.
Senyawa ester 2- dan 3-monochloropropan-1,2-diol (MCPD) dan ester glisidol diketahui merupakan salah
satu komponen kontaminan pada produk hasil olahan minyak makan yang telah banyak digunakan sebagai
bahan pangan atau bahan ingredien pangan. Senyawa 3-monochloropropan-1,2-diol atau lebih dikenal
dengan 3-MCPD merupakan kontaminan pangan yang diklasifikasikan sebagai bahan yang kemungkinan
bersifat karsinogen; oleh karena itu, hanya boleh dikonsumsi dengan dosis/konsentrasi sebesar 2 g/kg
berat badan. Hasil studi terkini menunjukkan adanya senyawa ester 3-MCPD teridentifikasi dalam jumlah
cukup tinggi pada produk minyak/lemak pangan, seperti margarin dan minyak goreng serta pangan yang
mengandung lemak termasuk produk pangan infant formula dan susu manusia. Senyawa ester-ester lain
seperti 2-MCPD dan ester glisidol pun diduga dapat terjadi. Namun, hingga saat ini hanya terdapat sedikit
data informasi tentang toksikologi yang dapat diperoleh untuk senyawa ester 3-MCPD pada produk pangan.
Tulisan ini akan membahas dan menjelaskan proses terjadinya senyawa 3-MCPD pada produk pangan,
faktor-faktor yang memungkinkan penyebab terbentuknya senyawa ester 3-MCPD pada produk pangan, studi
tentang efek beracun senyawa 3-MCPD atau toksikologi dan penentuan senyawa ester 3-MCPD dalam produk
pangan.

Penelitian ini dilakukan untuk mengembangkan proses pembuatan shortening frying, creaming, baking dan
butter oil substitute pada skala industri kecil dengan kapasitas 50 kg/batch. Kondisi proses yang dioptimasi
adalah suhu dan waktu pendinginan di dalam reaktor dengan tiga kondisi yaitu 52, 122, 202 C selama
waktu proses 0, 30, 60, 90, 120 menit. Shortening yang dihasilkan pada setiap kondisi dianalisa kadar air,
bentuk dan warna serta mutu produk selama penyimpanan 5 minggu meliputi kestabilan emulsi, bentuk dan
tekstur. Produk shortening yang dihasilkan dengan ketiga kondisi suhu dan waktu proses hingga 120 menit
mengandung kadar air yang memadai (< 0,1%). Pada suhu media pendingin 52 C dan 122 C dengan
waktu proses lebih dari 45 menit menghasilkan shortening berbentuk cream dan berwarna pucat hingga
putih. Selama penyimpanan, produk berbentuk cream terpisah menjadi dua lapisan yaitu cream dan minyak
(oily) kecuali shortening untuk creaming. Kondisi optimum dalam pembentukan tekstur yang baik untuk
keempat jenis shortening diperoleh pada suhu media pendingin 52 C atau 122 C selama 30 menit. Pada
kondisi tersebut diperoleh produk yang memiliki bentuk semi padat atau padat dengan tekstur lunak atau
keras yang relatif stabil selama penyimpanan 5 minggu.

Penelitian pemanfaatan Cocoa Butter Substitute (CBS) untuk produk olahan cokelat telah dilakukan.
Penelitian ini bertujuan untuk memanfaatkan Cocoa Butter Substitute (CBS) hasil hidrogenasi menjadi cokelat
batangan, menganalisis berbagai jenis CBS dalam proses pembuatan cokelat batangan, dan mengetahui
tingkat penerimaan konsumen terhadap produk olahan cokelat batangan tersebut. Analisis yang dilakukan
dilakukan yaitu : analisis proksimat, titik leleh, profil trigliserida, profil asam lemak, total padatan lemak
(SFC), ukuran partikel, informasi nilai gizi, serta masa simpan (akselerasi). Analisis fisiko kimia cokelat
batangan menunjukkan kadar air berkisar 0,98-1,36%, kadar abu 1,43-2,37%, protein 1,90-7,05%, lemak
31,1-37,7%, bilangan iod 4,0-16,9 g iod per 100 g, indeks bias 1,4485-1,4545, dan tidak mengandung lemak
trans. Titik leleh cokelat batangan berkisar 320C-400C. Titik leleh produk cokelat batangan terpilih, Fully
Hydrogenated Palm Kernel Stearin (FHPKSt) sebesar 32 0C, dengan kandungan lemak padat meleleh
mendekati sempurna pd suhu 40 C. Produk cokelat komersial menunjukkan suhu titik leleh yang tinggi,
370C dan 400C. Berdasarkan uji organoleptik, produk cokelat batangan CBS yang terpilih adalah jenis
FHPKSt menggunakan 30 persen CBS. Jenis CBS yang cocok untuk cokelat batangan adalah jenis Fully
Hydrogenated Palm Kernel Stearin (FHPKSt) dengan proses hidrogenasi sempurna. Profil trigliserida cokelat
batangan terpilih (FHPKSt) dan cokelat komersial terlihat dominasi TAG LaLaLa, LaLaM, LaMM/LaLaP dan

Shelf Life Prediction of Beras Cerdas Made from Mocaf, Corn Flour Using Accelerated
Shelf-Life Testing (ASLT) Method of Arrhenius Approach

Beras cerdas is an artificial of rice made from non rice and non wheat raw material by twin screw
extruder. The ingredients of beras cerdas were Mocaf, corn flour, skim milk, water, alginate, STPP, and
palm oil. The objective of this study were to observe the shelf life of beras cerdas using ASLT method with
Arrhenius approach. Determination of shelf life of beras cerdas carried out in two stages. The first stage
was the organoleptic test using a sample stored at a temperature of 30 C, 40 C, 50 C and 60 C to
determine the end point of storage life based on the parameters aroma of panelist assessment. The second
stage was to determine the shelf life by the Arrhenius method based on changes in the quality of the product
during storage. More than 50 % of panelists expressed rancid flavored beras cerdas ended at week 4. The
reaction in accordace with the parameters of the peroxide value and free fatty acid is zero order reactio. The
results showed that the parameter had the smallest activation energy was the critical parameters for the
expired date. The peroxide value was used as a model in determining the expired date by linear regression y
= -713,25x + 8,167. The expired date of beras cerdas was 3,40 weeks at 30 oC.

Andaliman (Zanthoxylum acanthopodium) is typical of North Sumatra spice plant that is widely used as
specific flavor. In other hand andaliman has several benefits such as antimicrobial, antioxidant and as an
immunomodulator. Studies on the effect of the extraction of the flavor components or potent odorant of
andaliman has been done, but the effect of maceration time and temperature on extraction to the flavor
components have not reported yet. This research were conducted to study the effect of temperature and time
of maceration of andaliman gainst theirs volatile compounds.. Andaliman extracted by maceration method
using ethanol and ethyl acetate (1: 1) for 2 hours, 4 hours, and 6 hours on room temperature and 40 C. The
extracts were analyzed using GC-MS followed by GC-O to analyze potential odorants. The results showed that
geranyl acetate were the main compound of andaliman extracted using ethanol: ethyl acetate (1: 1) at room
temperature while after 6 hours of maceration D-Limonene replaced the dominance of geranyl acetate.
Maceration at 40 C also show geranyl acetate as the dominant volatile components at 2 hours maceration.
After 4 hours of maceration 40 C, citronellol played as dominant volatile compound, whereas after 6 hours
of maceration at 40 C D-Limonene played as dominant volatile compound followed by geranyl acetate. That
can showed that temperature and time of maceration process of andaliman can affect the dominant flavor
compound of the extract. However aroma were described from sniffing port of GC-O on andaliman are
macerated at room temperature varies from andaliman-like, green, flowery, sour and earthy. While on
andaliman macerated at 40 C the aroma described are flowery aroma, green, sweet, and spicy. This may
conclude that the process of drying of raw materials could affect aroma that described by using GC-O.

Review on Food Safety of 3 MCPD Esters in Edible Oils/ Fats and in Other Foods

In todays global demand for healthy and safe foods, consumers are looking for foods without or with least
contaminants. Esters of 2and 3mono-chloro-propane1.2diol(MCPD) and glycidol esters are important
contaminants of processed edible oils used as foods or food ingredients. 3mono-chloro-propane1.2diol
(3MCPD) esters is a food contaminants classified as a possible human carcinogen, so for a tolerable daily
intake was established of 2 g/kg body weight.Recent studies have identified high levels of 3 MCPD esters
in refined edible fats, such as margarine and oils and in fat containing foods including infant formula and
human milk. Other related esters compounds such as 2-MCPD esters and glycidol esters are also expected to
occur. Only a little toxicological data are available in 3MCPD esters. This review describes the occurrence of
3MCPD esters in food products, possible factors that cause the formation of 3MCPD esters, toxicological
studies and determination of 3MCPD esters in food products.

This research was conducted to develop the manufacturing process of frying, creaming, baking and butter
oil substitute shortenings on a small scale industry with a capacity of 50 kg/batch. The process conditions
optimized were temperature and time of cooling in the reactor with three conditions, namely 52, 122,
202 C during the processing time of 0, 30, 60, 90, 120 minutes. Shortening that generated in each
condition were analyzed the water content, form and color as well as the quality of the product during
storage of 5 weeks include emulsion stability, shape and texture. Shortening products were produced by the
three conditions of temperature and processing time up to 120 minutes contained adequate moisture
content (<0.1%). At the temperature of the cooling medium 52 C and 122 C with a processing time of
more than 45 minutes resulted in shortening shaped and pale cream to white. During storage, the products
shaped cream were separated into two layers of cream and oil (oily) except for creaming shortening. The
optimum conditions in the formation of a good texture for the four types of shortening the cooling medium
were obtained at temperature of 52 C or 122 C for 30 minutes. In these conditions the products were
obtained had a semi-solid or solid form with a soft or hard texture that relatively stable during storage of 5
weeks.

Research utilization of Cocoa Butter Substitute (CBS) for the processed chocolate products have been
conducted. This study aims to harness Cocoa Butter Substitute (CBS) hydrogenated into chocolate bars,
analyze various types of CBS in the process of making chocolate bars, and determine the level of consumer
acceptance of the products processed chocolate bars. Analyze were proximate analysis, melting point, the
profile of triglycerides, fatty acid profile, total fat solids (SFC), the particle size, nutritional value information,
and expired date (accelerated). Physical and chemical analysis chocolate bars indicate the water content
ranged from 0.98 to 1.36%, ash content of 1.43 to 2.37%, from 1.90 to 7.05% protein, fat from 31.1 to 37.7%,
numbers iodine 4.0 to 16.9 g iodine per 100 g, the refractive index of 1.4485 to 1.4545, and there were no
trans fats found. The melting point of chocolate bar products selected FHPKSt 32C, the solid fat content in
the form steep near-perfect start to melt temperature pd 40C. Poduk commercial chocolate showed a high
melting point, 37C and 40C. Product acceptance testing CBS chocolate bars with ingredients chosen by the
panelists was the type Fully Hydrogenated Palm Kernel Stearin (FHPKSt), with CBS percentage of 30 percent.
Based on the origin of the hydrogenation process, CBS types suitable to be made into chocolate bars are CBS
types Fully Hydrogenated Palm Kernel Stearin (FHPKSt) with a perfect through the hydrogenation process.
Selected triglyceride profiles chocolate bars (types FHPKSt) and commercial chocolate showed a dominance
TAG LaLaLa, LaLaM, LaMM/LaLap and LMM/LaOM derived from palm kernel oil. Particle measurement
chocolate bars that particle size is smaller than the commercial one. The shelf life of the product is a
chocolate bar for 35 weeks with storage at 25oC with the critical parameter is the moisture content.

2.2. Metode
Penentuan umur simpan beras cerdas ini
dilakukan dalam 2 tahap yaitu penentuan

penyimpanan. Tahap pertama, penentuan mutu
kritis dilakukan menggunakan uji organoleptik
untuk menentukan batas akhir dari penyimpanan
berdasarkan penilaian panelis. Sampel yang
digunakan pada tahapan ini adalah sampel yang
disimpan pada suhu 60 C untuk. Uji organoleptik
ini dilakukan setiap seminggu sekali dan berakhir
ketika 50% panelis menyatakan menolak beras

penyimpanan. Tahapan ini meliputi penentuan
perubahan mutu secara kimia, plot data kurva
perubahan mutu (sumbu y) terhadap lama
penyimpanan(sumbu x), dan ln perubahan mutu
(sumbu y) terhadap lama penyimpanan (sumbu x),
penentuan ordo reaksi berdasarkan koefisien
determinasi (R2), plot kurva pra-eksponensial k (ln
k) versus suhu (1/T dalam K), penentuan energi
aktivasi, dan prediksi umur simpan.
2.2.1. Preparasi sampel
Preparasi
sampel
dilakukan
dengan
mengemas beras cerdas menggunakan plastik
polipropilen, kemudian sampel disimpan pada suhu
30 C, 40 C, 50 C dan 60 C (suhu penyimpanan
dikondisikan pada suhu penyimpanan komersial
dan di atas suhu penyimpanan untuk mempercepat
terjadinya kerusakan).
2.2.2 Penentuan karakteristik mutu kritis beras
cerdas
Penentuan batas umur simpan dapat dilakukan
dengan uji organoleptik, dengan menetapkan
persentase peluang penolakan konsumen terhadap
produk (Hough, Garitta, Gomez, 2006). Pengujian
organoleptik (aroma) dilakukan oleh panelis semi
terlatih sebanyak 7 orang (Gacula dan Kubala,
1975) yaitu mahasiswa Fakultas Teknologi
Pertanian, Universitas Jember yang melakukan
penelitian mengenai beras cerdas karena panelis
sudah terbiasa dengan karakteristik sampel,
dilakukan setiap seminggu sekali dan pada setiap
pengamatan panelis yang digunakan tidak berubah.
Sampel disimpan pada suhu 30 C, 40 C, 50 C, dan
60 C. Dalam uji organoleptik, panelis diminta
memutuskan apakah beras cerdas yang diuji
masih dapat diterima atau ditolak. Batas akhir dari
pengujian organoleptik ketika 50% panelis
menolak produk tersebut. Uji organoleptik ini

temperature and 40 C. The extracts were analyzed using GC-MS followed by GC-O
to analyze potential odorants. The results showed that geranyl acetate were the
main compound of andaliman extracted using ethanol: ethyl acetate (1: 1) at room
temperature while after 6 hours of maceration D-Limonene replaced the
dominance of geranyl acetate. Maceration at 40 C also show geranyl acetate as
the dominant volatile components at 2 hours maceration. After 4 hours of
maceration 40 C, citronellol played as dominant volatile compound, whereas
after 6 hours of maceration at 40 C D-Limonene played as dominant volatile
compound followed by geranyl acetate. That can showed that temperature and
time of maceration process of andaliman can affect the dominant flavor compound
of the extract. However aroma were described from sniffing port of GC-O on
andaliman are macerated at room temperature varies from andaliman-like, green,
flowery, sour and earthy. While on andaliman macerated at 40 C the aroma
described are flowery aroma, green, sweet, and spicy. This may conclude that the
process of drying of raw materials could affect aroma that described by using GCO.

1. Pendahuluan
Indonesia kaya dengan rempah rempah, salah
satu rempah yang mempunyai flavor disukai, asli
Indonesia dan sering digunakan untuk pengobatan
tradisional,
yaitu
andaliman
(Zanthoxylum
acanthopodium). Ada 549 spesies Zanthoxylum
tersebar luas diseluruh dunia terutama didaerah
bersuhu tropis, oleh karena itu senyawa yang
dikandung bervariasi. Beberapa khasiat andaliman
yaitu untuk pengobatan tradisional bagi orang
sakit, sebagai peningkat nafsu makan, juga sering
digunakan oleh orang Batak untuk menyembuhkan
sakit kepala (Yanti et al., 2011). Andaliman dapat
digunakan sebagai aditif pangan fungsional (Irawan
dan Wijaya, 2002), dapat digunakan sebagai
pengawet pada masakan karena kandungan
senyawa anti mikroba (Siswadi, 2001), antioksidan
(Tensiska et al., 2003), dan juga dapat berperan
sebagai anti bakteri dan anti jamur (Parhusip,
2006).
Beberapa permasalahan yang terjadi terkait
andaliman antara lain buah andaliman yang mudah
rusak dan berjamur dikarenakan buah yang
dipanen mengandung kadar air yang tinggi. Masa
simpan buah andaliman hanya beberapa hari dalam
suhu kamar, dan petani belum mengetahui teknik
pengawetan buah andaliman (Napitupulu, 2004).
Beberapa metode ekstraksi terhadap andaliman
telah dilakukan oleh Wijaya et al. (2002) dan telah
diketahui komponen volatil dan komponen kunci
aroma dari andaliman.
Wijaya et al. (2002) melakukan ekstraksi
andaliman dengan metode head space, LickensNickerson, maserasi, dan destilasi vakum dimana
dilaporkan bahwa ekstrak andaliman yang memiliki
aroma paling menyerupai bahan bakunya adalah
metode maserasi dan diikuti dengan metode
destilasi vakum. Akyla (2014) melaporkan bahwa

ABSTRACT: In todays global demand for healthy and safe foods, consumers are
looking for foods without or with least contaminants. Esters of 2and 3monochloro-propane1.2diol(MCPD) and glycidol esters are important contaminants
of processed edible oils used as foods or food ingredients. 3mono-chloropropane1.2diol (3MCPD) esters is a food contaminants classified as a possible
human carcinogen, so for a tolerable daily intake was established of 2 g/kg body
weight.Recent studies have identified high levels of 3 MCPD esters in refined
edible fats, such as margarine and oils and in fat containing foods including infant
formula and human milk. Other related esters compounds such as 2-MCPD esters
and glycidol esters are also expected to occur. Only a little toxicological data are
available in 3MCPD esters. This review describes the occurrence of 3MCPD
esters in food products, possible factors that cause the formation of 3MCPD
esters, toxicological studies and determination of 3MCPD esters in food products.

1. Introduction
Food safety has emerged as an important global
issue with international trade and health
implications. Since food safety hazards can occur at

4. Toxicology Studies
Toxicological animal studies have shown that
the main target organ for 3 MCPD toxicity is the
kidney, with chronic oral exposure resulting in
nepropathy and tubular hyperplasia and adenomas
(as a reviewed by the joint FAO/WHO Expert
Committee on Food Additives, JECFA (JECFA, 2002;
in particular, Sunaharaetal., 1993). 3MCPD itself is
an animal carcinogen producing tumours at various
sites in male F344 rats (mammary tissue, testes and
preputial gland) and renal tubular adenomas and
carcinoma in both sexes of F344 rats
(Sunaharaetal., 1993; Lynch, 1998). 3MCPD has
also been shown to reduce infertility in rats and
suppression of the immune function (Leeetal.,
2004; Lee etal., 2005). Evidence of carcinogenic
activity in male rats and some evidence of
carcinogenicity activity in female rats has been
reported (Choetal., 2008).
However, in a 2008 statement from the
European Food Safety Authority Panel in
Contaminants in Food Chain (EFSA CONTAM)
concluded that: there was no comprehensive
toxicological and bioavailability data on 3MCPD
esters available. Nevertheles, the German Federal
for Risk Assessment (B f R) based its recent risk
assessment on toxicological data on free 3 MCPD;
under the assumption that 100 % of 3 MCPD are
release from the esters. Subsequently, Seefelder
and co-workers in 2007, using the intestinal model
lipase studies have shown that the release of 3
MCPD from 3 MCPD esterswas much shown than
from the monoester. Furthermore, it was found that
in vegetable oils, only 15 % of 3 MCPD are in
mono-ester forms, while the majority are di-esters.
Recently, a 90-days rat study was carried out by
the University of Parma (Italy) in response to the
European Food Safety Authority (EFSA) call, to
evaluate the toxicological profile of 3 chloropropane 1.2 diol (3 MCPD) esters (mono and
di-ester) compared to that of free (or unesterified)
3MCPD. This study aimed to compare the toxicity
of 3 MCPD di-palmitate and free 3MCPD,
performed on male and female rats (Barocellietal.,
2011). Considering that only a small part (< 15 %)
of the 3MCPD bound in esters is in fact bound in
monoesters (Seefelderetal., 2008), the studies were
performed using only di-esters form. Palmitic-acid
and fatty acid was proposed due to the fact that
highest levels of 3 MCPD were found in palm oil
and is the most commonly used di-estertostudy the
formation and the composition of 3 MCPD esters
in vitro. This report covers the whole 90 days
study with either 3MCPD (respectively 29.5, 7.57,
and 1.84 mg/kg of body weight per day) or 3
MCPD di-palmitate (respectively 156.75, 30.9 and
9.78 mg/kg per day). In male rats, Bench Mark Dose

6. Conclusion
3MCPD esters have been found in all
refined vegetable oils. 3MCPD esters are now also
widespread in thermally processed foods like
French fries, toasted bread, bread crust, donuts,
salty crackers, roasted coffee, roasted barley,
roasted dark malt and coffee creamer, and
fermented foods.

1. Pendahuluan
Shortening merupakan lemak berbentuk plastis
yang
dapat
digunakan
sebagai
media
penggorengan, pemasakan, pembuatan roti dan
pengisi pada produk confectionery (Hui, 1996;
Obrien, 2004; Hasibuan et al., 2009). Awalnya,
shortening dibuat dari lemak hewani namun kini
beralih dengan menggunakan minyak nabati
melalui proses hidrogenasi, interesterifikasi dan
pencampuran 2 atau lebih minyak/lemak
(blending) (Lumor and Akoh, 2005; Berger and
Idris, 2005; Jin et al., 2008; Sahri and Idris, 2010).
Saat ini, shortening yang beredar di pasar lokal
Indonesia umumnya berbahan minyak sawit. Hal
ini disebabkan oleh ketersediaan minyak sawit
melimpah dan karakteristik unggulnya berbentuk
semi padat yang sangat sesuai untuk formulasi
shortening (Haryati dan Siahaan, 2007; Hasibuan et
al., 2009; Siahaan et al., 2013).
Shortening dibuat melalui beberapa tahapan
meliputi formulasi lemak/minyak, pendinginan dan
tempering. Formulasi merupakan tahapan utama
karena formula yang dihasilkan harus sesuai
dengan aplikasinya pada produk tertentu. Misalnya,
shortening untuk media penggorengan memiliki
formula yang berbeda dengan shortening untuk
bakery ataupun cakery. Tahapan kedua adalah
pembentukan tekstur dengan cara pendinginan.
Tekstur dari shortening sengaja dibuat berbentuk
semi padat atau padat dan homogen serta tidak
mudah mencair pada suhu tertentu. Proses
pembentukan tekstur merupakan suatu seni dan
sangat dipengaruhi oleh formula dan suhu serta
waktu proses pendinginan. Tahapan selanjutnya
adalah tempering, merupakan proses finalisasi
dalam menyempurnakan pembentukan kristal dari
minyak/lemak. Tempering biasanya dilakukan pada
ruangan bersuhu 18-22 C selama 2x24 jam (Hui,
1996; Obrien, 2004; Haryati dan Siahaan, 2007;
Siahaan et al., 2013).
Di Indonesia, shortening diproduksi secara
komersial oleh perusahaan besar dengan teknologi
modern dari luar negeri. Sementara itu, industri
kecil tidak banyak yang memproduksi shortening
disebabkan oleh teknologinya membutuhkan
investasi yang cukup besar. Selain itu, diperlukan
manajemen pemasaran yang tepat dan dapat
menjamin tersedianya pasar agar produksinya
berkelanjutan. Di samping itu, industri rumah
tangga yang memproduksi beragam produk seperti
cakery, bakery, dan produk gorengan (ayam, pisang,
keripik, dan lain-lain) tumbuh sangat pesat.
Perkembangan ini akan berdampak pada
peningkatan penggunaan shortening dengan varian
jenis/tipe shortening yang sesuai dengan produk
tertentu. Dengan demikian, produksi shortening
pada skala industri kecil berpotensi untuk
dikembangkan

Warna produk shortening sangat dipengaruhi
oleh bahan baku minyak/lemak dan bentuknya.
Umumnya minyak dan lemak yang berbentuk padat
cenderung berwarna putih dan ketika dicairkan
dengan pemanasan berubah warna menjadi agak
kekuningan Gambar 2 menampilkan bentuk dan
warna dari bahan baku yang digunakan dalam
formulasi shortening pada suhu ruangan (28-30
C). RBDPO berbentuk semi padat dan warnanya
kuning muda. RBPKO dan RBDOL berbentuk cair
namun warnanya berbeda masing-masing putih
kekuningan dan kuning muda. RBDPS berbentuk
padat dan berwarna putih. RPO berbentuk semi
padat dan berwarna kemerahan.

cokelat telah dilakukan. Penelitian ini bertujuan untuk memanfaatkan Cocoa Butter
Substitute (CBS) hasil hidrogenasi menjadi cokelat batangan, menganalisis berbagai jenis
CBS dalam proses pembuatan cokelat batangan, dan mengetahui tingkat penerimaan
konsumen terhadap produk olahan cokelat batangan tersebut. Analisis yang dilakukan
dilakukan yaitu : analisis proksimat, titik leleh, profil trigliserida, profil asam lemak, total
padatan lemak (SFC), ukuran partikel, informasi nilai gizi, serta masa simpan (akselerasi).
Analisis fisiko kimia cokelat batangan menunjukkan kadar air berkisar 0,98-1,36%, kadar
abu 1,43-2,37%, protein 1,90-7,05%, lemak 31,1-37,7%, bilangan iod 4,0-16,9 g iod per 100
g, indeks bias 1,4485-1,4545, dan tidak mengandung lemak trans. Titik leleh cokelat
batangan berkisar 32C-40C. Titik leleh produk cokelat batangan terpilih, Fully
Hydrogenated Palm Kernel Stearin (FHPKSt) sebesar 32C, dengan kandungan lemak padat
meleleh mendekati sempurna pd suhu 40C. Produk cokelat komersial menunjukkan suhu
titik leleh yang tinggi, 37C dan 40C. Berdasarkan uji organoleptik, produk cokelat
batangan CBS yang terpilih adalah jenis FHPKSt menggunakan 30 persen CBS. Jenis CBS
yang cocok untuk cokelat batangan adalah jenis Fully Hydrogenated Palm Kernel Stearin
(FHPKSt) dengan proses hidrogenasi sempurna. Profil trigliserida cokelat batangan terpilih
(FHPKSt) dan cokelat komersial terlihat dominasi TAG LaLaLa, LaLaM, LaMM/LaLaP dan
LMM/LaOM dari minyak inti sawit. Ukuran partikel cokelat batangan hasil penelitian lebih
kecil dibandingkan cokelat komersial. Masa simpan produk cokelat batangan selama 35
minggu pada suhu 25C dengan parameter kritis yaitu kadar air.

ABSTRACT: Research utilization of Cocoa Butter Substitute (CBS) for the processed
chocolate products have been conducted. This study aims to harness Cocoa Butter
Substitute (CBS) hydrogenated into chocolate bars, analyze various types of CBS in the
process of making chocolate bars, and determine the level of consumer acceptance of the
products processed chocolate bars. Analyze were proximate analysis, melting point, the
profile of triglycerides, fatty acid profile, total fat solids (SFC), the particle size, nutritional
value information, and expired date (accelerated). Physical and chemical analysis chocolate
bars indicate the water content ranged from 0.98 to 1.36%, ash content of 1.43 to 2.37%,
from 1.90 to 7.05% protein, fat from 31.1 to 37.7%, numbers iodine 4.0 to 16.9 g iodine per
100 g, the refractive index of 1.4485 to 1.4545, and there were no trans fats found. The
melting point of chocolate bar products selected FHPKSt 32C, the solid fat content in the
form steep near-perfect start to melt temperature pd 40C. Poduk commercial chocolate
showed a high melting point, 37C and 40C. Product acceptance testing CBS chocolate bars
with ingredients chosen by the panelists was the type Fully Hydrogenated Palm Kernel
Stearin (FHPKSt), with CBS percentage of 30 percent. Based on the origin of the
hydrogenation process, CBS types suitable to be made into chocolate bars are CBS types
Fully Hydrogenated Palm Kernel Stearin (FHPKSt) with a perfect through the
hydrogenation process. Selected triglyceride profiles chocolate bars (types FHPKSt) and
commercial chocolate showed a dominance TAG LaLaLa, LaLaM, LaMM/LaLap and
LMM/LaOM derived from palm kernel oil. Particle measurement chocolate bars that particle
size is smaller than the commercial one. The shelf life of the product is a chocolate bar for
35 weeks with storage at 25oC with the critical parameter is the moisture content.

Makalah merupakan pemikiran sendiri, belum pernah dipublikasikan, mengandung unsur kekinian dan
bersifat ilmiah.
Judul makalah harus spesifik, jelas, singkat, informatif dan menggambarkan substansi dari tulisan; judul
ditulis dalam dua bahasa (bahasa Indonesia dan Inggris); judul diketik dengan huruf besar pada awal
kata; judul bahasa lainnya di-italic.
Nama penulis ditampilkan dengan jelas; lengkap tanpa menyebutkan gelar; nama asli; penulisan nama
sebaiknya tidak disingkat, bila dilakukan penyingkatan nama harus mengikuti kaidah dan konsisten;
nama penulis utama berada pada urutan paling depan.
Identitas penulis berisi nama instansi/lembaga tempat penulis bekerja dan alamat; alamat e-mail khusus
untuk penulis utama.
Abstrak ditulis dalam dua bahasa; tidak boleh lebih dari 200 kata. Abstrak harus mencakup tujuan
penelitian, bahan dan metode singkat, hasil dan kesimpulan. Hasil dapat didukung dengan data
kuantitatif. Pada akhir abstrak seharusnya memperlihatkan kesimpulan akhir/info baru hasil litbang
(Font Cambria, 10 pt dan spasi 1).
Kata kunci ditulis dalam dua bahasa (Bahasa Indonesia dan Bahasa Inggris), ditempatkan di bawah
abstrak, dapat berupa kata tunggal dan kata majemuk yang terdiri dari 3 sampai dengan 5 kata (Font
Cambria, 8 pt, italic dan spasi 1).
Isi makalah penelitian terdiri dari:
o Pendahuluan (latar belakang, state of the art, dan tujuan penelitian)
o Bahan dan metode
o Hasil dan pembahasan (ilustrasi : gambar, tabel, grafik, foto, diagram dll)
o Kesimpulan
o Ucapan Terima Kasih (opsional)
o Daftar Pustaka (paling sedikit 12 referensi).
Isi makalah ulasan/ review terdiri dari:
o Pendahuluan (latar belakang, tujuan penelitian)
o Pembahasan (dapat terdiri dari beberapa bab sesuai kebutuhan)
o Kesimpulan
o Daftar Pustaka (paling sedikit 25 referensi)
Makalah ditulis 1 spasi pada kertas A4 dengan batas atas dan batas bawah 2,5 cm tepi kiri 3 cm dan tepi
kanan masing-masing 1,5 cm, huruf Cambria Font 10, dengan jumlah halaman makalah maksimal 10
halaman.
Tabel diberi nomer berurutan, judul tabel ditempatkan di atas tabel (rata kiri), ditulis dengan huruf kecil
kecuali huruf pertama pada kata pertama ditulis dengan huruf kapital kecuali singkatan (Font Cambria, 8
pt dan spasi 1); Tabel dibuat hanya dengan garis horisontal dan diletakkan rata kiri. Pencantuman
sumber dan keterangan diletakkan di bawah tabel rata kiri (Font Cambria, 8 pt dan spasi 1).
