BUSINESS CONCEPT
1.1 INTRODUCTION
The tourism industry is a major contributor to the world economy. According to the estimates
of the World Tourism Organization (WTO), international tourism alone generated $1.4 trillion in
receipts (4.1 per cent of World GDP) in 2000. Estimates of the World Travel and Tourism
Council (WTTC), on the other hand, put the impact of tourism on the economy at a much higher
level because it includes domestic tourism. As reported by the WTTC, tourism grossed US$566
billion in world visitor exports and created employment for 73.1 million persons in the year
2000.
The hotel and restaurant industry is the combination of institutions, supporting human
resources, financing mechanisms, information systems, organizational structures that link
institutions and resources that cater to the needs of domestic and foreign travelers.
Institutions include government departments and agencies, private providers of lodging and
catering services, such as hotels, motels, restaurants, fast food establishments, educational
institutions that provide training and other types of organizations responsible for the promotion
of hospitality services. The local hotel industry is already in its mature stage characterized by
overcapacity of available rooms and gradual standardization of prizes across categories of
services.
The members of local restaurant and fast food industry, on the other hand, is in its growth
stage and has increasing consumer demand for every improving product. The growth is proven
by the rapid expansion of food outlets in key areas in Metro Manila and the provinces. The
popularity of fast food establishments came in the 1980s, and over the last years, the industry
has consistently posted double-digit growth rates.
Supporting human resources include hotel and restaurant managers and assistant managers,
housekeeping supervisors, security personnel, chefs, cooks, waiters, bartenders, and other related
workers and professionals directly involved in hotel and restaurant services.
Financing mechanisms include equity infusions of local and foreign investors, particularly
for international hotel chains and loans from fiduciary institutions.
Information systems include computer networks within and among institutions including
electronic mail, printed media such as journals, magazines, and newsletters, telephone systems
including voice mail and data transmission, interactive multimedia, and other information media
technology that facilitates sharing or exchange of information, summarizes and collates data.
The hotels, catering and tourism sector is one of the fastest growing sectors of the global
economy. It is also among the top-job creating sectors because its labour intensive nature and the
significant multiplier effect on employment in other related sectors.
In the Hospitality sector, it includes: hotels, motels& motor inns, restaurants, clubs, caravan
parks, bed& breakfast, hostels, fast food outlets, resorts, convention & conference venue, service
apartment, entertainment or sports venue, casino complexes, cruise ship. It comprised of a
variety of sectors providing a range of services and facilities and a range of jobs in various
department. Possibilities to work as a chef, housekeeper, receptionist, marketing executive,
concierge.
In the tourism sector, it required skills & abilities like automated ticketing & reservation,
sales & marketing, information & customer service, administration &accounting and strategic
planning.
The hospitality and tourism sector includes lodging, restaurants, theme parks, cruise lines,
transportation, and additional fields within the tourism industry. This sector includes four
clusters: food services, accommodation, activities/amusement and transportation.
Food and beverage outlets can range from restaurants and bars to nightclubs and posh dining
rooms. Kitchen staff, room service staff, food and beverage servers and bartenders are just some
of the positions that are available in this area.
As changes occur in consumer preferences, and competition increases, the food and beverage
industry becomes increasingly sophisticated in the way it handles management and corporate
strategies. Many restaurants, especially chains, are diversifying, coming out with their own retail
product lines. Specialty cafs market their products to airlines and offices. Food and beverage
chains have found a niche in bookstores, department stores and in casinos. As the lines between
traditional food and beverage operations and other industries blur, employers and employees
alike will have to continue to react to changing customer expectations with innovative ideas and
responses.
The food and beverage sector encompasses all types of establishments supplying food and
beverages for consumption from fine dining and ethnic restaurants to institutional food outlets
and catering firms, from pubs and bars to nightclubs and lounges.
Le patisserie logo represents the Philippines, the brown color symbolizes the "salakot" a hat
which mostly used by farmers and the skin color of the Filipino w/c is kayumanggi and a
common symbol for Filipino identity, that's why we chose it for having a Filipino touch in the
restaurant. The slice of cake and cupcake is what "le patisserie" sell, the blue and red color
behind it symbolizes the Philippine flag and lastly the chef hat and a mustache which represents
the "heroes" of the Philippines
