Method
1. Forthebrownlambstock,preheattheovento200C/180C
Fan/Gas6.Placethelambbonesinaroastingtinandroastinto
theovenfor2030minutes,oruntiltheboneshavedarkenedand
thefatandmarrowfrominsidetheboneshasmelted.
2. Drainthefatfromtheroastingtrayandreserve.Transferthe
bonestoalargesaucepan.Wipetheroastingtraycleanwitha
pieceofkitchenpaper.

3. Placetheroastingtrayoveramediumheat,addasplashofwater
andbringtotheboil,scrapingupanyburnedbitsfromthebottom
ofthetrayusingawoodenspoon.Pourtheliquidintothe
saucepancontainingthebones,thenadd500ml/18flozwater,the
bayleaves,rosemaryandchickenstock.Bringthemixturetothe
boil,thenreducetheheatuntilthemixtureissimmeringgently
andcontinuetosimmerfor2hours.
4. Strainthestockthroughafinesieveintoabowl.Coverthebowl
andsetasidetocool,thenchillinthefridgeovernight.Duringthis
timethefatwillrisetothetopofthestockandsolidify.
5. Thenextday,removethesolidlayeroffatfromthesurfaceofthe
chilledstock.Pourthestockintoasaucepanandbringtothe
boil.Reducetheheatuntilthestockissimmering,thensimmer
untilthevolumeofliquidhasreducedbyabout100ml/3flozand
thestockhasthickened.Keepwarm.
6. Fortheauberginepure,piercetheauberginealloverwithasharp
knife,thentransfertoaplateandcoverwithclingfilm.Microwave
onfullpowerfor810minutes,oruntildeflatedandverysoftin
themiddle.Alternatively,placethepiercedaubergineonabaking
trayandbakeintheovensetto200C/180CFan/Gas6for4560
minutes.
7. Settheaubergineasidetocool,thencutinhalflengthways,
scoopoutthefleshandmashwell.Draintheauberginefleshina
colanderforanhour.
8. Heattheoilinasaucepanoveramediumheat,thenaddthe
drainedaubergine,dill,mint,yoghurt,lemonzestandlemonjuice
andstirwelluntilwarmedthrough.Season,totaste,withsaltand
freshlygroundblackpepper.Keepwarm.
9. Forthecrustedlamb,dryfrythecardamompodsoveramedium
heatfor30seconds,oruntilfragrant.Setasideonaplate.
10. Addalittleoiltothepan,thenfrythelambrackforafew
secondsonallsidesuntilbrownedallover.Placethelambskin
sidedownandcontinuetofryuntilthefatmelts.
11. Blendthesourdough,mint,toastedcardamompods,andEnglish
mustardtoaroughpureinafoodprocessor.
12. Transferthelambracktoaroastingtrayandbrushthemeatwith
alittleEnglishmustard.Spreadatablespoonofthemintmixture
ontothefattysideofthelambrack.Roastintheovenfor1215
minutes(formediumrare),oruntilcookedtoyourliking.Remove
thelambfromtheovenandsetasidetorestfor10minutes.

13. Meanwhile,forthegravy,pourthejuicesfromtheroastingtray
intoasaucepan,thenaddthereducedlambstock,redwine
vinegarandsugarandstirwelluntilthesugarhasdissolved.
Bringthemixturetotheboil,thenreducetheheatandsimmerfor
1015minutes,oruntilthevolumeofliquidhasreducedenoughto
formathickgravythatcoatsthebackofaspoon.Justbefore
serving,stirthroughthechoppedmint.
14. Toserve,carvethelambrackintocutletsanddividethemequally
betweentwoservingplates.Spoontheauberginepure
alongside,thendrizzleoverthegravy.
