FCI was formed to be a ground-breaking extension
of the French Culinary Institute, now the
International Culinary Center (ICC). Our
number one priority is always taste, which is why
guests consistently hail our food as the best meal
theyve ever eaten, but FCI quite simply boils

Off-Site Events
The FCI Team travels to any location
in the tri-state area: including New York,
New Jersey, Westchester, The Hamptons,
and the Upper Hudson Valley region.

On-Site Offerings
The Studio at 28 Crosby is located at our home
in the International Culinary in SoHo. With
a private entrance on Crosby Street, the space
accommodates up to 90 guests for a seated
dinner and up to 125 for a cocktail reception.
The Studio features open concept kitchens for
for hands-on cooking experiences and unique
behind-the-scenes views during your event.

Hands-On Experiences
What sets FCI apart from other caterers is the
interactive, hands-on capabilities we have for
events; perfect for engagement parties, bridal
showers, bachelor/bachelorette parties and more.

Market Basket Competition

For this hands-on experience, guests will enjoy


a fun and fast-paced culinary competition
(similar to the show Chopped). Each team
will receive a basket filled with mystery
ingredients. In 45 minutes, each team will need
to create a signature dish that features the
mystery ingredients, while also being allowed
to use items from FCIs extensive pantry.

Bourbon & Butchery

During the tasting, guests will learn the history


of bourbon, the process of distillation, and taste
different types of batches. After, they are guided
through a whole-animal butchery by one of our
Master Butchers, who will walk the guests
through a demonstration of breaking down a
suckling pig. Guests will learn how to utilize
the entire animal from nose to tail.

Profiteroles

Guests will learn about this classic


French dessert, where pte a choux
pastries are filled with fresh seasonal
fillings of your selection and topped
with warm chocolate sauce and
fresh fruit.

Mozzarella Making

Guests will learn the the basics of cheese


making, and how to stretch and form
mozzarella with the guidance of the
chef. Then choose from a variety of
toppings, including olive oils, fresh basil
and herbs to package and take home.

Truffle Rolling

Experience the techniques, flavors


and textures of chocolates. Guests
will get to roll their selection of white,
milk and dark chocolate truffles in
a variety of coatings and toppings,
then package them to take home!

FCI can also provide giveaways


for your guests, or favors for the
wedding party.
Some past favorites have included
handmade stationary sets, a buildyour-own granola bar (to munch on
the night of or morning after), and
our classic french macarons.
Our Emergency Drink Kit has
been a huge hit for grooms gifts,
and includes a cigar box filled with
liquor and supplies. Past kits have
featured skull vodka and tanqueray
gin, along with recipe cards for
an array of martinis and solo cup
shot glasses to mix it all up.
