Annies Sno Biz
Staying cool in Roseville just got a whole lot tastier with Annies
Sno Biz.
Owner Annie Renee said that she needed to do something
new when her youngest went off to college. Plus she found her
self with a new tuition bill that needed paying, so she opened
Annies Sno Biz.
Annies shaved ice is not a snow cone, its much better. The
ice is uffy, kind of like snow, that holds the avoring longer,
unlike a standard snow cone that where the avor sinks to the
bottom. Annies shaved ice is soft, uffy and infused with avor
throughout the icy goodness.
Annies offers three sizes to tempt you pallet, small for $4.,
medium for $5. and $6 for large.
Annies SnoBiz caters to private events, starting with a minimum charge of $200. That gives the customer 50 small shave
ice with any of the 45 avors for one-hour.
Popular avors are cherry and blue raspberry. Annie has created several tasty combinations like, Cali Surf is coconut, pineapple and strawberry, or the Shark Attack with sour green apple
and blue raspberry. Splattered Frog is cherry and lime.
Annies Sno Biz participates in many fundraisers where they
donate 20% back to the community like schools, churches, and
children ghting leukemia.
Each week, Annies Sno Biz posts their schedule for the week

He slow cooks the on low heat tri tip on a Yoder smoker for an
hour and a half. After the smoking has taken place, Baker slow
cranks fun the heat and sears the trip tip for the nish. He said
that the meat absorbs the smoke during the process, giving it a
unique wood avored barbecued tri tip.
Along with the efcient and professional grills, customers can
choose components like a pizza oven, griddle top, infrared
burners, refrigerated or heated drawers and gas range cooktops.
Henry said that his market is a convenient solution for consumers to store their processed meats in their individual freezer
locker storage. Its an ideal situation for farmers or hunters, even
restaurants who dont have the storage space to keep their frozen
meats.
Roseville Meat Company decided to break into the sh smoking
market mostly for sherman, because there werent options in
the region to have your sh smoked. Typically people would have
to travel to the coast to have their sh smoked by a commercial
market or do it themselves.
Henry said that they are test marketing two in-house smoking
avors to offer customers, a sweet maple and brown sugar crust
and a savory soy white wine, tabasco, kosher salt garlic and onion.
We have the facilities here to smoke sh, and if a customer
brings in their sh to have it smoked, we can have it done in two
to three days, Henry said.

Grilled brie
1 small cedar plank soaked in zinfandel wine for
2 hours
1 round of brie cheese
1 sprig of fresh rosemary
Raspberry compote
1 package or raspberries
1 cup red wine
1cup sugar
Soak cedar plank in Zinfandel wine for two
hours.
Put 1 1/2 cups of Zinfandel in a sauce pan with
medium to warm heat. When the wine starts
to heat up add the raspberries, and keep three
raspberries aside for garnish.
Smash and break up raspberries with wooden
spatula while cooking. Then add the sugar and
mix well until combined. Fold and turn, keeping
close watch on compote until thickened to a jam
like consistency it is done.
Place the wine soaked cedar plank on the grill,
and add the brie on top. The Brie round should
not hang over the the side of the plank.
Slowly spread the compote on top of the brie
and garnish with the sprig of rosemary.
Let it cook for 20 minutes at 400 covered or
until the brie is slightly golden brown, remove
rosemary sprig. Garnish with fresh raspberries
and new sprig of rosemary.
After cooking is completed, remove Brie round
onto a plate. When cutting, the cheese will ooze
out like owing lava.
Serve with sourdough bread and Zinfandel
wine.

CHRISTINE GRAU FINDS NEW LIFE AMONG HOT PIZZAS AND FRIENDLY FACES

Christine Grau is constantly moving, from Rosatis dining room
to its kitchen to its bar, making sure her customers, and food,
are happy.
We only serve happy food, Grau says. You taste your food
with your eyes rst.
If the food doesnt look like it meets Graus denition of
happy, she doesnt serve it. Grau never dreamed she would
own a restaurant. Nearly three years ago, she was anything but
happy: After the death of her 21-year-old son, her life spiraled
into sorrow. By January 2015 she realized she needed a purpose and decided to search for businesses that were for sale.
That was how she found an empty pizza parlor on Foothills
Boulevard. Little did she know the vacant door was about to
offer an array of communities connections to lift her spirit.
The business had been open as Rosatis since 2006, until its
former owners had to put it up for sale.

While she may have lost one family member, she has gained

before Mothers Day. Instead of sitting down, he kept telling
Grau that everything was going to be okay. He later came back

RYAN HERNANDEZ
If theres such a thing as typical for a singer-songwriter in todays local music circuit, Ryan Hernandez isnt. The 31-year-old
Roseville musician has incorporated the strum of bright acoustic
guitar notes, the groovy walking rhythms of an upright bass, the
clack of drums, plink of the banjo, sonorous strains of the violin,
and, his latest favorite, the warm slide of the pedal steel guitar
into his regular repertoire.
Musically inclined for most of his life, Hernandez has managed
to craft a career by involving himself with multiple cover acts,
collaboration with other local musicians, writing original music
and performing regular gigs throughout the Roseville and Sacramento area. Hernandez rst fell in love with music as an elementary school student.
It happened in eighth grade when I went to a performing arts
school, Hernandez said. It was a dream come true for someone
my age because it was really not a lot of academics. It was mainly
music, art, dance, stuff like that.
Hernandez acknowledged that making it as a musician is an
inherently difcult career choice, though he found a way to successfully navigate the local venues and recording studios infusing all with his own sound.
A member of the band Hans and the Hot Mess, (appearing at
Sacramento Concerts in the Park this year), as well as performing
in what he described as maybe the only Dave Matthews cover
band in Northern California, Hernandezs favorite thing to do
is play live music; and his ultimate satisfaction comes through

avoid a shallow-trap at the end of that channel. This route passes some
nice big waves near the second island. The most fun route is left
over a one-foot falls (not for rafts under 1700 CFS), then center
thru a very narrow slot between islands. The far left channel is
boring.
F- MILE 2.9 - First Threat (class III). The river enters a boulder garden, then turns right into a deep hole along a rock outcropping on the left. The hole makes for a good hit, and is
flippiest on the left, but can be mostly avoided by skirting right.
Dont fall out or youll get laughed at!
G - MILE 3.2 - Second Threat (class II+). Almost immediately,
the river drops again thru a slot along a rock outcropping on the right.
Good swimmers rapid with a large eddy below, making it easy to reach
the rock outcropping for repeated swims.
H - MILE 3.3 - Third Threat (class II-III depending). Make of this one
what you will. The center is easy and unobstructed, but there are large
holes on the far left halfway down, and on the far right near the bottom.
Running both holes is an advanced maneuver. Lots of fun paddling to
get a good line.
I - MILE 3.7 - The Narrows (class II+). The river slaloms right to left,
and enters a channel on the far left with many barely-submerged rocks.
Rafts often get stuck here when crews do not paddle well.
J - MILE 4.0 - Minigorge or Slusebox (class II+). The river enters a
miniature gorge in bedrock, with pleasant waves and rapids. Fun and
splashes.
K - MILE 4.3 - Swimmers Rapid (class II). A boulder bar rapid with
big waves, this is a good place to practice throw bag techniques from
the right bank. The Coloma quiet zone begins just below (no yelling, no
water fights).

WHAT DO I NEED?
SUGGESTED CLOTHING
In hot weather: Swimsuit and/or shorts (for women, its
recommended to wear shorts over the swimsuit, as the rubber of the rafts can chafe or be especially slippery on bare
skin making it more difficult to stay in the boat!). A longsleeved shirt can help prevent sunburn, and on super-hot
days, an all-cotton short will stay wet longer and keep you
cooler. Some companies require you to wear closed toe
shoes, such as river-specific shoes or old tennis or running
shoes. All companies require that your footwear has a heel
strap no flip flops, clogs or mules allowed.
In cooler weather: No cotton! An insulating shirt (polypropylene) or fleece jacket is essential. A raincoat or splash
jacket provides more insulation and warmth. Wetsuits are
available for rental by most companies, or at one of two local
river stores. Wool or polypro socks, booties, or sandals, river
shoes or running shoes.
OTHER NECESSITIES
Always bring: Sunscreen, hat, sunglasses (with a strap),
water bottles. If you are on prescription medication, have a
bee sting or food allergy and carry an epi-pen. If you are
asthmatic and require an inhaler, please notify your guide so
proper stowing of these medications can take place prior to
leaving the shore. Waterproof cameras are always welcome,
and most companies wont say no to a water gun or two as
well.
What NOT to bring: Towels youll get wet again and
again, but in the mid summer sun, youll dry off too quickly for a towel to make a difference. Wallets even the tip
money can be left back at camp. The rule of thumb is If
it cant wind up on the river floor, dont bring it. Car keys
countless sets have made the river floor their final resting place. AAA loves Coloma/Lotus in the summertime for
just this reason. Boom boxes or Walkman/iPods. Alcohol and
drugs many companies provide beer or wine back at camp
after the trip, but while whitewater rafting, youll need to
be prepared for falls, flips, and other unexpected excitement.
Alcohol tends to make people dehydrated, lethargic and slow.

Hydration is always the rst priority when exercising in warmer environments or when exposed
to heat for extended periods of time. Higher rates
of perspiration mean your body is eliminating
valuable uids and they must be replaced to ensure comfort and safety. The human body consists of about 55 to 60% water and maintaining
hydration is vital to organ and electrical function.
When active, we tend to lose internal body water
to perspire at a surprisingly high rate. Sweating is
the natural cooling system of the human body and
evaporation can make it hard to judge your uid
loss so pay attention to your body and replenish
as needed. When it comes to uid replenishment,
avoid sugary sodas or calorie packed sports drinks

While it may seem kind of obvious, its best to dress in materials and garments suited for your activity. I suggest wicking
garments from head to toe to be sure fabrics do not absorb
perspiration and cause chang and minimize unpleasant odor
or embarrassing patches of decolored clothing around your
sensitive bits and pieces. Light weight clothing with a loose t
is optimal for ventilation and helps protect as much skin form

are important as well but remember, heat escapes from the top
of our heads so be sure headwear is well ventilated to allow the
excess heat to escape and keep your noggin cool. While broad
billed hats with sun skirts may cause some to question your
sense of fashion, they are important to those individuals who
are have a predisposition to sun burn, skin cancers and heat
sensitivity. Also, lighter colors tend to reect while dark colors
tend to absorb and retain heat.
4. TIME YOUR ACTIVITIES AND EXERCISE.
As I mentioned in a previous article, sun, humidity and pollution levels are most intense during the midday, so to minimize the effects of the heat, work out either rst thing in the
morning, or in the late evening. If your activities are centered
in the heat of the day, allow your body to acclimate to the heat
or outside conditions before you go all out on your physical
activity. Signs of increased tolerance include breaking into a
sweat more rapidly, and the perspiration being more diluted
or watery. Usually, its time to get inside and cool off when you
feel weakness, light-headedness, dizziness, paling of the skin,
headache, muscle cramps or nausea. Of course, water sports or
aquatic activities are ideal for those real hot Roseville days. In
the end, be smart about the way you are feeling and consider
the dynamics of each activity.

Zucchini Fritters

INGREDIENTS:
1 pound (450 g) zucchini (or Summer
squash or both)
1 teaspoon (5 g) salt
2 large eggs
1 ounce onion (40 grams) or two
medium scallions, minced
teaspoon (2.5 ml) baking powder
cup (45 grams) Almond Flour
cup GF Baking Mix or more almond
flour or coconut flour)
cup (30 grams) grated Parmesan
cheese
DIRECTIONS:
1. Grate the zucchini with a cheese
grater.
2. Put the zucchini on a paper towel and sprinkle with the teaspoon of
salt to remove excess water.
3. Mix the zucchini gently to distribute the salt and let it sit for about 5
minutes.
4. Squeeze the zucchini out in a paper towel with your hands
Hollandaise Sauce
INGREDIENTS:
4 egg yolks
1 tablespoon freshly squeezed lemon
juice
1/2 cup unsalted butter, melted (1
stick)
Pinch cayenne and pepper
DIRECTIONS:
1. Place enough water in a double
boiler so that it can simmer without
touching the bottom of the pot.
2. In top pot place the 4 egg yolks and
lemon juice
3. Whisk until thickened
4. Place over the simmering water
5. Make sure it is not too hot. This is
crucial unless you want scrambled
eggs
6. Whisk constantly
7. Slowly add the melted butter
8. Once thick remove from heat and
serve
Assemble with bacon or ham, tomato, greens, or whatever you wish and
enjoy!
