Method
1. Forthehomemadepasta,tiptheflourontoacleanworksurface
andmakeawellinthecentre.Cracktheeggsintothewell,then
graduallydrawtheflourintotheeggsuntilthemixturecomes
togetherasastickydough.Kneadthedoughonalightlyfloured
worksurfaceuntilalloftheflourhasbeenincorporatedandthe
doughissmooth.Alternatively,blendtheflourandeggsinafood
processoruntilthemixtureformssmallcrumbs.Tipitoutontoa
clean,lightlyflouredworksurfaceandsquishintoaball,then
kneadforafewminutesuntilsmooth.
2. Wrapthepastadoughinclingfilmandchillfor20minutesinthe
fridge.
3. Dusttherollersofyourpastarollingmachinewithflour.
4. Cutthechilledpastadoughinto3equallysizedpiecesandflatten
themwiththepalmsofyourhandtoathicknessof1cm/in.
5. Startingatthelowest(thickest)setting,feedthedoughthrough
themachine,turningthehandlewithonehandandholdingthe
doughasitcomesthroughthemachinewiththeother.

6. Changethesettingonthepastamachinetothenextthickest
setting,flouritagainandfeedthepastasheetthroughthe
machineagain,asbefore.
7. Repeatthisprocess3or4moretimes,flouringthemachineand
changingthesettingdowneachtimeuntilthelastbutonesetting.
Youshouldendupwithalongsheetofpasta.
8. Repeattherollingprocesswiththeremainingpiecesofpasta
dough.
9. Foldtherolledpastasheetsoverintoamanageablesize,thencut
themlengthwaystoformstripsoflinguineabout3mmthick.Hang
thelinguineoveraracksothatitcandryoutslightlywhileyou
maketheragu.
10. Fortheragu,heattheoilinalargeflameproofcasseroleovera
mediumheat.Addtheonionsandgarlicandfryfor23minutes,or
untilsoftenedbutnotcoloured.
11. Addthecarrotandceleryandfryforanother23minutes.Addthe
baconandfryforafurther12minutes.
12. Addthebeefminceandfryfor23minutesoneachside,oruntil
justbrowned.
13. Stirinthetomatopureandcontinuetocookfor12minutes,then
pourinthetinnedtomatoesandredwineandbringthemixtureto
theboil.
14. Stirinhalfofthebasilleaves,thenreducetheheatuntilthe
mixtureissimmering.Simmerfor45minutes,oruntilthesauce
hasthickened.Season,totaste,withsaltandfreshlygroundblack
pepper.Stirintheremainingbasilleavesjustbeforeserving.
15. Toserve,bringalargepanofsaltedwatertotheboil.Addthe
pastaandcookfor34minutes,oruntiltender.Drainwell,then
addthepastatothepanofraguandmixwelltocoatthepastain
thesauce.ServesprinkledwiththeParmesan.
