In transformer, winding wires are not placed 120 degrees apart, but in

induction motor all the windings (R Y B) are placed 120 degrees apart. So for
the production of rotating magnetic field, the spacing matters a lot. In a
transformer, only alternating magnetic field is present, not rotating. Note:- A
rotating magnetic field can also produced for 2 phase winding, in this case, the
windings has to placed 90 degrees apart( not 120 degrees).

In induction motor there exist a phase different in the supplies given hence it
produces a rotating magnetic field while transformer is a static device , Phase
difference does not exist in the supply .
p.s. - More than one supplies can also be applied to same transformer without
any change in structure provided they are in same phase so that there is no
turbulence. and three phase transformer also exist.

It is not only because of 3 phase supply, but also depends upon the winding.
Only 3 sinusoidally distributed windings whose axes are displaced by 120
degree excited with balanced 3-phase sinusoidal currents, the combined effect
is a rotating magnetic field at stator frequency.

Let's see the operation of Induction motor and Transformer:

Construction:

Rotating Magnetic Field in Induction Motor

Comparison between Induction Motor and Transformer:

Windings in Transformer and Induction motor are placed in this manner:

converted by W eb2PDFConvert.com
The way the windings placed in a three phase transformer and 3-phase
Induction motor is different.
In 3-Phase induction motor the windings are 120 degree mechanically
displaced unlike in 3-phase transformer.
Since there is both positional and electrical displacement of 120 degrees, the
effect of rotating magnetic field is produced though not in a literal way.
(See the video cited above for the generation of rotating magnetic field)

Hope this answer is useful, the other answers have already covered these
points.
Thanks for A2A :)
