What is terroir?
The French term, terroir (pronounced tear-wah), is the term for
the conditions that make a specific grape-growing site, and its wine,
distinctive. It comes from a philosophy, originated in Europe, that a
multitude of influences in nature surrounding a vineyard, or wine
region, create a wines character. These natural factors include soil
composition, day and nighttime temperatures, the amount of rainfall,
the direction of the sun, just to name a few.
Terroir explains why some of the best California Pinot Noir, for
example, originate in the regions of Carneros and Russian River. They
may be separated by about 30 miles but they share similar soils and
experience the same cooling effects from bodies of water nearby
either the ocean, in the case of the Russian River area, or San Pablo
Bay for the Carneros region. Both regions produce rich and complex
wines made from Pinot Noir grapes that reflect their similar terroir.

Winegrowing Decisions

production spaces into barrels with as little
disturbance or oxygen contact as possible.
Some wineries go the opposite direction,
concatenating their wines into larger lots
held in large oak or redwood vats or steel
tanks, with or without oak stave inserts.
Costs, of course, always play a role. A
new imported barrel is north of $1,000, and
that barrel will be used at most four times for
any discernible oakiness it would impart.
Think of a storm-battered piece of wood,
only whats left in the barrel after wine has
been in it for a year or two resembles more a
dark, yucky wine aquarium than driftwood.
Once exhausted, a barrel can be shaved and
re-coopered for an additional cost, but its
just that, an additional cost which is
dependent on the coopers skills to be done
properly or else the wines stored in the
rejuvenated barrel will take on port-like
overtones. This is why some wineries
choose instead to use older, neutal barrels
or small steel tanks with various kinds of oak
adjuncts like sticks, beads or cubes inserted,
or they will use larger staves with notches,
hanging on a lip around the edge of a large
steel tank.
As you can see, what is mechanically a
simple process separating liquid from most
of the solids from fermentation becomes a
much more complicated cultural and thus
financial process. How much of a difference
this makes in consumer awareness and
apprecation is, of course, a subjective result.
What is undeniable, however, is the impact
of oak on finished wine and its impact to
the bottom line for the winemaker both for
costs and for sales. Consider that when next
looking at a barrel chai: its not just a room of
wood and liquid its the recorder of
winegrowing decisions. Enjoy!

Redefining Napa Valley Wines
Founded in 1968, on five and a half acres of prime Oakville soil, Napa
Cellars embodies the classic Napa Valley styleripe, rich, balanced and
collectable. Most importantly, the wines of Napa Cellars taste of this great

Joe Shirley became winemaker in 2007 and has since built the portfolio
into a stunning line-up of wines. In addition to its Classics tier and several
tasting room exclusive wines, Napa Cellars now offers a new tier of wines
called the V Collection. These are limited-production, sub-appellation
wines from the Napa Valley that pay tribute to the five original acres upon

Mthode Champenoise
Korbel has held fast to the time-honored French tradition mthode champenoise where the
champagne is fermented inside of the same bottle from which its served.
First, wines are made (most popularly from Chardonnay and Pinot Noir grapes) and fermented
in casks until ready to be taken out to create a cuvee blend. The cuvee blend is then added to a
champagne bottle along with further yeast and sugar. Next, the bottle is capped where the wine is
fermented for a second time, inside the bottle.
During this second fermentation process, yeast eats away at the sugar, creating a natural carbon
dioxide (the bubbles Korbel California champagne is known for). The longer the yeast is given to

initially upright, are then flipped 180 upside down for more than a year to riddle the yeast
sediment into the neck of the bottle and complete the fermentation process.
Once the second fermentation process is complete, bottles are carefully moved (with the yeast
sediment now in the neck of the bottle), and the yeast sediment is frozen in place at the bottle
neck, and extracted. Dosage (sugar) is then added (the percent of dosage is what makes
champagne dry or sweet), then bottles are corked, caged and labeled.

from all areas of the wine industry, including media, trade, education,
retail and restaurant/hospitality, gather together to participate in a
blind judging. Wines are categorized by varietal and price range,
evaluated, and then select winners are invited to participate in the
Public Tasting event.
For the past ten consecutive years, the number of wine entries
submitted to the SFCWC has grown rapidly. In 2015, the
competition broke all entry records with 6,417 wines entered from
28 states in America, illustrating the steady demand for a variety of
options among wine consumers, and firmly establishing the event's
prestige as a highly esteemed wine competition.
The SFCWC supports wine studies, enology and viticulture
programs for higher education institutions in California. Leftover
wines from the competition are donated annually to Santa Rosa
Junior College, Fresno State University, Sonoma State University and
California Polytechnic University in San Luis Obispo.

Sparkling Wines For Everyone
Things that sparkle attract attention: diamonds, a shooting
star, sunlight playing on a river, and freshly fallen snow.
Sparkling wine poured into a glass embodies what is magical,
mysterious, and fascinating.
Mumms first wines were sold under the name Domaine
Mumm in 1986 from vineyards located in the southern tip of
Napa in Carneros regions. These vineyards were planted with
Chardonnay, Pinot Noir and Pinot Meunier the classic
combination of Champagne grapes. In addition to the
advantages of the warm days and cool nights in Carneros, the
land possesses a key component essential to the taste of a
wine made from the Champagne district vineyards in France
limestone.
Since 1991, Mumm Napa has also been sourcing stunning
fruit from the Devaux Ranch Vineyard in Carneros.
Considered by many to be one of the most beautiful
vineyards in Napa Valley, this estate-grown site is named after
Mumm Napas founding Winemaker, Guy Devaux. Guy was a
pioneer of mthode traditionnelle sparkling wines, and Devaux
Ranch is symbolic for creating his ultimate Brut, a blend of
58% Pinot Noir, 28% Chardonnay, 8% Pinot Meunier and 6%
Pinot Gris.

(SERVES 6)
INGREDIENTS:
Six boneless salmon filets (Whole Foods sells a frozen pack
of six salmon filets that work perfectly for this recipe)
cup of diced red onion
Two cedar smoking planks
Wood smoking chips and a metal grill-top smoker box
MARINADE:
2 tablespoons honey
2 tablespoons Dijon mustard
1 tablespoon soy sauce
1 teaspoon fresh ginger or ginger paste (We use Gourmet Garden Ginger Paste)
PREPARATION:
Soak cedar smoking plank(s) and wood chips for a minimum of four hours, preferably
six to eight hours or even overnight. Be sure to weigh down the wood planks so they
are fully submerged during soaking.
Preheat grill to 500 with wood chips (in smoke box) placed on top of burners along the
side of the grill. Prepare marinade as grill heats.
Warm honey in microwave for 20 seconds at half power to soften. Mix mustard into
the honey first and then mix in ginger and soy sauce. Place salmon filets onto watersoaked cedar planks and brush marinade on salmon filets. Sprinkle cup of diced
red onions over salmon. Place planks with salmon on grill. Make sure to avoid placing
the planks directly over the box of wood chips, in case the box flares up with a fire.
Grill the salmon for 12 minutes. Be careful not to overcook. Twelve minutes goes by
fast! We like to serve the salmon on a bed of balsamic drizzled arugula alongside new

Championship Wine Flight To Celebrate Super Bowl 50
The Napa Valley Wine Train is scoring another touchdown with
wine fans. Now through the end of football season, the historic
Napa Valley Wine Train kicks off its new Championship Wine
Flight featuring wineries founded by such NFL greats as Charles
Woodson, Dick Vermeil and Rick Mirerall in anticipation of
Super Bowl 50to be played February 7, 2016 in Santa Clara, CA.
The Napa Valley Wine Train offers a 36-mile, round-trip journey
from Napa to St. Helena through beautiful Wine Country vineyards
and past famous and historic wineries. Traversing on the original
rail line built in 1864, guests of the Napa Valley Wine Train
experience one of Napas most distinctive fine-dining restaurants,
savoring multi-course meals while traveling in a museum-quality
antique train.
We are delighted to welcome locals and visitors to join us on
the Wine Train to enjoy our Championship Wine Flight, and we are
equally thrilled to welcome Super Bowl 50 to the Bay Area in
2016, said Anthony Giaccio, Napa Valley Wine Trains CEO. It has

The Championship Wine Flight in honor of Super Bowl 50 will

Calistogas Winter in the Wineries Passport Series, Through February 7
Winter may not be the first time of year that pops into your head
when thinking about a visit to Californias premier wine region. But
wine country is enchanting and beautiful throughout the year.
Winter, with fewer crowds and cooler temperatures, is a great time to
visit.
With Calistogas Winter in the Wineries passport series running
through February 7, 2016, visitors to this northern Napa Valley town
will be treated to great wines, special restaurant offers and discounts
to area lodging and shopping.
For $50, passport holders have access to 15 wine tastings
throughout the two months of the series at some of the regions well
known and boutique wineries, including Sterling Vineyards, Castello
di Amorosa, Bennett Lane and August Briggs.
Castello di Amorosa, opens at 9:30 daily, and is best known for its
architecture as a 13th-century Tuscan castle, but it also produces
stellar wines, including Italian varietals and blends, such as
Sangiovese, Pinot Grigio. Located three miles south of Calistoga,
visitors can roam the grounds or take guided tours followed by
tastings for an in-depth experience.
Bennett Lane winery, located on Highway 128, just north of
Calistoga, is a family-owned winery that is home to the Maximus

Take a look at reviews on popular rating sites for The Hess Art
Museum in Napa, and the comments have a certain sameness, but in a
very good way. Stellar, stunning, unexpected are common
descriptors, the natural result of arriving on Mount Veeder at The Hess
Collection for a wine tasting and finding a world-class contemporary
art collection with notable masters like Frank Stella, Andy
Goldsworthy, Franz Gertsch and Francis Bacon, among many others.
Donald Hess remains passionate that selections from his massive
collection (reportedly more than 1,000 works currently displayed in
three museums, with many more pieces on loan for various museum
exhibitions around the world) be available daily without charge for
visitors. Maintaining the collection and presenting it for visitors falls
to Museum Director Rob Ceballos, who has been part of Hess for
nearly three decades, an artist in his own right, uniquely qualified to
watch over three floors of artworks, helping to frame understanding
of the often dramatic and challenging contemporary works.

The Restaurant at Wente Vineyards uses locally grown organic
ingredients and features ingredient-driven California wine
country cuisine. While the menu holds its foundation in
American dishes, it is influenced by French and Italian provincial
cuisine. The seasonal menu changes daily, utilizing produce from
The Restaurants organic garden.
Wente Vineyards is also the only winery in Livermore Valley to
offer a championship 18-hole public golf course.
