Chapter 1
Introduction
Cooking Oil is plant, animal, or synthetic fat used in frying, baking, and other
types of cooking. It can be also used in food preparation and flavoring that does not
involve heat, such as salad dressings and bread dips, and in this sense might be more
accurately termed edible oil.
So we have types of cooking oil, these are: olive oil, palm oil, soybean oil, canola
oil sometimes called rapeseed oil, corn oil, sunflower oil, safflower oil, peanut oil,
sesame oil, cottonseed oil, and coconut oil. Oil can be flavored with aromatic foodstuffs
such as herbs, chilies or garlic.
Cooking Oil can be Recycled, it can be used as animal feed, directly as fuel, and
to produce biodiesel, soap, and other industrial products. Some places make cooking oil
recycled like in Marikina every weekend they collect used cooking oil. Used of cooking
oil recovered from restaurant and food processing industries is called recycled
vegetable oil (RVO), used vegetable oil (UVO), waste vegetable oil (WVO) or yellow
grease. Yellow grease is used to feed livestock, and to make soap, make-up, clothes,
rubber, detergents and it can be also biodiesel fuel. Used cooking oils, converted to
biodiesel, can be used directly in modified diesel engines and for heating. Grease traps
or interceptors collect fats and oils from kitchen sinks and floor drains which would clog
sewer lines and interfere with septic systems and sewage treatment. The collected
product is called brown grease. Brown grease is contaminated with rotted food solids
and considered unsuitable for re-use in every way. Gutter oil or trench oil are terms only,
used in Asia for recycled oil which is processed to resemble virgin oil but it contains
toxic contaminants and is illegally sold for cooking, its origin is frequently brown grease
from garbage. Oil should be kept in a cool, dry place. Oils may be thicken but they will
be soon returned to liquid if they stand at room temperature. Oils high in unsaturated
fats may help to lower bad LDL cholesterol and may also raise good HDL cholesterol,
through these effects are still study. Cooking oil is such important to us, especially in
our house and in our environment.

Background of the Study
Different varieties of oil use for cooking. We have types of cooking oil, these are:
olive oil, palm oil, soybean oil, canola oil sometimes called rapeseed oil, corn oil,
sunflower oil, safflower oil, peanut oil, grape seed oil, sesame oil, cottonseed oil and
coconut oil. Olive oil is a fat obtained from the olive a traditional tree crop of
the Mediterranean Basin. The oil is produced by pressing whole olives and is commonly
used in cooking, cosmetics, pharmaceuticals, and soaps, and as a fuel for traditional oil
lamps. Olive oil is the main cooking oil in countries surrounding the Mediterranean Sea.
Palm oil is an edible vegetable oil derived from the mesocarp reddish pulp of the fruit of
the oil palms. Palm oil is a common cooking ingredient in the tropical belt
of Africa, Southeast Asia and parts of Brazil. Its use in the commercial food industry in
other parts of the world is widespread because of its lower cost and the high oxidative
stability of the refined product when used for frying. Soybean oil is a vegetable
oil extracted from the seeds of the soybean; it is one of the most widely
consumed cooking oils. As a drying oil, processed soybean oil is also used as a base
for printing inks (soy ink) and oil paints. Soybean oil is mostly used for frying and baking.
It is also used as a condiment for salads.
Canola oil refers to edible oil, produced from the seed of any of several varieties
of the rape plant, and to those plants namely a cultivar of either rapeseed or field
mustard/turnip rape. Consumption of the oil is common and, unlike rapeseed, does not
cause harm in humans and livestock. It is also used as source of biodiesel. Canola oil is
made of a processing facility by slightly heating and then crushing the seed. Almost all
commercial canola oil is then refined using hexane. Corn oil is oil extracted from
the germ of corn. Its main use is in cooking, where its high smoke point makes refined
corn oil valuable frying oil. It is also key ingredient in some margarine. Corn oil is
generally less expensive than most other types of vegetable oils. Sunflower oil is
the non-volatile oil compressed from sunflower seeds. Sunflower oil is commonly used
in food as frying oil, and in cosmetic formulations as an emollient.

Safflower oil is a highly branched, herbaceous, thistle-like annual plant. It is
commercially cultivated for vegetable oil extracted from the seeds. Peanut oil, also
known as groundnut oil or arachis oil, is a mild tasting vegetable oil derived
from peanuts. The oil is available in refined, unrefined, cold pressed and roasted
varieties. Sesame oil is an edible vegetable oil derived from sesame seeds. Sesame oil
is the traditional oil used for frying tempura in Japan, particularly in the Tokyo area.
Cottonseed oil is derived as a by-product of the cotton fiber. Obtained from its seed this
oil is used for cooking. Coconut oil is the most important source of lauric acid oil which
is product of the coconut milk is used commonly in a wide variety of native vegetables
dishes and desserts. It is usually prepared in Filipino homes as part of kitchen
preparation by mixing some water to grated mature coconut.

Statement of the Problem:


The research study tells more about the Different Varieties of Oil use for Cooking and its
Benefits.
Specifically, the study sought to answer the following:
1. What are the different varieties of oil used for cooking?
2. What are the specific health benefits of the different varieties of cooking
oil?
3. Which of the different varieties of oil used for cooking provide excellent
health benefits?

Significance of the study
To the Consumers: For us to know the good effect of different cooking oil in
our body because oil has a good benefits in our health There are oil
containing low level of omega-3 that can help us to prevent heart disease.
Some other oil contains omega 6 who plays a crucial role in our brain and
there are also oil that has saturated fat. Oil can also increase our energy
expenditure helping us to burn more fats.
To the Restaurants/Fast food Chain: Oil can help the food to become more
delicious and can add vitamins to the recipe but there are oils that can
cause cardiovascular disease.
To the future Researchers: This study can make help them to discover
other recipe that can be more delicious and healthy and also help them
how to use the oil properly.

Scope and Delimitation


The study focuses on the Different varieties of oil use for cooking and its benefits.
The study includes cooking oil can be also provider of industrial products. It also
contains which of different varieties of oil can provide excellent health benefits. The
specific health benefits of the different varieties of cooking oil. In this research paper, it
included the different varieties of oil used for cooking.

Definition of terms:
Recycled Vegetable Oil (RVO): The NOLS Bus is powered by a diesel engine
converted to run on vegetable oil gathered filtered from restaurants and dining halls
during NOLS road tour. They are creating fuel by recycling of vegetable oil.
Oil: It can be used for cooking, cosmetics, painting and fuel. Oil can create something
that can help the community. Oils may be animal, vegetable, or petrochemical in origin,
and may be volatile or non-volatile. Several edible vegetable and animal oils, and
also fats, are used for various purposes in cooking and food preparation. In particular,
many foods are fried in oil much hotter than boiling water. Oils are also used for
flavoring and for modifying the texture of foods.
Fats: We have two classifications of fats these are: Bad fats and Good fats. Foods high
in bad fats include red meat, butter, cheese, and ice cream, as well as processed foods
made with trans-fat from partially hydrogenated oil. Foods high in good fats include
vegetable oils such as olive, canola, sunflower, soy, and corn, nuts, seeds, and fish.
Cholesterol: It occurs in all animals tissues and various foods, especially in the brain,
spinal cord, and adipose tissue.
Health Benefits: It gives what we want to our body or gives specialty to our body,
example of that is Health benefit of oil.

Review of Related Literature
There are different varieties of oil use for cooking and it gives benefit. Those
varieties of cooking oil are important to use, it can helps the industrial industry. It can
produce fuel, it can also recycle and use for soap, detergent and clothes etc. Through
this research, they can learn something. There are books and internet resources to
study different varieties of oil use for cooking and its benefits, and present topic of
cooking oil.
Cooking oil is plant, animal, or synthetic fat used in frying, baking, and other
types of cooking. It is also used in food preparation and flavoring that doesn't involve
heat, such as salad dressings and bread dips, and in this sense might be more
accurately termed edible oil. Cooking oil is typically a liquid at room temperature. We
have 11 varieties of cooking oil based on my research these are olive oil, palm oil,
soybean oil, canola oil sometimes called rapeseed oil, corn oil, sunflower oil, safflower
oil, peanut oil, sesame oil, cottonseed oil and coconut oil. Cooking oil can be recycled. It
can be used as animal feed, directly as fuel, and to produce biodiesel, soap, and other
industrial products. Used cooking oil should provide proper disposal it is important to
waste management concern, because if the people cannot provide proper disposal a
single liter of oil can contaminate as much 1 million liters of water. Water is need in our
daily life. The proper way of disposal used oil is to put it in a sealed non-recyclable
container and discard it with regular garbage. Placing the container of oil in the
refrigerator to harden also makes disposal easier and less

Corn oil is the by-product of the cornstarch and grain alcohol industries which
derives its products from the kernel of the corn plant. It is also known as maize oil that is
expressed from the germ of the seed separated from the remainder of the kernel by the
wet milling process. For my explanation, Corn oil is regarded highly for its functionality,
exceptional flavor, economy, and health benefits. Its main use is in cooking, where its
high smoke point makes refined corn oil valuable frying oil. It is also a key ingredient in

The book of Food Selection Preparation and Preservation by Nora Soriano,
vegetable oil is found in coconut, cottonseed, peanut, sunflower, soybeans and
safflower. Some oil used in salad dressing, for making salad it combines the vegetable
oil. For my explanation many vegetable oils are consumed directly, or indirectly as
ingredients in food. Oils can be heated and used to cook other foods. Oils suitable for
this objective must have a high flash point.
In the book of Nutrition & Health: The Vegetarian Way by K.R. Raghunath, Some
cooking oil has fats and cholesterol for health benefits, so we can discuss more about it.
A fat is an essential part of diet, but taken in excess, is harmful to the body. Fat
generally breaks up in the absence of carbohydrates and to provide energy. Cholesterol
is a waxy substance which forms the essential part of the body cell walls. It also helps in
the production of vitamins, hormones, bile acids and nerve tissues. The body continues
to synthesize cholesterol regardless of the intake of diet.
In the book of The Art of Nutritional cooking by Michael Baskette & James
Painter, when you have specified and ordered healthier foods, you must store them
properly in order to maintain the nutrients all the way to the table. The nutrients in foods
continue to deteriorate when they are received in the food service establishment. The
most dangerous elements affecting the nutrional content of fresh food in storage are
contamination of bacteria, molds, and yeast and the enzymatic break down of plant
cells. For this good explanation, food that with cook either with oil or non these foods
can stored in proper way, like in used oil make a proper disposal, or in food a proper
storage.

Chapter 3
Summary
The purpose of this project was to explain the different varieties of oil use for
cooking and its benefits. There are 11 cooking oil that I mention, these are olive oil,
palm oil, soybean oil, canola oil sometimes called rapeseed oil, corn oil, sunflower oil,
safflower oil, peanut oil, grape seed oil, sesame oil, cottonseed oil and coconut oil. In
my research the excellent cooking oil is coconut oil, because of great benefits, not
benefits only it conclude health benefits. Different oil can use for environmental
purposes.
Cooking Oil can be Recycled, it can be used as animal feed, directly as fuel, and
to produce biodiesel, soap, and other industrial products. There are two types of grease
these are yellow grease and brown grease. Yellow grease is used to feed livestock, and
to make soap, make-up, clothes, rubber, detergents and it can be also biodiesel fuel.
Used cooking oils, converted to biodiesel, can be used directly in modified diesel
engines and for heating. Brown grease is contaminated with rotted food solids and
considered unsuitable for re-use in every way. These two grease are classified to
recycling processes. Cooking oil can either be unrefined or refined using one or more of
the following refinement processes. Distilling, this heats the oil to evaporate off chemical
solvents from the extraction process. Degumming, by passing hot water through the oil
to precipitate out gums and proteins that are soluble in oil but not in water, then
discarding the water along with the impurities. We talk about proper disposal of use
cooking oil. Proper disposal of used cooking oil is an important waste-management
concern. Oil is lighter than water and tends to spread into thin and broad membranes
which hinder the oxygenation of water. Because of this, a single liter of oil can
contaminate as much as 1 million liters of water. Cooking oil should never be dumped in
the kitchen sink or in the toilet bowl. The proper way to dispose of oil is, to put it in a
sealed non-recyclable container and discard it with regular garbage. Placing the

spread. Sometimes, we cannot cook if we dont have cooking oil.

The varieties of cooking oil are: olive oil, palm oil, soybean oil, canola oil or
rapeseed oil, corn oil, sunflower oil, safflower oil, peanut oil, sesame oil, cottonseed oil,
and coconut oil.

Coconut oil reduces protein loss in hair & nourishes the hair, helps in easy digestion,
improves bone health, strengthens immune system and prevents diseases affecting
liver and kidney.
Oil used for cooking provide excellent health benefits is coconut oil, because
coconut oil contains a unique combination of fatty acids with powerful medicinal
properties, it is also population that eat a lot of coconut are among the healthiest people
on the planet. Coconut oil can increase your energy expenditure, helping you burn more
fats, obesity is currently one of the biggest health problems in the world. The medium
chain triglycerides in coconut oil have been shown to increase 24 hour energy
expenditure by as much as 5%, potentially leading to significant weight loss over the
long term. The lauric acid in coconut oil can kill bacteria, viruses and fungi helping to
stave off infections, almost 50% of the fatty acids in coconut oil is the 12-carbon Lauric
Acid. Coconut oil can kill your hunger, making you eat less without even trying; these
studies were small and only done for a short period of time. If this effect were to persist
over the long term, it could have a dramatic influence on body weight over a period of
several years. Coconut oil can improve blood cholesterol levels and may lower your risk
of heart disease, and last because coconut oil can help you lose fat, especially the
dangerous fat in your abdominal activity. This oil is lots of health benefits it will helps
every people, if they use the coconut oil. It can use for cooking and it gives the excellent
health benefits.
Recommendation
It is recommended to have more books and information about different varieties
of oil use for cooking, because for the future researches they are considering to have
more resources. More about cooking oil are not easy it needs more resources unlike
internet sources. It is further recommended to have a business groups in squatter
areas, because they can start business using this cooking oil. To the future researches it
needs to clarify all cooking oil base on its characteristic and health benefits. In our
worlds many varieties of oil are hiding. For the future researchers they need to
understand the different varieties of cooking oil and the benefits to our lifestyle or in our
health.
