always better

verything is big in America,


from cars, houses, grocery
stores and purses, to food
portions. Advertising tells us we
get more for our money if we
purchase the super-size. Many
people wont even frequent a
restaurant if the food servings are
too small because they think they
are not getting their moneys
worth. American grocery stores
are now more like warehouses
selling food to stock up for a natural disaster. Who needs 48 bags
of cookies or a pizza that wont
even fit in your oven?
Portion control is out of control.

Is it a coincidence that Americans body sizes are growing in


unison with super-sized foods
that are served on large plates
with over-sized drinking glasses?
Todays dishes dont even fit in a
dishwasher anymore. There are
many theories to the growth of
the American girth, but I am certain super-sized portions play a
significant role.
According to Dr. Brian Wansink,
author of the book Mindless Eating, jumbo-sized meals served in
restaurants are typically 250 percnet larger than the normal-sized
portion and since 1970, plates and
glasses have increased 36 percent
in size.

The following information will
give you some insight into how to
be aware of super-sized traps so
you can be a smart and savvy eater.
Throw out your big plates,
bowls, and drinking glasses. A
dinner plate should be no larger
than 10.
Use a salad plate for your meal
when home and order a proteinrich appetizer dish for your main
meal when dining out.
At the restaurant, ask the server what your meal contains. If it is
loaded with high calorie carbs
(potatoes, rice, or another starch),
ask if you can replace it with
spinach or a side salad. (Meatballs
are delicious over spinach.)
When ordering a salad, customize. That healthy chicken
salad you order may contain up to
2000 calories with croutons, noodles, and sugary dressings
enough food for the entire day.
Avoid restaurant-style buffets they can be food traps. It is
not worth getting your moneys
worth.
Review the menu of a restaurant online before you arrive.
Ask the restaurant to hold the
bread or chips bowl, and if you
allow yourself one slice, have it
delivered with your salad or meal.

Wellington is an Iowa native and
the son of career educators whose
travels kept him moving from the
Midwest to as far away as France.
His first experience in the restaurant profession was a summer job
in junior high school washing
dishes for a national chain.
I worked the 10 p.m. to 6 a.m.
shift all summer, and I thought it
was the greatest thing ever,
Wellington said with a laugh.
While in college, he found
himself again in the world of
food, balancing his studies with
being a student manager for the
campus cafeteria.
It was either turn in early or
pay for it on Sunday morning,
Wellington recalled, so I chose
the former which in the end,
served me quite well.
Upon returning home from
college, the newly minted

graduate was given some fatherly


advice. Time to get to work, the
elder Wellington advised. This
encouragement soon culminated
in Wellington working with the
Pizza Hut Corporation in Dumas,
Texas. Soon he became a manager
for Pizza Hut in Louisiana. Eventually, Wellington ended up managing 50 Taco Bell restaurants on
the West Coast before working
alongside the famous Dave
Thomas at Wendys.
I wound up with the Wendys
and learned an important lesson
about quality, he said. Wendys
was always about quality and I carry that with me to this very day.
By 1997, Wellington was looking
for a new challenge and had heard
about a take-and-bake franchise
called Papa Murphys. This time
instead of accepting a corporate
job with the chain he and his wife,
Barbara, decided to become franchisees. They took out a small

business loan, opening their first


store in Auburn.
Barb and I just wanted to be
our own boss and make a good
living, but things have really
exceeded our expectations, he
acknowledged.
Part of the draw of Papa Murphys for the Wellingtons is the
simplicity and the quality of its
fresh, non-frozen ingredients
not to mention the mission statement of focusing on quality every
step of the way.
Im really proud of our product
and I know our customers are getting a really good value, Barbara
noted.
Greg Wellington thinks that too
many restaurants tend to forget
what they are, such as a burger
and fry-type of business, and that
leads to complicated and confusing menu items. He cites the success of the In-n-Out model of
focusing on what they do best, and

likens that approach to Papa Murphys approach to pizza.


The Wellingtons opened their
eighth location in Granite Bay
this past year and collectively,
their shops employ over 100 people, many of whom stay with the
company for years and either
wind up managing one of the
locations or outright opening
their own franchise.
Two brothers began working
for us years ago and today both
are successful franchisees, which
makes me very proud, said Greg
Wellington.
Barbara adds that its important
to take a personal interest in their
employees and not only provide a
good job, but to prepare them for
the future.
I like finding out new things
about our staff, their interests and
goals, she said. I really hope our
employees take what they learn
here and apply it to whatever
career path they take.
The Granite Bay location is the
first of their stores to feature a new
store design highlighted by tile
and wall graphics, along with an
interactive LCD menu board.
We gave this store the platinum
treatment and the reception has
been very well received by customers, Greg said.
While Greg enjoys working
in the trenches, Barbara has
become the defacto face of their
business, appearing in commercials and even competing in Papa

Murphys Pizza-lympics at corporate conventions.


The Wellingtons also enjoy supporting the local communities
they serve. They are proud sponsors of area teacher of the year
awards ceremonies, local swim
teams, as well as avid supporters
of the Stuff the Bus campaign benefitting underprivileged students.
They still manage to find time to
spend time with their kids and
travel. Despite the many hours
involved with running the business, the couple says it does not
really feel like work. Barbara says
when you do what you enjoy, it
is less of a job and more of a labor
of love. She and her husband
have found that happy medium
between the two.

very July, the American Century Golf


Championship takes place in Lake Tahoe,
and for over a dozen years Granite Bay
chiropractor Mike Nevius has stepped up to
lend a hand.
The tournament is a charitable endeavor
that has donated more than $4 million to various nonprofits since 1990, and the field is a
whos who of past and present athletes and
entertainers. Nevius and a team of physical
therapists, massage therapists and fellow chiropractors spend the week ensuring that
players can compete at the highest level by
providing them with much-needed therapy
and adjustments to offset the grind of multiple rounds on the golf course. Nevius said he
enjoys interacting with the athletes and
celebrities while taking part in a charitable
event.

from their playing days, and what we do is give
them a place to unwind and recover from the
rigors of the event, he said.
He added that many of the participants take
advantage of the services as a preventive
measure, too.
Nevius is a Nevada City native who had an
early interest in sports medicine and studied
physical education in college, but after exploring the possibility of a career as a chiropractor,
he made the jump and attended UC Davis. He
initially started his practice in Folsom, and for
19 years he remained in the area, but a move to
Granite Bay prompted him to search for space
closer to home.
I really love Granite Bay and I thought it
would be nice to be able to work in the community as well, he said.

As luck would have it, Nevius found a space


that was previously occupied by a chiropractor
on Auburn Folsom Road in Granite Bay, so he
decided to make the move. One year later, his
practice is thriving just a few minutes from his
home.
His involvement with the American Century
tournament is more of a family affair. He said
he heard about the tournament around 16
years ago, and three years later he began working there due to a series of events, one being
his wedding. His father-in-law, also a chiropractor, had been working as the tournaments
head chiropractor for many years when he
found himself in need of a helping hand, and
Nevius fit the bill.
Nevius said it was a perfect fit for him, since
he is a sports fan and the tournament has
afforded him an opportunity to fulfill his desire

to treat professional athletes. He said the


treatment center tries to offer an array of therapy and recovery options.
(The participants) have a diverse choice of
treatment, from simple stretching to massage
and cryogenic (cold therapy) to chiropractic
treatments, he said.
Nevius initial experience with the event left
him a bit star-struck, but early on an NHL legend helped him adjust. He said Mario Lemieux
cut an imposing figure when he first arrived in
the treatment area, but Nevius found him to
be a really nice and down-to-earth person.
They are all just really regular people who
appreciate the treatment we provide, he said.
When asked if there was one player who
really stood out, without hesitation Nevius cited Johnny Bench.
I grew up a huge Johnny Bench fan and I
found it to be kind of surreal to not only meet
him, but to have the opportunity to treat him,
he said with a chuckle.
Nevius also found the athletes and celebrities to be quite generous and approachable.
He said Charles Barkley graciously recorded a
video greeting to his father, who was not well
at the time.
It was one of those moments where I really
got to witness the kindness and humanity
instead of the celebrity, and I really appreciated that, he said.
Nevius feels very fortunate to be able to
interact with the celebrities, and he said
although it is nice to be a fly on the wall, he
and the rest of the staff always make it a point
to respect their space while in the treatment
area.
It is nice to hear their stories when they are
taking a break, but we always try to give them

the space to unwind after a full day of event,


he said.
When asked which players make the best
golfers, Nevius said NFL quarterbacks seem to
do quite well since the last two winners were
former signal callers. He also said, with a wink
and a nod, that he may have had a hand in
their success.
Mark Rypien and Billy Joe Tolliver won the
past two tournaments, and as it turns out, I
adjusted them every day, he said with a grin.
Nevius also talked about an encounter with
Chico native and NFL quarterback Aaron
Rodgers.
When I met Aaron, I told him I had actually referred a patient to his father, who is a chiropractor in Chico. Aaron thanked me and we
both ended up having a good laugh, he said.
The week is busy but Nevius still finds time
to enjoy the tournament himself, driving with
his family to Tahoe on Friday for a mini-vacation together. He said the experience is well
worth the time and effort, and he plans to continue taking part in the event for the foreseeable future.
I really enjoy having fun with interesting
people while supporting such an amazing
cause year after year, he said.

Upcoming event connects the public and first responders outside of a crisis
The Placer County Sheriffs Council is reaching out to the community and its families in hopes of putting a friendly face on
first responders. The annual Day With a Deputy event,
hosted by Granite Bays Bayside Church, seeks to connect
the public with local peace officers and firefighters. In
addition to the Sheriffs Office, the California Highway Patrol
and South Placer Fire Protection District will also be on-hand.
Locals will be able to see search and rescue teams, SWAT operatives
and K9 officers all give live demonstrations. Parents will also be able
to create ID packages for their children, which will include DNA and
fingerprints. The Placer County Sheriffs Council is comprised of
local business people determined to support area law enforcement
with funds for specialized equipment and programs that may not
be included in departmental budgets.

kids to develop drug problems.
But it happens. And with the right
help, recovery can happen, too.
Addiction expert, Jon Daily,
LCSW, CADC, founded Recovery
Happens Counseling Services and
has also written numerous books
about the pathology and neurology of addiction. Daily knows firsthand the challenges that drug
addicts face.
I had addiction issues as a teen.
As soon as I cleaned up I started
doing drug prevention work in
school districts in the Sacramento
area, Daily said.
With a background in psychology and a Masters in social work
from Sacramento State, Dailys
Recovery Happens offers outpatient help and hope to over 100

youre done, he said. You might

Q: Isnt dabbling in drugs a normal part of growing up?
A: In the 80s, if you smoked pot you were getting 5 percent THC.
Research from Columbia University shows that todays marijuana is
up to 76 percent THC, which can cause psychotic breaks.
Q: How prevalent is drug use in this area?
A: Put it this way. In our conversations with kids at schools we dont
ask about individual drug use, we ask how many kids have a friend
whom they are worried about because of drug use. Ninety percent
of students raise their hands.
Q: How do we help our kids?
A: Its easier to prevent than it is to treat. Once parents learn that
their child has used substances, they need to have the child evaluated
or at least get information and learn how to set boundaries.
Q: What if my child refuses to get help?
A: Parents can come in. They can figure out next steps and know
their leverage.
Q: How can I be pre-emptive?
A: We have drug tests available for $5.00 through our
Website. Tell your child, because there is a culture of
drug use at school and in the community, Im going
to help protect you, and also give you a refusal tool
to not use drugs. I hope this article prompts a

A recovering alcoholic well call
David Smith to protect whom privacy, is a college student from
Loomis who has struggled with
alcoholism for years. Hed been to
Alcoholics Anonymous and various counselors, but it wasnt until
he met Shane Stamas, a counselor
for Recover Happens, that he got
the help he needed.
I started seeing Shane last
August and Ive been sober for ten
months, Smith said. The counseling has not only helped me
understand my problem, but
more important, has helped me
understand myself and why I react
to things the way I do. I was turning to alcohol to handle problems
rather than taking problems headon. Ive learned the difference
between being mad at the person,
and mad at the situation. And
though Im back in college, Im
able to handle the party atmosphere.
Recovery Happens helps families as well. Sacramento mom
Angie Jones said that her 19-yearold son had a drug problem that
caused an overdose.
It all started with smoking pot,
Jones said. He had anxiety and
said pot helped him sleep. Then it
was Xanax. He actually called 911

himself and promised that the


overdose would be the end of his
drug use. But three hours later he
was looking for drugs again.
Jones called Recovery Happens,
and they suggested in-patient
rehab at a facility, then follow-up
treatment with Recovery counselors.
Today he is back in school and
attending counseling twice a
week, Jones said.
Daily said that there are as many
reasons for addiction as there are
addicts. But relationships can hurt
and they can heal, whether youre
talking about parents or peers.
In terms of our psychology, our
neurobiology is put together,
organized by the context of the
relationships we grew up in, Daily
said. Growing up in a system of
shame, whether its in the family,
school or elsewhere, creates a distrust of all relationships. Addiction
is a consequence.
From individual and family sessions, group therapy, yoga and
meditation, Recovery Happens
attends to the addict and the family network.
Daily said the peak of any intoxication is dopamine and opiate
release. Building new relationships in counseling sessions
allows the addict to replace drugs
with positive interactions that
gives the same chemical release.

ou may not have had an


opportunity to visit the historic Fruit Packing Shed in
downtown Newcastle. But if you
are seeking an authentic Italian
experience, its certainly worth the
short drive to the town, located off
I-80 just before you hit Auburn.
While there are plenty of people
who visit from Granite Bay,
Roseville and Rocklin, and even
Sacramento, its obvious that
many of the customers are regulars by watching their interactions
with the restaurants friendly staff.
Its a small place, decorated in
plank walls, Italian memorabilia
and art. It was nearly two decades
ago that owner Cesare Di Lorenzo
opened the original La Fornaretta
in Southern California. After eight
years and two dining establishments in Southern California,
Cesare pulled up stakes and
moved to the north part of the
state, bringing his familys delicious Sicilian recipes with him.
Its perhaps no surprise that the
L.A. Times voted La Fornarettas
puttanesca sauce one of the top
ten best dishes in Los Angeles.
Cesares recipes have been passed
down from generations, including
some from family member Giovanni Lo Coco, who ran a famous
restaurant in the Bay Area. La
Fornarettas delicious Schiacciata
flat bread is made from the same
dough recipe Giovanni passed on.
The complimentary bread, served
warm with extra virgin olive oil for
dipping, makes it impossible to
not eat too much bread before the
entre ever arrives.
But youll want to save room for
a delicious plate of pasta or pizza,
not to mention one of several Italian or California wines.
On a recent evening I enjoyed
an outstanding spaghetti alla carbonara, with onions, peas and
prosciutto, and a light sherry
white wine reduction. A dish that
costs $15 but was a generous por-

cookie, as well as a rich and bold
coffee flavor.
Cesare moved to the States,
leaving his home in Sicily in 1987.
But hes brought his roots with
him, in not only the food, but also
the casual atmosphere that he
describes as rustic Sicily and Old
California. With some ingredients
imported from Italy, the chefs also
source local ingredients like the
freshest meat, fish and produce.
What regular patrons likely look
most forward to, besides the
award-winning food, is football,
which is hosted on a big screen on
La Fornarettas large patio, where
diners enjoy pizza, pastas and
assorted wines and beer while taking in the game. La Fornaretta
serves lunch and dinner and
includes a wine bar.

A report titled The Health Benefits of Volunteering showed a link between volunteerism
and lower mortality rates, greater functional
ability and lower rates of depression later in

their age is especially powerful
and can influence the way they
feel, act, dress and behave. It is
simply a risky time for adolescents and young adults.
For some, it is not just the time
when they will learn algebra,
geography, science, and English,
it is the time when they learn to
develop a trusting relationship
with drugs (alcohol is a drug).
My colleagues and I have seen
many adolescents and young
adults who have developed sub-

period of time as short as six
months from their first experience of intoxication, or immediately, if they are genetically predisposed to addiction.
You would think that school
provides the necessary structure
to inhibit this progression, but in
reality, school is the drug store
for many users.
As a drug dealer told me during
the summer, I sell drugs and
make a lot of money, but not right
now because school is out. And
just about any adolescent you
meet today will tell you that they
can buy drugs on their campus.

to school effect the person who is
drug-abusing or addicted?
The answer is that they will not
only continue to use drugs, but
they will progress without treatment.
Many parents who have been
struggling with their childs
behavior at home because of
their drug use over the summer
erroneously believe that when
their child returns to school,
things will somehow all return to
normal.
Many parents think returning
to school means getting back to

the books, studies, homework,


the grindstone and life. However,
this is not what returning to
school means for the drug user.
For the drug user, returning to
school is a time to reconnect
with old friends, share war stories of the summertime parties,
and diligently keep the summer
alive by planning activities and
parties on the weekends to use
drugs.
For some it is deciding where
to get high at 4:20 p.m. (420 is
a time when drug-users use with
the belief that it creates some
sort of connection with everyone
in the world getting high at that

way to look at this for your child
in treatment is that returning to
school means returning back to
old friends and places that might
be associated with their drug use

drug use history can be what we

in Bora Bora.

If ever youre looking for a


reason to put the Gilligans
Island theme on your iPhone,
travelling to Bora Bora in
French Polynesia is it.
Located a short flight from
Papeete, Tahiti, Bora Bora is
part of the Society Islands nine
hours from Los Angeles by
plane, or a final destination
after spending a few days in
Honolulu.
Bora Bora is surrounded by
a group of tiny islands called
motus. Several are uninhabited, privately-owned or owned
by high-end hotels like Four
Seasons and Intercontinental.
It is the home of the worlds
most spectacular tropical fish,
rays, sharks and clams that are
larger than your television. Its
also the home of a tropical illness called chikungunya, and
native people who are tattooed, bedecked in flowers
and bear all manner of tasty
tropical drinks and delicious
French bread. Very few visitors
speak English.
With spotty Internet service, this isnt the best locale if
you need to work remotely
during your stay. But if relaxation is your goal, theres no
more spectacular place to put
the fins and goggles on and
make friends with a crab, a
blacktip shark and a tropical
bird or two.
I had the privilege of spending Thanksgiving in Bora Bora
at Sofitel Private Island Resort,
a high-end property that offers
both over-water bungalows
and rooms that are tucked
high on a hillside. All rooms
have spectacular views and
water-taxi service that ferries
visitors between the private
island and the Sofitel property
that sits at waters edge on the
mainland.
All visits to Bora Bora require
a boat ride, as the airport is
located on its own small motu,

Pictures that you might
have seen of over-water
bungalows barely touch the
beauty of these coral-reefdotted waters that invite visitors to swim through schools
of fishes just a couple of strokes
off their own private deck.
The Sofitel is one of the
smallest of the resorts in the
area, with 31 bungalows. The
resort offers world-class dining
and a view of Mount Otemanu,
often seen in movies and on
postcards.
A tiny island, Bora Bora
doesnt promise a lot of things to
do. But thats the point. Its you
and nature, and probably a great
book or two. That said, there are
some outstanding excursions

that are once-in-a-lifetime opportunities, like swimming with blacktip


sharks and rays (the rays actually
nuzzle against you if you sit still long
enough), and a snorkel in massive
coral reefs, not to mention a swim
with giant lemon sharks that can
grow to 10 feet in length.
The famous Bloody Marys,
recently featured on Catching up
with the Kardashians, is the main
restaurant on the island, and is a
two-and-a-half-mile walk from the
Sofitel. Better yet, rent a bicycle and
head to the place for a burger and a
margarita. Dinner at Bloody Marys
is a real treat the floor is sand and
the fresh catch, straight from local
fishermen, is explained in detail
before you take your table.
While its too far to walk to Vaitape,
Bora Boras only real town, you can
rent bicycles near the Sofitel, or bet-

ter yet rent a Vespa to tool around


the perimeter of the island, stopping
at fruit stands, art studios and vista
points along the way. If youre feeling
really adventurous, ask your
concierge to make a reservation at
one of the surrounding islands
hotels for lunch. Dont try to drop in
unannounced at the Four Seasons.
Filled with celebrities, the high-end
resorts arent fond of drop-ins.
One of my favorite things about
Sofitel Private Island? No kids
allowed. Theres no swimming pool,
no hot tub, just miles of stunningly
clear and inviting warm water. If you
want a pool day, rest assured, the
mainland part of the resort has all
the amenities, though relatively
small in scale. Both venues also have
bars that serve delicious raspberry
lemon drops.
