WELCOME
one of the DeCoRAtInG IDeAS that has come to
the fore over the past decade is the feature wall, be it
covered in a striking paint colour or an attention-grabbing
wallpaper. Ive always thought that the effect works best
in pictorial form, as it makes a space feel complete. Murals
have been used in grand houses for centuries and historical
Chinese papers are exquisitely illustrated, but the advent of
digital printing has led to an explosion of fabulous designs
for walls, many of which have been showcased in our
recent decorating features. however, it was the nordiska Museet wall mural by
Sandberg, winner of the Homes & Gardens Best Wallpaper 2014, that inspired our
scenic walls feature on page 125. As always, our ideas can only be a nudge to your own
creativity, but I think these schemes demonstrate what can be achieved and, while our
palette is quite muted, you can go all out with colour for equally impressive effects.
If youd like to see more winning designs from our annual H&G Fabric Awards,
turn to page 46. It is a real privilege for us to hold this event and, with over 600
entries, judging day is a truly inspiring affair. Although hard work, it was also fun
making our choices with our external judges, designer Kit Kemp of firmdale hotels
and Robert James of the Sofa & Chair Company. All the designs were launched last
year and are available now so, if you are looking for beautiful fabrics and wallpapers,
browsing through this innovative selection is a great place to start.

Hot Water Burns Like Fire,

the name is dramatic, but the
campaign is timely. Nearly 300
people a year suffer severe scalds
from the water in their bath, basin
or shower, and two-thirds of
these are children. It takes less
than six seconds at 60C for
water to burn as badly as a fre.
If you live in a new home, you
may already be protected. since
April 2010, building regulations
have required all baths in new
builds to be ftted with a device
that limits water temperature to a maximum of 48C.
this should prevent the most serious scalds, but a safer
temperature would be a couple of degrees cooler.
If you live in an older property, one possible defence
is to ft an approved thermostatic mixing valve (tMV), set
to a maximum of 46C, to the hot-water supply. However,
its advisable to avoid setting the entire
domestic hot-water system as low
as 46C since this temperature
could lead to a build-up of
legionella bacteria in the
hot-water cylinder.
Alternatively, ft
thermostatic taps and
showers; these typically have
a safety stop at 40C. take
a look at the showerselect
thermostat (left), around 690,

stop, but you can also set a maximum
temperature on installation. Another innovation to

The idler academy

Ukulele playing, sewing, Latin These are a few of the idle


skills you can pick up at this charming bookshop-cum-schoolcum-caf. Founder Tom Hodgkinson tells us more about it
How did the business begin? The
Idler Academy was born at festivals.
My partner, Victoria Hull, and I started
running our own area at the Secret
Garden Party festival seven years
ago. We had a yurt and hosted
talks, and bands turned up to play
one of them was Mumford & Sons.
Then we set up at the Port Eliot
Festival; we called ourselves The Idler
Academy of Philosophy, Husbandry
and Merriment and held classes in
Latin, sewing, grammar and natural
history. It was sort of a joke: we
had a tuck shop, and I wore a gown
and a headmasters hat.
What did you do next? We enjoyed
the venture so much that we decided
to try running a full-time venue in
London. The idea was to combine
a bookshop, caf and school so
we took out a fve-year lease on a
property in a quiet corner of Notting
Hill. Emma Thompson became our
patron and, on our opening night in
March 2011, we held a sold-out class
on the philosophy of ancient Greece.
Can you elaborate on your concept of
idling? For me, being idle is bound
up with being independent. The

French Renaissance thinker Michel


de Montaigne said that he could work
hard if the work was undertaken
voluntarily, but that he was lazy by
nature. Thats idlers for you: we dont
much like the nine-to-fve, so we end
up starting our own projects. I am
always accused of being un-idle. But
if work is creative, meaningful and
voluntary, then its not really work
its play. Its not always easy though.
How has the academy evolved? We
have just launched an online version
of The Idler, a magazine we frst
published in 1993; we update it every
day. Were selling online versions
of our courses, too. That means
everyone in the world can learn to
play the ukulele with us, or take
classes in Greek philosophy, public
speaking, cookery, punctuation,
classical music... Its great fun.
What have been your personal
highlights? I really enjoyed our
event with Michael Palin. He was
very funny, warm and interesting.

ver the course of his 25-year career,


East End born Owen Pacey has
established a reputation as a
foremost expert in architectural salvage.
As well as oering a vast array of original
pieces, from furniture and lighting to
mirrors and statuary in his Renaissance
showroom, he has developed a bespoke
freplace service, meticulously matching
historical designs. Owen has gained
quite a following, with clients including
English Heritage, Grosvenor Estate,
Soho House, The Arts Club and the artists
Gilbert & George.
Tell us a little about your background.
I started o stripping pine doors and
Georgian cast-iron freplace inserts that
Id bought from a builder. I discovered I
could sell them for quite a bit of money,
and thought it wasnt a bad living. It
was 1992, and such a simple set-up
a rented lock-up with a caustic soda
dipping tank. I fell in love with the whole
restoration process and things quickly
took o, so I upgraded to a shop on Essex
Road in Islington. By a stroke of luck, the
largest antique freplace dealer in the
country was moving in three doors away.
I learned a lot from them. When our
current showroom came on the market
in 1995, I was desperate for more space.
The building was a wreck, so needed a
complete refurbishment and, back then,
Shoreditch was a no mans land, but I
couldnt have chosen a better location
to expand the operation.
How did the business take shape?
Id accrued quite a collection of period
freplaces from all over Europe to fll the
huge space (the basement under the
showroom is also packed with pieces,
which spill over into a studio warehouse
next door). Gradually, I built up a team
of experts and we started doing house

visits as well, restoring old freplaces to


their original glory. We soon obtained
approval to work on listed buildings, and
teamed up with interior design companies
on period houses for Grosvenor Estate in
Mayfair, The Howard de Walden Estate
in Marylebone and The Bedford Estates
in Bloomsbury. Once our freplaces are
showcased in properties such as these,
they sell themselves.
What did you do next? I saw a niche in
the market for handmade freplaces, with
immaculate carving and details, that
were indistinguishable from the originals.
Clients also asked for an aged effect, so we
started developing our own techniques for
doing this. Then, ten years ago, I moved
into lighting after getting hold of some
Baccarat crystal chandeliers that everyone
was clamouring to buy.
Where do you fnd design inspiration?
Im good at spotting trends, as I see so
many fabulous houses and always take
the time to talk to the interior designers;
I learn so much this way. When Im
abroad, I fnd inspiration wherever I go,
from a monastery in Italy to an old Citroen
factory in France. Gilbert & George are
also a big inuence.
Where do you source stock? I travel all
over Europe searching for unique and
interesting freplaces, reclaimed lighting
and architectural salvage. I take a trip
abroad once a month, usually for three
days. Angelo Attanasio, who has worked
for me for 22 years, goes around all the
markets buying up old components of
freplaces, which he then sends to Italy
to have moulds made.
Describe the process of copying a
freplace. First, we take a high-defnition
photograph, then make up a mould. A

wooden box is prepared, the freplace is put


inside, then a silicone rubber compound
is poured in to fll every nook and cranny.
All the stages of the ageing process take
about a week remember, an original may
have had hundreds of years of wear, with
corners eroded and areas rubbed smooth.
People wrongly believe that we use tea,
but all Im going to reveal is that dentists
tools are involved. With freplaces and
furnishings, my general rule is to match
architectural pieces to the period of the
property you live in. Personally, I love
ornate Georgian freplaces best.
Talk us through a typical day. Every
morning starts in the same way I take
my Labradoodle, Maggie, for a walk
in the park. After this, no two days are
the same. Generally, we look at the job
sheets, load the vans and o go the ftters.
I spend around half of my time in the shop,
and usually meet clients on Tuesdays and
Thursdays. I fnish at about 5pm, and
by 5.30pm, Ive got my feet up on the
sofa it takes me 30 seconds to get
home from work, as I live above the
showroom. My advice to myself is never
to fall in love with items in the collection
because at some point someone will
want to purchase them lots of people
end up coming upstairs and buying my
favourite pieces from my at.
What are your plans for the business?
I want to convert the warehouse next door,
and use it to showcase lighting, such as the
old lanterns Im bringing in from France
and a complete collection of chandeliers
that I managed to buy from an old Italian
palazzo. Im going to start focusing on
high-end copies of lighting, too. Im also
planning to open a second shop this year. l

Bonsai tools
You can use standard gardening implements
secateurs, wire cutters and a knife but
for the dedicated enthusiast, it is worth
investing in a set of specialist bonsai tools.
This typically comprises pruning or twig
scissors/secateurs, heavy branch pruning
secateurs, a trimming knife, a small trowel,
chopsticks, a soft brush and a hard wire
brush, root-working sticks, a sieve and
a clamp. For the more advanced bonsai
gardener, re-potting root hooks, a root
sickle, a rake and carving tools are essential.

The art of bonsai

, growing trees
on a miniature scale, is an ancient pursuit. The
Romans are known to have practised it, as did the
Chinese, but it was in Japan that the ability to make
a tiny plant resemble a fully matured tree became
an art form. The trees are grown to look windswept
or twisted and gnarled, weeping and cascading, or
strong and vigorous, with trunks as thick as your
arm but no taller than the span of your hand.
Whether you grow from seed, seedling or cutting,
almost any tree can be used for bonsai, inside or out.
The skill lies in regular root and stem pruning or
wiring, which forces the trunk and branches into
your chosen shape more quickly and the trick is to
keep the tree in a small container. The appearance of
great age and elegant form are what make bonsai so
irresistible, traits that vary according to how green
your fingers are and your artistic skills.
You can, of course, buy a ready-made bonsai but,
depending on the species, its age and the way it is
presented within its container, it can be a very expensive option. With this in mind, it is wise to be fully
committed to maintaining the tree, and respecting
its heritage, before making such an investment.

Atkinson and her partner
Garry Peggs Georgian town house. The
rened four-bedroom home in south London
is a masterclass in respectful renovation and
decoration, blending contemporary and classic
elements without diluting the spirit of each.
Sarah tells us more.
What condition was the house in when you
bought it? It was in fairly good shape structurally, but the interior needed a thorough update,
as it hadnt been touched in ten years. We
recongured the layout of the main bedroom
and bathroom and added a garden room in the
basement. Other than that, the renovation was
largely decorative.
Tell us about your diering interior styles?
Garry described my previous at in Notting
Hill as rather clinical. I like minimalism and

I am naturally drawn to clean, simple lines set


against a neutral backdrop. Garrys old at in
Tower Hill was fairly contemporary, but he
tends to appreciate a more classic style and
greater use of colour than I do.
How did you approach the renovation then?
We lived here for a few months before we
started any work so that we could understand
the house better and get a sense of exactly
what we wanted to achieve.
Did you have any help? Interior designer
Nicole Salvesen, of Salvesen Graham, was
very skilled at presenting us with a range of
options she knew wed both appreciate and
helped to steer some of our decisions. A fresh
pair of eyes was invaluable.
How long did the work take? Our jobs keep us
very busy Garry and I are partners in our
respective law rms so the whole process
took around two years, with a few pauses
along the way. We deliberately took our time,
decorating the rooms one by one. Some

decisions were almost intuitive, but others,


such as whether to use the purple fabric on the
sofa in the basement and selecting the paint
colour for the kitchen cabinetry, we agonised
over a little more.
What compromises did you both make? The
house dates back to the 1830s so our priority
was to respect and enhance its heritage. Were
both passionate about interiors, but we based
our decisions on what would work best in each
room, rather than arbitrarily imposing our
individual style on it. We originally had a white
sofa in the sitting room, but it was totally lost
in this setting and, although I was apprehensive about using a more colourful fabric, the
room needed greater denition. The crispness
of the pared-back kitchen is more my style, but
we both agreed this room should be kept
simple to focus attention on the original
French windows and shutters.
How did you personalise the rooms? Allowing
the space to guide the style forced us to be
more creative. In the dining room we adopted

a mix-and-match approach, teaming sleek,


modern furniture with pops of patterned
fabric, and choosing classically shaped pieces,
such as the chandelier, with a contemporary
nish. In the bedroom we introduced texture
with a seagrass wallpaper that brings depth to
the scheme, which Garry adores, while the
muted palette grounds the look in simplicity,
which I nd incredibly soothing. The basement has been the biggest success, though; it
had no real period features so we were able
to have some fun. The paint colour on the
traditional-style wood-panelled walls adds
a contemporary twist that sums up the sympathetic approach we adopted towards our
renovation of the house.
What is the key to your homes success? The
fact that we put the needs of the house rst;
that we took our time and learned from our
mistakes. Because of that, I think weve created
an elegant interior that has a lovely mix of
contemporary and classic references, but
nothing shouts for attention.

n the whole, impulse buys are fraught with regret. Think of all those
not really me lipsticks, the this year I will get ft rowing machine or
the thats clever electrical boot cleaner languishing in cupboards and
drawers. When the usually prudent Tea and Hugo Taulasto made an
impromptu buy, however, it was for nothing less than a capacious, handsomely crafted kitchen. The shop was closing down and the price was
irresistible, recalls Tea. The only problem was that we had nowhere to
put it. Instead of confning the kitchen to storage, the Taulastos used it
as a catalyst to fulfl their dream of selling their Helsinki fat and decamping to the countryside.
Today, the cabinetry has taken its rightful place in the Taulastos relaxed home, a converted
barn in an unspoilt rural setting. Framed by rough-hewn beams with oak foors underfoot, the
former cattle dwelling encapsulates that quintessentially Nordic mix of clean lines and natural
materials: think linen-clad sofas offset by grainy brick walls; minimalist steel log-burners agleam
against muslin curtains and cosseting rugs on pale foors.
This air of blissful calm was not achieved without effort, however. The previous owners
had converted the barn into a home and the size was perfect, says Tea, but it was a bit of a

muddle. The fooring materials were all different: linoleum, parquet and so on, as were the
colours used throughout. The kitchen units were red; the walls, blue and yellow.
Drawing on their love of natural, tactile materials, the Taulastos set about giving the interior
an authentically rural feel. Unsympathetic fooring has been replaced with waxed oak boards
and, in the entrance hall, irregular slabs of black slate accentuate the harmonious tones of the
rest of the house. In the bedroom, garish wallpaper was scrapped in favour of a new brick wall,
which brings a warm, textural contrast to the snowy-whiteness of the rest of the house. Ive
always loved a white scheme. Theres a perfection and purity to white that you simply cant
achieve with other colours, says Tea.
Alongside the decorative adjustments, Tea and Hugo have also made some changes to the
layout within the U-shaped, two-storey barn. The sprawling ground foor is where you will now
fnd the bedrooms, a breezy living space, an offce, from where the Taulastos run an engineering
business, and a garage, which houses the couples collection of vintage Porsches, with the foor
above it used as storage space.
We were drawn to the house by the fact that it offered plenty of space to work from home,
but the original ground-foor layout was badly planned, explains Tea. To achieve the fowing

space that they desired, the Taulastos pooled their design talents to come up with some deft
structural tweaks. Behind the kitchen, a wall was opened up to install wide, glazed doors which
lead to the large main bedroom, which was previously a huddle of storage and utility rooms.
With these removed, it has become a light-saturated space where the bed, draped in gauzy white
linen and piled with plump quilts and duvets, has a restful allure. Strategically placed mirrors
further enhance the scheme and sliding glass doors lead to the bathroom and a discreetly hidden
wet room, both exercises in taupe-tiled simplicity.
The earthy tones of the bathroom are echoed in the sauna, which Tea and Hugo situated
within the converted silo at the back of the house. Instead of an electric element, the couple has
added traditional hot stones and painted the two-storey interior in a surprisingly warm, allenveloping black. In winter, in true Nordic spirit, a spell in the sauna usually ends with a bracing
tumble in the snow before repairing to the sitting area of the house to relax. Here, too, is a
welcoming interplay of natural textures: sparkling chandeliers, fur throws, and driftwood
artworks fashioned by Teas mother.
The Taulastos couldnt be happier in their new home. At the heart of it all sits the kitchen
that encouraged them to move, proof that not all impulse buys are regrettable. l

hilip Mosley is delighted with the terraced


London home he shares with his partner.
I cant help but smile whenever I think about
it, he says. Im so pleased with the way it
has turned out. It has been two years since
interior designer Stephen Ryan handed over the keys to
the house and the couple moved in, but Philips joy in his
surroundings remains undiminished.
We gave Stephen completely free rein, he explains. He
is a very good friend weve known each other for about
twenty-fve years and he had helped us decide on colours
and decoration in our two previous houses. This time,
however, we handed the whole design project over to him.
Prior to this latest move, the couple had lived in
Limehouse in east London for 14 years, in one of the
pockets of the East End that had not been bombed. We
loved the property but decided we needed more outside
space, especially for our dog, Inca, says Philip. The
five-storey terraced house they eventually found as a
replacement is in south London. It needed to be rewired,
re-plumbed and taken right back to the brickwork in
places, says Philip, but it has a garden and is close to open
spaces for long walks with Inca.
The existing extension to the basement kitchen was
transformed by the installation of fully retractable doors
leading to the garden, and a roof terrace on top, accessed
through the frst foor. We visited the site about once a
week, but it was quite stressful to see the bare bones of
the building; at the back of our minds we couldnt help
wondering if we were doing the right thing, Philip says.
The renovation took a year and, once complete, Stephen
started work on the interior. We really put our trust in
him, explains Philip. Moodboards were made for each
foor but, I must admit, there were times when we were a
bit sceptical. The green wallpaper in the sitting room, for

example; that was a bit of a shock at frst, but when Stephen


put the whole thing together we thought, wow. He found
us some wonderful wallpapers, including the library-effect
design in the basement. I love that.
The pictures on the walls were the only furnishings that
the couple brought from their previous home. Collecting
them has become a bit of a hobby, says Philip. We like
going to auctions at Lots Road, which is where we found
the painting above the sofa in the living room. We started
to buy artwork years ago and found one of our frst pieces
at the Affordable Art Fair in Battersea.
In the entrance hall, a drawing of a dancer by Mark
Demsteader catches the eye; it also provides a clue not only
to Philips own profession, but to his story. The drawing
is of Argentinian dancer Marianela Nuez, one of the
Principal Artists at The Royal Ballet and one of the 100
dancers for whom Philip, as the Ballets artistic scheduling
manager, is responsible. Im also a character artist so
Im on stage quite a bit myself; in May, Ill be playing
Widow Simone, who performs the famous clog dance
in La Fille Mal Garde.
As Philip says, I started out as a tap dancer, so
when I was told in my frst week at The Royal Ballet School
that we were being taken to see Swan Lake, I put up my
hand and asked, Whats Swan Lake? Eight or nine years
later, I was dancing in it. Philip, you see, is the original Billy
Elliot, upon whom the flm and musical are based. Born in
a northern mining town and spotted at an early age by an
inspired teacher Julie Walters captured her to a tee,
Philip confrms he was sent to London at the age of 12 to
embark on what has been an enormously successful career
with The Royal Ballet. I still step back sometimes and
think about where I grew up, he says, but now Im living
in this beautiful house. Its a total joy to come home to. l

lants and builders make poor partners; but,


sometimes, there is no getting round it. You
plan a small project and the workers arrive,
bringing with them not only machinery and
materials but, inevitably, foul weather too.
As they proceed, the heavens open, and the plot that you
imagined would somehow survive unscathed is transformed into a muddy pit, your beloved plants damaged
and probably lost beyond return.
You despair and curse the day you ever decided to
build. Garden designers are, mercifully, less prone to such
vapours. The churned up quagmire that your garden has
become is meat and drink to them, a blank canvas for their
creative schemes. Which is fortunate for Katherine Winter,
whose north London garden was in dire need of rescue
after a basement for her house had been excavated. She
had wanted a garden of herbs, fruit and beauty, but was
left instead with something resembling a swamp.
Responding to her distress call, award-winning garden
designer Bunny Guinness stepped in to transform the
mess into a beautiful space dominated by green with
bright highlights. Her clever sleight-of-hand included
blurring the boundaries between the gardens periphery
and the landscape of mature trees beyond, making the
area look considerably larger than its 50 by 65 feet.
Before I visit, I ask my clients to think about what
they would like their outdoor space to be, says Bunny.
Katherine, an American academic, took this seriously and
did extensive research. She wanted an English garden,
underpinned by order and pattern, a place in which to
grow herbs and fruit: My husband says that Im happiest
when Im outside picking things. The couple also wanted
a private and peaceful place, that felt more rural than
urban, in which to relax.
Today, the focus of the design is a box-edged herb
garden of five interlocking ovals a quincunx planted
with rosemary, standard bay and lavender. This feature
can be seen from the house and, with its evergreen matrix,
provides pattern in all seasons. It is bordered by a low
brick framework topped by cedar coping, which doubles
as a seat, an ideal spot from which to brush ones fingers
through aromatic herbs.
I wanted fragrance and something to cook with, says
Katherine, so alongside the formal herb garden are mint,
parsley, oregano, tarragon and thyme planted in gravel or
growing in pots. Herbs can be fickle in English gardens,
always wanting better drainage and more sun than our
climate can provide, but Katherines delight in this space
is obvious. Im from New York City, so I never take any
of this for granted, she says.
Katherine wanted fruit trees too, so Bunny bought
some handsome multi-stemmed medlars, a relative of

the quince, for their seasonal display of blossom, golden


autumn foliage and spicy smelling fruit; they have been
given prominence in painted Versailles planters. Over
the cedar pergola, Bunny has trained Rosa New Dawn
and espaliered apple trees, which will eventually form
an archway linking one area of the garden to another.
The supple bark of young apple trees is perfect for this
living sculpture; in winter, the textured bare branches
are revealed, followed by spring blossom which attracts
pollinating insects.
The view from the house has not been forgotten either.
From the kitchens French windows, a simple rectangular
rill, which is flanked by terracotta pots filled with agaves,
directs the eye to the lushness of the garden.
What was once a pit of mud is now a space where
the couple loves to sit and watch visiting birds and insects,
and the fallow deer that roam beyond the garden at
twilight. Plants have healed this place. l

ith its fusion of rugged textures, warming wooden walls and soothing
colour palettes, Jonathan West and Jane Molloys triple barn conversion
is a beautiful blueprint for practical and tranquil living. Situated
just outside Stow-on-the-Wold, with breathtaking views of the
rolling countryside, the group of Grade II-listed, 18th-century barns
became the couples choice for their new home in 2011, when they decided that the time
had come to leave their cosmopolitan lifestyle in west London and, previously, New York
for something more gentle and idyllic.
A SYMPATHETIC REVIVAL
The barns were derelict when Jonathan, a photographer, and Jane, an interiors and fashion
stylist turned counsellor, first saw them. What is now our bedroom was a lambing shed,
says Jane. All the floors were dirt, and there were no windows, but we saw the untapped
potential to turn the three into a one fabulous family home.
Successfully converting old, working buildings into domestic dwellings without destroying
the original structure can be a challenge, but it was one that Jane and Jonathan tackled
with vigour. These are magnificent barns, says Jane, and we wanted to retain their true
architectural character, not transform them into modern white boxes.
RISING TO THE CHALLENGE
The couple decided to carry out the work themselves, with help from a local builder, and for
the next three years (half of which was spent living on site, sleeping in a windowless utility
room), they poured their creative passions into the project. All the materials and fittings
have been carefully chosen and a lot of sacrifices were made to create this home, but our
sense of achievement now is exhilarating, says Jane.
Today, as we walk through the large, light-filled house, natural grains, beautiful colours
in the form of soft furnishings and framed artworks, and a scattering of hardy industrial

features all sit together in perfect harmony, complementing the buildings structure of high,
steeply pitched ceilings and wooden beams, exposed bricks and newly replastered walls.
WINDOWS ON THE WORLD
Distinctive window treatments are one of the most inspiring elements that Jonathan
and Jane have used to bring individual character to the house. Glazed portholes allow light
into bathrooms while metal louvres, of the sort commonly found in barns in upstate New
York, take the place of curtains or blinds in the bedrooms. Downstairs, a wall of half-glazed
doors rather unexpectedly separates the kitchen and dining room from Jonathans dark
room, and vast Crittal windows replace the huge barn doors through which horse-drawn
carts would once have passed.
Perhaps most eye-catching, however, are the sliding doors with built-in louvred windows
that hang from metal rods. Based on a door that Jane and Jonathan found in one of the
old potato sheds, the new doors were specially made and, when completely pushed open,
reveal full-length windows with views across the countryside. The vista is like a living
art form, says Jane, as the scenes of nature constantly evolve; day changes to night, and
the weather rolls around the house.
LIVING THE DREAM
This large and unquestionably welcoming home has been tailor made for visitors, which is
one of the main reasons the couple chose the property in the first place. The barns offer an
effortlessly stylish living space for their creative family: Janes sister, a novelist and journalist,
regularly comes to stay, while her artist father divides his time between London and here,
and he even has a painting studio on a mezzanine overlooking the kitchen. Everyone who
visits is seduced by the atmosphere, says Jane. The people in this area are friendly and there
is a real sense of community. Our pared-back country life is nourishing and reassuring; weve
found the perfect place to relax and recharge. l

caN yoU DEScRIBE THE PRoPERTy? It is a beautifully

converted barn in the Vale of Pewsey, Wiltshire. When


I arrived on the scene, it was in the throes of renovation
but, despite the scaffolding and the army of builders,
I could see it was going to be something special.
WHaT WaS THE DESIGN BRIEF? The owners, John and

Alison Leese, both love cooking and when we discussed


plans and priorities, their enthusiasm shone through.
They were keen to keep an open-plan layout throughout
the main living area of the barn, which includes a dining
area and snug with casual seating, and a mezzanine level
above. The kitchen was not to be shut away from the
rest of their home. Top of their list was a substantial
island with a sink, hob and seating all incorporated.
HoW DID yoU ESTaBLISH THE LayoUT? We discussed
having a peninsula unit or installing cabinets under the
windows, but both ideas went in the reject bin as they
would have restricted the space and created a separate
kitchen. Instead the layout was dictated by the need for
six full-height cabinets to house the ovens, larder, fridge
and freezer. Its usually best to group tall units together
and only one wall in this room was long enough to take
them. The rest of the layout stemmed from this point
and is devised for efficient cooking and logical storage.
TELL US aBoUT THE DESIGN oF THE ISLaND. This had

to accommodate many elements, including a double


butlers sink, an extra-wide induction hob, a dishwasher
and storage as well as seating, which meant it had to be
seriously substantial at least 1.3m deep by 4.5m long.
Part of the island is recessed so the stools can be tucked
out of the way when not in use.
WHIcH maTERIaLS DID yoU USE? For the worktop, we
opted for a dark quartz composite stone; its extremely
practical and durable. John and Alison chose a version
with subtle veining, rather than a solid black, which is
more interesting and helps to conceal water marks and
fingerprints. We added a long section of walnut to define
the breakfast bar area and provide a softer surface to
lean on. The units are painted in a subtle Biscuit tone,
from John Lewis of Hungerfords own paint range. This
works in harmony with the barns natural materials.
WHy DID yoU cHooSE a DaRk FINISH FoR THE WaLL
oF caBINETS? Believe it or not, dark colours can be
neutral and can, in some circumstances, make a room
look bigger. In this case, the Cocoa paint finish makes
the tall units feel less fitted, almost like a separate
bank of cupboards, and also prevents the kitchen from
slipping into obscurity under the low mezzanine floor.

the room could definitely cope with the dark shade.
WHicH cOOKiNG APPLiANcES DiD YOU cHOOSE? John
and Alison wanted hard-working appliances with plenty
of bells and whistles, so we mainly opted for Neff. There
are four ovens two combination, a microwave and a
steam oven arranged in a group at eye-level. The big

was chosen for its efficiency, sleek profile and safety,
which is especially important for island installations. Next
to it is a downdraught extractor, which is more discreet
than a canopy version. It is a recirculating model that
doesnt require external ducting, so was easy to install.

slide into the worktop when not in use, so you dont have
ugly components at the end of a beautifully crafted
piece. A small detail, but so effective.

WHAT WAS THe INSPIRATION FOR THIS SCHeMe? The high ceiling,

grand freplace and intricate architectural details were the starting


point; the aim was to emphasise the period features of this lovely room.
The furniture has been limited to a few simple, contemporary pieces
to evoke an air of sophistication with a calm mood.
HOW DID YOU PLAN THe LAYOUT? This was dictated by the positions of
the freplace and the entrance, which is to the right of the sofa. I wanted
to create a comfortable seating area centred on the freplace, but without
blocking its view from the doorway; to achieve this, the sofa ftted best
set forward of the long wall of windows. There also needed to be room
to move freely; the ottoman helps to anchor in the scheme, while also
leaving plenty of space to walk around.
WHAT PROMPTeD THe COLOUR PALeTTe? The walls are painted white
to keep the look clean while showing off the architectural fourishes. The
use of grey started with the blinds, which are made of a waffe fabric in
charcoal. I continued with dark grey tones that would stand out against
the white backdrop, adding bright yellow cushions for pops of colour
and monochrome patterns to bring depth to the scheme.
TeLL US MORe AbOUT THe WINDOW TReATMeNT. So as not to
overshadow the original architectural detailing, the blinds were kept plain
for an up-to-date graphic look. Their thick fabric makes the room feel
warm, and its texture sets the tone for a tactile scheme, complemented
by the buttoned ottoman and sumptuous velvet fabrics.
WHAT WAS YOUR MAIN AIM WITH THe DeSIGN? I wanted this to be a

furniture has a sleek low profle, which allows the rooms original details
to shine, while the unfussy blinds dont detract from the classic beauty

CAN YOU DESCRIBE THE SPACE? It is in a two bedroom, four-storey

mews house in Londons Belgravia. We reconfigured the entire second


floor to create a suite comprising the main bedroom, this bathroom
and a dressing room. The space allocated to the bathroom is around
3.4x3.1m, so its not small by any means, but we had a lot to fit in.
WHAT WERE YOUR MAIN AIMS? The owner, whom Id worked for many
times in the past, wanted a very high-end finish, quite unlike anything Id
done before. The main focus was on luxury materials and fittings, while
the spatial priority was to achieve a generous layout that incorporated
a double vanity unit, separate shower and free-standing bath.
HOW DID YOU MAXIMISE THE SPACE? By taking every opportunity to

expand the room. For example, we repurposed a dumb waiter to create


a large linen cupboard with ample storage for towels and toiletries. We
also stole space from the hallway between the bedroom and bathroom
to create a shower thats generously sized, despite the fact that the
wall is sloped on one side and eats into the shower area.
WHAT INSPIRED THE CORE MATERIALS? The marble is Turkish Lilac
and is stunning. Yes, its busy, but we werent afraid to use it as the main
feature in key areas. We wanted the strong veining to steal the show.
The key is not to use it on all walls but to balance it with another stone
or tile. Here we tamed the effect with a plain yet undulating porcelain
tile in a crisp off-white that matches the white in the marble. The rest
of the walls are clad in a textured soft graphite tile.
CAN YOU TELL US ABOUT THE VANITY UNIT? It is positioned directly

on lighting and the way it is controlled. The circuits were split to allow
the spotlights to be operated separately from the wall lights and
under-counter lights. Wall lights were introduced as task lighting and
provide excellent illumination for applying make-up or shaving.
WHAT IS THE kEY TO THIS BATHROOMS SUCCESS? The fact that it
is easy and comfortable to use. Fitting everything in without feeling
squeezed was our biggest challenge; it took meticulous planning and
good use of mirrored glass to pull it off. I also love the unique marble.
This bathroom is neither overly complicated nor overly designed. l

WHAT WAS YOUR BRIEF? This couple wanted to create a calm


and luxurious dressing room in the master suite of their Cotswolds
farmhouse. They were keen for it to have a timeless feel that would sit
comfortably beside the bedroom. The whole house has a softly elegant
tone and this space is no different. Its a generous size and links the
main bedroom to the bathroom, so it had to be decorative but also
effcient and tidy. The room has amazing views and wonderful light,
so we wanted to maximise those elements, too.
CAN YOU DESCRIBE THE ROOM? Built-in cabinetry lines three walls of
the square room, with French windows in the centre of the external
wall leading to a terrace and the garden beyond.
WHAT WAS THE INSPIRATION FOR THIS SCHEME? We wanted it to

feel like an anteroom, rather than an overblown wardrobe. It was not


to be overly feminine as its open to the bedroom, which can be seen
through the doorway. The aim was to create a practical, attractive
buffer zone between the bedroom and the bathroom, which are very
peaceful spaces. We wanted to make sure this sense of calm and quiet
continued through to the dressing area.
DOES THE ROOM BLEND FORM AND FUNCTION? Its a happy marriage
of the two. Everything is stowed away behind the painted ash doors,
which feature a diamond design that brings a classic element and depth
to the otherwise simple scheme. Storage, and easy access to it, have
been considered in detail. There is a place for everything, including
shoes, boots, handbags, jewellery, evening wear and a hair dryer. The
joinery is also cedar lined to protect delicate fabrics from moths.
HOW DID YOU MAKE OPTIMUM USE OF THE SPACE? Weve used it

all by tailoring the furniture to the room, from the ftted cabinetry to the
bespoke chest of drawers. We took the cornice of the joinery to just
shy of the ceiling so that the area above creates the illusion of additional
height. Every inch of space within the wardrobe is maximised through
the use of modular shelving and plenty of rails.

Lean lines, textured materials and beautiful
seasonal planting nurture a sense of peace
in this urban garden in the capital
designer profile Having worked as a teacher and

an estate agent, Annie Pearce retrained as a garden


designer at Capel Manor College and set up her design
practice in south London in 1998. In 2006 she moved
to the Cotswolds, and now creates contemporary and
naturalistic gardens in both rural and London locations.

What Was your clients brief for this garden? The garden

belongs to the owner of a Huf Haus, situated in south London, who


wanted a serene outdoor space where he could relax after a stressful
day at work. We both felt that the garden should refect the contemporary
architecture of his home. This was a wonderful project to work on
because the client had no fxed budget and left the interpretation of
the design brief completely up to me.
What Was the inspiration for your design? I wanted a very
clean-edged scheme, softened by seasonal planting, that would feel
and look like an abstract modern meadow. The bold horizontal lines of
the house, with its refective glass walls, inspired my plan. To create a
feeling of lightness, I raised the walkways by a couple of inches so the
shadows beneath the cantilevered steps give the impression that they
are foating. The channel of water has a very calming infuence on the
design, the still water refecting the clouds and plants in its surface
and drawing in wildlife, such as birds and dragonfies. The refections
also tie in with the glass walls of the house.
hoW did you achieve the minimalist look? The garden is simple
in design; everything is pared back, with no extraneous details. The
colour palette I chose is also calming to the senses, with buff Yorkstone
and a white-and-green planting scheme giving the garden a subtle
sort of wow. Even the stone wall that punctuates the water channel
has no decoration or gushing water chute. I wanted it to be a quiet
focal point, allowing the eye to rest on the texture of the stones and
the refections in the water.
Which plants have you used? As the whole garden is visible from
the house, the planting has to look good all year round. My client loves
to watch the seasons change, so I flled two rectangular beds with
feather reed grass, which is deciduous but holds its structure during
winter. This is under-planted with Leucojum aestivum Gravetye Giant,
an elegant spring bulb that grows to knee height and resembles a tall
snowdrop. As these fade, two varieties of white allium take their place.
Box balls and evergreen Pittosporum provide permanent structure and
colour, while Cornus kousa var. chinensis (Chinese dogwood) offers
seasonal interest, producing beautiful white fowers in late spring and
strawberry-like fruits and colourful leaves in autumn.
are the plants easy to care for? My client travels a lot so I
chose low-maintenance plants. The grasses are left to stand over

winter and are cut down in early spring; a few weeks later, new shoots
appear alongside the Leucojum. I also mulch the beds with Strulch,
which is made from wheat straw and keeps in moisture, suppresses
weeds and deters slugs and snails.
hoW do you maintain the Water channel? Water features

need to be planned carefully so that they dont become congested


with weeds. This one is ftted with a UV fltration system and a pump
that is linked to a skimmer. The skimmer sits beneath the bridge and
hoovers debris and dust from the surface, while the fltration system
kills algae. We dont add chemicals to the water, which means that
wildlife is not harmed in any way. The owner asks a pond specialist to
visit once or twice a year, to give the cleaning equipment an overhaul
and to remove leaves and other debris. l

see whether you like their work.
n A good architect should be able to
keep costs down by having sound
relationships with suppliers and, more
importantly, experience. They will often
have undertaken similar projects to
yours in the past and will know how
to deal with any problems.
n The most important thing Ive
learned is to involve your neighbours
right from the start. If you dont,
they may become increasingly
annoyed, to the point where they
might try to block the project.
n A planning consultant should be
necessary only if your architect does
not specialise in planning, or if you are
dealing with very complex matters.
n If your extension meets the
requirements for permitted
development, a pre-planning
application should not be needed.
n Planning permissions, applications
and regulations may vary depending

listed building doesnt mean you have to opt for a
conventional design often a modern structure can
help to maintain the integrity of an historic building
by its distinction. An extension that jars with the
existing building by being out of scale or featuring
materials that look cheap against the original ones
is unlikely to cut the mustard, says Meredith. We
have to be sensitive to both the building and the
reasons for its listing. A good resource for owners
of listed properties and the specialist craftsmen

ADVICE Cladding
Creating a distinctive faade
Trends Lately, clients have been opting for
contemporary materials, including patinated
metals, such as copper, which change over
time, says architect Gregory Phillips, 020 7724
3040, gregoryphillips.com. Porcelain cladding,
polished plaster (as an alternative to render),
timber shingles, blackened timber and long,
narrow brickwork are also popular. Brickwork
can add texture and will stand the test of time.
praCTiCal ConsideraTions Concealing
gutters and downpipes behind cladding will
create a clean look, but its also a good idea to
use rainscreen cladding to extend the life of the
building. When looking at samples, consider
whether the material will deteriorate over time
and also how it will look over a large area, says
architect Robert Dye. Well executed edges
are key to aesthetic and practical success,
particularly as leaks always occur in corners.
If you would like a design thats perfectly
compatible with the character of a period
building, using a brick-matching service can
be a good approach. Alternatively, a glazed
extension will often blend in well.

Moths lay their eggs in areas where the larvae can hatch and feed
undisturbed; in the case of carpet, on keratin in the wool. The damage
occurs mostly around the edges of a room, especially if the carpet is
shaded or covered by a rug. Open areas with lots of foot traffc and natural
light are rarely attacked, so activity on your stair carpet will be along the

Piping has no practical function; it is a purely


decorative device that helps to defne the
shape of a sofa or chair. On traditional-style
sofas, piping remains popular. The fnest
upholsterers use a pre-shrunk cotton piping
cord inside a stockinette sleeve, which is
smooth and reduces abrasion.
A simpler alternative that you may prefer
is the technique of top-stitching over a fat
seam line for a sleek fnish; this supports the
fabric and offers a more contemporary look.

reversible linen, you might like to opt for

Compatibility between bowl and


tap is the key to the success of
this arrangement, so you must
consider them both as a unit. In a
cloakroom, there isnt likely to be
enough space for a large bowl and
its shape is actually less signifcant
than how and where the tap is
positioned. The water outlet should
be directed over the drainage hole.
If this isnt the case, splashing is
very likely to occur when the water
hits the radius of the bowl.
Water pressure is another
important factor. If it is very high in
your home, its wise to choose a tap
that comes with interchangeable
outlet flters. These will aerate the
water as it fows, slowing its progress.
Counters also tend to get splashed
when we reach for the towel after
washing our hands, so where you
place your hand towel can also
contribute to a solution. l

KNEADING AND RISING


The more you make bread, the more youll
know what the dough should look and
feel like at every stage. Many of these
doughs are wetter than you might expect,
which makes them trickier to handle,
so always knead on a oured surface.
Kneading without spreading your ngers
will give you better control, as will using
a dough scraper at the start. You are
aiming for a smooth, elastic consistency.
After the dough has risen for the rst
time, you will usually have to knead it
briey again, before a second rising. But
be gentle do not punch as you need
to preserve the air within it. The time
required to rise, rest and rise again
depends on the our, the kneading and
the temperature in the room. It all takes
practice, but the results are worth it.

ANISE AND SPELT ROLLS


Makes 25 (previous page)

Anise seed adds a delicious avour


and texture to these buns, which I like
to serve with blackcurrant conserve.
50g fresh yeast
800ml lukewarm water
2 tbsp clear honey
500g wholegrain stoneground spelt our
600g white stoneground spelt our,
plus extra to dust
2-3 tbsp anise seed,
plus extra to sprinkle
1 tsp salt
1 egg, lightly beaten

SPELT FOCACCIA WITH FRUIT AND NUTS


Makes 1 loaf

This lovely bread, packed with dried fruit and nuts, is sweet but not too sweet,
making it perfect for brunch or serving with a cheeseboard.
50g fresh yeast
800ml lukewarm water
1 tbsp clear honey
2 tbsp olive oil, plus extra
to grease the tray
1 tsp salt
650g wholegrain
stoneground spelt our,
plus extra to dust
300g strong white our
100g dates, chopped
100g raisins
100g dried apricots, chopped
100g hazelnuts, chopped
1 egg, lightly beaten

Crumble the yeast into the lukewarm water to dissolve. Add

the honey, oil and salt and stir together. Stir in the ours, then
add the dried fruit and nuts. Knead on a oured worksurface
for 10-15 minutes. Return to the bowl, cover with a tea towel
and leave to rise at room temperature for 1 hour.
Line a 40x30cm shallow baking tray with baking parchment
and oil lightly. Press the dough into the tray as evenly as
possible, pushing dimples in the surface with your ngers.
Cover with a tea towel and leave to rise in a warm place for
30 minutes. Pre-heat the oven to 220C, gas mark 7.
Brush the focaccia with the egg. Bake for 10 minutes, then
reduce the temperature to 200C, gas mark 6 and bake for
20-25 minutes, until the bread sounds hollow when tapped on
the base. Turn out of the tray and leave to cool on a wire rack.

Crumble the yeast into the lukewarm

water to dissolve, then stir in the honey.


In a separate bowl, mix together the
ours, anise seed and salt. Add the our
mixture to the yeast mixture and stir
until you have a smooth dough.
Knead on a oured worksurface for
10-15 minutes. Return to the bowl, cover
with a tea towel and leave to rise at room
temperature for 2 hours.
Shape the dough into 25 small rolls
and space out on baking trays lined
with baking parchment. Cover with a
tea towel and leave to rise in a warm
place for 30 minutes. Pre-heat the oven
to 200C, gas mark 6.
Brush the rolls with the egg and sprinkle
with anise seed. Spray cold water into
the oven to create steam. Bake the rolls
for 30 minutes, then cool on a wire rack.

NORDIC CHEESE BREAD


Makes 1 loaf

Cheese gives this soft, peppery loaf a delicious salty tang. It is an ideal
accompaniment to a supper of soup, salad or charcuterie.
50g fresh yeast
100ml lukewarm water
500g strong white our, plus
extra to dust
1 tsp freshly ground
black pepper
2 tsp salt
175g butter, chilled and cubed
3 eggs, lightly beaten
175g Vesterhavs or cheddar
cheese, coarsely grated

Crumble the yeast into the lukewarm water to dissolve,

then add 50g of the our, mix well and leave for 30 minutes.
In a separate bowl, mix the remaining our with the pepper
and salt. Rub the butter into the peppery our with your
ngertips until it resembles breadcrumbs.
Mix the eggs into the yeast mixture, then add to the our
and butter mixture with the cheese and stir to form a dough.
Knead lightly on a oured worksurface for 10-15 minutes.
Place in a bowl, cover with a tea towel and leave to rise in
a warm place for 2 hours.
On a oured worksurface, roll the dough into a fat sausage
shape, then form into a ring. Place on a baking tray lined with
baking parchment. Cover with a tea towel and leave to rise at
room temperature for about 1 hour, or until doubled in size,
depending on the temperature of the kitchen.
Pre-heat the oven to 200C, gas mark 6. Spray cold water
into the oven to create steam. Bake the bread for 35-40
minutes, then transfer to a wire rack and leave to cool.

WHOLEMEAL STARTER
All sourdough needs a live starter to make it rise and develop its distinctive avour.
When fed, it will continuously expand, and can be used for years.
150g strong white our, plus more to feed
100g strong wholemeal our, plus more to feed

Mix the ours in a large bowl. Gradually add

the water, mixing until it is the consistency of


pancake batter. Every day, discard 80 per cent
of the mixture, then add water and more of

both ours to make up the difference (no need


to be exact) and mix well. Feed as above for ve
to 10 days until the mixture comes to life: when
it is bubbly and has a sour smell, it is ready to use.
To keep the mixture going, continue to feed
daily, as above. If you forget for four or ve days,
carry on as though there had been no gap.

SOURDOUGH BREAD
Makes 1 loaf

The rst time you make sourdough,


youll need to begin the starter a
few days ahead. This excellent basic
recipe uses mostly wheat our, but
you can try adding spelt or einkorn
our to create your own version.
Day 1
150ml lukewarm water
100ml wholemeal starter (see recipe, left)
100g stoneground rye our
100g strong white our

Day 2
150ml lukewarm water
350g strong white our, plus extra to dust
2 tsp salt
Coarse polenta, to dust
Day 1 Mix the water and the starter in

a bowl, then stir in both ours until you


have a smooth, very runny dough. Cover
tightly with cling lm and leave overnight
on the kitchen table.
Day 2 Put the starter mixture in a large
bowl, add the water and mix well. Add the
our and salt and mix to form a dough.
Knead on a lightly oured surface for
10-15 minutes; it will be sticky, so using
a dough scraper will help. Alternatively,
knead for 10 minutes in a food mixer tted
with a dough hook. Transfer the dough to
a large bowl, cover tightly with cling lm
and leave to rise at room temperature for
6 hours, or until doubled in size.
Tip the dough out on to a lightly oured
worksurface, knead lightly and fold into a
round loaf. Leave in a well-oured 21cm
proving basket, or similar-sized colander
or bowl lined with a well-oured tea towel,
in a warm place for 1-2 hours, until
doubled in size.
When ready to bake, pre-heat the oven
to 240C, gas mark 8, or to its hottest
setting. Place a baking stone or a sturdy,
heavy-based baking sheet lined with
baking parchment in the oven. Dust a at
baking sheet with the coarse polenta and
tip the loaf out on to it, so the pattern of
the basket is visible on top. Slash the
surface of the bread using a sharp knife.
Place the bread on the baking stone
or lined baking sheet, sliding it off the
dusted baking sheet with a jerking motion.
Spray cold water into the oven to create
steam. Bake the bread for 10 minutes,
then reduce the temperature to 200C,
gas mark 6 and bake for 20-25 minutes.
Leave the loaf on a wire rack to cool.

RYE ROLLS
Makes 20

Include these stoneground rye rolls in your next baking session. They are so easy to make
and, lled with sliced cold meats or cheese and salad, will become a lunchtime favourite.
50g fresh yeast
700ml lukewarm water
2 tbsp barley malt syrup
400g stoneground rye our
500g strong white our,
plus extra to dust
1 tsp salt
Cold coffee, to glaze
Rye akes, to sprinkle

Crumble the yeast into the lukewarm water, stir to dissolve

then add the barley malt syrup. Mix the two ours and the
salt into the yeast mixture and stir to form a smooth dough.
Knead the dough on a oured worksurface for 10-15 minutes.
Return to the bowl, cover with a tea towel and leave to rise
at room temperature for 2 hours.
Shape the dough into 20 small oval rolls and place on
baking trays lined with baking parchment. Cover with a
tea towel and leave to rise in a warm place for 30 minutes.
Pre-heat the oven to 200C, gas mark 6.
Slash the tops of the rolls with a sharp knife, then brush
with cold coffee and sprinkle with rye akes. Spray cold
water into the oven to create steam, then bake the rolls for
30 minutes. Transfer to a wire rack and leave to cool.

Makes 1 loaf

Try this wonderfully textured loaf toasted with hummus or serve with
Nkkelost, a hard cheese avoured with cumin and cloves.
10g fresh yeast
700ml cold water
1 tbsp clear honey
150g oats
500g stoneground strong
wholemeal our
1 tsp salt
Flavourless oil, to
grease the tin

oats, our and salt and mix well with a wooden spoon; the
dough will be very wet. Oil a 3-litre loaf tin. Pour in the dough,
cover with cling lm and leave to rise at room temperature
until it has doubled in size; this will take 3-4 hours, depending
on the temperature of the kitchen.
Pre-heat the oven to 200C, gas mark 6. Spray cold water
into the oven to create steam. Bake the bread for 40 minutes,
then turn out on to a wire rack and leave to cool.

sensitively restored by designer Ilaria Miani
to create a perfect harmony of old and new.
Ancient beams, arches and stairways
provide the backdrop for the finest linens,
fabrics and furniture, designed and produced
by local artisans. All of the rooms exude
rustic sophistication, with open fireplaces,

large private gardens, 18th-century copper


baths and waterfall showers stocked with
heavenly organic La Saponaria toiletries. The
whole experience is a tonic for the senses.
Once your equilibrium has been restored,
theres plenty to see and do. Wander along
the villages picturesque cobblestone streets,
home to a fine dining restaurant, wine bar,
contemporary art gallery, church and even
an Etruscan dig. Or choose from one of the
hotels cooking classes or farm and wine tours
to learn more about the fascinating culinary
and social history of the area. However you
spend your time in this magical location,
youll return enlightened and enriched.

Hotel Monteverdi has three buildings, with


four rooms and six suites, from 450 per night.
Dine in the Oreade restaurant, where
chef Giancarla Bodonis dishes are made
from fresh, seasonal Tuscan ingredients.

take place in spring (2 to 6 April) and
autumn (26 to 30 October).
