Recipe of the Month

Chocolate Chess Tarts
From Janet Fisher at the Gourmet Club
Directions

Ingredients
1 (5 oz.) can evaporated milk
2 (1 oz.) squares semi-sweet chocolate
1/4 stick butter
2 eggs
1 1/4 cups sugar
1 tsp vanilla extract
12 unbaked (3 inch) tart shells

Preheat oven to 350 F.

Combine milk, chocolate and butter in a small saucepan over low heat. Stir frequently until the chocolate
and butter are completely melted. Cool slightly.
Combine eggs and sugar in a mixing bowl. Add the
chocolate mixture and vanilla, stirring until well
blended.
Place the tart shells on a baking sheet. Pour the mixture into the tart shells. Bake for 40 minutes, or until
the filling sets.
Cool on a wire rack.

Chantilly Cream
Ingredients

2/3 cup heavy cream (whipping

cream)
1 tsp. each of vanilla extract,
brandy and Grand Marnier Orange liqueur
1/4 cup sugar
2 Tbs. sour cream

Directions
Refrigerate a medium sized bowl and beaters until very
cold.
Combine cream, vanilla, brandy and Grand Marnier in
the bowl and beat with an electric mixer on medium
speed for one minute.
Add sugar and sour cream and beat on medium just until
soft peaks form, about 3 minutes. Do not over beat.
NOTE: Over beating will make the cream grainy, which
is the first step leading to butter. Once grainy, you cannot return the cream to its former consistency. If this ever happens, enjoy it on toast!
