About Sturgeon Caviar


In France, laws state that only processed roe of Sturgeon fish can be called caviar. Thats why true caviar comes only from the
icy waters of the Caspian Sea in Iran, Russia, Azerbaijan and Kazakhstan where the environment is most suitable for the finest
Sturgeon fish to live. Sturgeon fish have been existent for millennia, when these species first appeared, dinosaurs where still
roaming the earth. There are almost twenty different types of Sturgeon, six of them live in the Caspian Sea, and only three
Sturgeon species produce the worlds most prized caviar: Beluga, Osetra, and Sevruga.

Beluga is the worlds most precious


and rare caviar coming from the
Beluga Sturgeon fish. Its often
referred to as Royal Caviar. The
eggs are large, grey in colour, and
silky in texture. It has a mild sweet
flavour of delicate hazelnut. A true
delight when served with blinis and
crme frache.

Osetra caviar is a highly prized


caviar coming form the Osetra
Sturgeon fish. The eggs are medium
in size and brownish grey in colour.
Osetra caviar has a firm texture
and a nutty, slightly fruity flavour.
Best served chilled, straight from
the tin as a true purest would agree.

Sevruga caviar is harvested from


the Sevruga Sturgeon fish. Famous
for being the smallest in size of all
Sturgeon eggs, its small pearls are
shimmering black and fir m.
Sevruga caviar has a buttery salty
flavour. Makes perfect event hors
d'oeuvres when served on blinis
with a dollop of crme frache.

Appellation D'Origine Controlee (A.O.C.):


Is the French Law for the Protection of the Place of Origin of a certain product. The origins of A.O.C.
date back to the 15th century, when Roquefort cheese was regulated by a parliamentary decree. All A.O.C.
products will hold to a rigorous set of clearly defined standards. A.O.C. products will be produced in a
consistent and traditional manner with ingredients from specifically classified producers in designated
geographical areas. The products must further be aged at least partially in the respective designated area.
Under French law, it is illegal to manufacture and sell a product under one of the A.O.C. controlled
geographical indications if it does not comply with these criteria. A.O.C. products can be identified by a
seal, which is printed on the label or, in the case of cheeses, on the rind.

from half goat and half cow's milk

milk producers in Margeride. This

Morbier is a semi-soft cows milk


cheese immediately recognizable
by the black layer of tasteless ash
separating it horizontally in the
middle. It has a rind that is
yellowish, moist, and leathery. This
French cheese is uncooked and
pressed and allowed to mature for
two months. Morbier has a nutty
flavour and a creamy texture.

This cheese is made from unpasteurized cows milk in the town


of Meaux, near Paris. It has an
appealing combination of flavours
including hazelnut, fruit and herbs.

Camembert Le Bocage is one of


France's elite cheeses. It is made
from un-pasteurized raw milk.
When fresh, it is quite crumbly and
relatively hard, but ripens and

flavoured as it ages. Camembert

also eaten uncooked on bread.

In 1845, Antoine Roussel, used a


needle to make holes in cheese
curd. The result was a delicious
cheese with blue mould with a
strong, spicy, nutty cow's milk taste.
Bleu dAuvergne is a fabulous
French cheese perfect in salad
dressings and combines well with
nuts and raw mushrooms. Perfect

The village of Chavignol came to


fame thanks to this goat's cheese.
The flavour of this delicious French
cheese is slightly nutty. If ripened,
the dough becomes crumbly and

Buchette de Chvre 180g

Its said that Valenay was once the


shape of a pyramid. Legend says
that Napoleon stopped at Valenay
after his defeat in Egypt, took his
sword and chopped off the point
of the cheese. This cheese is
pollinated with plant coal during
the production and therefore retains
its soft and nutty flavour for a long
time period.

Chvre Pechegos is a French unpasteurized goats' milk cheese from


the Pyrenees. The rind is washed,
with a brine mixture, and the cheese
is encircled with a band of spruce
wood. This gives flavour and keeps
the soft cheese in place. This cheese
is so moist and creamy that its
perfectly eaten alone with a spoon
when mature.

This wonderful goat's milk cheese


from Poitou in the Loire Valley,
France comes in a handcrafted
wooden crate. Buchette de Chvre
is aged for two months, during
which time it develops a hard,
edible crust complete with a
bloomy white mold coating. It is
sharp and tangy near the rind and
gets progressively richer and
creamier towards the center.

An ancient cheese first made by


monks in the 7th century. The paste
is buttery-yellow, very rich and
creamy and the rind is an orangered colour. The flavour is spicy and
tangy and it has a lively aroma.
Munster is often eaten with
potatoes boiled in their skins or as
a spread with caraway.

This is a raw milk cheese that comes


from the Rhone-Alpes area of
France. The taste is creamy and
soft. The rind, pt and flavour of
this cheese are supple, as a soft
curd is used in the production
method. The pt is uncooked and
unpressed and the rind has a natural
yellow mould.

Saint Marcellin was once made


from goats milk but it is now made
exclusively from cow's milk. It has
a light, subtle acidic taste and gives
off a vegetable and nutty aroma.
The cheese has a soft pt and
should be eaten in a creamy state.
Best served with green salad or
warm walnut bread.

This cheese appears as a disk with


a central hole. Its made in the area
of Tarn. Rouelle is made from raw
goat's milk. Its natural rind is coated
with charcoal powder and covered
with grey moulds. Inside is a
homogeneous white, tender pt
with a pleasant savour of hazelnut
and a beautiful acidity to the palate.

Bleu de Gex is produced exclusively


with milk from Montheliard cows.
This French cheese is dense and
creamy with a pale ivory colour and
a marbling of dark greenish-blue
veins. It has quite a sharp, bitter
taste and a relatively mild, fruity
and nutty aroma. The rind is dry,
rough and has a light yellow colour.

The choice of goats cheese in the


Deux-Svres area is so vast that
cheese makers concentrate on
different maturing times to offer a
difference. The curd for Chevrot
is hand-ladled into moulds and
matured until the white crinkled
rind gives off a goaty aroma. Inside
the cheese is creamy and slightly
salty when young, fuller in flavour
when mature.

made of sheeps milk. Tomme de
brebis is a semi-firm, natural rind
cheese. The edible rind is mottled,
grey and brown with some white
mould, whilst the straw coloured
interior has a rich buttery flavour
and texture. Perfect for melting
over baby potatoes.

This French cheese is sold in small


individual units. The inside of the
cheese is typical of goats cheese,
rigid and heavy at first but moist
and softening as it melts in the
mouth. Its taste is slightly salty
with a persistent aftertaste. The
exterior is dry with a grey-blue

a musty odour.

Crme Frache is produced by a


process similar to that of sour
cream, with the exception that no
ingredients are added, resulting in
a less sour and thicker cream. Each

to produce and maintain its high
viscosity. The maturing process
gives this double cream a beautiful
