> Autumn is with us, with us again this
November. the clocks have been adjusted, the
days are getting shorter, but rest assured that our
hotel continues to work hard to ensure your stay
here is made all the more enjoyable with quality,
stylish programs.
roy, hallmark of our Sunday Brunches, welcomes
guests with themes typical for the time of year in
the Brasserie & Atrium restaurant.
the fruit of the autumn vintage has ripened, new
wines are now available, and they provide the
perfect accompaniment to our goose feast on St.
martins day. le Bar refuses to be excluded from
the fun, so it is preparing for the celebration with
a really special trio. After this, lovers of game,
mushrooms and forest fruits can sample dishes of
the season and get to know more about the
secrets and excitement of the hunt. the beverages
offer includes hungarian specialties such as
hubertus and Unicum, which have a heartwarming effect on damp autumnal days. then,
theres the chance to practice throwing for the
bulls eye in a darts competition. towards the
middle of the month the focus is on an overseas
festival, thanksgiving, coming in the wake of the
traditional autumn harvests. the final Sunday in
the month is the first Sunday in Advent, when we
hold a Christmas tree lighting Brunch.
once again, this months edition includes an
interview with another of our long-serving staff
members, one many of you may already have met
since Kriszta from Guest relations spends her
entire day among our guests.
Pter from our kitchen shares another excellent
recipe characteristic for the season, and Executive
Pastry Chef Attila makes sure there is the perfect
dessert to accompany it.
they are extremely visionary in royal Spa because,
in tune with the festive season, they have a
special Espa gift package that would make the
perfect surprise for a loved one at Christmas.
As usual, the royal Spa takes care of our
spiritual and physical wellbeing this autumn.

the award-winning Corinthia hotel Budapest, one of the most famous and
renowned 5 star luxury hotels in the city has announced an extensive
refurbishment, which features a complete remodeling and transformation of
its suites by the end of february 2015.
these luxury suites will be the newest in Budapest and will offer a remarkable
combination of up-to-date, fresh, spacious and elegant interiors. from the
new lighting touches to the harmonic mix of materials and furniture, the
reborn suites will evoke a decidedly home away from home feel for
sophisticated clientele. the scope of the renovation includes vast living areas,
ultimate comfort and advanced technology, architectural finishes and fixtures,
as well as custom designed furniture items. these suites will receive an
extensive make-over with the introduction of new timber floors, mirror walls,
contemporary design combined with natural and trendy light colors,

the new suites will include complimentary access to the fabulous royal Spa

television room and a selection of snacks and canaps served fresh daily.
the overall feel of these suites will be one of 21st century elegance combined

> After its opening, the royal became a popular,
regular haunt of contemporary hungarian writers and
journalists, including Jen heltay, Sndor hunyadi, lajos
Nagy, and Gyula Krdy. the royal soon became a
favorite topic of journalists. the first screening in
Budapest of a motion picture by the lumire brothers
also took place at the hotel and later became highly
successful as a regular exhibition. in 1909, the first
hungarian airplane was exhibited at the hotels cour
dhonneur. Several classical concerts were held in
royals Ballroom, and Bla Bartk, the world famous
hungarian composer, frequently conducted music
there. from the very beginning this magnificent room
hosted a number of elegant balls. With the growing
popularity of the motion picture, the Ballroom ceased
to exist as a part of the hotel when it was
reconstructed as the royal Apollo cinema and after the
Second World War it reopened its doors as the red
Star cinema with its entrance on hrsfa Street in 1959.
Actually the operation of this cinema even survived the
operation of the old royal, which was closed in 1991.
After years of decline, the Ballrooms legend was
reborn in 2002 when the whole property was
reconstructed and even this room was restored to its
original state. it was laid with italian limestone and
Spanish marble, framed by the expertise of hungarian
craftsmen: their fabulous plaster work puts the final
touch on the hotel and their gilded scrolls elevate the
beauty of the Grand Ballroom. from the Second World
(because he overslept!

> this Sunday is devoted to all things to do with hunting
and game. We have a stuffed bear, rabbits and trophies on
display while the waiters are dressed in gamekeepers
uniforms. Naturally, the mouth-watering selection of
foods on offer concentrates on game dishes and forest
mushrooms, neatly complemented by hubertus, Unicum
and mulled wine as aperitifs. for adults there is a darts
competition, and the kids can learn how to make bows!

150 g ground nuts | 226 g sugar
A little milk | 150 g sweet butter
Vanilla or almond flavoring
Cook milk with vanilla or almond
flavoring, on low flame, stirring so as
not to burn. When cold add 150 g
sweet butter and mix well. fill and
roll dough. Cover with powdered
sugar or melted chocolate.

> the ancient feast of St martins day is associated
with all things having to do with geese. in
celebration, le Bar is offering something really
irresistible: the royal trio goose selection, which
includes traditional home-made goose crackling,
foie gras and goose rilettes Cromesquis style served
with crostini. our sommelier has discovered the
perfect accompaniment to this rich selection in the
Vylyan red Bogyl (which neatly translates as
Berry Juice).

SAUCE
1 teaspoon beef base |
2 teaspoons arrowroot
| reserved marinade
PrEPArAtioN:
Preheat the oven to 180C, trim all the silver skin from the loin, in a container add all
the marinade ingredients and the venison. marinate the meat for at least 12 hours.
remove the loin from the marinade and pat dry (reserve the marinade). mix the
rub ingredients together, and spread evenly over the loin, covering all parts.
heat oil and butter in a heavy pan over medium high heat. Sear the loin on
each side, approximately 2 minutes each side, until a nice crust is formed.
Place the pan and tenderloin in the oven and roast about 15 to 20 minutes
for medium (cook longer if you like your meat more well done).
remove the loin to a plate and let rest. Place the pan on a burner set for a
medium heat. Add the marinade to the pan let the sauce simmer until it is
reduced by half. Add the beef base. mix the arrowroot with a little bit of
water, enough to make a slurry. Whisk in the arrowroot slurry until well
blended. Bring to a boil, boil for 1 minute whisking frequently, then reduce
heat and continue to cook until desired consistency is achieved. Strain the
sauce through a fine mesh sieve.
Serve the venison with pressed truffle & potato terrine, chestnut cream
and shimeji mushroom jus.

held on November 21-24at
the hungexpo. Competitors
come from all over the
world to show off their
jumps from a ten-story high
ramp, covered with 200 tons
of snow made just for the
event. the competition kicks
off with the snowboarders
on friday, followed by the
freestyle skiers on Saturday.
the fridge festival features
a mix of electronic music
with various bands from
Europe and the US
performing on two stages
during the event. ice-skating,
skating lessons, hockey
matches, a winter market
with mulled wine and
plinka are all part of the
fridge festivities.

december 5 commemorates the annual
hanukkah celebrations of
light and miracles in
Budapest's former Jewish
Quarter. festivities include
flash mobs, candle lighting,
live music, theater
performances, film
screenings, culinary events
and guided walking tours.
Visitors can learn about
Jewish culture and its
heritage in downtown
Budapest at over 18 cultural
venues, restaurants, clubs
and ruin pubs participating
in the festival.
the exhibition is built around rembrandt, the greatest master of the period, by whom 20
masterpieces will be on display. the exhibition will showcase over 170 works by some 100
painters, of which 40 originate from the museum of fine Arts rich dutch collection and 130
paintings will be contributed by private and public collections, with the most important loaning
institutions including the rijksmuseum in Amsterdam, the National museum in Stockholm, the
louvre in Paris, the National Gallery in london, the Getty museum in los Angeles, the
metropolitan in New york, the Uffizi in florence and the Prado in madrid. A further sensation
of the exhibition is that in addition to the significant number of works by rembrandt
including the painting known as his earliest and his last self-portrait visitors can also view
three works by Vermeer.
> WAmP the design fair November 9-30 at millenris Park
its a community event taking place once or more than once a month
in the hub of Budapest where emerging hungarian designers showcase
their works. A place where design meets urban hungarians, tourists
and ex pats. it is also a meeting place for creative and trend setter
young people. WAmP opens up to the world once a year, and invites
the greatest talents and design professionals from around the globe
to showcase their work and talent in Budapest.
WAmP+ offers the opportunity for designers whose work is of exceptionally high quality
(altogether 16 designers in one season) to participate as ViP exhibitors in the fair.
