Abstract
Zalacca (Salacca zalacca) is one of horticulture product which grows up in several tropical areas, for instance
Indonesia, Malaysia, Philippines, and Papua New Guinea. In Indonesia, zalacca which has a lot of betacaroten
become a superior commodity of national agriculture product. According to Statistics Indonesia, in 2010
Indonesia successfully produced up to 749,876 tons of zalacca. This value was included on the top five of
national fruit product, beside banana, orange, pineapple, and mango. However, zalaccas massive product
value was not balanced with its diversification effort. Until this day, the diversification effort of zalacca is still
low. In fact, 92% of zalacca farmers in Central Java and Yogyakarta (Indonesia) only sell their zalacca in
fresh condition, without any preparation processes. Whereas this sweet fruit will conducive to good profit for
the farmers, if there is any preparation processes. Moreover, zalacca has short time saving in standard room
temperature. The aim of this research is to formulate zalacca into sheet jam with various tastes as a food
diversification effort and also could increase its price. By increasing its price, the farmers prosperity will be
lifted up well. Zalacca sheet jam with various tastes is not only focused on increasing its price and improving
its variation of product, but also could fulfill daily needs of modern people. Nowadays, people need simple
and fast foods which have some variations, and also have complete nutrients. The making of zalacca sheet
jam with various tastes is simple, like the making of usual jam. The difference, it needs gel-maker and lasing
substance, which can be gained from seaweed extract. This innovation will increase the potential of zalacca
national product all at once fulfill modern peoples daily needs.
