Eggless Cake

INGREDIENTS:
1. Maida- 2 cups
2. Baking powder- 2 tspns
3. Baking soda- tspn (if making a large cake substitute soda with tspn ENO OR tspn
soda and tspn citric acid)
4. Butter- cup
5. Milk powder- 1 cup
6. Milk- 1 cup
7. Sugar (powdered) - 1 cup
8. Essence- 2 tspns.
9. cup of either milk or water to bring batter to the right consistency.
Note: Ingredients 5,6&7 may be substituted with 1 can of condensed milk.
METHOD:
1. Sift together the first three ingredients 3 times.
2. Beat butter and sugar together; add milk powder and milk and beat well.
3. Add sifted mixture in small portions beating well after each addition.
4. Once all the dry ingredients are incorporated, add the essence and beat again for about 2-
3 mins. Pour into prepared tin.
5. Preheat oven to about 400 deg. F, insert the cake into the oven and monitor for about 15
mins (till the cake begins to rise); reduce oven temperature to 350 deg. F and let the cake
bake till done (approx. 30-40 mins.)
6. Remove from oven and cool on rack.


Ingredients
1. Dates 1 Cup
2. Raisins 1 Cup
3. Water 1 Cup
4. Nuts (Pecan nut, Walnut, Cashew nut, Almonds or any combination of these nuts) 1 Cup
5. Sugar 1 Cup
6. Butter Cup
7. Plain Flour 11/2 Cups
8. Baking Powder 11/2 Tsp
9. Baking Soda - Tsp
10. Salt Tsp
11. Eggs 2
12. Nutmeg tsp

Note: All ingredients must be at room temperature.

Preparation
1. Pre-heat oven at 170 degrees for 15 minutes.
2. Chop the dates and microwave high with cup water for 2 minutes. Let cool.
3. Re-hydrate the raisins by soaking in cup boiling water. Let cool.
4. Chop the nuts and keep aside.
5. Sieve dry ingredients - plain flour, salt, baking soda and baking powder. Grate the nutmeg
and add to the dry ingredients.
6. Line a 7 inch pan with parchment paper and butter the sides.

Method
1. Beat butter until smooth.
2. Add sugar to the butter and cream well for 2 minutes.
3. Break one egg at a time, directly in to this mixture. Stop beating once incorporated.
4. Add in the cooled dates to this batter. Start using spatula to incorporate the dates.
5. Slowly fold in 1/3rd of the dry ingredients and 1/3rd of the re-hydrated raisins (with the
water), alternating with dry and then wet ingredients.
6. Finally add the chopped nuts.
7. Pour batter into the prepared pan.
8. Reduce oven temperature to 160 degrees and bake for 45 minutes or until a skewer comes out
clean.
9. Cool on rack; serve with hot dates sauce and cold Ice cream.

Dates Sauce

Ingredients
1. Dates 100 gms
2. Water 1 Cup, extra cup if required.
3. Brown Sugar 100 gms
4. Butter 50 gms
5. Full fat Cream 50 ml
6. Golden Syrup 2 tsp (Can be avoided)

Method
1. Chop the dates, add cup water and microwave for 2 minutes. Let cool.
2. Blend the dates to a very smooth mixture.
3. In a sauce pan, heat butter and brown sugar until bubbles form. Add the golden syrup and mix
well.
4. Add the pured dates and remaining cup water to the sugar & butter mixture.
5. Let boil for 6 to 8 minutes until the sauce thickens. It should be in a pourable consistency.
Add more water if sauce is too thick.
6. Switch off stove and add the cream. Mix well.
7. Serve hot.
