which it comes about. Each wines fermentation may be its own little
ship at sea, if you will, but the winemaker is the admiral of them all,
pulling together a range of varieties through subtle tweaks. The
vessel used adds to this as larger tanks make it logistically easier in
some ways as there is less to get lost or done wrong than when
working with dozens of small tanks or bins, yet the potential for heat
issues can be greater because of the size of the columnar liquid
masses; its not easy to get 10,000 gallons up to temp, and its not easy
to stop it once its going, for example.
Equally, the method employed to cause agitation, punchdown or
pumpover, as well as the number of times done daily, has an impact.
Think of your personal style of letting a teabag steep (or not you
know who you are) and you have an analogous situation as agitation
causes more mixing of liquids and solids in the fermenting must.
Even when done, there are stylistic choices: post-fermentation
contact with the gross lees or separation into barrels, casks or tanks
before fermentation is even fully done?
Intensity, of course, leads to discussions of alcohol and sugar.
Residual sugar is actually something which is easy to control if the
winemaking is detail-oriented. Fermentation is never the same twice,
but each and every one can and must be tracked for temperature,
yeast health, amounts and kinds of nutrients, Brix and alcohol, and
other leading indicators of how well and how fast the conversion of
sugars to alcohols and malic to lactic acid, if applicable, is happening.
Arresting the fermentation, pulling the emergency break, if you will,
is generally done through shutting down the temperature and adding
enough sulfites to knock out the yeast. Its more of a coast than a
dead stop, however, with attention to the numbers and experience
being the producers of desired results. This is obviously aided or
held back by the starting Brix levels, as noted above.
I like to think of fine winemaking as very much akin to fine
cooking and baking, so its no wonder the two go hand in hand in
wine country. We strive through our winegrowing, like the chef who
grows and raises her own flora and flauna, to produce fantastic
ingredients for which we have recipes developed through
education, time in others cellars and experience. The next time you
sip a red, think about what decisions were or were not made, and
consider, too, what you would have done the same or differently had
the recipe been yours to tweak. Enjoy!

Forging New Paths on the Cabernet Sauvignon Trail

Situated in the heart of Napa Valley on the Silverado Trail, ZD Wines falls among a
small handful of Napa Valley wineries that are still family-owned and operated. Today,

The literal definition of solera is a base, or a foundation of support. In winemaking
terms, the idea behind ZDs solera-style Cabernet Sauvignon is to produce a blend that
includes fruit from every reserve vintage, the first of which was 1992. This method
showcases how the complexity and elegance of award-winning, aged Cabernets can
support the intense, beautiful fruit of younger vintages.
Since the first Abacus bottling was released in 1999, the momentum behind its
exposure has grown by leaps and bounds. In fact, at the eighteenth annual Premiere
Napa Valley trade auction this year, ZD Wines Petit Abacus tied for the second-highest
bid as a five-case lot, selling for $100,000. ZD winemakers Chris Pisani and Brandon
deLeuze handcrafted the special lot by tapping into the Abacus solera of 100% Cabernet
Sauvignon including vintages 1992-2012 and blending in a 7% addition of Petit
Verdot. This years auction hosted by the Napa Valley Vintners raised a record-breaking
sum of almost $6 million.
On the verge of releasing their sixteenth bottling of Abacus, ZDs ability to seamlessly
blend past and current vintages of reserve Cabernet Sauvignon is markedly apparent.
Abacus XVI features 22 consecutive vintages of reserve fruit, from 1992-2013. With
only 200 cases produced, this wine is a testament to what Napa Valley is best known
for: premier Cabernet Sauvignon. But its a rare privilege to encounter ZD Wines

Although the video of the earthquake posted by the Napa Valley Wine Train via
social media may suggest otherwise, it only took a couple of days to get things
back on track.

Fortunately, Domaine Carneros, located very near the epicenter of the August
20 quake, had very little damage.
has a beautiful mountain meadow garden and we are now doing our
wine tastings out in the open air. Our guests love it! As well, our
museum is open for visitors to enjoy the amazing art of the Hess
Collection. Thankfully there was little or no damage to our collection.
People can expect the same fabulous combination of world-class wine
and art that weve always offered.
It only took a couple of days to get the famous Napa Valley Wine
Train back on track, so to speak. With very minimal damage to deal
with, the Wine Train had only to do a quick check of their rails to
discover that all was good. A short power outage kept them closed for
just one day. The Wine Train is busy gearing up for their 25th
Anniversary Celebration this year. Check out their FaceBook page for
some great contests and freebies. As Andrea Guzman, promotion and
partnership manager for the Wine Train says, We are rolling! We are
looking forward to a very busy harvest season and some wonderful
holiday experiences for our passengers. Both the Wine Trains
Vintners Lunches and Vintners Dinners have been a huge draw with
such noted winemakers and principals as Tom Rinaldi of Provenance
Vineyards, Jean-Charles Boisset of Raymond Vineyards and Violet
Grgich of Grgich Hills Estates pairing their wines with the marvelous
creations of executive chef Kelly Macdonald.
City Winery in downtown Napa is also ready to offer great food,
wine and entertainment to visitors. Chris Denatale, the marketing
director for the venue is breathing a big sigh of relief these days. We
are happy to report that we only had minor repairs to do and were
open for business!
While there are a few more repairs to be completed, the wine
country is still one of the most marvelous and picturesque vacation
destinations in the country. If anything, the shaker reminded us that
anytime is the right time to enjoy that favorite bottle of wine!

reservations well in advance. A recent dinner menu (enjoyed by the author) included
Italian bruschetta paired with Pinot Grigio, Caesar salad with croutons and shaved
parmesan cheese paired with Chardonnay. The main course of Bistecca steak with
fingerling potatoes, onions and carrots paired with a luscious Syrah and finished with
tiramisu for dessert. The price is $85 per person and is limited to 14 people.

The tasting lounge is the perfect place to exude, founder and winemaker,
James MacPhails passion for producing small-batch varietals. A friendly staff
takes wine lovers through the nuances of a good Pinot and Chardonnay, offering
an array of seated tastings in a unique urban setting, open, spacious and cool.
While youre here, enjoy the perfect match of MacPhail wines with seasonal
pairings with local artisan farmers, cheesemongers and West County restaurants.
MacPhails signature artwork graces the entry a 40-foot sculpture of welded
red wagons designed by Napa artist Richard Von Saal as his interpretation of
MacPhail wine being poured from a bottle. Von Saal designed the Tasting
Lounge using only recycled, repurposed and reclaimed materials, with the soil
walls, showing soil pits from four distinct vineyards as another highlight.
In the mid-1990s, James gained his years of experience working closely with
wineries and growers in Sonoma County, focusing on the craft of winemaking
and Pinot Noir in particular. In 2002, after years of working with California
Pinot Noir experts Mary Edwards and Gary Farrell, James was well equipped to

Our idea is that great fruit makes fine wine and we want that fact
to show through. To that end, we use oak subtly, keep the alcohols at
moderate levels and blend carefully, among other techniques. We let
the grape shine, which results in wonderful wines of true varietal
characteristics.
When visiting be sure to sample Judds red wine blend of
Cabernet, Merlot and Syrah called Magic. Magic was originally
crafted as a reasonably priced house wine for Hollywoods fabled
Magic Castle. As an enthusiast of the magical arts, Judd became a
member of the Magic Castle over ten years ago. The affordable Napa
red wine blend that he created was an instant hit with his fellow
members and their guests, and became a staple of the Castles wine
program. Magic is available in limited quantities at winery and
available only by the case.
A visit to Judds Hill is a delight with its beautiful setting, warm,
friendly and knowledgeable staff, amazing wines, and if booked in
advance, take part in the Bottle Blending Day Camp is held daily by
advance appointment. Here guests craft their own cuvee using
Bordeaux varietal barrel samples and are led by a Judds Hill wine
educator who guides them toward their final blend, which is then
bottled, corked and labeled. It is a fun and hands-on way to
experience wine country, perfect for couples and groups of all sizes.

J Vineyards & Winery is proof dreams can be made into bubbly reality. In 1986,
Judy Jordan sought out Sonomas Russian River Valley for its essential attributes of
cool-climate grapegrowing and a great diversity of soils. These both lend themselves to
sparkling wine production and as she would discover after a few years of working
with the land still or varietal wines full vibrancy and site-specific sense of place.
1994 marked the year her first single-vineyard Pinot Noir, named for her child Nicole
was released. Today, she oversees more than two hundred acres of nine, sustainablyfarmed vineyards throughout the valley.
As a result, the winery makes an astounding range of wines. In addition to the
signature J Vintage Brut and J Late-Disgorged Vintage Brut, there are nine Pinot Noirs,
three Pinot Gris, five other sparkling wines, and, as they like to have some fun with a
few other, lesser-known but delicious grapes and wine styles, bottlings of Pinot
Meunier, Pinotage, Viognier, and a dry ros Vin Gris. Last but not least, there is the
J Pear Liqueur, a twice-distilled eau-de-vie de poire made from Mendocino Bartlett pear
juice infused with rain water and liquid sugar, and the Ratafia Dessert Wine, crafted by
adding small amounts of Brandy to an unfermented blend of Chardonnay, Pinot Gris,
and Pinot Noir juices and then aged an average of six months in oak barrels.
Its the range of experiences the winery offers to accompany these wines which
makes it Tasting Room of the Week, and the place to taste these releases is the J Visitor
Center, located just south of Healdsburg. Opened in 1999, Judy Jordan wanted a place
where guests could fully experience elegant wine and food pairings, the first program

The recent shows were a grand way of kicking off the new
Hobergs, but its whats being celebrated thats important.
Something special is happening in Lake County the reemergence of Hobergs Spa & Resort as a destination resort. Lake
County Partners are determined to make the place not only a great
place to visit and enjoy the outdoors for recreation as well as the
indoor spa, but to do so in an environmentally impeccable way.
Theyve already opened 14 spiffy new rooms on the premises,
so folks coming for the music can stay among the pines. This is
only the beginning, of course.
Speaking for the developers, Producer Dan Nelson said, Two
aspects of Hobergs Spa & Resort really attracted us to this work.
One was the opportunity to refurbish and revitalize an old jewel.
Hobergs is an essential part of the history of Lake County, and
returning it to its previous eminence is exciting. Itll be an ongoing
process and will take a while, but Im confident well get there.
Secondly, we know that our project will have a very positive
economic impact on Lake County. Were seeking employees in a
wide range of occupations, from construction (carpenters,
plumbers, electricians, landscaping) to the Spa (massage and spa
therapist, esthetician, receptionist), the Deli (cashier and cook), the
wine room and housekeeping. And thats just the full-timers. Well
be needing lots of folks for our special events and concerts
cooks, concession booths, servers, security, stage hands, car
parkers, box office and lots more. We know theres plenty of
interest we had 200 attend our job fair in July and itll be
ongoing. Applicants should stop by the resort or send a resume to
our HR manager, Margaret Mathison, at

Theres music once again among the pines on Cobb Mountain,
and thats a good thing for Lake County.
Tickets for Saturday are $20 advance ($25 at the door); tickets
for Sunday are$29 advance ($35 at the door); two-day passes are
