NATURAL BEAUTY
My heart skipped a beat when I came across
the story Cabin in the Woods on page 128
of the December 2013 issue. I absolutely love
the combination of the rustic outdoor look
with simple and modern elements. The mix of
wood, brick and natural textures really struck
a chord with me. Thanks Jean Longpr and
Nicola Marc for your presentation of this space.
JAN LAURIE, VIA EMAIL
PLEASANT SURPRISE
I bought a subscription to your magazine to
support a fundraiser at my daughters school.
I soon discovered my purchase wasnt just
a dutiful buy, but a wonderful treat for me! I
save the issues for Sunday mornings, get up
before the rest of my family, make a cup of
tea and enjoy every page of Style at Home.
Theres always a decorating idea to try
around the house or a craft to complete
with my daughter. Thank you!
TAMMY TOMLINSON, PITT MEADOWS, BC
CHRISTMAS COLOURS
I absolutely loved your December 2013 issue. It illus-
trates how we can decorate for Christmas without
using the same old red and green, and offers great
examples of creative colour schemes. Im always looking
for ways to spice up my home during the holiday season,
and this issue gave me so many fresh ideas. Thanks!
ALEYNE HARRIS, VIA EMAIL
EAT YOUR HEART OUT
All of the recipes in the December 2013
issue are making my mouth water. That dark
chocolate and cherry mocha pannacotta on
page 58? Hello, scrumptious! And the dinner-
ware in the story An Elegant Affair on page
77 is absolutely darling the pink and gold
setting is stunning. Keep up the great work!

What kind of
products people can
expect to nd at West
Elm Market?
West Elm Market ofers useful and
clever items that are very hard-working.
It has everything from cookware and pantry
essentials to laundry baskets and cleaning
supplies. In the Toronto store, we have a food
pantry with products from all over the
country, including Cocolico by Wendy
Boys Salted Butter Caramel Sauce
(its so good!) and dressings and
vinegars from Okanagan
Wineland Dressings.
What is the concept
behind West Elm Market?
We wanted to open an everyday
destination for all the things you
need for getting stuf done at home.
From cooking and entertaining to
laundry and gardening, West Elm
Market ofers practical but
beautifully designed products
for the more functional
needs of your home.
What are some
exciting collaborations
we can look forward to?
Universal Expert by British
designer Sebastian Conran is
comprised of versatile kitchen tools
that are useful and good-looking.
The functional designs in familiar,
unfussy materials are great to
use but also beautiful
enough to display.
What is one
kitchen essential that
you cant live without?
Im a rm believer that the
kitchen items that work the
hardest are the most essential,
so while copper pots may seem
like a luxury, I think theyre
one of the best investments
you can make.
Youve
opened coffee shops
in your North American
agship stores. Why did you
choose the coffee roasting company
La Colombe for this initiative?
Our heart is in the neighbourhood, so we
wanted to create a place that would provide not
only great cofee but also a community space
where locals could get to know one another
and attend classes. We chose La Colombe
because they share the same values as
us: They have a passion for building
community and for great
cofee, and so do we!

If you live in a condo or an older house, you know that
closet space is at a premium. Adding a closet or expanding
an existing one will help to increase the functionality and
value of your home. Or, if its a low-cost, exible solution
youre after, stand-alone wardrobes are always an option.

CLOSETS
A lot of people ask me if converting a small bedroom into a walk-in closet
is worth it. Its the simplest and most obvious solution to a lack of closet
space in a house, but before you commit to this type of reno, theres
something to consider rst. Does your home have four (or more) bed-
rooms? Te most appealing type of property to the majority of prospect-
ive buyers is a detached house with three bedrooms and two bathrooms.
Bringing your home down to two bedrooms eliminates a large portion of
the home-buying population, so any value you gain by adding the big
closet is erased. However, if you plan on staying in your home for the
next 20 years and this is a just for you renovation, go for it.
Youd be surprised where you can squeeze in
closet space. Consider, for instance, the OFTEN-
OVERLOOKED AREA UNDERNEATH YOUR
STAIRCASE. With a little ingenuity, you can really
gain some valuable extra storage. If its your bed-
room closet thats lacking, you may be able to get
away with WIDENING OR DEEPENING IT OR
EVEN BUILDING A NEW ONE BY EXPAND-
ING INTO AN ADJACENT ROOM. Just be sure
the other space is large enough to give up that
square footage without losing its functionality.

1 Remove the grates
and any griddles, as
well as the burner
heads and caps.
Using a non-abrasive
sponge, wash them
well with dish soap
and warm water. If
the dirt buildup is
particularly bad
(when was the last
time you cleaned
these things?), leave
them to soak for 20
to 30 minutes. (Do
not replace yet.)
2 To loosen the dirt
buildup from spills
and splatters on the
stovetop, cover the
spots with a cloth
dampened in hot
water for several
minutes. Using a
rubber scraper,
remove the debris.
With a dampened
sponge (not soaked
water can harm the
igniter), wipe the
whole stovetop.
Wipe dry using a
microbre cloth.
3 Rinse and thor-
oughly dry all the

For keeping splatters at bay, we love Tru-
deaus Flex pot clip ($9, trudeau.ca). Clip it
onto your pot or pan for an instant spoon rest.
It accommodates both regular cutlery and
larger cooking utensils and is a great alterna-

likely to be dirty or MIA in the dishwasher. P

long as we can remember, the brand selection surely has. Step
into the dairy, bread or even the juice aisle and youll be over-

between the high and low breakfast foods here, so it just goes
to show that you dont have to be wealthy to eat healthy.

INSIDE DESIGN
Suzanne
Kasler
Known for her timeless and elegant interiors,
Atlanta-based Suzanne Kasler approaches design
with an appreciation for tradition and a modern
spin. Here, the acclaimed designer shares her style,
her inspiration and a few of her favourite things.
PRODUCER JESSICA WAKS
What makes your style so timeless?
I work on the foundation of tradition,
nessing the architectural details of a
space rst and then going from there.
The key is to get the foundation right.
Describe your approach to design.
I always place a lot of importance on edit-
ing. I want a space to look decorated but
not overdecorated, so I always say, Edit as
much as you decorate. Im also known for
my use of colour. I like to create an archi-
tectural envelope where I paint the walls,
trim and ceiling the same colour. I use a lot
of neutrals and strategically bring in an
accent, but the way I use it sometimes
gives the impression that theres more
of it in the space than there actually is.
Whats your signature palette?
Oatmeal, ax and white classic
and timeless.
What are your favourite paint colours?
I love the Benjamin Moore whites (like
White Dove OC-17) and Glidden blues
(like Limoges Blue 30BG56/045)
theyre my go-to colours.

own Atlanta home.

I want a space to look
decorated but not overdecorated,
so I always say, Edit as
much as you decorate.
This Connecticut
powder room is as
girlie as it is glam.
Youve designed collections for
some great companies, from furn-
iture for Hickory Chair to lighting
for Visual Comfort & Co. to fabric
for Lee Jofa. Is there a particular
design that stands out for you?
Its interesting to me that the Alex-
andra chair has become such a
signature piece. I love its quatre-
foil design a popular element in
both fashion and architecture and
proportions. I named it after my
daughter. One of my favourite fab-
rics is the pattern I used on the
inside of my book cover: Atelier
Stripe, an upholstery-weight silk.
Many of your interiors include
beautiful artwork or groupings
of prints. Do you have a favourite
artist you like to use?
Dusty Grifth (dustygrifth.com) is
one of my favourites. I love his use
of colour and his encaustic pieces.
How do you like to use fabrics?
Im a fan of mixing textures often
in the same colour like casual linen
with beautiful velvet and silk. Linen
dresses down projects that feel more
dressed up. I love layering textures
just as much as I love using colour.
Is there a specic design aesthetic
that inspires you?
Almost everything from France
namely that modern sensibility
combined with some antique pieces.
But I gravitate toward traditional,
fancy and modern French style as
opposed to French country.
What is your strategy for
combining pieces?
Whats popular today is what I call
a random mix, which gives a real
sense of style and reects the person-
ality of the homeowners. Mixing high
and low is also huge really expen-
sive pieces paired with things that are
inexpensive but sentimental to you.
Where do you like to shop
for antiques?
1stdibs is a great resource. The site
allows you to shop all over the world.
Its very exciting, but theres nothing
quite like seeing things in person,
so I venture to all the little antiques
shops when I travel. Scott Antique
Market in Atlanta is one of note.

What are your no-fail
entertaining tips?
Get ready a day ahead so you
can enjoy the event. If possible,
arrange your own owers so they
stay true to your aesthetic. Infuse
subtle personal details, like ribbon
that coordinates with your theme
colours and using it to tie your nap-
kins and silverware together. Also,
ensure that your event isnt too
overdone you want it to feel spe-
cial, not leave an impression of it
being too much work to entertain.
Where do you typically nd
design inspiration?
I nd a lot of it when travelling
and shopping in any kind of retail
store. It doesnt have to be in Paris
or someplace exotic; I can be in-
spired when I go to New York or
Chicago. I go to shops in specic
neighbourhoods to see the person-
alities, as well as colour palettes
of the new season. Im always inu-
enced by what I see, especially in
some of the smaller boutiques
around the country.
On a trip to Milan, I was so taken
by the black and white artwork in
a concept store that I bought the
artists book. Its pages are made
to be torn out and framed, which
I did when I got home, and they
ended up making the cover of my
book! Everyone loves how graphic
the display is, but I think its also
very timeless. It shows how design-
ers can translate a piece of inspir-
ation so diferently.

THE PROBLEM
The 730-square-foot main
oor of this Toronto family
home previously had a
constrained layout, which
divided and closed off the
kitchen from the dining and

f
or most people, bathroom style is all about
the tubs, the taps and the tiles, but Vancou-
ver designer Andrea Johnson prefers to think
outside the big bath stores. Bathrooms can
often be so stark and utilitarian, she says.
Although they need to serve a purpose, I
love the idea of adding extra decorative ele-
ments to make them feel more beautiful than
functional, she says. So when it came time
to renovate her own master ensuite last
summer, Andreas inspiration went beyond
the clichd spa look. I wanted it to feel
like an extension of my bedroom, she says.
One of the key design elements that
takes the space from banal bathroom to
luxe retreat is the herringbone-patterned
oor. I love this tile because it looks a bit
like wood, says Andrea. As soon as I saw
it, I knew I wanted to lay it in a herringbone
pattern. Its a great way to customize a basic
tile and make it look more expensive. Soft
accents like the drapery (The bay window
was just calling out for something!) and the
graphic rug (Its the perfect piece to bring
colour and pattern into the room, as well as a
touch of warmth) add to the boudoir charm.
For a little glamour, Andrea included warm
metals throughout in the vanity hardware,
light xtures and side table. She also incor-
porated curved lines, as seen in the bathtub,
sconces and mirrors, to soften the space.
Youre looking at a lot of hard surfaces in
a bathroom, so bringing in curves gives it
a feminine quality, she says. The result: a
master bath that youd never want to leave.
ABOVE Designer Andrea Johnson incorporated
decorative elements, such as drapery, a gold-
framed side table, a graphic rug and artwork,
to elevate her master bathroom from utilitarian
to sophisticated sanctuary.

Decorators Nicola Marc and Beth Gold of Marc Gold Interiors
knew they were in for a challenge when they set out to make
over this 800-square-foot condo in Montreals trendy Le Pla-
teau neighbourhood. This was the rst time that we had
worked on a project where the client didnt want any colour,
says Nicola. As a result, we had to look closely at texture,
scale, shape and form. The clients only other request was
tied to the desire for a soft palette in grey and pebble. She
wanted her new home to be a calming, serene
retreat a place she could return to after a busy
workday and sigh contentedly.
It was lovely to be involved from the very begin-
ning, says Nicola, who was part of the initial hunt
for a suitable condo. When they came across this
one-bedroom suite in a renovated 1920s building,
all three agreed that it offered the right bones,
needing just a few modications. The hardwood
ooring was stripped and nished in a soft white-
washed grey, custom wood radiator coverings
were built, the wall between the dining room and
living room was removed to open up the main liv-
ing space for entertaining, and the lime green
galley-style kitchen was utterly gutted.
There was a lot of discussion about opening up
the wall in the kitchen, too, but the client preferred
that the space remain out of sight while shes enter-
taining. In fact, the only sightline into the kitchen
was designed to appear un-kitchen-like. The wall in
view was covered in a seagrass wallpaper, which
provides warmth and texture and balances the
kitchens custom nishes (like the Carrara marble
mosaic oor) and sleek stainless steel appliances.
Throughout the rest of the condo, there was an
equal devotion to balancing sharp lines with deli-
cate curves, softening glints of shiny metal with
milky porcelain and enhancing natural textures
with subtle patterns. The effect is an intimate tone-on-tone
space that feels very harmonious, says Nicola. I think its
safe to say that we lived up to the challenge!

When Style at Home design editor Jessica Waks laid
eyes on this charming 1934 Georgian-style house in
midtown Toronto, she knew it was the one. The only
glitch? It required a major overhaul to bring it into the
21st century. Visions of an addition with a spacious
kitchen, a glam eat-in area and a chic family room
quickly rearmed that this was to be her forever
house. Here, we ask her how she made it all happen.
What were the main chal-
lenges? I knew from the start
that I wanted to completely gut
the original house and build an
addition to accommodate a luxuri-
ous kitchen with a large island, a
convenient eat-in area and a cozy
family room suitable for lounging
or watching TV. The biggest
challenge was designing an open-
concept space that wouldnt have
a support column stuck in the mid-
dle of it (my pet peeve!). To avoid
this eyesore, I opted for a structural
support beam, which was cleverly
camouaged with a coffered ceiling.
What was your overall vision
for the space? I envisioned a warm
and inviting hangout space, with
plenty of glamorous and tailored
details to make it feel sophisticated
and decorated. I inherited a passion
for cooking from my mother, so I
decided to work with Cameo Kitch-
ens and Fine Cabinetry to create a
well-laid-out kitchen with loads of
storage for appliances and gadgets
and lots of prep space. And, because
I love to entertain, I needed a long
island for setting up buffet meals or
hosting wine and cheese nights.
What was the look and feel
you wanted to achieve? Im a big
fan of white kitchens, but I wanted
something a little different, so I
decided to accent mine with warm

brass instead of the more expected nickel
or chrome for a truly distinct, luxe look.
Once I found the fabulous Rubinet faucet,
I built on my choice accent nish with
cabinetry hardware, pendant lighting and
special details like the trim on the range
hood. To give the overall impression of
fresh white and glam gold, I went with
panelled appliances (in the same Shaker
style as the cabinetry) and a white Kohler
cast iron sink, keeping any cool-toned
metals to a minimum.
What is the one investment piece
you couldnt do without? Since this is
my forever house, I wanted to outt it with
the best chef-style appliances available.
So, when I discovered that I could get a
Sub-Zero panelled fridge with a built-in
ltered water and ice dispenser hidden
inside of it, I was sold. It was the perfect
way to conceal the fridge because its
the rst thing you see when you walk into
the space and it can even be viewed from
the front door. The fridge, along with the
Wolf range, was all I ever dreamed of!
Explain your design choices for the
kitchens eat-in area. The banquette
was a creative way to maximize seating
in a tight corner. I had it covered in shiny
black faux leather with deep diamond
tufts to make it feel like you were sitting
in a restaurant. The table base was a
lucky vintage nd, and the oval top was
custom made from the same durable
Pure White Caesarstone as the perimeter
countertops in the kitchen. The result is a
highly functional space that not only looks
great but is a breeze to clean up, too.

ts no secret that designers love white. Whether crisp and bright or rich
and creamy, white, in any shade, is the ultimate blank canvas. But
as Toronto decorator Jennifer Reid of Barlow Reid Design will tell you,
sometimes you can have too much of a good thing.
Back in 2010, Jennifers soon-to-be clients, Trisha and Dino Verbrugge, fell in love with a new build in
Toronto. At the time, they had a young daughter and Trisha was eight months pregnant. Their desire for
this house, however, wasnt just about nesting it was also practical. We needed more room, says Trisha.
At 4,500 square feet, the home offered plenty of space to spread out, thanks to its open-concept oor plan.
But it was the high-end traditional kitchen with its substantial mouldings, panelled cabinets and to-die-for
slabs of marble that had Trisha and Dino hooked. They could picture the family gathered around the kitchen
island someday, surrounded by delicious food and lots of laughs.
Trisha had always wanted a white house, so she had all the walls painted in the shade, then added all-white
built-ins, furniture, rugs and drapery. But the effect wasnt quite what shed dreamed of: It was a whiteout, with
no depth or warmth. I soon realized we needed to introduce some colour to make it more homey, she says.
Thats where Jennifer came in. She quickly identied why Trishas vision needed tweaking: Trisha is so fun
and bubbly, but her home looked stark and a little unnished it didnt reect her personality at all. So, Jennifer
I

started pulling together a rened palette and looking for items that would add much-needed dimen-
sion. The inspiration for the houses sophisticated scheme came from the family rooms rug. Im a
big believer in starting with the rug, says Jennifer. From there, she pulled out tones of smoky mauve,
lavender and pastel blue, which are most visible in the family room. All of the seating was upholstered
in these hues, using lively patterns and an array of textures. Of course, Jennifer made sure the fabrics
were durable and family friendly, since the children (Chloe, 5, and Connor, 3) like to read, play and
snuggle with Mom and Dad in here.
Because Trisha is also a fan of decorative embellishments, Jennifer used them to add interest to the
kitchens eat-in area. A button-tufted settee perfectly tucks into the niche of a recessed window, while
easy-to-clean vinyl chairs get a luxe look from nailhead trim and ring hardware on the backs. With the
kitchen being so white, I wanted to layer in some warm neutral tones and textures, explains Jennifer.
The same nod to couture detailing is evident upstairs in the couples bedroom, where blue damask
wallpaper creates a soft backdrop for the button-tufted headboard. The pattern is easy to look at
and easy to live with, says Jennifer and, really, that sums up her approach to the entire house. The
Verbrugges are thrilled with the result. The colours are soft and pretty at the same time, which I love,
says Trisha. Now that the space is nished, it nally feels cozy.

bedroom seating area to be
more casual, so she placed

hen Muriel Solomon, a media executive, and her
husband, Jordan, a biofuel business owner, moved
into this turn-of-the-century midtown Toronto
home in 2002, they opted for a quick cosmetic x
at rst, pulling up carpet, stripping old wallpaper and painting the
walls white. By the time they committed to a major structural reno-
vation, they had been there for eight years. So Muriel knew how her
family lived, what the problems were and how to make the space
work, allowing her to make smart design choices.
The previous kitchen was tiny and had a bad layout, she
says. When I was cooking, I felt very isolated. To remedy this,
the Solomons enlisted the help of Toronto architect Drew Mandel
to extend the back of their house by 15 feet on one side and three
feet on the other to accommodate a large, open kitchen and family
room. Now the couple can stay connected while entertaining
friends and can comfortably hang out, chat and read with their
kids, Zo, 14, and Jrmie, 12 all in a modern and inviting space.
As much consideration as Muriel put into choosing the sleek
kitchen elements the high-gloss cabinetry, the oak oors, and
the marble countertops and backsplash she never forgot the
details that enhance day-to-day living. I mapped out what was
going in every drawer, she says. My kids are huge cereal fans,

for instance, so I designated a low, easy-

Beyond functionality, Muriel also focused
on creating a serene mood by blurring the lines
between indoors and out. I really wanted a re-

she says. It took some searching, but I found one

kitchen, has a comfy sectional, but not a TV.
Since my daytime life revolves around television,
I wanted to be able to step away from it when I
get home in the evening, says Muriel. I want
my house to be a retreat for reading, playing, chat-
ting and listening to music. And in the spa-like
master bathroom, the expansive windows are
strategically placed. My vision from day one
was to have a bathtub right up against the mag-
nolia tree, says Muriel. From here, I can see the
blossoms through the large window and the sky
through the set of smaller windows.
The result is a vibe that denitely entails
a love of family, life and of course nature.

botanical-inspired wallpaper.

hen designer Lindsay Mens Craig and her
husband, Michael Craig, moved into this house almost three years
ago, they easily sidestepped the common problem of meshing two
styles into a cohesive look. He literally came with only a dining
table, a trombone, some crystal decanters and a shing sign, says
Lindsay. He didnt give me much direction. So for key design
decisions like paint colours and furniture arrangement, Lindsay
had carte blanche, which is pretty much a given when youre a
designer at Torontos Sarah Richardson Design.
I really wanted the house to look as much like Michaels as
it did mine, says Lindsay, who recently gave birth to their daugh-
ter, Kennedy. A strong blue scheme throughout and some mascu-
line elements like striped upholstery and wingback chairs keep
the interior from feeling overly feminine, even though Lindsays
afnity for animal prints is evident in almost every room. But I

A bar was a must for Lindsays husband,
Michael Craig, who works in the wine
and spirits industry. Lindsay found this
bar cart at an antiques store to sit along-
side a wingback chair in one corner
of the dining room. The tone-on-tone
leopard print on the chair and the bold
turquoise leopard toss cushion speak
to Lindsays love of animal prints.

have absolutely no say in what happens in the basement,
garage or wine cellar, she says with a laugh.
The 1,400-square-foot, three-bedroom home in Torontos
west end was in good condition when they moved in, but the
entryway needed a facelift. So it was gutted, reinsulated
and covered in a shimmery metallic wallpaper that has huge
impact in the small space.
The dated bathroom needed a lot of love, too: Once they
started the x-up, Lindsay and Michael discovered structural
issues and ancient insulation. It was insulated with news-
print, and the tub was on very shaky ground, explains
Lindsay. They salvaged the original clawfoot tub and tongue-
and-groove wainscotting, but new xtures and ooring
bring modern function and comfort to the room.
The small but efcient galley-style kitchen was recently
renovated, so Lindsay only needed to give it a few cosmetic
tweaks. Existing IKEA cabinetry was refaced with new doors
and hardware an easy x, she says. New marble back-
splash and oor tiles up the glamour, while fresh accessories,
lighting and drapery fabric carry Lindsays stylish aesthetic
into the hard-working space.
In the homes modest principal rooms, Lindsay had to
rethink a lot of the furniture from her previous open-plan
condo (featured in Style at Home, May 2012). I like to start
over every time I move, she admits surely an occupational
hazard of any designer so she decided to sell a lot of the
larger furnishings and bought new, better-proportioned
pieces to t the rooms in the compact semi-detached house.
But most of the art and accessories came along from the last
place. Those are sentimental, so they always come with me,
says Lindsay. And, of course, Michaels few treasured belong-
ings have been given pride of place as well. His dining table
got a makeover with paint before going into the dining room
and thats his shing sign hung proudly on one wall in the
kitchen. And the trombone displayed prominently on the con-
sole between the living and dining rooms? Thats his, too.

tub was refreshed with a coat of

a towel bar custom-made to match
the brass tub faucet and shower
system that were rescued and
reused. Herringbone marble oors
and a gilded antique-look mirror
bring renement to the small space.

FAR LEFT Rather than going
trendy, Lindsay had this pair of

subtle stripe so that she wont
have to switch it up when trends
change in the future.
Lindsay created a cozy retreat
in the master bedroom with
dark blue walls. The large
cream headboard and light-
coloured drapery keep the blue
from feeling overwhelming in
the small room. The vintage
chandelier was another lucky
score, and the painting was
an old piece that Lindsay
had reframed.

pairing
Whether served as a savoury tidbit to start
or nish a meal or as the star of a casual gathering,
cheese is always a versatile ofering. Serve it on its own
or with accompaniments spreads, such as chutneys,
jams or tapenades; sweet elements like honeycomb
or fresh, dried or candied fruits; or salty bites,
such as olives or nuts and a crusty baguette.
choosing
You can serve one carefully chosen cheese and let its extraordinary
qualities shine. But, in general, an assortment of three cheeses ofers
variety without overwhelming guests. When making your selections,
diversity can be created in diferent ways: cheese age or type (one bloomy
rind, one semi-rm, one blue), milk type (one cows milk, one goats milk,
one sheeps milk), country of origin (one French, one Spanish, one English)
or even locale (three from California). Ultimately, youll want a range of
avours and textures, from creamy and buttery to crumbly and salty, and
a mix of shapes and colours. Choose accompaniments to match the
cheese, season and occasion, keeping avour and texture in mind.
serving
ARRANGE CHEESES SO THAT THEY ARE EASY TO CUT, SUCH
AS LAYING A WEDGE ON ITS SIDE. CONSIDER MAKING THE
FIRST CUT YOURSELF, AS A GUIDE, SLICING SO THAT EACH
PIECE WILL HAVE A BIT OF RIND. THIS HELPS AVOID AN
EMPTY CHUNK OF RIND AT THE END OF SERVING. ALWAYS
LET CHEESE COME TO ROOM TEMPERATURE BEFORE
EATING IT. THIS MAY TAKE UP TO A COUPLE OF HOURS.
presenting
A large platter, marble slab or wooden board can accommo-
date three or four cheeses. Allow ample room for easy cut-
ting. For a more formal presentation, you can pass individual
cheese boards among guests. Give each cheese its own
knife, so avours dont mingle. Rounded knives are best for
spreading luscious, creamy cheeses and sharp knives are
ideal for cutting hard, aged cheeses. A cheese knife with
tines is perfect for transferring slices to plates.
purchasing & storing
CHEESES ARE BEST FRESHLY CUT, SO AVOID PREWRAPPED PIECES WHEN
POSSIBLE. STORING CHEESE IS ALWAYS A BALANCING ACT: CHEESE MUST
BREATHE OR RELEASE MOISTURE, BUT IT ALSO NEEDS TO STAY MOIST AND
NOT DRY OUT. WHENEVER POSSIBLE, BUY CHEESES ON THE DAY OF SERVING
AND KEEP THE WEDGES AT COOL ROOM TEMPERATURE ON A BOARD OR
UNDER A GLASS DOME. WHEN REFRIGERATING, PLASTIC WRAP IS THE COMMON,
THOUGH IMPERFECT, SOLUTION. THE CHEESE WONT BREATHE, BUT IT ALSO
WONT DRY OUT. USE WAXED PAPER FOR WRAPPING FRESH AND SOFT-RIPENED
CHEESES, WHICH NEED TO BREATHE THE MOST IN ORDER TO RIPEN PROPERLY.

THE OLD
Old World wines are ones that
originate from the winemaking
regions of Europe (France, Italy,
Spain, Portugal and Germany)
and the Mediterranean. European
wine makers believe that a wines
terroir plays a more important
role in shaping its taste prole
than the type of grape. As such,
youll nd that most bottles are
labelled with their area of origin,
rather than their grape variety.
Shopping for Old World wines
can be challenging at times,
especially if youre unfamiliar
with the characteristics of wine
from a certain area. This is where
the journey gets fun nd a style
of wine you like (for example,
Cabernet, Chardonnay or Ries-
ling) and research regions that t
the prole. For instance, if you
prefer full-bodied reds, go for a
wine from Bordeaux (best for
Cabernet and Merlot blends).
THE NEW
Winemaking regions outside
of Europe are part of the New
World, including Australia, South
Africa, North America and South
America (Chile and Argentina).
New World wines are focused on
preserving varietal fruit charac-
teristics as opposed to regional
ones. Theyre almost always
labelled with their grape variety,
which makes for easier shopping.
THE PRODUCTION
Wine production processes can
also be categorized as old or new.
Hand-picking, various organic
practices and the use of wild
yeasts are considered Old World
traditions, while machine har-
vesting and the use of technology
are associated with the new.
That said, many New World
regions are starting to implement
old practices and vice versa.
THE MIX
When it comes to enjoying old
and new, dont limit yourself to
wines from only one world. Com-
pare and contrast: Taste the trad-
ition of the old and discover the
unique avours of the new.
The world of wine is divided
into old and new. Wine expert
Angela Aiello tells us what
we need to know.
