Fernando, Lorraine Ann Cogama
Abstract:

The study has showed that Coco-Cyclerator
(pedal operated coconut grater and extractor)
can produce a big volume of coconut meat and
milk in minimal time, an important thing in
making delicacies that have been long famed
products of Bulacan. There were two treatments
done with two trials each.
TREATMENT l
Grating and extracting twelve coconuts using the
Coco-Cyclerator (pedal operated grater and
extractor).
TREATMENT ll
Grating twelve coconuts using electrically
operated coconut grater and extracting it
manually.
It was found out that the grating coconut with
the used of the gadgets is comparable that of the
commercial machine as revealed by T-test. The
amount of coconut milk constantly change as
observed in the two treatments conducted. On
the other hand, the cost of production (labor cost
and electricity) is cheaper, since there is no
electricity spent in using the gadget, compare in
using the electrically powered coconut grater.
Furthermore, the machines efficiency based on
the production was computed to be 76.92%.
Through this findings, the researchers therefore
concluded that the Coco-Cyclerator (pedal
operated grater and extractor) is an efficient and
economical gadget in grating and extracting
coconut. This gadget also produced more
coconut milk in a short period of time without
the used of electricity. The quality of the coconut
meat and milk using the gadget is safer and
more sanitary to use.

Oil from Jackfruit Seeds
Source: Anna Lourdes S. Bautista
Abstract:
Oil price hike is one of the major problems in the
country. To get rid of this problem, the
researchers tried to increase the sources of oil to
lower its price.
The researchers used Jackfruit seeds as
alternative source of oil. It is because jackfruit
was available in the market. It also has the
properties and substances oil has. The
researchers gathered the seeds and extracted
liquid from it, and it was heated. After 5 minutes,
the researchers removed it from heat. The
materials used are Jackfruit seeds, grater, fine
cloth, basin, stove, pan and mortar and pestle.
The product produce was more viscous than
commercial oil and less transparent.
The researchers recommend the use of plant oils
like oil from Jackfruit seeds because plant oils are
healthier. According to the researchers, Jackfruit
seeds are a potential source of oil.

Ampalaya Seeds as Coffee (Momordica Charantia)
Source: Ghio Philip M. Dizon
Abstract:
Coffee is a much known beverage to the majority
of the people. It is known for its stimulating
effect on the functions of the brain, thus making
the drinker active. Variants of coffee flavors were
already produced all throughout the world aiming
for the discovery of alternative sources for coffee
production. The Philippine archipelago was
indeed very fortunate and blessed with various
natural resources ranging from the beautiful
landmarks, rich sources of food, and wild
diversity of living things. Bittermelon (Momordica
charantia), commonly known as ampalaya, it is a
fruit known for its bitter and astringent taste.
Commonly, people eat its flesh and skin as food
living the seeds unused. With this, we are aimed
to prove the feasibility of ampalaya seeds as an
alternative source for coffee making which offers
better health benefits (as antioxidant) at low cost
and attainability. The study aimed to prove that
ampalaya seeds are capable and feasible for
coffee production. In line with this, we would also
want to prove weather it could serve as an
antioxidant or not. We created ampalaya coffee
by starting with the normal proceedings as done
with other coffee known to man. We toasted and
grinded the seeds until the time that it is soluble
with water. The number of seeds dried, peeled
and toasted was 123 seeds. The initial weight of
the seeds before they were toasted was 23.3g
and after they were toasted to golden brown they
weight 11.4g. There appeared a difference of
11.8g before and after the seeds were toasted.
After the pulverization of the seeds were
obtained a sample good for 2 cups of coffee.
After adding hot water to the ampalaya coffee
sample, the sample dissolved in the hot water
just likes any normal cup of coffee. The coffee
gave a bitter taste which is normal for coffee
without caffeine. We can then conclude that
ampalaya seeds are definitely feasible for coffee
production and based form the results, it serves
well as the other sources of coffee.
