Still Spirts Turbo Air Still
New Still Spirits "Turbo Air Still" or the "Water Purifier" Distillation Unit
The Still Spirits Turbo Air Still system is a revolutionary still which is
designed to fit right in at home amongst your everyday kitchen appliances.
It looks like a kettle, works like a kettle but makes beautiful alcohol
instead. This unit requires no technical know-how and is simple to use,
producing enough alcohol to make a 1 litre bottle 40% in just 2 hours.
This unit is air cooled, so it doesn't require a water flow for cooling,
which is perfect for regions that are experiencing water shortages, or
where you do not have access to running cold water or the room to setup a
more advanced system.
Please note that this unit due to its simplified design will produce 700ml
@ 60% product, you must use the air still production pack with the still
spirits triple distill yeast which has one tenth of the impurities of the
nearest spirit yeast strain, the use of other yeast will result in a high
collection of impurities, effecting the quality of the product.
Cost of operation
The unit runs on a 320w element, depending on the ingredients, will vary
the operation time but between 2 hours is the general rule with a full run.
At $0.13kwh, the unit cost a insignificant, under $0.10 in power
consumption to operate, it also does not require a water flow like other stills. These prices will vary depending
on location and going power rates
Cost of final product
This will vary depending on what you are making in terms of whiskey or liqueurs, also the varying qualities
available. But working on the highest quality and most recommended blend of ingredients you are looking at
approximately $10 per the bottle which is equivalent to a $60+ triple distilled commercial grade alcohol bought
from your everyday liquor outlet. Higher and lower alcohol quality grades can be achieved, but there is a sliding
scale quality for quantity.
This figure has been fully aggravated to consider all aspects of cleaning, fermenting, distilling and blending of
your drink.

SYSTEM SUMMARY
The Air Still system is very user-friendly &
enables you to make excellent quality spirits,
mixers & liqueurs in four easy steps.

Step 1 - THE WASH
Firstly the sugar and water is turned into
alcohol by fermenting with yeast. This is
known as "the wash".

Step 2- DISTILLATION
Separate the purified alcohol from the wash by
distilling, this leaves behind most of the water
and other impurities. Distillation is done by
heating the wash, boiling off the alcohol and
condensing the vapour back into a liquid. The
alcohol that
comes off does contain some water and is
typically 60% ABV.

Step 3 - CARBON FILTRATION
Use specially treated activated carbon to filter
out most of the remaining trace impurities.

Step 4- FLAVOURING
Finally, adjust the finished strength of your
alcohol by adding some water, then simply add
your favourite spirit or liqueur flavour


CRITICAL INFORMATION
ABOUT YEAST
Air Stills are a simple design that is easy to use &
inexpensive to buy. However, it is important to
note that because they are a simple device, they
require extremely high quality yeast to produce
excellent spirit.

In other words, the Air Still is a simple pot still that
requires near perfect wash to deliver near perfect
spirit.

You should be aware of the fact that the use of
standard yeast products leads to off flavours & low
grade spirit .

Still Spirits are the only manufacturer of special
quality yeasts that will produce the high quality
spirit you are expecting. This yeast is called "Triple
Distilled". All other yeasts produce inferior results
in an Air Still. Triple distilled yeast is available in
packs suitable for 9 & 25 litre fermentations. These
yeasts are also available in "production packs" with
Turbo carbon, Turbo Clear & filter carbon
included. The 2.4kg pack is used in the 10 litre
fermenter & the 6kg pack is for the 25 litre
fermenter.

now recommended for use in the air still in
conjunction with the ceramic boil enhancers.

PLEASE READ ALL OF THESE
SAFETY INSTRUCTIONS
CAREFULLY BEFORE USING
YOUR STILL.

The Still should always be run on a flat dry
surface in a well-ventilated area.

Always unplug the power cord when filling or
cleaning. Only use the wall socket switch for
turning power on/off.

Never immerse the still in water, or allow the
body base or the top cover to become wet
inside.

This unit is not intended for use by children. Do
not operate this unit where it is possible for
children to reach it.

Do not remove the top cover when the still is
operating.

Allow at least 20 minutes for cooling, after
switching the power off, before you remove the
lid. It is important that the still cool down
before reusing.

Be aware that when operating the still contains
boiling liquid. Occasionally the lid may lift
without warning and spill boiling liquid. Keep
hands and face clear from the immediate
vicinity of the still when operating.

The still is fitted with a high temperature cut-
out. This is used as an automatic cut-out for
water distilling and must be reset before the still
can be used again. Use the reset button on the
base of the still. It is not applicable for alcohol
distilling as you are only distilling off about
20% of the starting volume. However it will
provide a safety back-up if you forget to turn
the still off and it is allowed to boil dry. If this
happens you will need to press the reset button
on the base of the still before it can be operated
again.

AIR STILL 10 LITRE SYSTEM

You use this to produce 9 litres of wash for use
in your Air Still you will also need to purchase
an Air Still Production Pack which contains all
of the consumables you will need, including:
Yeast and Nutrients (Dry Mix)
Turbo Carbon (Wet Mix)
Two Part Finings
3 carbon cartridges
2.4kg dextrose

This unit can also be used for making
fermented Spirits and Liqueurs which are
lower in alcohol. This method does not include
distillation. This is ideal in countries where
distillation is illegal.

USING A 10 LITRE FERMENTER TO
PRODUCE 9 LITRES OF WASH
Before you start:
Make sure the tap is securely fitted to the
bucket and fill with 5 litres (2 US Gal.} warm
water to ensure that the unit is water tight.
Once you have confirmed that the unit is water
tight, sprinkle in the sachet of No Rinse
Steriliser. Carefully swirl this around so that it
contacts the entire internal surface. Discard
water.

Then:
1. In the Fermenter prepare 7.5 litres of
water at 30 Celsius. Make sure it is not
over 30. Typically, a mix of 1.5 litres
hot water & 6 litres of cold water is
about right. Adjust the mix to obtain the
desire a final temperature.

2. Add 2.2 kg of Turbo Sugar (or 2.4 kg
Dextrose, also known as Corn Sugar) and
stir until dissolved.

3. Massage the sachet containing the Turbo
Carbon and then add it to the Fermenter and
stir. Warming the carbon sachet in hot water
helps. DO NOT WARM THE YEAST
SACHET.

4. Sprinkle the Yeast from the yeast sachet on
top of the sugar/water/carbon solution
(wash).

5. Fit the Carbon Cartridge to the Air Filter in
the Fermenter lid and then fit the lid to the
Fermenter. Place the fermenter in a space
where the air temperature is between 18 and
24C for approximately 7 days (see note 7).

6. When fermentation is completed the wash
will stop bubbling. To confirm fermentation
is complete the wash can be tested with a
Beer, Wine and Spirit (wash} Hydrometer.
The wash has completed fermenting when
the Specific Gravity-(S.G.) is below 990 on
the hydrometer.

7. Once the wash has finished fermenting it is
important to de-gas the wash. This is done
by stirring briskly until all fizzing stops. T is
will likely take a few minutes. Start slowly
to avoid a sudden release of the gas. Once
all the gas has been removed, add in sachet
A and stir well.

8. One hour later, carefully sprinkle Sachet B
on the surface of the wash and evenly
distribute. Do not stir vigorously at this
stage.

9. Leave to stand for 24 hours. During this
time the wash should become clear ready for
distilling. See the separate instructions that
come with your still for distilling method.

This is all you need to produce 25 litres of
wash for use in your Air Still.
This system can also be used for making
fermented Spirits and Liqueurs which are
lower in alcohol. This method does not include
distillation. This is ideal in countries where
distillation is illegal.

USING THE 30 LITRE FERMENTER
TO PRODUCE 25 LITRES OF WASH
Before you start:
Make sure the tap is securely fitted to the
fermenter (white bucket) and fill with 5 litres
(2 US Gal.) with warm water to ensure that the
unit is water tight.
Once you have confirmed that the unit is
water tight, sprinkle in the sachet of No Rinse
Steriliser. Carefully swirl this around so that it
contacts all the internal surface. Discard water.

Then:
1. In the Fermenter prepare 211itres of
water at 30 Celsius. Make sure it is not
over 30. Typically, a mix of 41itres hot
water & 17 litres of cold water is about
right. Adjust the mix to obtain the
desired final temperature.
2. Add 6kg of Turbo Sugar (or 7kg Dextrose,
also known as glucose or corn sugar) and
stir until dissolved.

3. Massage the sachet containing the Turbo
Carbon and then add it to the Fermenter and
stir. Warming the carbon sachet in hot water
helps. DO NOT WARM THE YEAST
SACHET.

4. Sprinkle the Yeast from the yeast sachet on
top of the sugar/water/carbon solution
(wash).

5. Fit the Carbon Cartridge to the Air Filter in
the Fermenter lid and then fit the lid to the
Fermenter. Place the fermenter in a space
where the air temperature is between 18 and

Alcohol Distillation

1. Clean the inside of the still and then fill
it to the 4 Litre (1 US Gal.) mark. Take
care that no wash is spilt on the outside
of the body.

2. Add the Ceramic Boil Enhancers and
one capful of Distillers Conditioner to
the still. These are used to reduce the
risk of surge boiling, which can happen
occasionally.

3. Make sure that both electrical sockets
are clean and dry.

4. Fit the top cover of the still in place and
plug the fan lead into the socket in the
still body.

5. Place a collector under the outlet
nozzle. This should have a useable
capacity of at least 800 ml

6. Connect the main power cord between
the still and the mains power socket and
turn on the mains power socket switch.
You will hear the fan in the top cover of
the still start immediately.

7. The wash will take just over an hour to
heat up. Once distillation begins you
will see the alcohol starting to drip into
the collector.

8. Allow the still to run until you have
collected 700ml of alcohol. This will be
at a strength of 60% ABV and you can
use this to make up a 1 litre bottle at 38
- 40 % alcohol. This should take just
over a further hour (thats two hours
from start to finish). After you have
collected 700ml turn off the still. If you
wish to produce 1125ml collect 800ml
but the quality will be slightly reduced.
Do not try to collect more alcohol than
this, as the quality will drop away
quickly.

9. Allow the still to cool before removing the
top cover. Empty out the remaining wash
and clean the inside with clean warm water.
Dry the still thoroughly and put away for
next time.

Water Distillation

1. Fit the top cover of the still in place and
plug the fan lead into the socket in the still
body.

2. Place a 4 litre (1 US gallon) collection jug
(not supplied) under the outlet nozzle.

3. Press the reset button on the base of the still.

4. Connect the main power cord between the
still and the mains power socket.

5. Turn on the mains power socket switch.

6. You will hear the fan in the top cover of the
still start.

7. It will take about 1 hours for the water to
heat up.

8. Once distillation starts, water will begin to
drip into the collection bottle.

9. The still will take about 10 hours to distil off
the 4 litres (1 US gallon) .

10. The power supply reset switches off
automatically when the distillation is
completed.

11. You will need to press the reset button on
the base of the still before you next use it.
After distillation the water needs to be
polished. We recommend filtering the
distilled water through

USING THE CARBON FILTER TO
PURIFY THE WASH/ DISTILLATE

1. Submerge a carbon cartridge in warm
water for 10 minutes, it will fizz like
soft drink, this releases all the trapped
air within the carbon.

2. Fit the carbon cartridge to the filter
taking care to ensure the foam washers
are fitted between the filter and both
ends of the cartridge. Rinse the carbon
by running 200ml of water through the
filter prior to filtering alcohol, you may
see some grey/black residue, discard the
water.

3. Assemble the filter, so that the carbon
filter is sitting inside the larger
container.

4. Dilute the distilled spirit (the 700ml
collected via your Air Still) and 300ml
of clean water. This is necessary for the
filter to operate at its best.

5. Fill the filter with the distilled spirit and
allow to drip into the container.



Please Note:
Slow filtering is better than fast when you are
filtering through carbon. Adjust the flow rate by
tightening or loosening the cartridge nut (do not
exceed finger tight). Ideally, filtering should take at
least 12 hours.

Your spirit is now ready to use. You can measure
the alcohol % of your spirit by using a spirit
hydrometer.

Mixing Flavours & Preparing Your Drinks

This is one of the most fun part, simply select what
spirit, liqueur or cream you wish to make, measure
the alcohol required for the recipe and blend.
Which brings us to the most fun part, pouring a
glass. Still Spirits Classic range is best after one
week of aging, but you are able to drink straight
away

IMPORTANT TIP
Change the carbon cartridge for each 1L of
alcohol filtered.
Feel free to use a 2nd carbon cartridge if
you wish to double filter for improved end
quality of spirit.
Never store your alcohol in plastic, always
in glass.
Try not to exceed 700mls from distillation,
as quality of spirit substantially decreases

In Australia you are able to use these units for the purposes
of water purification and essential oil, a licence is not
required. In New Zealand you are able to have a unit up to
25L for the purposes of alcohol extraction for personal use
without a licence.
