ABSTRACT
Background: In the last period, clove (Syzygium aromaticum) is important, especially used as a
natural antibiotic. The use of natural antibiotics is improved and have a good progress when
compared with antibiotic synthesis. As a natural antibiotic, cloves can be used as an antibiotic
for a bacterial pathogen that primarily exist in the food (Cortes et al, 2013). Including
pathogenic bacteria like as Listeria monocytogenes found in food before the cooking stage.
Listeria monocytogenes is due to the number of colony pathogens contained in large amounts of
fresh food in the size of the growth of bacteria that can cause Listiolisis and raises some new
diseases (Anonim, 2004). Cloves used effective as inhibitory agents Listeria monocytogenes by
inhibiting the mechanism of action and decrease the bacterial population (Oliveira et al, 2013).
Metode: Systematic review of this literature search methodology developed in accordance with
the reference to the source data from Pubmed and Google Scholar. With search PICO:
antimicrobial, Syzigium aromaticum, placebo, against Listeria monocytogenes. With the
combination of keywords: Syzigium aromatica as an antimicrobial for listeria monocytogenes
inhibit. With the inclusion criteria articles related to the antimicrobial activity of clove as listeria
monocytogenes in experimentally in vitro, which was published from the years 2000-2013, with
no language restrictions.
Result: From various studies that have been conducted on Syzigium aromaticum showed that
Syzigium aromaticum can inhibit the growth of Listeria monocytogenes, the active substances
are efficacious as an antimicrobial is eugenol.
