FANTASTIC FAJITAS (serves 4)


2 T peanut or vegetable oil 1 lb flank or skirt steak 1 large red onion, peeled and sliced 2-3 bell peppers, sliced (your choice of color) Hi Mountain Fajita Seasoning 2 limes cut into quarters 8-12 flour tortillas (two or three per person) Accompaniments: grated cheddar or Monterey Jack cheese Hi Mountain Salsa Dip Hi Mountain Guacamole Dip sour cream Season the steak generously with Hi Mountain Fajita Seasoning and let sit at room temperature for 30 to 45 minutes. Pre-heat the oven to 150. Tear off four foil sections (one for each person) slightly larger than the tortillas. Warm tortillas in a non-stick skillet over medium heat two at a time. Flip and turn tortillas until warm, place two tortillas on one piece of foil and roll up. Place in oven until ready to serve. Use a large cast iron pan or griddle. Add oil to the pan and heat on high for about 2 min. Add the steak and sear each side for 3 minutes for medium rare. These cuts of steak are flavorful but can be a little tough and are most tender when cooked med-rare. If the pan starts to smoke too much, reduce the heat to medium-high. Transfer the steak to a warm plate and tent with foil. Add the remaining oil to the same pan and saut the onions and bell peppers on med-high heat. Let vegetables sear for 1 minute before tossing. Saut until crisp-tender, about 5-6 minutes, tossing occasionally. Slice the steak against the grain into thin slices. Place sliced steak and vegetables on a platter. Serve with your choices of grated cheddar or Monterey Jack cheese, Hi Mountain salsa, Hi Mountain Guacamole Dip, lime wedges, sour cream, and warm flour tortillas. Note: Fajitas can also be made with any red meat and chicken or turkey breast.

MEXICAN STYLE STUFFED PEPPERS (serves 6)


Using different colored peppers such as yellow, orange, red and green makes for a fun presentation. You can even use eggplant if you wish. 1 large yellow onion, finely chopped 2 cloves garlic, minced 1 pound ground beef 1 28-ounce can crushed tomatoes 3/4 C water 1 packet of Hi Mountain Salsa Dip 1 t Hi Mountain Taco Seasoning 1 t Hi Mountain Italian Herb 1 C uncooked long-grain white rice 6 medium sweet bell peppers 1 C cheddar or Monterey Jack cheese 1 C cilantro rinsed, stems removed and chopped

In a large saut pan, heat the olive oil over medium heat. Add the onion and garlic, cook until the onion is soft 3 to 4 minutes. Add the ground meat and brown lightly. Mix the water and Salsa Dip into the crushed tomatoes and add to the meat. Add the Italian Herb and Taco Seasoning and simmer for about five minutes. Taste and adjust the seasoning if needed. Add the rice and simmer until almost all the liquid has been absorbed, about 10 to 15 minutes. Preheat the oven to 350F. While the meat mixture is simmering, cut the top off each bell pepper to expose the whole cavity. Reserve the tops. Remove the seeds and ribs from the peppers and rinse with water. Add the cilantro and cheese to the meat mixture and fill each pepper with the mixture, leaving room for the filling to expand. Put the tops on the peppers and place them in a baking dish. Add about inch water to the dish. Bake, basting every 15 minutes, until the rice in the filling is tender, about 1 hour. (Add more water if the dish becomes dry, and cover the peppers with aluminum foil if they begin to turn brown).

RUSTIC OVEN ROASTED POTATOES 3 pounds small round white potatoes 1/4 C olive oil 1 1/2 t Hi Mountain Trail Dust Seasoning 1 t Hi Mountain Garlic Pepper Seasoning 2 T minced fresh parsley Preheat the oven to 400. Cut the potatoes in half and place in a bowl with the olive oil and seasoning and toss until well coated. Transfer the potatoes to a sheet pan and spread out into one layer. Roast in the oven for 45 minutes or until browned and crisp. Toss once or twice with a spatula during cooking for even browning. Remove the potatoes from the oven, toss with parsley and serve with your meal.

Make breakfast link sausage with the pull of the trigger. Kit includes Link Master gun, one box of breakfast sausage seasoning, two strands of collagen casings and easy to follow instructions.

SAUSAGE AND CAJUN SPICED RISOTO (makes 4-6 servings) 1 qt vegetable stock, warmed C white wine or white cooking wine 1 medium shallot, chopped (about cup) 3 T unsalted butter 1 T olive oil In a large, heavy-bottomed saucepan, heat the oil and 1 T. of the butter over medium heat. When the butter has melted, add the chopped shallot. Saut for 2-3 minutes or until it is slightly translucent. Add the rice to the pot and stir it briskly with a wooden spoon so that the grains are coated with the oil and melted butter. Saut for another minute or so, do not brown. Add the wine and cook while stirring, until the liquid is fully absorbed. Add a ladle of stock and stir until the liquid is fully absorbed. Repeat the process. Note: Its important to stir constantly, especially while the stock is being absorbed, to prevent scorching, and add the next ladle as soon as the rice is almost dry. C grated Parmesan cheese 1 t Hi Mountain Cajun Seasoning 9 Sausages, cooked and warmed Bratwurst, Polish or German sausage made from Hi Mountain sausage kits Continue adding stock, a ladle at a time, for 20-30 minutes or until the grains are tender but still firm to the bite. If you run out of stock and the risotto still isnt done, you can use hot water. Stir in the remaining 2 T butter, the Parmesan cheese and the Cajun Seasoning. Risotto turns glutinous if held for too long, you should serve it right away. A properly cooked risotto should hold together and be creamy. It should not be runny, or be stiff or gluey. To serve, transfer risotto to a large warm bowl and add the sausages cut into pieces on top. Garnish with dill, parsley or scallions if desired.

HI MOUNTAIN SHRIMP & CHEESY GRITS (makes about 8 servings) 1 C coarsely ground grits 3 T butter 4 C water 1 1/2 lbs. uncooked shrimp, peeled & deveined 1/2 t each Hi Mountain Gourmet Fish & Cajun Seasoning 1/4 t Hi Mountain Garlic Pepper Seasoning 6 slices bacon 1 red bell pepper, chopped 1 C finely chopped onion 1 clove garlic, minced 1 1/2 C shredded sharp Cheddar cheese 1/4 C Hi Mountain Sundried Tomato Dip 1/2 C chopped scallions 1 C Frenches Fried Onions

Bring water to a boil, add Garlic Pepper Seasoning. Add grits and cook until water is absorbed, about 20 to 25 minutes. Remove from heat and stir in butter, cheese and Sundried Tomato Dip into grits until melted. Cover and keep warm. Sprinkle shrimp with Gourmet Fish and Cajun Seasoning. Set aside in a bowl. Fry bacon in a large skillet until browned. Retain bacon drippings in skillet, transfer bacon to paper towels, let cool, and crumble. Saut red bell peppers, onion, and garlic in the bacon drippings until the onion is translucent. Add the shrimp and cook until pink. Serve shrimp mixture over grits. Top with scallions and Frenchs Fried Onions if desired.

SAVORY STUFFED MUSHROOMS (makes about 10 servings) 1 pound lean ground beef or venison 2 pounds fresh mushrooms, cleaned with stems removed (mince and reserve stems) 1/4 C butter 1/2 C red bell peppers, dice small 1 t each Hi Mountain Garlic Pepper and Original Burger Seasoning 2/3 C dry bread crumbs 2/3 C each grated Parmesan and Romano cheese (reserve one T each for topping) handful of fresh chopped parsley for garnish

Preheat oven to 350. Brown ground meat in a large skillet. As the meat browns, use a spatchula to chop it into small pieces. Drain and set aside. In a saucepan over medium heat, melt the butter and stir in the mushroom stems and red bell peppers. Saut until the bell peppers are soft. In a large bowl, mix the ground beef, mushroom stem mixture, dry bread crumbs, Parmesan and Romano cheese, the Garlic Pepper and Original Burger seasoning. Place the mushroom caps in a large, shallow baking pan. Generously stuff each cap with the mixture. Bake in the preheated oven 15 to 20 minutes, or until the filling is golden brown. When done, sprinkle a small amount of chopped parsley and cheese on top of each mushroom and serve immediately.

HERBED POTATO TRIANGLES WITH RANCH DRESSING DIP 8-10 large russet potatoes peanut or vegetable oil (enough for deep frying) prepared Hi Mountain Ranch Dressing Dip Batter Ingredients: 2 C flour 1/2 t salt 1/2 t Hi Mountain Garlic Pepper Seasoning 2 t baking powder 1 C water 2 eggs, beaten

Peel potatoes and cut into 1/8 slices. You can leave them round or cut each slice into triangles for a fun presentation. Place potatoes in a large bowl and cover with water, adding a little lemon juice. Make the batter. In a bowl stir together dry ingredients. In another bowl stir together the egg & water. Pour into flour mixture & stir until smooth. Use a large deep pan with a heavy bottom (if you dont have a deep fryer). Fill the pan with 2 to 3 inches of oil leaving 1 1/2 inches from the top. Heat oil to 375. Use a oil or candy thermometer. Make sure the oil is up to temperature. Drain the potatoes and pat dry with paper towels. Dip the potatoes in the batter and place in hot oil, (carefully) and fry until golden brown. Do not over crowd the pan. Cook in batches. Remove potatoes with a large slotted spoon and place on a large oven safe platter lined with paper towels to drain. Immediately sprinkle with Italian herb seasoning and salt. Do the same with each batch. Place in a 150 oven to stay warm until all potatoes are done. Serve with prepared Hi Mountain Ranch Dressing Dip.
