the Grand hotel royal in 1896
and was entirely renovated
and, in parts, rebuilt in 2003, following its acquisition by

> Finally, after a grey and rainy winter, spring is


just around the corner and we, too, are putting
renewed energy into the Year of new
Momentum. We honor and appreciate women
right at the very start of the month. to mark
international Womens Day, we have put together
several exotic dishes such as oyster with passion
fruit sorbet and special accoutrements, which
will be made available through room service.
naturally, we have not forgotten to arrange a
Womens Day brunch, either. in line with tradition,
we are organizing a national brunch complete
with hungarian specialties, decor and program
plus hungaricums on the sunday of the national
holiday weekend of March 15. there are similarly
interesting themed brunches in the second half
of the month, with the emphasis as always
on new experiences and entertainment. We turn
the clock back to America of the 1920s and 30s
and the time of the speakeasy (also called a blind
pig or blind tiger), and at the end of the month,
we turn everything on its head at the Fools Day
sunday brunch. earlier, i mentioned hungaricums,
and there is none better than hungarian plinka.
visit the elegant le bar lobby where there is a
special opportunity to sample quality hungarian
plinka, distilled from a variety of ne fruits, in a
relaxed atmosphere to the sound of background
live jazz music. besides this there are many other
interesting features in this months publication:
we are introduced to Zsa, who works in the
F&b section, while Pter shares another one of
his own recipes, and our partner nikki renwick
reveals what it is worth knowing about esPA, one
of our latest services. And of course, life in the

Zsfia Husz,
F&B COORDINATOR
How long have you worked at the hotel?
My career with Corinthia started in Malta in July 2010, where i worked
for nearly two years at Corinthia hotel st Georges bay. i was drawn
back to hungary by my family and friends, and the opportunity to
develop my career here. While in Malta, i applied for the position of
bar supervisor at the royal, which had become vacant in 2012, and
which i lled for seven months. in July 2013, i applied for the F&b
Coordinator post in hotel Corinthia budapest.
What are your duties?
in my job i am under the direct supervision of the Food and beverage
Director and his deputy. i am responsible for correspondence and
translations. i translate menus and prepare them for publication. i
handle the ling and mailing of incoming and outgoing
correspondence. it is my job to ???draw??? the forms and stationery
required by the restaurant directorate. i take table reservations for
special occasions and xed events, and arrange all the necessary
administration. i draft circulars from the restaurant directorate, copy
directives and look after their duplication and distribution.
Furthermore, it is my duty to handle the administration of contracted
staff working at events, book them and make sure the paper work is
in place. i prepare the notices of the daily buffet selections for the
restaurant and bar. i maintain contact with several graphic design
studios and with printers, and i correct and coordinate material, yers
and menus.
What was your happiest experience in relation to the hotel?
i was surprised by the warm welcome i received in the hotel abroad,
as a hungarian working in Malta, and also when, prior to the
extension of my contract, i said that i missed my family and friends
very much, and the possibility of advancing up the career ladder in
Malta would be difcult without a knowledge of Maltese, that is why
i would like to continue my career back in hungary. they were very
understanding and helpful. Mr. Chapel, General Manager in Malta,
without even being asked contacted Mr Fischer and assured me that
there was the possibility of continuing my career at home within the
framework of Corinthia. i nd it hard to believe that in any other
luxury hotel chain anyone outside hr would have been
interested in the future of a waitress, to a level where the GMs
corresponded by e-mail on this topic. i love the job and the
knowledge that my work is appreciated and valued, and later on i will
have the opportunity to take up the challenge in other posts, and
thereby advance my position. this reinforces in me the feeling that it
is well worth remaining loyal to the hotel. i am absolutely certain that
our guests also recognize this type of care when they step over the
threshold of our hotel.
What do you enjoy doing in your spare time?
this largely depends on my mood, but i enjoy active, quality leisure, i
am not the type to sit at home, although after a frantic week this also
has its attractions. i enjoy all kinds of sports, everything from rafting to
snowboarding or a simple run around the track on Margaret island. if i
can, i like to spend time with my friends and family. i really enjoy
travelling, both abroad and in hungary.

> since his retirement last summer, sir
Alex Ferguson rarely accepts public
engagements, and yet this weekend he
made an exception. As in previous years,
he appeared in person to hand over the
Pusks-Ferguson Award, set up by the
robert burns Foundation hungary-scotland society, at old trafford
stadium. this year he was accompanied by Mrs Ferenc Pusks.
Corinthia hotel budapest received the award for sponsor of the
Year. thomas M. Fischer General Manager attended the ceremony

as jhzi soup, szkely cabbage and spicy salamis. lively melodies come from the Csics band, and
children can learn how to sew cockades in the Kids Corner.

> Weve turned things around a little bit for the Fools Day brunch. in fact, weve turned everything on
its head! Your meal is cooked by chefs dressed as waiters and is served by waiters dressed as chefs and
wearing clowns noses. A clown will clown around, the cocktails come with wacky names such as
hangover and Dominique, and the food includes such oddities as mega lollies and exploding candy...
Crazy! but youd be nuts to miss it!!

PrePArAtion
Pull apart the lobes and remove as many veins from the foie gras as possible.
remove any sinew or membranes from the outside of the foie gras. Put the foie
gras in a baking dish and cover with milk. Combine the salt, pepper, sugar. sprinkle
the combined seasoning over the foie gras. Press the foie gras into a container in
an even layer 2 cm to 2.5 cm thick. Pour the tokaji Asz wine over the foie gras.
Press a piece of plastic directly against the foie gras so as little air as possible is in
contact with it. refrigerate overnight. Drain and rinse the foie gras, remove it
from the container and let it rest for an hour at room temperature (it will be
easier to work with). Place it on a piece of parchment paper (best) or plastic
wrap (will sufce) in the form a loaf about 16 x 8 centimeters. roll the foie gras
into a log, twisting and squeezing the ends of the parchment paper or plastic to
help compact the foie gras. An hour later unwrap the foie gras, discard the paper
or plastic and transfer the log to a piece of cheesecloth about 30 x 60
centimeters. Place the foie gras on the short end of the cheesecloth. roll it to
force the foie gras into a compact log again. Using butchers twine, loop a length
of string around your index nger. With the same hand, hold one end of the
cheesecloth tightly and wind the string around the end of the foie gras.
Continue wrapping the string about 0.5 cm into the foie gras, this will help force
the foie gras to compress into a tight roll and tie it off. repeat the procedure on
the other end. tie a few ties along its girth for extra support. in a wide pot,
simmer enough stock or water to completely submerge the foie gras. Prepare an
ice bath. Place the torchon into gently simmering liquid for 90 seconds.
immediately remove the torchon to the ice bath to cool, 5 or 10 minutes. the foie
gras will be loose in the cloth. Make it compact again by compressing it in a
second cloth (leaving the rst one on). roll it as tightly as possible. twist and
tie the ends of the towel with a string and hang the torchon from a shelf in the
refrigerator overnight. Unwrap, slice and serve or cut slices with a ring mold. serve
with dark chocolate and fresh coconut.

outlines the ghastly deed, then instructions are handed out to teams, who set off around the hotel after
the starter and again after the main course. their job is to collect the clues that will lead, just before
dessert, to the unmasking of the perpetrator. the winner then receives a princely reward: a voucher for a
sunday brunch of choice. but dont think for a moment that this ties everything up neatly... the inspector
will be back again in 3 months with another puzzle.

> the state opera house and erkel theatre have


numerous ballet evenings -lehr: Die lustige Witwe,
Goldmark: the taming of the shrew and a special
Modern mini ballet series on show - to offer you this
month besides the excellent operas erkel: bnk bn,
Mozart: Die entfhrung aus dem serail, rnk: the Kings
new Clothes, Janacek: Jenufa. there will be two extra
Puccini: tosca evenings as part of the budapest spring
Festival on March 21-23.
March will favor fans of classical music with all the major
orchestras in concert at the national Concert hall. the budapest Festival orchestra is giving two
unnished evenings with schubert and bruckner on March 1-2. the Mv symphony orchestra will
have a special guest conductor, irwin hoffman for their concert on March 6. the Pannon
Philharmonic orchestra promises an exciting night on March 7, as part of the Five Colour Concert
series, the bottle Green evening will feature a harpist, Anastazia razvaljajeva. the Dohnnyi
orchestra will deal with the unattainable as a devilish temptation during temptations on March 16.
on March 12 the Paganini of the organ, Mr. Cameron Carpenter will premier the Music For an
imaginary Film at the national Concert hall.
the liszt Music Academy also favors classical music fans with some outstanding concerts: David
Fray (pianist) and the Franz liszt Chamber orchestra on the 6th of March; Gennady
rozhdestvensky and Concerto budapest on March 7-8; the hungarian radio Choir performing
Mendelssohn: elijah on 9th March; the world famous Kobayashi Ken-ichiro and the liszt Academy
symphony orchestra on show with beethoven: symphony no. 9. on March 26.
the colorful program of the Festival theatre awaits dance lovers of all genre in March: the Moulin
rouge by GG Dance eger, ballet based on the life story of henri de toulouse-lautrec on the 6th of
March; stag song by the hungarian state Folk ensemble on March 14; and the world premier of
recirquel: the naked Clown as part of the budapest spring Festival on March 28 -30.

> the rudas thermal bath was established in the 16th


century, during the time of the turkish occupation. its
central part includes an octagonal pool covered by a 10
meter diameter dome. At the end of the 19th century, a
therapeutic swimming facility and a sauna was added.
rudas is unique among baths in budapest because it is
open on Friday and saturday nights. it offers relaxing
waters instead of wild and hilarious parties, so guests
can forget everyday troubles and problems and take a rest in the thermal pools that are especially
hot. nightlife is made special by the Magic bath party series offered almost every saturday night in
March at the lukcs bath. on these evenings, the thermal bath turns into a crazy party venue with
laser show, DJ, cocktails, beers, mismatching bikinis.

automotive event which has been created by the
collaboration of many famous exhibitions and shows.
the season opening festival fills 5 pavilions of budapest
exhibition Center. there will be more than 1.000 unique
vehicles from11 countries exhibited on 80.000 m2 of
exhibition area. During the three days of the show, daylong indoor and outdoor automotive programs entertain
visitors.
budapest is a city of values and emotions, where festivals are as much about traditions as
fascinating new surprises. the programs of the 34th budapest spring Festival, held between March
21 and April 6, will introduce visitors to a colorful and varied cultural scene in one of europes
most exciting capitals. besides music, theatre and dance, fine arts and photography, film,
contemporary circus and architecture will also be featured.
those interested in the visual arts will find special exhibits at the budapest history Museum,
which presents a selection of hungarian painters self-portraits from Florences Uffizi Gallery. At
the hungarian national Gallery, the oeuvre of Gyula Derkovits, the most original hungarian
expressionist, will be on view. ludwig Museum awaits lovers of contemporary art, while the Capa
Centre opens new exhibits of photography.
