How long have you worked at the hotel?
My career with Corinthia started in Malta in July 2010, where i worked
for nearly two years at Corinthia hotel st Georges bay. i was drawn
back to hungary by my family and friends, and the opportunity to
develop my career here. While in Malta, i applied for the position of
bar supervisor at the royal, which had become vacant in 2012, and
which i lled for seven months. in July 2013, i applied for the F&b
Coordinator post in hotel Corinthia budapest.
What are your duties?
in my job i am under the direct supervision of the Food and beverage
Director and his deputy. i am responsible for correspondence and
translations. i translate menus and prepare them for publication. i
handle the ling and mailing of incoming and outgoing
correspondence. it is my job to ???draw??? the forms and stationery
required by the restaurant directorate. i take table reservations for
special occasions and xed events, and arrange all the necessary
administration. i draft circulars from the restaurant directorate, copy
directives and look after their duplication and distribution.
Furthermore, it is my duty to handle the administration of contracted
staff working at events, book them and make sure the paper work is
in place. i prepare the notices of the daily buffet selections for the
restaurant and bar. i maintain contact with several graphic design
studios and with printers, and i correct and coordinate material, yers
and menus.
What was your happiest experience in relation to the hotel?
i was surprised by the warm welcome i received in the hotel abroad,
as a hungarian working in Malta, and also when, prior to the
extension of my contract, i said that i missed my family and friends
very much, and the possibility of advancing up the career ladder in
Malta would be difcult without a knowledge of Maltese, that is why
i would like to continue my career back in hungary. they were very
understanding and helpful. Mr. Chapel, General Manager in Malta,
without even being asked contacted Mr Fischer and assured me that
there was the possibility of continuing my career at home within the
framework of Corinthia. i nd it hard to believe that in any other
luxury hotel chain anyone outside hr would have been
interested in the future of a waitress, to a level where the GMs
corresponded by e-mail on this topic. i love the job and the
knowledge that my work is appreciated and valued, and later on i will
have the opportunity to take up the challenge in other posts, and
thereby advance my position. this reinforces in me the feeling that it
is well worth remaining loyal to the hotel. i am absolutely certain that
our guests also recognize this type of care when they step over the
threshold of our hotel.
What do you enjoy doing in your spare time?
this largely depends on my mood, but i enjoy active, quality leisure, i
am not the type to sit at home, although after a frantic week this also
has its attractions. i enjoy all kinds of sports, everything from rafting to
snowboarding or a simple run around the track on Margaret island. if i
can, i like to spend time with my friends and family. i really enjoy
travelling, both abroad and in hungary.

the centerpiece of the hotel conference center is the Grand ballroom, seating close to 500, which is the largest meeting space of
its kind in any ve-star hotel in the City of st Petersburg.

> since his retirement last summer, sir
Alex Ferguson rarely accepts public
engagements, and yet this weekend he
made an exception. As in previous years,
he appeared in person to hand over the
Pusks-Ferguson Award, set up by the
robert burns Foundation hungary-scotland society, at old trafford
stadium. this year he was accompanied by Mrs Ferenc Pusks.
Corinthia hotel budapest received the award for sponsor of the
Year. thomas M. Fischer General Manager attended the ceremony
on behalf of the hotel.

> this sunday, why not turn back the clock to America of the 1920s and toddle on down to your
favorite speakeasy? the bootleg whiskey will ow freely, there will be honky-tonk piano music and all
the waiters will be dressed in Al Capone-like gear including fedoras. luckily, the machine guns are all
dummies, but the whiskey-marinated ribs, steaks, chicken wings and beer soup are totally authentic.
one almost expects the Great Gatsby himself to stroll in at any moment!
PrePArAtion
Pull apart the lobes and remove as many veins from the foie gras as possible.
remove any sinew or membranes from the outside of the foie gras. Put the foie
gras in a baking dish and cover with milk. Combine the salt, pepper, sugar. sprinkle
the combined seasoning over the foie gras. Press the foie gras into a container in
an even layer 2 cm to 2.5 cm thick. Pour the tokaji Asz wine over the foie gras.
Press a piece of plastic directly against the foie gras so as little air as possible is in
contact with it. refrigerate overnight. Drain and rinse the foie gras, remove it
from the container and let it rest for an hour at room temperature (it will be
easier to work with). Place it on a piece of parchment paper (best) or plastic
wrap (will sufce) in the form a loaf about 16 x 8 centimeters. roll the foie gras
into a log, twisting and squeezing the ends of the parchment paper or plastic to
help compact the foie gras. An hour later unwrap the foie gras, discard the paper
or plastic and transfer the log to a piece of cheesecloth about 30 x 60
centimeters. Place the foie gras on the short end of the cheesecloth. roll it to
force the foie gras into a compact log again. Using butchers twine, loop a length
of string around your index nger. With the same hand, hold one end of the
cheesecloth tightly and wind the string around the end of the foie gras.
Continue wrapping the string about 0.5 cm into the foie gras, this will help force
the foie gras to compress into a tight roll and tie it off. repeat the procedure on
the other end. tie a few ties along its girth for extra support. in a wide pot,
simmer enough stock or water to completely submerge the foie gras. Prepare an
ice bath. Place the torchon into gently simmering liquid for 90 seconds.
immediately remove the torchon to the ice bath to cool, 5 or 10 minutes. the foie
gras will be loose in the cloth. Make it compact again by compressing it in a
second cloth (leaving the rst one on). roll it as tightly as possible. twist and
tie the ends of the towel with a string and hang the torchon from a shelf in the
refrigerator overnight. Unwrap, slice and serve or cut slices with a ring mold. serve
with dark chocolate and fresh coconut.

outlines the ghastly deed, then instructions are handed out to teams, who set off around the hotel after
the starter and again after the main course. their job is to collect the clues that will lead, just before
dessert, to the unmasking of the perpetrator. the winner then receives a princely reward: a voucher for a
sunday brunch of choice. but dont think for a moment that this ties everything up neatly... the inspector
will be back again in 3 months with another puzzle.

imagine that all the lights go outthe
invisible exhibition is a unique interactive
journey to an invisible world, where in
total darkness you find your way only by
touch, sound and scent. You will be led
by blind or partially sighted people
through differently furnished places and
various life situations. You can experience
what its like to cross a road, to pay for a
cup of coffee in a bar or choose the right
spices for your lunch. this way, despite
the difficulties brought on by loss of
sight, you will experience that the world
can be still beautiful. the exhibition
brings the worlds of those with and
without sight closer to each other. As a
novelty, every Fridays, an invisible Dinner
is held, also in pitch-dark.
