How long have you worked at the hotel?
ive been here since april 15, 2013. coming on for a year now...
Which areas have you worked in, and where are you now?
i have worked in the hotel as pastry chef from day one.
What are your duties?
i have plenty of responsibilities. my goal is to establish the best
confectionery in Hungary. i reorganized the production and we have
made huge improvements to the quality and outward appearance of
desserts. put like this it does not sound much, but there is a lot more
behind these sentences. over the recent past we have achieved a
position where with the exception of bread and other bakery
products we make everything in-house. i am proud of my team of
confectioners!
How is the hotel confectionery different, what specialities are you
creating?
the good thing about a hotel is that its range is very extensive, we
make everything that can be imagined in this profession, contrary to
restaurant or confectionery production. We prepare many specialities.
We have rethought several Hungarian desserts (eszterhzy, ldlb), but
we also make rosemary biscuits, Black pepper or even rose cookies,
and then again i might mention the Bayleaf panna cotta and i could go
on. there are no limits.
What was your happiest experience in relation to the hotel?
my happiest experience has been to work here with such a great team.
i can prepare the desserts to the same standard as abroad, i have a free
hand and finally i can make what i really like. i can renew the Hungarian
desserts and there are no boundaries; if i have an idea, then i can go
about realizing it as i want.
What do you enjoy doing in your spare time?
my work is also my hobby, so i spend a lot of time with the art of
confectionery in my leisure, too. i frequently search the internet for the
creations of other confectioners because it is possible to get good
ideas from these. i also like nature and i enjoy sports, which provide
additional energy.

heralds the arrival of the horse. our
lunar Brunch is a chance for
everyone to try out classical oriental cuisine (
tiger prawns with ginger, tuna fish and pickled
vegetables, pork dumplings, noodles with chicken
and mushrooms and much more) while being
entertained by asian dancers in an authentic
setting. one special feature of the day is a
demonstration of an ancient tea ceremony.
naturally, we are serving stronger beverages as
well: sake and Japanese rice wine. By the way, all
the waiters will be in asian costumes.
preparation
pumpkin is one of the most popular vegetables of the winter season since it can be
served in many ways such as roasted, braised or in a soup. pumpkin combines very well
with vegetables and fruits what are grown in other climatic zones. coconut is a great
match; its sweet flavor and silky texture compliments the taste of the pumpkin.
melt butter in a large saucepan over medium heat. cook onion until fragrant, about 2
minutes. add ginger, garlic, and squash; cook, stirring occasionally, until fragrant, 6 to 8
minutes. stir in 4 cups water. Bring to a boil; reduce heat. simmer until squash is
tender, 20 minutes.
pure soup in two batches. When blending hot foods, allow the heat to escape to
prevent splattering. remove the cap from the hole of the blender's lid, and cover with
a dish towel. stir in cream, coconut milk and 1 and a half teaspoons salt. serve hot,
with sour cream and pumpkin seeds if desired.

> THE FESTIVAL ORCHESTRA AND THE PALACE OF ARTS have created a new tradition
with a marathon format a series of 11 concerts on a single day. For the 2014 marathon on
February 2, ivn Fischer has chosen one of the greatest geniuses in the history of music,
Johann sebastian Bach. the Festival orchestra will cooperate with the world famous
conductor and violin player pinchas Zukerman in four consecutive concerts at the MUSIC ACADEMY on
the February 7-10. the dohnnyi orchestra will be in concert at the music academy on February 1 and at
a special Film-Harmonic Film music with projections at the national concert Hall on February 8. on
the 29th the orchestra invites you for a Hungarian-only night ungaresca at the national concert Hall,
presenting the original folk music that was refined and transformed into concert works by Bartk, Kodly
and dohnnyi. THE STATE OPERA HOUSE AND ERKEL THEATRE offer a colorful program for opera
lovers with italian domination, like donizetti: don pasquale and l'elisir d'amore, Boito: mefistofele,
rossini: il barbiere di siviglia and puccini: tosca. certainly ballet cant be omitted from the program, this
month csajkovszkij: onegin and lehr: die lustige Witve will also be on show. THE FESTIVAL THEATRE is
awaiting fans of modern ballet with the Budapest premiere of the south Bohemian Ballet: romeo and
Juliet on February 12; the tango no tango show by lszl Budai and friends on valentines day; and
szeged contemporary Ballet will join forces with the NATIONAL DANCE THEATRE to give an
extraordinary performance the Hell Within / Beethoven: symphony no. 9 on February 25.

this gastronomic event is all about the curly-haired mangalica pig, a Hungarian
heritage breed, which came close to extinction just a few decades ago. visitors can
taste a variety of products, mainly sausages and salamis, made from mangalica pork
which is said to be more flavorful and healthier than regular pork.
> the Budapest FisH Festival taking place on February 13-16 in the garden of the
Hungarian national museum, promises to be a fun event. For a country known for its
hot and spicy Fisherman's soup prepared exclusively from freshwater fish, this threeday gastronomic event will offer plenty of alternative fish dishes. cooking contests,
wine and plinka tasting, live music, folklore shows and kids' programs are all part of the festival.
Keep warm and be sure to try a bowl of Fisherman's soup.
> vince Budapest promises to be a great wine event for professionals and amateur
wine lovers alike. the primary focus of vince is the wine of central europe, over 100
wineries from Hungary and the neighboring countries and winemakers from outside
the region will offer their wines for tasting during the three-day event. Held in the
corinthia Hotel Budapest on February 28march 2, vince Budapest will host wine exhibitions,
wine tastings, master-classes, wine competitions and interactive workshops for professionals and
the public. in addition to wine, plinka will also be featured, with the best distilleries presenting
their products.
