> once again we have exciting weeks ahead of us in

the final month of the winter, which this year has


worked out in a strange way because in effect the really
cold, wintery weather has only now arrived.
despite this there is absolutely no lack of programs and
things to do. as valentines day approaches, we have
arranged three events to mark the occasion, one event is
chocolate lovers Week, during which there is a
fantastic opportunity to experience the dolce vita in the
form of a perfected pairing of remarkably crafted
pralines and famed, fine Hungarian wines. naturally, we
couldnt miss an intimate valentines day dinner, and of
course, we crown the week with sunday Brunch inspired
by the spirit of true love.
the chinese lunar new Year falls in early February, and
we invite you to celebrate in the rickshaw restaurant
where we are at your service with dishes specially made
for the occasion.
among our themed and always entertaining and
pleasurable sunday Brunches it is well worth highlighting
the ancient Hungarian custom we bring to corinthia
toward the end of the month, that of the Bus festival,
in the course of which, during carnival season, revellers
dress in frightening masks to chase off the winter and
welcome in spring.
our carnaval di rio Brunch is a distant relation of Bus
and also staged during carnival time: for this sunday we
welcome in a truly thrilling and colourful Brazilian
atmosphere complete with cocktails and samba dancers.
a good time for all is guaranteed, the hallmark of all our
sundays when we not only serve brunch but put
together a really entertaining program for all the family.
some truly out-of-the-ordinary drinks can be sampled at
le Bar. during royal alchemist Week, you have an
opportunity to sample cocktails of our own invention
served in glasses shaped like test tubes, and then there
is a genuinely one-of-a-kind creation: nothing other than
drinking Your lunch the Goulash cocktail. dont
miss it!
in this issue, we have included many other matters of
interest. there is the latest chapter in the long history of
our hotel; we introduce our pastry chef attila menyhrt,
while chef pter Bolyki shares another of his delicious
recipes. naturally, there is also plenty going on in the

Chapter 12 - The 1960s


> the year 1962 remains in
the memories of many.
communism received
various public setbacks.
cuba and the Bay of pigs
invasion made the
headlines. so did Jackie
Kennedy, who introduced a
new style, and John XXiii,
who excommunicated
Fidel castro. in Hungary,
you had to wait three to four years for a new car, a skoda, a
moskvich, a trabant or a Wolga. in the soccer world, the
nation held its breath when Hungary won group 4 in the
World cup in chile, earning a 2:1 over england and a
sensational 6:1 over Bulgaria before losing to
czechoslovakia 0:1 in the quarter-finals.
one day a state of emergency was declared at the royal.
allegedly, a case of smallpox had been detected and one
man was taken to hospital. as the entire hotel and its
inhabitants could have been exposed to the infectious
disease, the building was declared quarantine territory.
nobody was allowed to enter; nobody could leave. soldiers
secured the territory. the staff on duty was not allowed to
leave the hotel either. together with 800 guests from 27
different countries they were confined to the premises for
21 days. all guests had to cancel their ongoing journeys.
not a single complaint was filed throughout these days,
when guests and servants lived together under one roof in
splendid isolation. the service continued to be excellent
and once the quarantine was over, staff and guests left the
hotel. until today it is uncertain whether this was a real
state of emergency or a test alarm. Films and television
programs have since been made about the incident.
nine months after the quarantine, the birth rate among
hotel employees rose to
an all-time high. more than
one romantic bond had
occurred during the
emergency strictly
against the rule of the
house, of course, which
forbade private liaisons
among staff members. in
this case, exceptions were
made.
complaints were to be found in a little black book, bearing
the word panaszknyv (complaints). there was a comment
about a waiter who served three Barack, but charged for
five. or the story about a guest who was stopped by the
security of the hotel, when taking a lady to his room. of
course the lady was an old friend. Why cant i bring a
friend to my hotel room during the daytime? Well, he
complained bitterly about this treatment. other comments
were aimed at a certain communist, lazy attitude of some
employees. With a working place secured in an industry
short of good staff, they found it sometimes unnecessary to
answer all the needs of a spoilt Western customer. one
visitor from vienna simply wrote: everybody in this hotel is
in particular complicated and unfriendly. But in general, the
guest book of the royal from these days reflects happy
customers. most impressed by the luxury of your hotel!
wrote a Klm royal dutch airlines team, expressing

gratitude for the friendly and polite service provided by


the management and staff, and last but not least by the
pleasant atmosphere in these homey surroundings. With
our wishes for a speedy viszontltsra!
international events like music contests, congresses,
meetings of the council of Bilateral economic aid, a chess
championship and WHo congress were organized at the
royal. in the restaurants, prms Klmn entertained diners
with his gipsy band. at the front office pl Jogasich
welcomed an international clientele, happily making use of
his legendary language skills he spoke nine languages. a
newspaper interview quoted him saying at that time: i am
learning serbian at the moment! on one occasion a dutch
guest constantly asked whether the heir to the throne of
the netherlands, had been born yet or not. after the child
had been delivered, a special table was set up for the guest.
a candle was lit and the band played his national anthem.
sometimes up to 200 hospitality students were employed
at the royal, where they learned the tricks of the trade. at
that time, doorman Jk sndor rose to fame after detecting
that an american guest had stolen 17 pairs of shoes, which
were placed outside various rooms nightly for cleaning. the
weak excuse was that in america, those in need, could
usually take anything left outside a door.
after years of isolation, a respectable number of visitors
were travelling to Hungary again. By 1966, ten years after
the brutal revolutionary
scenes, approximately 1.5
million tourists arrived in
the capital annually.
However, not many of
them came from the free
Western democratic world.
russians topped the list,
while travelers from
poland and eastern
Germany shared second
spot.
international travel writers visited the city, too: Budapest
is a city with a thousand faces, wrote a correspondent of
montreals la presse, where historic spas, gipsy music, art
relics, a romantic beautiful location, an outstanding cuisine
and happiness are present at the same time. 70 million liters
of water come up from 123 springs that is an outstanding
phenomenon in the world. Budapest, you should remember,
is the premiere spa city of the world, while you cannot
forget the panoramic view from the Fishermens Bastion.
nina Brown wrote in the new York times: Given a choice
of how to travel to Budapest, i would choose the ship,
because Budapest offers one of the most dramatic
waterfronts in the world. You cannot imagine a better
arrival in a city. Well, at that time, Hungarian composer
lajos lajtai (1900-1966) lived in new York. one day he said:
i want to go home to die at the royal. He travelled back
to europe, came to Budapest, checked into the royal and
twenty minutes later he was dead.
ilse Bindseil told the readers of the Wiesbadener tageblatt:
in comparison with vienna, Budapest must not be ashamed.
Here the danube reflects the most beautiful city during its
long route across europe.
Bill Fletcher wrote in the vancouver sun: it is an often
mentioned polite statement about Budapest that it is the
city of music. this city is the home of Batrtk, Kodly and
liszt. tourists rarely visit Budapest without taking part in
one of its concerts. the majority of foreign travel
magazines praised the enormous value for money: even in
the most luxurious confectionery of Budapest you get much
more for one dollar than you can eat. richard Joseph wrote
in the chicago tribune: You are never far away from good
cuisine. and in far-away south africa the pretoria news
explained, the biggest attractions are the chicken
paprikash, the chowder and the paste with cottage cheese.
if there would not be anything else in this city, it would be
worth coming here only because of these.

Attila Menyhrt,
PASTRY CHEF
How long have you worked at the hotel?
ive been here since april 15, 2013. coming on for a year now...
Which areas have you worked in, and where are you now?
i have worked in the hotel as pastry chef from day one.
What are your duties?
i have plenty of responsibilities. my goal is to establish the best
confectionery in Hungary. i reorganized the production and we have
made huge improvements to the quality and outward appearance of
desserts. put like this it does not sound much, but there is a lot more
behind these sentences. over the recent past we have achieved a
position where with the exception of bread and other bakery
products we make everything in-house. i am proud of my team of
confectioners!
How is the hotel confectionery different, what specialities are you
creating?
the good thing about a hotel is that its range is very extensive, we
make everything that can be imagined in this profession, contrary to
restaurant or confectionery production. We prepare many specialities.
We have rethought several Hungarian desserts (eszterhzy, ldlb), but
we also make rosemary biscuits, Black pepper or even rose cookies,
and then again i might mention the Bayleaf panna cotta and i could go
on. there are no limits.
What was your happiest experience in relation to the hotel?
my happiest experience has been to work here with such a great team.
i can prepare the desserts to the same standard as abroad, i have a free
hand and finally i can make what i really like. i can renew the Hungarian
desserts and there are no boundaries; if i have an idea, then i can go
about realizing it as i want.
What do you enjoy doing in your spare time?
my work is also my hobby, so i spend a lot of time with the art of
confectionery in my leisure, too. i frequently search the internet for the
creations of other confectioners because it is possible to get good
ideas from these. i also like nature and i enjoy sports, which provide
additional energy.

BUTTER SQUASH-COCONUT CREAM SOUP


inGredients
2 tablespoons butter | 1 small onion, chopped | 10 g fresh ginger, peeled and chopped
2 garlic cloves, chopped | 1.25 kg small butternut squash, prepared and cut into
2 cm cubes | 0,5 liter coconut milk | 0,5 liter cream | coarse salt and ground pepper
sour cream, (optional) | roasted pumpkin seeds

preparation
pumpkin is one of the most popular vegetables of the winter season since it can be
served in many ways such as roasted, braised or in a soup. pumpkin combines very well
with vegetables and fruits what are grown in other climatic zones. coconut is a great
match; its sweet flavor and silky texture compliments the taste of the pumpkin.
melt butter in a large saucepan over medium heat. cook onion until fragrant, about 2
minutes. add ginger, garlic, and squash; cook, stirring occasionally, until fragrant, 6 to 8
minutes. stir in 4 cups water. Bring to a boil; reduce heat. simmer until squash is
tender, 20 minutes.
pure soup in two batches. When blending hot foods, allow the heat to escape to
prevent splattering. remove the cap from the hole of the blender's lid, and cover with
a dish towel. stir in cream, coconut milk and 1 and a half teaspoons salt. serve hot,
with sour cream and pumpkin seeds if desired.

> the manGalica Festival will be held at the szabadsg square on February 7-9.
this gastronomic event is all about the curly-haired mangalica pig, a Hungarian
heritage breed, which came close to extinction just a few decades ago. visitors can
taste a variety of products, mainly sausages and salamis, made from mangalica pork
which is said to be more flavorful and healthier than regular pork.
> the Budapest FisH Festival taking place on February 13-16 in the garden of the
Hungarian national museum, promises to be a fun event. For a country known for its
hot and spicy Fisherman's soup prepared exclusively from freshwater fish, this threeday gastronomic event will offer plenty of alternative fish dishes. cooking contests,
wine and plinka tasting, live music, folklore shows and kids' programs are all part of the festival.
