CATERING STAFF
Our expertly-trained staff will set up the ceremony and reception areas, coordinate timing with the DJ, decorate buffets, buss, serve toast, cut and serve cake and provide all breakdown and all clean up (Client is responsible for clean up and removal of all items brought in for decoration, etc.)

All Alcohol and Cake is to be brought in by client **No corkage or cake cutting fees** 20% service charge and sales tax will apply to all packages All prices and provisions subject to change prior to contracting
BUFFET
HAND CARVED ROAST SIRLOIN OF BEEF by chef and served with a rich Wine sauce and a creamy horseradish and chive sauce (or Braised Boneless Beef Short Ribswith a Zinfandel wine sauce) GRILLED CHICKEN BRUSCHETTA served with a pesto cream sauce and topped with grilled chopped fresh tomatoes and basil EDEN BOW TIE FIELD PASTA Served with butternut squash, fresh spinach, and roasted garlic tomato sauce with parmesan ROASTED TRI COLORED POTATOESwith herb butter BROILED FRESH VEGETABLES Zucchini, yellow squash, red peppers, carrots served with lemon and olive oil MIXED GREENS SALAD with sliced oranges, strawberries, toasted hazelnuts, red onions and a sherry wine vinaigrette ASSORTED FRESH BAKED ROLLS AND BREADS with sweet creamy butter *Many other entrees, sides, salads available

Included with all menu packages: PARTIAL BAR SET UP Includes bartender(s), ice, plastic cups, soft drinks, iced tea, mineral water (please see our alcohol service policies prior to booking your event)

All Beer, Wine, and Champagne is to be provided by CLIENT and served by Command Performance *FULL BAR SET UP OPTION (Add 3.00 per person) Includes equipment, mixers, garnishes for mixing with hard liquor added to partial bar service ( client to provide Hard Liquor )
