, due Wednesday October 30 at midnight Paper copy of single page cover sheet (this page) due Thursday October 31st in class 1. Name of topic: Cuban food, its influences, and cultures it has influenced 2. Titles/brief descriptions of 10 interesting images 1. Cuban Empanadas Empanadas are one of the many tapas (appetizers) that Cubans like to indulge in. They are usually made in bulk and shared with family and friends. The empanada is one of the well-known pastries in Latin America. Many different countries have their own adaption. This adaption is with beef, raisons, onions, green pimento olives, and eggs (my moms way)

2. Pastelito de Guayaba Pastelitos de Guayaba (Guava Pastries) are probably one of my favorite desserts. These tapas tend to go without leftovers. Usually using a sheet of pastry paper, the dough is then filled with cream cheese, guava, and baked in the oven. Thus leaving you with fluffy, jam filled deliciousness.

3. Medianoche (aka Cubano) This is by FAR my favorite sandwich. Usually put on a sweet bread roll and filled with turkey and ham. This sandwich gets its name by the time it is usually eaten, midnight. My mother used to tell me that after family holidays, when the hosts were left with all the leftovers, one would usually make themselves an evening sandwich with the leftovers. Nom, thats what delicious snack .

4. Platanos Many seem to believe that platanos and bananas are the same, but they arent platanos (plantains) are tougher in tecture and more meatier in taste. They are not sweet at all. There are many ways to cook platanos, however, the most popular include frying and boiling and sauting. Each provide a different taste and texture.

5. Mariquitas CHIPS! Who doesnt like chips? The crispy potatoes with their different flavors nom! What if I said there are chips made out of plantains! These banana replicas are nothing like the store bought banana chips, they are mild in flavor, with no sweetness, and taste exactly almost exactly like regular chips, but better.

6. Platanos Maduros Everyone in my family likes these, except me. Maybe it is my Mexican side who loves spicy food, but eh, I cant se em to enjoy these. So anyways, these are sauted plantains. Most people cook them with with sugar while cooked on low heat on a stove. They start to caramelize and turn sweet and soft. Opposite of what they usually do. This is also another tapas dish, usually served before the meal with a side of dipping sauce. Or they could be topped with crema (milkier sour cream, and creamier).

7. Yucca! Yucca chips, yucca stew, yucca root! Yucca root is yummy! I love these as fries, in a stew, baked. These are so versatile, its amazing. However, to make these is hell. It takes so much work to peel and cut these. The skin is waxy, and the meat is hard, however, after putting in a stew, they soften right up, and they are usually replaced for potatoes.

8. Paella This former Spanish rice dish has become extremely popular in Cuba. My mom used to make it in bulk. A giant baking dish willed with rice, seafood, meat, sausage. It was like the quiche of Cuba, you threw everything in, and the cooked rice, and you bake it. It would take up SO much time, but is one of the most delicious things I have ever had.

9. Arroz Frito Believe it or not, Cuban has it to. When a large number of Chinese migrated to Cuba, it was hard for them to not pick up on a few tricks with their food. My mom told me as a child, she never knew that fried rice was Chinese until she had gone to a Chinese restaurant with her father and he explained to her that the origins were not from Cuba.

10. Chinese. The last thing I want to mention is not a food dish, but a food genre in Cuba. Many know of the lineage line between Cuba and Spain, but few know about the influence that the Chinese had on this culture as well. This photo is during the time when Fidel was fighting for independence for his people. At the time, and still today, he was supported by the Chinese residents in Cuba. Still there today, they continue to live influencing the culture, and having their culture influenced.
